Carole, the instructions call for oiling then sprinkling kosher salt on the bird so it looks "like a light snowfall." cover with plastic wrap and refrigerate for 1 or 2 days before cooking. You can rinse the salt off before cooking if you like. I don't, but the skin will be very crisp and salty. The bird itself, however, will not be, mine have always been perfectly seasoned.

Nancy - I don't think Carole or I will have this weather much longer. Hedging around an ice storm for Friday though weathercasters seriously missed the one last weekend.

Nancy- That's Ok I am glad you smiled it was funny! I am just mad I didn't get my hard cider. I tried it a few months ago and was hooked. Not somthing I would drink often but it does have a nice taste. Lucky you for having nice weather still.
Susan- My dinner came out OK, not as great as some of my other TG dinner's and I did over do it, I struggled a bit in the kitchen and my oxygen went back down to 76 which was scarey but it is fine right now after I doubled up on prednisone. but DH helped so much with the clean up and even took all the Turkey off the bone and put it in Freezer bags for me. ;-))

Bedo is in Alaska...not sure if she has internet or a device. Hope she got some turkey...or polar bear ....or whatever they have in Alaska for thanksgiving. anxiously awaiting some stories.
Back to work tonight. Thankful for the leftovers, so no cooking. I did make a turkey noodle soup yesterday, so lots of options for dinner tonight.0 -
Cooked Thanksgiving in our new house in our new range. Unfortunately, realized that the range has a fan that turns on as soon as you turn on the oven - that blows hot air onto the feet/legs of anyone standing in front of it and makes a particularly unpleasant (shrill) noise. Therefore the new range is going back (I'm hoping tomorrow) and we're getting a different one. Hopefully this one will not blow hot air on my feet and make shrill noises. I was apparently a bit out of it when we were range shopping, as the ONLY vents for the oven were facing the cook!!! The new one has vents in the back so the hot/moist air can go up and get properly captured by the hood. Aside from the noise (and the hot air), the range did fine actually cooking the turkey. I made turkey vegetable soup yesterday so that we can nuke food for awhile until our new range appears. We're also waiting (impatiently) for a fridge (we have a spare one in the garage that is saving my life in the meantime) and our washer and dryer. Moving - what a hassle!!!0 -
Garden, you have been through a lot of moving and fixing this past year, ...so it will be great to finally feel settled when the appliances are all in place.:) I hope you are fully enjoying the rest of the house!
I also hope Bedo checks in at some point. I'm sure she has lots of interesting tales to tell.
Laurie, your Facebook pictures tell the story of a very action packed visit to FL! You are more than making up for taking a while to experience an ocean boat ride! The boys must be loving it all.
Trying to decide if I have the patience to try to order some gifts on- line. I frequently get into a circular pattern going no where at check out if I try to use the "coupons". Oy! Tempting to just skip it!0 -
So glad to hear that Laurie's Florida Adventure is going well! Tonight, we are making it day 5 of turkey. Turkey sandwiches on the rye rolls, and then it is SOUP time. [I think I deserve a medal for that much turkey!]
I am almost done with the present thing.... most of it done online. Sadly, I have not filled even one stocking yet however. So hard to find the right level of fun and whimsical. Our world doesn't have enough whimsy!

Susan, stockings are my favorite thing. Unfortunately, I'm finding it more and more difficult to be creative wIth them. Normally, I shop all year for stocking stuffers, whenever I spy some small thing uniquely suited for a particular person, I pounce on it. Not this year for some reason. I just feel tired -- no creative juices.
Next year dh and I are seriously considering going to the gulf coast over Christmas. I would love to see new Orleans at Christmas time. Don't know how the kids will take to this idea. Unfortunately, we don't have grandchildren or that would make a difference.

No grandchildren??? Then that is the PERFECT reason to go next year. Once there are grands, how could you miss their Christmases? Kids at Christmas are such a delight, until about age 6.

AuntieNance: I don't have grandchildren either. I do have a niece & nephew who may produce children down the road - so Auntie is my sobriquet too. Last year before the recurrence, I went with a friend on a Thanksgiving cruise - Houston to Florida to Bahamas. Great get away & my son and DIL didn't miss me at all. Of course they live in a different state so we don't spend many holidays together unless I go there. I was going to Hawaii this year to stay with my godchild & his wife and see my nephew & his wife. Oh well, maybe in 2014.
But I do have a granddog named Rosy. Found a black T-shirt for my DS that says "Dogfather". Got my DIL an ornament kit to make Rosy's paw print.

Bought a wonderful Ciabatta mini-baguette at Trader Joes today only to discover that my taste buds have decided bread is cardboard. Sigh. Makes me almost look forward to the radiation after this 2nd chemo.0 -
Minus, I dote on my nieces and nephews and their children too. That's how I got the nickname Auntienance. It's usually Aunt Nance, but one of the little ones turned it into auntie.

Minus Two- I find a lot of bakery bread is cardboard and just too tough to chew. Did you try toasting it? Oddly enough makes tough bread softer.
Making penne pasta with leftover 1/2 bottle of vodka sauce. Also just found some brussel sprouts I'd forgotten about. Need to have those too though I don't think in the pasta.

Instead of making myself crazy with the internet shopping, I spent most of the day making note cards of a long scripts that I need to memorize for workshops I will be starting in the local elementary schools for a child assault prevention program. Susan, I'm sure your DD will get to see this in action in her school since it is there too. Even tho I developed lessons providing the same information to elementary students in my previous schools, this be has to be presented in EXACTLY the way it is written by this particular program.....and the coordinators seem to be a bit nervous about my going rogue on them, and possibly using my own words. Oy! Memorizing is not as easy as it was the days before Tamoxifen! So, I basically traded one crazy activity for another today.
Then finally got to making the turkey bones into soup....and midway through discovered lots of missing ingredients (the store is beckoning). So I did the best I could making a tomatoey turkey kale (of course!) soup with zucchini, red kidney beans and corn. I set some apart and added orzo to it so DH would not feel like I was starving him. I love putting that Vietnamese chili garlic sauce in this kind of soup since we like it spicy. By the way, as I expected, DH did not miss a single meal after his gum surgery. What a hardy guy!
I can't say that the holiday spirit has grabbed me yet. This weekend we drive to NJ to celebrate DGS's third birthday, (not excited to see a bad weather forecast for both days we will be traveling) then they are all coming here the weekend before Christmas, so I do need to get in gear for that. Someone please channel me some energy!

What are some of your favorite stocking stuffers...maybe we can get inspired. I got my SIL a branding iron! She is really sassy and it says BITE ME! And I am putting grilling rubs and sauces. Got many on sale end of the season...also brushes and grill cleaner. She loves to grill.0 -

My friend has the funniest 3-D glasses that have different designs, so when you look at lights or fireworks they show different designs, like stars, or smiley faces, one said happy holidays...she has many different ones. They would make great cheap, fun stocking stuffers. Even us adults get a kick outta them. She had some in her purse and when we were at the winery we were passing them around checking out the Christmas lights...looked like aliens.
DH tired of the turkey stuff...guess I gotta cook something else, maybe a pasta stir fry to give him his pasta fix.
Garden Congrats on getting all moved in and (semi) settled...your scaring me...my mind is reeling thinking of all we have to do to get moved...thank goodness we don't "need" to move within a timeframe.
Love I like to get my kids the rubs, sauces and dip mixes for Christmas also. They especially like the dips, as it makes entertaining their friends easy.0 -
Tonight, I did the total slumming it routine for those days when something warm is the only dinner requirement. The kid's cold has turned into an ear infection and conjunctivitis [sp?] She is now on antibiotics and feeling like crap. Today she had an exam, but her doctor said 48 hrs of quarantine. The boy is still getting over this same cold. Mr. 02143 said "no more turkey" and me? I wanted a comfort food. So, I browned up some of our ground beef and then I poured over jarred marinara sauce. Served with some linguini, and not the homemade kind.
You know. It was perfect. All four of us sat around the table, and we laughed and told stories, and listened to the girl blow her nose. Tonight this made me happy. Even with a jarred sauce.

Susan- What a wonderful picture you painted with your family around the table eating and laughing,and the girl blowing her nose, I got a big smile and a chuckle out of that. So sweet really! Sorry the kids are sick though!!
Garden- Moving is always hard especailly right in the middle of the holidays trying to cook. Is it a convection oven? I love those wish I had one
Carrie- I think I saw those glasses on the today show yesterday with kathie lee and hoda- I love those two together!
I saw on Laurie's FB that tonight is her last night, she is probably sad and happy to get home. boy have they had a lot of expericences since she has been there. They went on a boat through the swamp and the crocs came right up to the boat one of her DS said "Lets get out of here" LOL! It was so cute!
I am also tired of Turkey and I have only had mine 2 days. But I all I have to do is warm it up in the microwave so it makes life a little easier for me.

Susan, the bitter little bites recipe looks really good. I saved it. I have not done the browned butter.
Today is Day 2 on my low carb eating program. I am so serious about losing some weight that I've even given up my before-dinner cocktail. Last night I made a cabbage dish with ground beef and ground pork, onions, garlic, a small jar of salsa, chicken broth and a whole cabbage sliced up. After browning the ground beef and pork and cooking it with the seasoning, I added the salsa and chicken broth and then added the cabbage. Cooked the dish in the oven. It was very good and there are leftovers.
Tonight I made a chicken dish with 2 boneless thighs and a boneless breast filet. Pounded them. Browned the pieces in olive oil in an iron skillet. Spooned pizza marinara sauce on top and shredded romano cheese on the sauce. Cooked in the broiler until the cheese melted. Side dish was steamed yellow squash, drained and sautéed in butter until some surfaces were brown.
Tomorrow night I want to make pork piccata. Instead of flour or cornstarch, I plan to use zanthum gum as a thickener. This will be a first. I looked up some instructions on the internet tonight.
I'm hoping that losing some weight will improve my cholesterol numbers and my sugar level, which currently places me in the pre-diabetic category. It is SO difficult to drop lbs while taking arimidex. Nine more months on the little white pill!
Nancy, I have no grandchildren, either. But I have no children. I, too, have nieces and nephews and great-nieces and great-nephews. This year I will once again be helping out Santa Claus.0 -

DD had a class project where she had to map out her family tree starting with her grandparents and including all their decendents. 9 people, including herself and my brother's wife. So this arm of the family is tiny.

Susan, what a great culinary departure for you and your family! Sometimes, it's just not the food, eh? I hope DD and her boy get better fast. She is experiencing the side effect of working in a germ factory! Last year was the first year I was totally w/o any colds, etc. after twenty years of working with large groups of young children.
Tonight I tried to finish up the turkey....made DH ( he should get a prize for his eating prowess with gumpacking still in place!) a huge sandwich with turkey meat, cole slaw, stuffing (ugh) and cranberry sauce (must have been about 1000 calories!). He needed something of substance after going shopping with me at the mall. Can't say I blame him! I had a small piece of white meat on a slice of whole wheat bread with some avocado and a bowl of my favorite kale soup. Actually treated myself to a small dish of ginger frozen yogurt that I've been avoiding in the freezer.....yummmm! Tomorrow, the gym!0 -
After a rather pleasant, but long, day of shopping with a friend, I wasn't very inspired about a dinner. We ended up having turkey leftovers again, for the last time. What's left will get frozen and put in a pot pie the next time I'm making crust, carcasses are already in the freezer waiting to become soup. That will probably be Thursday, as it's already dedicated to pasta making day. Some homemade noodles will be a good addition. I got the pasta attachment for the cuisinart and I'm determined to make a success of it, in spite of the not so great reviews the extruder got. If not, back it goes.
I started a rye sponge yesterday morning, so tomorrow I'll make rye bread. I'll try your modifications Susan. I hope mine turns out as well as yours did.
DH about made me spit iced tea out of my nose when he said to me this evening "do you think you could make some of that pho soup?" (Who ARE you and what did you do with my husband???) Looks like I'll be picking up some cilantro at the store tomorrow so I can make some while he's interested. Don't get me wrong, when I make these things he always eats them willingly, even likes them, but he would NEVER request it. Nearly everything he requests involves ground beef. We're in for some single digit weather this next week, which always screams SOUP to me. Maybe he's hearing that too. Go figure.0 -
Oh, I stopped at Costco today for olive oil, sadly they were out of the Tuscan. I guess we'll have to wait for the 2013 crop. Too bad, 2012 was a very good year. It gave me an excuse to buy their regular evoo, which I'd never tried.0 -
Nancy, Oh do I love Pho! Pretty easy around here to get well-made Pho at a restaurant so I don't make it often. Cheaper to eat out then to make at home. What is the cilantro for? The broth? Can you find Thai basil for garnish in your neck of the woods? Generally, I have to head to a Chinese market to buy that... the closer Korean stores don't carry it.
Lacey, the kid gets these colds consistently. Her darn eustathian tubes never "fell" so if she is congested, she gets an ear infection. This cold came directly from the boy I think. She had done so very well. Professors are being kind, but she won't have much time before she needs to take that exam and get those two papers in. Hope she wakes today with more energy.
Darn good thing I had a kid since none of my siblings did. I never got to be an Aunt, which sounds like far more fun to me! And then you will get grand-nieces/nephews, so take those trips before that happens!

Susan, the cilantro is for accompaniment. Sadly, all the Thai basil I have is frozen and I won't be able to find that, but I still have some fresh basil from my garden sitting around in a vase, so this will be a good way to use it. It's not the same by any means, but it's better than none. I wish I could find pho around here, but most people in my little Midwest town would have no idea what you're talking about.
Hope your kid feels better soon, it sounds like she's had a miserable time of it!

Nancy - Looks like more than single digit weather. Snow for you? Sounds like Icemaggedon coming our way. My fav. weathercaster's facebook pg. says even he is making storm preps. I think DH will leave work early if it starts to ice late afternoon/early evening. Put us under winter storm watch yest. which is extremely early for forecasting in this part of US so don't think we'll escape this one. I must be dreaming - this is more like Jan/Feb weather. DH got the heat lamps up in goat barns yest and I stocked up on hay for them. Don't want to think what groc/feed store look like today.
Cooking around here boring. Finished the penne/Vodka sauce yest. Might make tacos today. Need to dig in freezer for some of your ground beef Nancy and make chili in the crockpot. I do have a small plain turkey breast in freezer packaged just like chicken parts. We had only small bit of leftover turkey even with getting DD's by mistake so that still sounds good. I have to make dish for SS party Sat. night if weather cooperates. Planning on making Seaside's black beans/rice with addn. of lemon chicken. That and a packaged Ghirardelli brownie mix.
The olive oil I bought at Central Mkt. is certainly a step above my standard grocery store stuff. I could get used to it. I need to open the bottle of grapeseed oil too.
Nancy - have you tried freezing some of the Thai basil in small ice cube bits? I say that and I'm not sure what freezing does to it but in soup it might be OK. I think I may have to dig out a soup recipe too. Crockpot may get a workout this weekend. Luckily I have a new package of the liners - best invention ever.0
