Eric, that marinade sounds wonderful.
Apparently it's pork week at our house. I'm trying a pork loin roast in the slow cooker with balsamic vinegar, honey and herbs. I'm skeptical that the slow cooker will yield a moist loin roast, but I'm told it will. We'll see. I add several cloves of garlic, fresh rosemary and thyme and cut the honey by half.
We dug the rest of the potatoes yesterday and the green beans haven't given up yet, so we'll have the smaller spuds with some tiny green beans. A side of applesauce and two fresh peach mini pies will round out this feast.0 -

Eric, waiting on that invite as well. Sounds delish. I would use a habenero, my husband would use a red bell pepper!!! LOL. Compromise and use one jalepeno.... LOL or perhaps leave out the pepper and add Surachia just on mine.... LOL0 -

Lamb burgers with all the fixings tonight, corn on the cob, and some sauteed beet greens that a farmer at the market asked me to take for free. Not exactly a tomato score, but we enjoyed them sauteed with onions, garlic and a thinly sliced white beet. I bought some tomatillos to try them in a salsa...or in a corn tomatillo soup recipe they featured at the Farmer's Market We'll see. Also, researching what to do with with the tops of the large leeks I bought...love that google search!
Seeing my MO tomorrow before she goes on a six week leave. hmmmmmm? She didn't look preggers when I saw her in May. I hope she is okay. I do need some help with this constant full body itching that is getting worse along with the inability to sleep at night for longer than a half-hour without waking up. Just not healthy! I was a walking zombie all day today after getting a total of less than three hours sleep last night. Would love to take a little break from this Tamoxifen...but I know she will not be thrilled about that idea. We'll see......

Tonight I was on the PET/CT scan diet. Had a hunk of beef with some butter on top for dinner. So completely unsatisfying. Made some nice roasted potatoes for Mr. 02143. He declined the offer of fresh, steamed broccoli. Tomorrow morning, up at 4am, take the [damn] Synthroid, then breakfast of eggs at 4:30. Scan injection at 8am. "They" say I have to eat that breakfast, and have to finish at least 3 hrs before the radioactive stuff gets shot into my veins.
I could never do a no-carb diet! Ever! I want a vegetable.

Today I made more dill pickles for the refrigerator. Used some of the previous batch to make Cuban sandwiches for lunch with the leftover pork. I also made six crusts for coconut cream and coconut meringue pies. Two are for a meeting I have tomorrow night and four are for our annual Relay for Life on Friday.
Dinner was a pretty simple baked chicken and butter baked corn with a salad. Since I had extra pastry dough, tomorrow night will probably be a quiche.
Although I hate the thought of summers end, I'm loving these cooler temperatures. I've missed my oven!0 -

Life as usual has been busy, to top it off both DS2 and I are fighting being sick. Last night was pot roast tonight was Bulogi (the pork medallions with a broth gravy and pineapple over white rice) . I am hoping tomorrow we will both feel better and he will not fight me on going to pre school.
For the last 13 years I have walked in the cancer walk for making strides. I don't feel like doing it this year. I always hate it but feel I should raise money for the cause. What do you ladies think? To walk or not to walk?

Susan - I had a PET/CT last week & the only instructions were - nothing but water for 4 hours before. Of course I had a Breast MRI 3 hours before & that was also nothing but water for 4 hours before. I was sure hungry at the end of the day. I like the PET/CT test better than the MRI. Good luck with your test.
Laurie - I'm thinking it's OK to skip the walk this year. Especially with everything goin on with your boys this fall. As Susan B. Love says, we have "awareness". Now we need funds going directly to research for a cure.
I'm going to the Metastatic BC conference this Saturday since it's in my home town. Should be very interesting.
And since this is the dinner thread - I must report that I can finally eat some limited things again. I'm trying everything in very small quantities. I had prime rib last Friday. MO said I can start to eat raw salad & veggies again. Nothing tastes like it should, but at least it doesn't taste like the inside of the garbage disposal. Something better start tasting great to my mouth & not just my brain real soon. I can't afford to lose any more weight.

Nancy, The usual medical reason-- because. Actually, you need your sugars to be below a certain number and vegetables are converted into sugar by your body. I will be injected with a radioactive solution, and the scan is taking pictures of the sugar uptake.
Different hospitals/machines seem to have different instructions. My hospital tends to have the latest equipment, and HATES false positives. I have to agree. This is one very expensive test. No one should do it twice due to non-compliance.
Five hours of sleep is simply not enough. I suspect that I will sleep in the chair during the hour between injection and scan. Heck, I ususally sleep during the scan too! This is the advantage of having the first scan of the day.

Susan Good Luck on those scans! I agree. way too important to not follow the instructions and get it right the first time.
Laurie Do what you are comfortable with. I think it is imp to raise money for the cure, but I am becoming so cynical about fundraisers and where the money is going. I do thank the good lord for the people finding the treatments that are keeping us alive longer, and I know that takes money.
Leftovers tonight of the homemade chicken corn chowder soup and tomato sandwiches. I also made an apple pie from the apples on my tree. this is the first year they have been big enough to deal with, plus the deer usually eat them all up.

Saw my MO yesterday, and we continue to work on the problem with Tamox side effects.
Since I'm sensitive to meds, she is having me try a tiny bit of Atavan to see if I can catch some zzzzz's. Hopeful!

Laurie, if you don't feel like doing the walk, then don't do the walk. Like Carberry, I've gotten cynical about fundraisers. I will donate/volunteer/fund raise for groups that I know (such as Fred Hutchinson Cancer Research Center), but I will not do any of it for Komen. I'm really aware of cancer. I want to donate to research for a cure - not awareness.

gumby - I'm with you. I also make donations to BCO and local fund raisers for cancer patients in financial need. Another good place in our area is the University of Washington, just designate the money for breast cancer research. They are working on a vacine for BC. They are actually to the point of human trials for a vacine against one particular strain of BC.

The thing with this walk was that my best friends family started it in our town back in 1997. My friends sister was diagnosed stage iv at the age of 25. The first walk had about 500 people- now it is thousands. Since the walk started her sister has passed, her mother and my mother and I was diagnosed. I walk with her every year. She moved to St. John 2 years ago and this year is unable to fly back for the walk. I am honestly just so sick of cancer- I hate all the pink and loud music etc. To top it off the girl is a friend of mine who has sung the national anthem for the last 8 years and she is in the hospital with stage 4 brain cancer and does not have long to live.
To top it off a friend of mine has started a team walking in honor of me and my strength (?) and in remembrance of my Mum. I have never worn a survivor ribbon and feel a little uncomfortable.

Maybe this year, you can make a donation in memory of your friend's sister, but skip the actual walk. Sometimes, you [in the big sense, not you personally] just have to walk away from a world that you didn't want to join. This year has been a big change for you and the boys. Focusing closer to home is another kind of strength.

PET scan is in my rear view mirror, but boy is my body totally whacked out! Sausage and eggs at 4:30am for someone who doesn't even eat food before noon is jolting. Not to mention the lack of sleep. I fell asleep in the tube! And then had a nap this afternoon.
Tonight I am making our "house" stir fry with pork and local broccoli. Thinking I will steam up a few dumplings as well. Early supper since I have figured out that the kids can make dinner at home on Mondays and Tuesdays. We are slowly finding the rhythm of our lives combined.
[Lacey, the kid did her first one-on-one counseling session at her school yesterday and she just loves her supervisor. Such a relief!]

It has been a crazy couple of days! Had my normal 6-month dermatology appointment yesterday - I now have three biopsy sites on my upper back. I am home alone - DH is up at the Pentagon this week (not good timing as he was stuck on his flight Mon. in lockdown at Nat'l. airport because of the Navy Yard shooting) and DD is out in Clearwater doing her thing at the aquarium until Fri. - so I can't reach or change the dressings on my back! Ridiculous! Also, and more scary, is a referral for a potential basal cell carcinoma on the rim of my lower right eyelid. I have to see an oculoplastic surgeon on Monday. I had my regular eye exam today and my doc confirms the need, he sees increased vascularization. Took my car in for what I thought was a new headlight - easy, peasy. Not! Bad wiring problem, so had to drive DH's vintage BMW Z3 with the non-working convertible top to the eye doctor. Rained on me all the way home - had to wear sunglasses because my eyes were dilated - looked like a total idiot! I am going out to Clearwater to DD's apartment full of interns tonight with goodies - orange cranberry muffins, Key Lime cupcakes (from our trees - the limes, not the cupcakes, lol! But wouldn't that be great...), fusilli with broccoli and cheese sauce, yellow rice, black beans and corn, beef enchiladas, curried rice and chicken salad, and sour cream and dill red potato salad. These poor girls are broke and working for free. They can't really get part-time jobs because they are not local and only here until the holidays and already working 50 hours a week! I am also bringing a big package of toilet paper and paper towels. I figure I will go once a week and bring them food - they all miss home!

One of Susan's posts inspired me to finally buy some tomatillos to make a salsa to go with some pork we were going to grill. Well, I got home too late from my volunteering interview to roast them, so I made raw tomatillo and tomato salsa..with a bit of onion, garlic, cilantro, and jalapeño pepper. I also briefly marinated the pork loin in this before grilling it. Well, I was underwhelmed by my salsa effort, so ended up melting some pepper jack cheese on flour tortillas and we made a kind of fajita meal, rolling the tortillas around some pork and veggies. A lot leftover, so we will be figuring out things to do with this pork and salsa for a few days to come! I still have a few tomatillos, so I will try roasting them to see if I can eeek out ( or infuse) a bit more flavor.
Susan, soooo happy for the kid! A good clinical supervisor is invaluable in this field.....and really liking them, even better.
I still remember and call on the knowledge gained from my earliest clinical "teachers". So.....lucky her for such a nice start in the field!0 -
Special.....yikes! I hope your DD can help with your back tonight and that the first doc is wrong about the eyelid. What an amazing ride home! You are too funny with your description. And how your DD and roommates must appreciate your generous offerings and nurturance! Yes, I think a cupcake tree would be very nice..........;).

Gee Special I am a litttle broke and working long hours....could you bring me some goodies? those are some lucky girls to have you help them out. And cupckes from trees? Great idea!!! Glad you made it home safe...hard enough to get home after the eyes dilating, but add rain in the mix with funky glasses and thats a challenge.

Laurie - I think you've gotten some good advice about the walk.
I think I may turn on the oven tonight. Have some pork chops in refrig. Was just going to pan brown them but may put them on a little slow and covered and bake them. It was only 92 here today and felt better than that.

Laurie, I would skip the walk. I've come in contact with a couple of those walks when DH and I were pushed off the walking path by the crowds and I must admit I had no inclination to join the event. I have played in a couple of women's golf tournaments that were fund-raisers for the Komen organization.
SpecialK, I apologize for laughing at the picture of you getting rained on in your dh's convertible while wearing sunglasses! That was a daunting list of foods. Hard to imagine that you cooked all those dishes.
Lacey, I have never bought tomatillos, but they are cute little veggies. If they are a veggie.
All of you mentioning your cool weather must be feeling the waves of envy.
My new cooking plan is to pick out some recipes and actually follow them. I have done this the past two days with some success. Last night's shrimp tacos with corn/avocado salsa was quite good. Though it could have used a little heat from a jalopeno pepper. Next time I will probably modify the recipe.
Tonight I made a bulgar side dish that was very good. DH gave it a good grade even though he teasingly calls bulgar "booger." Here's the recipe. Cook 1 cup of bulgar in 2 cups of water for 12 min. Rinse in cold water and drain. The dressing is 2 T champagne vinegar, 2 T EVOO, 2 tsps. brown sugar, s & p. Whisk until sugar dissolves. Add the bulgar to the bowl with the dressing. Add 1 cup diced fresh peach, 1 1/2 oz. toasted hazelnuts (I used sliced almonds) and 1/4 cup small mint leaves. Toss. The bulgar has a nice nutty taste and the other flavors blend for an enjoyable and easy dish.
The main dish was grilled lamb loin chops. DH grilled the chops inside on a cast iron grill pan on the stove. Same with the shrimp last night. He didn't feel like dragging the outdoor grill out of the shed in which it was stored for the summer lest a hurricane blow it away.
Watched a recorded Ciao Italia this afternoon. The dishes were all made with farro, which I've never eaten, but I'll probably add that to my list of whole grains to cook.
I'm looking to oven cooking whenever our weather finally cools off.

Sounds like you have waaaaaay more going on than you should have to deal with! Thank Goodness that DH was out of harm's way... Such a tragic situation! You are such a good Mom shrugging off your own situation to go help DD and the interns, as I'm sure most of us would! If they are like my DD and her college friends they will be beyond grateful for the food (and caring thoughts behind it)!!!! And a big, yes, on the paper towels and TP.... So important but they don't miss them till they're out and then, it's an emergency!!! Be sure to take care of yourself as well....0 -
Carole - that "booger" sounds good. I don't think I've ever eaten it. I wonder if it would be good on couscous cold. Well, did not turn on the oven. Pork chops slow cooking on stovetop in a McCormicks "sweet tea" marinade with subs. of apple butter for the oil. Have to keep adding bits of water to keep them from sticking but I think will be good. Hoping chicken thighs go on sale so I can make the applebutter BBQ chicken.
