Another good breakfast is toast w almond butter and some pineapple on the side. (pineapple is a natural anti inflammatory). sometimes I eat dried prunes, or dried mango with it as well, or even fresh mango. I eat gluten free bread, not as tasty as regular bread, so I only have a small piece.
Also, almond butter on an apple is good for breakfast or snack.
Unfortunately, most cereals, if not sugar laden, are just straight carbs. If she drinks milk, she should get hormone free milk (organic) as well.
Greek yogurt with berries is also a quick healthy breakfast ( again, I stick to organic, and plain, will add my own sweetness if needed)
Keep in mind, your mom should eat what she likes sometimes as well, as you have to enjoy life!!! But if she tries some new healthier things, she may grow to prefer them anyway.
All of this is just my point of view. Your mom has to decide what works for her. Good luck, and it is nice of you to help her.
