    Carole, that bulgar dish sounds wonderful. I really like farro, and I think you would enjoy it if you like grains. My only complaint the first time I made farro is that it took at least 50 minutes to cook. I am now used to that, but have also seen some quick cook versions in stores since that. It is a nice nutty grain, with which you can do a lot of creative pairing.



    Thanks for that salsa advice, Eric. I did put some lime juice, but obviously not enough.... and my tendency to not use salt may have backfired on this one! I like salsa's with a nice punch so will try again. In the end I crossed cultures and added some of that Thai chili/garlic sauce, and that was interesting.



    Luv, apple butter chicken sounds really interesting. My favorite aunt used to give me apple butter for my morning toast and it brings up such fond memories that I would enjoy any recipe that included it!

    But this is the one I'm thinking of trying - oven baked. The recipe calls for Musselman's apple butter but for some reason I just found it too strong. I used one today I found at grocery, spicy but not overpowering.

  • Wow you guys inspire me. Im going to thaw the pork chops. When I woke up this am it was a whole 49 degrees. I had to wear a sweater.

    Thanks guys!  I am sure the eye thing will go fine - I am glad the regular eye doc agreed it needs to be biopsied, I like consensus.  The ride home was funny - not sure ifI am telling DH about it though - he loves that little car.  I alternately call it the "thimble" or the "sewing machine" because it is so small, but it needs a new top!  Like, right now!

    The girls were pretty excited about the food, but they probably think I am crazy.  DD wanted me to bring the dog, but there was no room - too much food!  This was the first time I met them - actually only met two, one was sleeping because she had to get up at 4:30 a.m. (just like Susan!) and go babysit the girl dolphins in their special pool.  DD and one of her friends got into the enchiladas right away!

    I agree - must work on inventing a cupcake tree!  I will be focusing on this for the rest of the week!

    I would love nothing more than a road trip delivering food to all of you, you all are the best!

    I am coming out of the cooking 'Corner of Shame' long enough to say that I had a very bad day and ate an entire bowl of artichoke hummus (which I made)  and pita bread for dinner while watching a Breaking Bad marathon in a fit of escapism.

    I have read the posts and am thinking of you.

    Bedo:  I can beat that.  I ate a 1/2 of a box of Chicken Stove Top Stuffing.  That's it.

    Moonflower:  49?  We got down to 80 today.  I'm with luvmygoats & Carole.  Still too hot to turn on the ovens in Texas & LA.  When I finally do, the first thing I bake will be gingerbread.

    SpecialK:  Please keep us up to date on the biopsy.  I've had 5 basal cell skin cancers removed by MOHS surgery.  Ah to go back & change my sun worshiping days.

    minus - I know!  I am paying for my sun-worshiping California girl days too - all the damage was done in the first 30 years of my life, I was diagnosed with the first basal cell at 35, have been out of the sun ever since (I am living in the wrong state for that!) - I have had more than 20 basal cell carcinomas removed by every method available - MOHS, electrocauterization, freezing plus Aldara, Aldara alone, freezing alone.  The eye doc thinks the one on my lower eyelid is a basal cell also.  By now I know what they look like so I usually get them handled quickly, I had three during treatment for BC!  Had to hurry and get them removed right before chemo and they left the worst scars.  The three on my upper back are just in a location that is difficult for me to see myself. 

    I had two chicken legs and a lime cupcake from my tree, but some stuffing and hummus is sounding pretty appealing....  This is what happens when I am left home alone!

    So today, I'm keeping pharma afloat (like it needs me to!). Had a steroid injection in my knee which clearly has an age-related miniscus problem. Hopefully, with that and my exercise regimen (and even more PT now focused on that instead of the shoulder) it will self heal. ;) Right now, the knee is like an immovable brick!



    Then tonight, I am taking my first mini dose of atavan to see if it might help me get some nightly zzzzs, since the Tamoxifen seems to be going full force in keeping me awake most of the night. Fingers crossed......



    Not to be outdone with physical symptoms, DH gave up a dinner meeting to head to the dentist for a very painful tooth....read inevitable root canal necessary. I doubt he will feel like chomping down on any food when he returns, unless the visit is just the first part of a diagnostic. Getting old is getting old...

    I've decided that my body is like a spoiled pre-schooler.....the more careful attention I give it (for the first time in my life), the more it demands!



    So, I think I will drag my brick knee over to the counter and make some caprese salad to go with leftover pork tenderloin. I saw a recipe on line today for easy pan pizza made in caste iron skillets. I MUST do this soon, but have to plan for the dough to rise overnite on the counter....so it will not be tonight. :( I definitely will use some of the kale pesto on one of the ones I make.

    Oh the worrisome skin issues......Jersey Shore girl here (not the Snookie variety;)....read iodine and baby oil for daily tanning lotion. Lordy!!!

  • Lacey, I was sleepless last night right along with you. Result -- dog tired today. Too tired to try and figure out dinner. In spite of my lethargy, I managed to clean out the big freezer to make more room for all the summers harvest. I came across some taco meat and black beans and one chicken burrito. So dinner is half of the burrito each and a taco salad. I'm making pasta tomorrow, so I'm already planning drunken noodles with spicy Italian sausage for dinner tomorrow.

    lacey - thanks!  I did the iodine and baby oil too, and I rememeber my dad telling me that he did it when he was young - and he was born in 1917!

  • Speaking of sun, Carole we're heading to your neck of the woods in ten days or so. Dh decided he wanted to celebrate his birthday on the gulf coast so we're going to biloxi for several days, staying at Beau Rivage. Hope the slow hurricane season doesn't decide to kick into high gear next week. Wouldn't be the first time.

  • It began with a head of orange cauliflower as many such stories do. It looked so lovely at the farm, but as it sat in my fridge, it grew and grew. So, it became the basis of tonight's dinner. I scoured my cookbooks for a delicious-sounding recipe and settled on an Indian preparation with onions and tomatoes [since the garden still giveth.] So that led to making lamb samosas, but the kids could use some food, so triple the recipe. And then the lentils, and of course, rice. It was the samosa meat that put me over the edge though. So much chopping and dicing.... I would hate to tell you how much time was spent on prep. But the results were really good. In fact, the kids were thrilled that there was dinner for them when they got home and ate plenty.

    Tomorrow is treatment day, and I love to know that there are Indian leftovers to reheat when I get home. Sometimes I just don't feel quite well enough to make a meal from scratch right after my hospital visit. Of course, tomorrow night someone else will cook... we go out. Sadly, my favorite Chinese restaurant's fascade collapsed, so no Chinese food. I just hope that they re-open.

    So good to hear that news, Joyce! Thanks for sharing with us. Our Michelle is one of the most serious beach gals! Not surprised it was restorative! I'm glad that she is at least returning to sun, if not significant warmth.

  • Bedo, the hummus sounded good. 

    I had a "new" experience at the luncheon table today.  I passed out from dehydration following day 2 of a 2-day golf tournament.  Two of the ladies got me from my chair onto the floor and other helpers brought ice to ice me down.  The paramedics arrived and whisked me off to an ER where I received 3 bags of IV fluids  before I was able to pass the ER dr.'s test for discharge--produce some clear pee.  Yep, his words exactly.  Sorry to gross anyone out.

    DH was out playing golf and didn't answer his phone so the pro sent someone in a golf cart to tell him his wife was on the way to the ER.  DH was having a great round.  One over par after 5 holes. 

    I was ordered to avoid outdoor exercise for a week. 

    Dinner was a cheeseburger, fries, and chocolate shake from Shake'n Bake.  Not very good except for the shake but we were both hungry when we got home after 7 pm.



  • Yikes Carole! Same thing happened to ds when he ran his first marathon. It's scary how fast you can dehydrate. After my last chemo, I ended up in the er with a fever "of indeterminate origin" and dehydration. Took several bags of fluids too. Hope you can take it easy this week.

    That is scary!!! If you are sipping shakes, you must be feeling better. Reminds me why I drink so much water everyday. Hope you feel better tomorrow.

And the last time we cleaned out the big freezer my DH asked if he could throw out the frozen breast milk bottles I have in there. I guess he thought its been in there a while. Um, hes right. My baby is 27 years old. LOL ive just been keeping it. Anyone know of any studies that need milk from 1985/6??!!?? LOL. Just couldnt throw it away.... LOL

    I hope this didn't disqualify you Carol and that you are feeling better. "I hate water", I pronounced to my Dr. one day. "You will love water when you realize how good it makes you feel" he said, and I guess it's true. I'm guessing it's pretty hot in LA these days.

    Minus, stove top sounds good.  I hope that you ate it right out of the box.  It's good that way.  So are Milk Bone dog biscuits, if you are ever in a pinch, but I haven't had them since I was a child. Not sure the FDA inspects them though.

    Went to Tortilla flats and had salsa chips  and enchiladas.  yum!

    The fool licensing board in AK wants to know why I was arrested for "disturbing the peace" when I was 19.  Well, that would be because that's what they called hitchhiking 100,000 years ago and,more importantly, I was 19.  I already sent them the record from Saratoga Springs New York and I was "sprung" by my Mom, but it shows up every time fingerprints are done for work along with another silly 19 year old thing. I could get it expunged but that would involve an expensive trip to Saratogo NY, unless I hitchiked, that is..haha. I already explained this the last time I worked in AK  Grrrr..

    Had diagnostic mammo for lump and MRI for back pain recently.  Cyst and herniated disc.  Kitties are happy.  I am happy with the cooler weather and it was a beautiful day.

  • Hi ladies - it's been fast and furious around here lately.  A project I've been dogging at work has finally taken off.  Our new house is still being worked on.  The tile is laid - still must be grouted.  The new hardwood - hubby finally decided on hickory instead of bamboo, as we both worry about what China puts into their exports, and the hickory is from the US.  It will be delivered on Saturday and then needs to acclimate in the house for awhile (can't remember how long, as I simply cannot remember much of anything anymore Frown).  Anyway, after the acclimation period it will be installed - as soon as we can find someone to install it.  He's happy with the choice, as he got 3/4" thick real boards that can be refinished if need be in the future - though since we have no animals nor children at home, the probability that it will need refinishing in our lifetime is pretty much small to none....

    Got all signed up for retirement - though I haven't yet told my bosses.  I'm trying to figure out the best way to do that.  I need to meet with two different manager "sets" and don't want my immediate bosses to get to the upper bosses before I can have my own discussion with them.  But it would be impolite (and poor politics) to meet with the upper ones prior to the more immediate ones...  problems, problems....  (why I care is that even though I'm retiring, I decided to offer my soul up for contract work for awhile, so would like to get a good recommendation if necessary)

    Meanwhile, the townhouse we are living in (renting) has gone on the market, so we also need to keep it rather spick and span and be available for showings.  Last night the last one finally left at 8 PM, so we had a VERY late dinner (which was take-out Thai, as I also couldn't mess up the kitchen prior to them coming!)

    Tonight I have to work late, so dinner will be late again - and I've no clue what it will be - maybe take out Mexican! Laughing

    Garden, loved your newsy post! You have a lot going on, on all fronts...and sounds like you are managing it really well. Yes, that retirement communication piece is thorny. I 'm sure you will work out the right process. Good luck!



    So, DH is off to Western Mass and I have been having a relaxing day checking recipes, and planning a meal for a woman in my church to deliver on Monday. I called her to ask about preferences, allergies etc. and she was horrified that people were taking care of her (she's a person with a heartevent history, who is primary caretaker for her bedridden husband with late stage Parkinson's and her brother who is in a nearby facility with Alzheimer's). So I spent a long time convincing her that the caretaker needs to be taken care of!



    Am currently simmering a vegetable stock with the green tops of the leeks I had in fridge....not sure what I think of it so far....an experiment to not waste them!

    Planning to make an omelette with white part of leeks, red pepper and maybe some zucchini. Am I the only person who never heard of zucchini being called courgette???
