Eric, just read your post aloud to dh and he got a good laugh! What a smart dog! My youngest brother had a black lab that chewed the siding off his house. Maybe he was mad that he wasn't inside and couldn't open the refrigerator!
Lacey, I've had the floater problem for years. The flashing lights would have sent me straight to an ER. That's a real danger sign for detached retina. So glad your checkup soothed your worries.
Susan, we would all like to share your freezer! Your refrigerator. Your pantry with the canned sauce.

Moon, that smores pizza sounds wickedly delicious! Would you believe I had never eaten smores until about 5 yrs. ago. Guess I had a deprived childhood.
Lacey, I might have enjoyed the dinner sandwich more than the planned dinner!
My chicken and sausage gumbo was very good. I did something a little different. Browned the chicken thighs with skin in small amt. of grape seed oil and olive oil. I knew I would be refrigerating the gumbo and could skim the fat off. Usually I put the skinned chicken and all the ingredients into a pot and simmer. Thought the browning would add flavor and it did. I take a short-cut on the dry brown roux because I now can buy the roux powder in a jar instead of making it myself. I stopped making roux with butter or oil many years ago.
The pasta making was a success, much to my surprise. I expected to feel like Lucy in the chocolate factory. I made the Light Wheat recipe in the Kitchen Aid instruction booklet. About a 2 to 1 ratio of wheat and white flours. I ended up with 8 long and very thin strips which I cut crossways into shorter strips before running them through the fettucini cutter. It was way too much pasta for one meal. DH made a very good sauce with crumbled Italian sausage and diced fire-roasted tomatoes out of a can, diced onion and garlic. We cooked the pasta about 3 min., drained it and dumped it into the sauce. Delicious! Fresh grated parm-reg on the top.
I "nested" the strips of fettucini and that didn't work out the best. The bottom of the nest got a little "stick-togethery." So I kept fluffing them until the pasta dried and then put it into a large bowl and into the freezer.
Martha Stewart used a wooden laundry rack, the kind that many of us took away to college. It folds up flat for storage.
The Kitchen Aid attachments are excellent products.

My DD is a big s'mores fan and of course, I loved them as a Girl Scout many, many moons ago! After experimenting I figured out how to make them in the microwave - DD was beyond excited. Plus the marshmallow puffs up like crazy so it is pretty dramatic! DS is a fireman and says that if you mix a fire and a girl together it is only matter of time before she will excitedly exclaim "let's make s'mores!" which he finds hilarious. When I eat them they taste like childhood!0 -
Eric, you gave me some motivation to give my kitchen stove an "extreme" cleaning. It gleams and looks so clean I hate to mess it up!
Dinner tonight was a good tossed salad with avocado and blue cheese. Warmed over artichoke casserole and leftover home-made fetuccini with marinara sauce. Everything tasted great.
DH announced that he plans to buy chicken breasts and make chicken salad tomorrow. Go for it!0 -

Tonight was red pepper garlic chicken sausage pasta. It's a very pretty dish with red, yellow and orange peppers. I also added some roasted tomatoes, since I roasted two trays today that I picked yesterday. I have a chuck roast thawing, so tomorrow will be beef bourgignon or a more pedestrian pot roast with vegetables.0 -
So the dinner items I put in the fridge last night were chicken thighs, breasts, and chicken sausage. I googled some recipes and ended up making Clinton Kelly's chicken sausage stew. It was pretty good. I found and used a can of crushed Jersey tomatoes that we bought from a farm stand there in June. Wish I'd gotten more than two cans. We had the "stew" over some brown rice "spaghetti" along with a garden salad. Definitely a fall style meal even tho it ended up being a warmish humid day here.
DH and I took a nice long walk to Trader's (good way to prevent impulse buys...ya gotta carry them home a couple of miles!). I am thrilled that my PT exercises seem to be helping my knees a lot...so long walks feel good now.
But boy going to both PT and the trainer is a lot. I have accumulated an entire "bible's" worth of homework exercises (seriously, 40!). So I am asking both of them to prioritize what they expect me to be doing daily in addition to my walk. Good thing I retired!! Would never have had time for all this healthy behavior!
Eric, wish I could also get motivated to spit shine my stove.....maybe when the weather is really cooler.

Hi everyone. Joyce sent me a PM with an update on Michelle. She is struggling with Michelle's decline and has asked me to update everyone. Michelle did go to the wedding but is unable to walk or care for herself at all at this point. She speaks very little and spends a great deal of her time sleeping. Rick of course is being wonderful and taking great care of her and her family is there for her. It seems things are declining quickly for her.
I am so sorry to have to share this news. Yet, I know we all think of Michelle every day and care for her so much. We worry for her and her family and friends. I am so thankful to Joyce for keeping us updated. Things are tough and I know all of our hearts are breaking.

This is such sad news to think of our strong, intelligent, generous and energetic friend declining. She has been so strong and inspirational for so many...this is just too heartbreaking.

Thank you for the update although I know we are all beyond sad that the news isn't better. Michelle has always been such a ball of energy and such an eloquent writer, with her posts here on BCO as well as on her blog, so the fact that she is speaking very little is especially heartbreaking.

Late night, just wanted a simple sandwich before bed, but turned a grilled ham and cheese into a Rueben. Today will prep ahead and do some eggplant parm so dinner will be all ready when I get home from work.0 -
I came here for dinner inspiration. LOL We had an all organic omelet last night (no cheese), and plain sweet potato. That was an easy fix to stick with the theme of uncomplicated Monday. The trick to shopping at Coscto for us, is we go only for the items we need. We have become really good at this. I can go for their 4 lb. bag of broccoli and walk out with only the 4 lb. bag of broccoli. The hard part for me is walking past the churros at the snack bar on the way out. I love those and can't have them, but still have to look over at them on the way out. LOL0 -
inspired - I can go in and get out with just the broccoli too - my problem is when broccoli and jewelry are in the same store, lol! I have this issue with Target too - I come out with underwear, apples, a CD, a garden hose and picture frame.0 -
Unfortunately (or maybe fortunately) I live 60 miles from the nearest Costco, so I have to maximize my shopping opportunities.0 -
I must go to Costco at least once a week. It is very close and serves as one of my grocery stores. My standard Costco items are: parmesan and romano cheese, feta cheese, smoked salmon, red meat chunks nothing ground, wild caught fish, frozen green beans, lemons, limes, frozen green beans, fresh haricot vert if they don't look old, lettuce if I know we have folks coming to eat with us, seltzer water, cashews, ziplock bags, sugar, flour but only if I know I can use up 25lbs quickly, coffee filters, printer paper, dishwashing and laundry soaps, advil, and of course, all of my RX's. Needless to say, I don't buy these things all at once!
I am very saddened by Michelle's decline. It just never gets easier.... I hope she has no pain. So glad that she has her family surrounding her [and Joyce is family.]

My Costco staples are Parmesan and assorted other cheeses, smoked salmon when I've made bagels, fresh peeled garlic cloves, all of my beef and most of the pork, garlic sausage, wine and liquor, celery, asparagus and haricots verts (if they are fresh looking), printer paper, lamb chops, Tuscan olive oil, sugar in the summer (for hummingbird food), pretzels, campari tomatoes in the winter, butter, half and half, cream, eggs in the winter, bananas in the winter, sometimes lettuce if I need a lot, facial tissues, all of my supplements, alleve and allergy meds, rosemary olive bread (when I'm lazy), a roast chicken, fresh flowers in the winter, whatever else strikes my fancy and a partridge in a pear tree. I have a friend who always goes with me and a lot of times we'll split things, which helps.
I'm so very sad about Michelle. It's like another spoke in our wheel is missing. Like Susan, I hope she is in no pain and wish her and her loved ones peace.0 -

I've gone to the garden three times this week. It would seem that the garden wants me to eat zinnias. The more I cut, the more grow. I give them to everyone. Down to a few tomatoes and a zucchini.
I'm going to make mac and cheese with tomato slices in it.
I had a dog when I lived in Georgia, part Blue Tick and part Great Dane. He used to 'paw' whatever he wanted while howling, including the fridge, the door, the couch, etc. I used to catch him, elbows on the counter, head looking in the kitchen sink at the drainer, to see if there were any scraps. Despite his size, he was terrified of the cat who spanked him about once a year to put him in his place.0 -
We don't have a Costco in this area but we have Sam's Club. I buy large chunks of cheese there and some of the same items available at your Costco stores.
Tonight's dinner will be pork loin medallions with a mustard sauce. The recipe is in a Cooking Light magazine. I have to look it up. We'll also have salad and steamed yellow squash.
I can only imagine how sad Joyce is feeling about Michelle. I've never met Michelle and I am very heavy-hearted over her decline. No one has ever fought harder or been braver than Michelle. It was a blessing to get to know her on bc.org.0 -

Count me in- I have had the pleasure of meeting Michelle several times. I have been thinking of her non stop, her family and Joyce. We joked at the get together's where I am so much younger that they are all my second mom's. (that includes you Pat.) So my heart is heavy. Such amazing people and we are all so lucky that we have found each other through this site. I am thankful.
Dinner tonight is chicken parm.
I also am guilty of going into Sams for one thing and leaving spending 100 bucks. Pj's, socks etc when I went for dog food and wipes

The news about Michelle, and the loss of Apple, Ebann, Cindy-Rose and others is the one part of bco that bothers me. It would probably be easier to just go away and hide.
When "my" Mickey was in hospice, she told me over and over that her biggest fear (even above the worry about the pain meds not working well enough) was that I'd just give up on life and hide forever..."crawl into a hole and die with her" was how she would put it. She kept making me promise that I'd continue living life. The song she chose for her memorial, "The Rose" was a reminder to me about that promise. It took me several years to keep my promise and get back to living. And despite all the sadness, I'm better because of knowing her.
It's the same way here. Despite the sadness, and the possibility of sadness, I'm better because of knowing everyone here. Thank you.

It's just so sad (and hard!) to again have the "opportunity" to rework all of our other losses with each new one.
There has been so much loss endured by so many of the folks on this thread(not counting everyone's personal losses brought on by bc)...tho, fortunately, so much support from each other.
I just HATE to think of Michelle in such a weakened state...we know her as such a vibrant woman! Such a fighter!!

So it is almost 7 and I have no idea what I will eat tonight. DS1 just got back from soccer and it is mac and cheese and chicken nuggets for them. DH is making chili for our camping trip this weekend. This is our favorite camping trip- the Halloween weekend with trick or treating and pumpkin carving etc. I hit the dollar store today and got some great decorations for our campsite. Going grocery shopping in the morning so I need to come up with our weekend menu. There will be a chili cook off- which is why DH is getting his "chili on" now. I have absolute faith he will win! He feels it needs to sit for at least 24 hours before it is ready.
So he has taken over the kitchen and the fridge os looking empty...dinner should be interesting, whatever we may find.0
