I am going to try to join here...I am on page 33 of this monstrous thread...LOVE IT!

Last night I made lamb shanks oven roasted with canned cherry tomatoes, garlic, spices, etc. and a splash of balsamic vinegar. The tomatoes ended up like tomato jam. SO delish. Served with a butternut squash and slaw. (I used all that oven time...3 hours...to roast the huge squash). Leftovers tonight

I have chicken breasts (almost never buy them unless they are on sale; we prefer dark meat) and am dying to make the salsa chicken I saw posted somewhere on page 3 of this thread. Debating if it will be in the crockpot or the oven. I also want to make mac and cheese. I use America's Test Kitchen recipe that uses one pan for everything and love it. I used to make the Alton Brown version with an egg, but ATK's recipe is easier and one less pan.

This is the last week of fishing season out here and the weather has been very uncooperative, as have the fish.

Finally, I found a "better than take-out" recipe for pork/udon noodles on Bon Appetit's site and it is beyond easy. I used that sauce to pan cook diced tofu that I add to my salads.

Week before last, I found a soy-butter recipe on Milk Street and instead of stir fried veggies, I used it to pan cook some Rock Fish. Wonderful!


ChiSandy, I do not miss mosquitoes one bit! Nor the humidity, but I do miss the Midwest quite often otherwise.

I was looking at your avatar image. That looks a lot like my mother-in-law's cat.

He (the cat) and MIL are spending time over here while she recovers from endocarditis and getting three teeth pulled (and is still getting antibiotics via a PICC). We have two dogs and in a couple of weeks, her cat has gone from "DOGS!!!!!!!!!!!! RUN FOR MY LIFE!!!!HIDE" to "those #*@#_$(#*@# dogs sure are annoying" to "I run this place and don't forget it." This morning, I noticed the cat eating from the dogs' food bowls:-)

I successfully talked myself out of having pizza tonight, twice (scans tomorrow, wanted tasty comfort)

Dinner is a seared tuna steak, broccoli and mixed veggies. The healthy meal will be followed by a mini pineapple upside down Bundt cake.

Eric, my avatar was my girl-cat. She has passed on (several years now, but I still think of her and cry, missing her). Her full name was Phantom-bandita and I called her Bandy. Sad Yeah, once cats figure out they rule the roost, everyone is on their toes, LOL.

Illimae, I worship tuna steaks, LOL. I make sure when DH grills them, mine is simply waved over the grates. I usually make Poke (Hawaiian raw tuna salad). Hope the scans go well. I'm a basket case for any medical stuff. I'm so over it and wish I were "like normal people," but that just isn't in my future. Sigh.

Wallycat - welcome, welcome. Seems like we used to share more recipes, but no rush to read through everything. I'd love the recipe for the pork/udon noodles if you care to share - either the recipe or just the link. I was in your area the year before Covid - staying with friends in Sequim & meeting other friends in Port Angeles. WONDERFUL trip.

Beaver - thanks for the turkey tenderloin recipe. The addition of vanilla is surprising & interesting. I don't have a grill anymore so I'll cook in oven.

Mommy - I have both potatoes & carrots that are on deck this week but I'm planning on a swiss steak.

Eric - sounds like your MIL is making progress. Glad she shooed you two out for 'date night'.

I posted the recipe on a different site I frequent so here is what I posted there.

The reviews are mostly amazing. I made it because we had leftover pork tenderloin, so I simply diced it and tossed it into the cabbage (with the ginger and pepper flakes, which I used sambal oelek in place of dry flakes).

I didn't want to dig for my ginger in the freezer so used powdered ginger and ginger juice.

I cut the mirin and soy to 1/4 cup each. You could easily cut the soy a bit more (4 tbs = 1/4 cup so you could use 3 tbs). I also purchased authentic Mirin (no sugar, actually fermented to make it taste sweet which I have to order on line).

The reviews offer a lot of other people's tweaks. This is a definite repeater. I could see this over rice or quinoa or zoodles.

The directions go on and on and I did it in less than 10 minutes...so I will post the ingredients and if it piques your curiosity, feel free to go to the site.

Ingredients


2 tablespoons vegetable oil, divided
4 cups very coarsely chopped green cabbage (from about ¼ medium head)
2 7-ounce packages instant udon noodles, flavor packets discarded
2 teaspoons toasted sesame oil
8 ounces ground pork
5 scallions, white and pale-green parts coarsely chopped, dark-green parts thinly sliced
2 teaspoons finely grated fresh ginger (from a 1-inch knob)
1 teaspoon crushed red pepper flakes
⅓ cup mirin
⅓ cup soy sauce
1 tablespoon toasted sesame seeds, plus more for serving

(It is basically brown the protein, add veg, when it is all within a minute of done, add the mirin/soy). Who knew two ingredients could elevate a dish like this.


I'm glad to hear you had a great trip. Except for the fire-smoke from Canada or California, this really is paradise a good portion of the time. DH dragged me here from WI and as much as I love WI and the midwest, this was a fairly easy transition. I do miss the snow very much but the last 2 years, we get an inch for a day or so, which is better than nothing.

Mae - sorry about the new new brain spots but glad there's a plan to GET them.

I had a bag of gourmet fingerling potatoes that I'd ignored for a week. Tonight after I cut out all the eyes & growing brown spots, I decided the better part of valor was to boil instead of roast, Then I tossed with melted butter & rosemary There are enough left to toss with sour cream & dill tomorrow. - but I will likely add green onions & serve cold. The partner to my potatoes was a huge batch of skinny asparagus. I cut them in half & sauteed in olive oil, garlic & onion powder - then added a bit of water and steamed until done. As is my habit - I ate all the bottom, more woody halves and saved the top halves to add to a salad.

I'm working up to a real pizza instead of the Naan Pizzas I've been making the last year.

Edited to add - hope Special is having a great trip. Nance? Lacey? Hope things are OK with you. Carole - I expect you're on a count down packing for this weekend.

We had the salsa-chicken that is all the rave here and enjoyed it. Leftovers tomorrow.

Meals have actually been made these past weeks, but I barely remember what I’ve put together. Pretty much our typical fare of chicken, or fish with salad and other sides. We did have kale/turkey meatballs with a quick sauce one night, and last night I made eggplant pizzas with a side of cuke salad. We have been on a search for Rao’s puttanesca sauce (since a favorite meal is sauteed veggies and baked cod in that sauce over pasta). But it seems to have disappeared from the Northeast. WTH?! So I ordered another kind from Amazon, and it was never delivered. Finally got a refund for that bust. Not sure why this variety of pasta sauce has disappeared.

Last weekend we had our sweet GD over and she enjoyed the unusual meatballs, as well as some chocolate hummus I offered her as a snack. It’s really good with pretzels! Tonight we had baked balsamic marinated salmon, garden salad with the addition of peaches, and sweet potatoes.

Mae, I too am glad your small spots have a zapper st the ready to contend with them. And Chi, glad your recent imaging results were basically stable.

On a sweet note….Has anyone discovered the Cado frozen dessert that I recently found in NH? Yay, It is also in Mass! It's an avocado "ice cream". I love the amaretto cherry flavor, as well as the Chocolate mud pie. Only problem is avoiding eating it!

Heading back to the lake next weekend for the annual beach lobsterfest….my DH’s favorite event! And if we’re lucky, the wood carver who we hired to carve a bear from the trunk of a tree we just had removed will show up and create it!

She has three ongoing issues...back, kidney stones and (now) missing teeth. She has no lower molars, so chewing is a bit problematic for her.

She started on the "epic odyssey" about a month before Covid and the only thing done so far, is the infection control stuff

I'm retired, so I'm going to be her advocate and see if I can get things "back on schedule". :-)

Dinner was fried rice with onions, water chestnuts, mushrooms, & asparagus. I used a package of Jasmine Rice I had, but I'm not wild about how Jasmine turns out in fried rice. I "decorated" the top.with Brussels sprouts.

Hi all - I'm back, just got home tonight and completed the return of the dog and cat from DD back to us. Dinners on the trip were fairly ordinary at home while in Silverthorne, but standouts during the travel were a French dip in Denver the night we arrived and were able to see our son, shredded beef enchiladas Christmas style in Santa Fe, and a brisket taco in Austin that was incredible. I have no food in the house so must shop tomorrow. We had fun but I'm glad to be home too.
