Debbie- I am so sad to hear you are having to struggle.  Please take care of yourself and keep us updated if you can.  As women we take care of everyone else- but if we don't take care of ourselves?  Take down time, exercise whatever it is that will help you.  Hugs.

Carrie- I hope your Dad is ok, so sorry he is struggling.

Moon- I hope you are feeling well.  Thinking of you.

Bedo- So happy to see you posting!!!  And so happy that things sound wonderful!  Keep checking in with us if you can.  Am I the only one that reads crocheting as crotch?  LOL!

Susan- Hope you are feeling well.

Luvmygoats- Cheetos and caramel??  Did I miss something?

So the party last night was great and I indulged on wine.  OOPS!  I got a little drunk and had a lot of fun!  DS1 had his first sleep over at a friends for the friends birthday and did awesome even though he was very nervous.  (He is only 6)  We went around 9:30 to pick him up and all of the pick up parents ended talking and laughing and stayed all day!  So much for my soup I was going to make!  The kids played and we had bloody Mary's and just laughed.  It was a nice surprise to the day.

So tomorrow I need to do everything I did not do today.  It is 10 days until Christmas and I have not bought one thing.  Both boys have the stomach bug.  But you know what?  I am ok with all of it.  As my mother used to say" keep it simple stupid and don't stress." :D

OK, between the crotching and the pasties, I'm thinking we might get a warning on this thread! LOL

Debbie, I am also hoping that your docs can help you better with that lung capacity. Keeping you in my thoughts....and always impressed with your long thoughtful posts and responses.

Went partying last evening also....a party that is a tradition for many of our peers in town, the people who raised kids when we raised ours....it has been going on yearly for well over twenty years....so it is like a life cycle holiday check in for all of us....both happy sharings and sad....we all re-connect, enjoy good food that our friend, the hostess' brother "caters", and have lots of good conversation. For some reason, I particularly enjoyed last night, and had enough wine that I didn't even mind the short ride home in the blizzard with DH driving (I am a controlling passenger, who prefers to drive).

Am trying to get organized for the family visit this weekend....finally planned the details of our little celebration gathering....I think I will let the local market do the finger food, which can be fairly minimal for when we are having it....3-5PM. It is actually going to be more of a cake party, since we need people to share the funny cake we are having made, but I don't think we can just ask people over for cake before the dinner hour. ;/ It will work out...I'll refer to Laurie's mother's advice! ;)

Susan, sounds like you are starting to feel better...and good thing with all that planning for the Xmas eve dinner. Can't wait to hear the details. We are having Xmas Eve dinner with our next door neighbors. The wife and a good friend of hers are planning a veritable feast from Ina Garten, and she asked me to bring cheese and crackers!! (wonder if she doesn't really like my cooking;) I insisted I also bring a greek salad (we are likely having lamb for an entree).

Our friend who has us over for Xmas dinner asked me today to bring my kale salad (for 17!). They ask for it every year, which pleases this kale queen to no end! Debbie, thanks for that recipe!

Bedo, sounds like you are enjoying so many interesting aspects of life in AK.....your soup ingredients are very close to my favorite kale soup. Enjoy it!

So, this year, Christmas Eve dinner is the REAL dinner. Last year, it turns out that I was mighty close to a coma. I never got to eat the prime rib roast, or any of the other foods I must have prepared. This is the first year without my father, and well, my Mother is just feeling sad. So, throw out any traditions, and go casual. This is version 1:

If you send me some, Susan, I will have fresh caught halibut packaged and sent to you fresh and cold at the packaging center. overnight. Kidding, I have too many requests and I haven't even gone fishing.

Goats and all, it's time to watch " It's a wonderful life"

And make real popcorn with drizzled butter, salt and real grated parmesean cheese while it's still hot. It is yummy.

Have to go for a while. Start work for the week again tomorrow

Bedo- I am sure all will be forgiven ha ha! Love popcorn with parmesan and sea salt and also hot sauce. I will watch the video after I send this post off. Don't work to hard and be safe

Susan- And Nancy- Thank you! Susan, your dinner sounds wonderful it had me drooling, I hope you will have help with that long list of foods you are preparing, sounds like a lot. I am so glad you are better this year compared to how last year at this time was for you. I wish you peace and comfort, the holidays can be especially hard, hugs for your mom too!!

Monica-I hope you are doing ok!

Georgie- Thanks for the recipe the mango's sound good with the kale

Luvmygoats- We don't have a specialist here in town, it is in Portland about 3 hours away, my Dr did set up an app last year for me but I had so much going on I didn't go. Wish I would of taken the time, but better late than never I guess!

Laurie- No, I also got the crotch thing right away ha ha!! that's why I told her in church her sins will be forgiving, but she slept through church, does that still count? ha ha! Sorry to hear the boys are sick, hopefully it won't get you too so you can get the things done that you need to, you seem to be good at getting a lot done in a short time. Your mom was very smart! My mom used to say, "Nothing is ever as it seems" meaning it never ends up being as bad as we think it will. At least that is how I took it, and she was always usually right!

Lacey- Glad you enjoyed your party and let DH drive you home even though you prefer to drive. I would rather drive to, but DH does not like me too with being on steroids I get road rage, in fact you ought to see me in the grocery store, this once sweet person, now on steroids have shopping cart rage, it's like people get out of my way or I will run you over! ha! I wouldn't really though!

Joyce- Hope you are doing Ok, you have been on my mind a lot. I sure miss Michelle as I know you do and every one else here too.

    Love and hugs to all

So, I decided to make bagels but unfortunately didn't make the decision until 2 p.m. This means that after allowing the sponge to rise for 2 hours, I'll be deep into bagel stuff into the time I would normally be starting dinner. Therefore, dinner is going to be a simple affair, mixed flavored pastas (imagine that lol) with a simple parmesan garlic cream sauce and some broccoli or roasted tomatoes thrown in. There are a couple of pieces of sourdough left that I'll toast with some parmesan and olive oil, and add a small salad.

I've been digging out recipes and menus and have pretty much decided what we're eating for Christmas eve dinner. There are three things that we always have to have (I've tried getting out of it, didn't work): spiced apple rings, green beans (haricots verts if I can get them) with pancetta, peppers, cherry tomatoes and parmesan and a special waldorf salad made with whipped cream. Everything else changes, but these three things must be made (or so I'm told). Anyway, the other dishes will be Beef Wellington, either one large or individual, I'm not sure which yet, a hasselback potato casserole and maybe a simple salad. Because of the puff pastry, we probably won't do bread. I've ditched the yule stump for something a little less dramatic -- I decided I didn't need the aggravation. And I'm quite sure there would have been some. Instead we're having. Toasted Coconut Raspberry Cheesecake. That's assuming I can get fresh raspberries at Costco, and I think I can. It's more festive looking anyway.

Oh yes! Yule log be gone.....:)

Got home late this afternoon from errands and a follow up trip to the eye doc to have my retina re-examined, after all that flashing and "flying spiders" that were crowding my visual field. He had told me a month ago that my brain would adapt to the visual annoyances, and it has. The human brain is amazing! Good news is that my retina looks healthy, now that the vitreous sac is finished pulling away. Oh sweet aging....can't complain!

So I wanted to make fish for dinner again, and am glad that the guy at the market told me that the cod was brought in on FRIDAY (!). Ick! So I got shrimp and we had greek shrimp over spinach with mushrooms/onions/mint and feta, and black rice for DH. It was good.

Tonight I have to start making a dent in gift wrapping.....then start clearing out the house....there is so much that could be (appealing and....) dangerous to the little ones.

Hope you are all in better shape for the holiday than I! Reciting Lauries's mother's words......again and again, and I hope the kids are better today, Laurie.

Lacey- My father had the same type of eye issues and had black floaters etc through his vision and was also shocked how youe brain blocks them out, amazing!

I have not bought one present.  Ds1 is doing better bit stayed home form school.  I woke up with a killer cold.  Go figure.  But by this afternoon I could at least function.  I was craving soup and made an easy split pea, roasted a chicken for dinner  and got laundry done.  It will be an early to bed night for me.  I have almost no voice and am dragging.  Ohwell- it will all get done one way or another and I am not stressing.  At least not too much.  I really only need a day of shopping and a 1/2 day of wrapping.  A grocery shopping trip etc.  I have nine days left right? :-D

Laurie, Hope you recover quickly. And yes, you have nine whole days..... plenty of time to buy for young boys. Children are so easy to shop for.

Dinner tonight was fried chicken [thighs], biscuits and a ton of green beans. I love my chicken guy... I asked for three large and three small, sized the same by size [if that makes sense.] I opened the packages, and that is exactly what I go. I still couldn't eat a whole thigh, but at least I had a shot at it. The kids were thrilled to have dinner made for them. The girl kid is making mini-quiches in the kitchen now. This is her latest meal-planning-for-eating-at-a-school plan. She takes one; he takes two. Both happy.

I hohohoed today, and now know that every stocking will have something. Man do I love the dollar store for this sort of thing. Finally feeling better post-Faslodex. I am grateful that it works so well for me, but the monthly cycle does have those couple of down days.

Susan, so glad you've turned the corner.

DH has come down wIth a nasty cold (sigh!)  I'm avoiding him as tactfully as possible. The way this goes is he'll be over it by Christmas and I'll just be getting started with it in time to feel like crap when I have the most to do.

    Nancy,

Maybe you could move to a hotel that has a spa for a few days? I mean, anything to preserve the Christmas holiday! [There is a Christmas special in there somewhere.]

    Nancy,

So your three must haves... I have no idea what two of them are! Sometimes I just don't have the correct cultural references! A wellington is a very special meal indeed. I love mushrooms with a Wellington. Some roasted mushrooms would be delicious! I would consider a spinach salad. That becomes a play on that steakhouse standard of beef with spinach.

The dessert is gorgeous. No one here would eat the coconut, but I would! I too am counting on Costco having raspberries just before Christmas. We can join forces for Raspberry Hope.

Oh MY Nance  I am licking the computer screen. Will NOT eat my phone like Eric.

Laurie  Not much shopping here either, same as you, I can do it all in a day if I know what I am after and have a good plan of attack. Waiting for daughter to get home and we will shop together. Gonna find a bicycle for my DH as we want to bike in NC. I have always had a bike....me and the kids biked all around the neighborhood when they were young, but his old bike is from his college days.

I have leftover ham and will prob throw some kind of soup together.  Only 3 degrees on my way home from work last night. Really wanted something hot for dinner, but did not plan ahead and there wasn't a thing in the house. tonight I will be prepared.

Susan as always  super impressed with your menu!

Debbie really hope those specialist have an answer for you. Time to take care of yourself for a change.

Susan, spinach salad is a great idea. Half of the party would not eat it cooked, but everyone will eat it in a salad. The Wellington will have a duxelles of mushrooms and shallots inside the pastry crust. The two picky eaters amongst us will never know.

Carrie, I gave my husband a bike for Christmas once. He was excited as a little kid. I don't think he had ever had his own bike. He is one of 5 kids and always got the older sibling's bike. When we retired we bought new bikes which we take with us on our southern travels. We love them.

Getting ready for my annual holiday party for the family...busy....busy with shopping, etc. This year I will make my signature lasagna with a salad and some eggplant parm for the vegetarians. Not going to be as big a crowd this year...DS and DDIL are not coming as she just miscarried last week and they are too sad to attend the family gathering. It was very early in the pregnancy, but still, they were excited about it.

Finally I have all my gifts purchased and bagged (I now use gift bags from the dollar store) rather than wrapped. It saves time and possibly some money as the bags are only $1.00 each. They also can be reused. Save a tree...lol!

Wishing everyone a very merry Christmas and a Happy New Year!

I am trying to eat more veggies....made green beans with red potatoes, onion, garlic and half the bacon I would normally use.

  • Nancy and Susan, your Christmas meals sounds delicious.  Lucky guests at your houses.

I have not done gift wrapping either but it should take me about 5 minutes!  Dh just bought himself an IPad and some new golf wedges and...on and on.  I bought myself a new driver and 3 wood metal either in late Nov. or Dec.  I treated myself to an expensive injection session at the dermatologist.  DH would faint if he knew what that cost!  Plus I want to buy a piece or two of jewelry on our trip to Austrailia and New Zealand in Jan.  So no Christmas presents because we like to buy for ourselves.

For dinner tonight I'll try cooking the spaghetti squash that has been sitting on the island in the kitchen.  I have some home-made tomato sauce in the freezer.  I should also cook some cauliflower.  And make a salad.  But before all that, I'll have a rye whiskey old-fashioned.  Rye is preferable to bourbon for diabetics (I'm prediabetic) because it isn't made from corn.

This afternoon I downloaded 7 library books to my Kindle Fire.  All I had to do was access our parish library, look through the huge selection of books and download them.  Amazing how easy and useful technology can be.  I still like reading books printed on paper but it's nice to have all that reading in a convenient-to-carry gadget.

Bedo, I know how to "crotch," too!  I have even crotched Christmas gifts and inflicted them upon people.  One year I made dozens of "retro" pot holders and hot pads.  Anybody want one?  They're cute!  Honest!  I'll post pictures.

Tonight's dinner was leftover chicken, a huge green salad with a simple vinaigrette, and some leek-potato soup. We have about 5 or 6 inches of snow on the ground from today's storm, and it hasn't finished coming out of the sky. Really not a storm. More like an inconvenience. Glad I wasn't trying to commute home at 5 though!

    I love soup!

This latest A/C tx has thrown me for a loop and I'm sleeping 18-20 hours a day, but I haven't missed reading your posts.  This is one of my favorite threads even though unfortunately food tastes really yucky again - just in time for Christmas.  I'm not cooking much due to lingering smells so meals are weird.  Tonight I had a can of smoked oysters and a glass of Tang.  Trying to eat extra iron & avoid a potential transfusion.

Debbie - so sorry to hear about your lung issues.  I too am hoping the specialist will have some good suggestions.  Laurie - your FL trip sounded fun.  Sorry you had to come home to more colds.  Be sure to get enough rest (ha ha - with little kids).  Bedo - I am so jealous.  Your location sounds gorgeous and there seem to be lots of diversions!!  Susan & Nancy - sigh !!!  How could any of us match your elegant sounding menus.  Carole - I may take you up on the retro crotch stuff.  I love the dish cloths that I've found at craft fairs.  Hi to everyone else & sorry not to write individual responses.

Major Costco trip today. Got the tenderloin and raspberries (yay!) Also ten billion other things, including some wild smoked salmon to go with my bagels. Brought home a Costco rotisserie chicken for dinner but dh wants carry out, so chicken will be tomorrow. Which is good because of course I have a major sore throat which can only mean THE COLD IS COMING DAMMIT!

    Nancy,

NOOOOOOOOOOOOOOOOOOOOOOOOOOOOOO! Which smoked salmon do you buy at Costco? I have settled on the Norwegian lately.

Dinner tonight was a pork and broccoli stir fry. For whatever reason, it was particularly good tonight. We ate really early. The small soup serving at lunch left us hungry, even then!

Susan, I've never gotten any there previously. I had the Norwegian in my hand but ended up with the Alaskan sockeye mainly because it was more the package size that I needed. I'm the only one here that eats it.

Dinners will be skimpy around here till the weekend. DH working until about 10:30 at least tonight and tomorrow and until midnight Friday then close to hour drive home. PTL he is off this weekend. I think tonight will be bacon, eggs, biscuits because I can make it here shortly and warm it up for him. I expect tonight/tomorrow he will eat and go right to bed. At least he's not going in early, Friday not until 3:30. The joy of retail.

I get to go to FW on Friday but have to sandwich shopping around 2 doc appts. Albertsons has Butterball turkey breasts buy1/get 1. Our local has it I think same for 1.99/lb. Will have to play one against the other. I think the buy 1/get 1 prob. is better deal. There is an Albertsons just across from 1st doc so I will shop/snoop. I will be taking my Yeti cooler with me but will wait until late in day to buy turkey.

Anyone know of another high end grocery chain that might come to Texas? I don't think it's Whole Foods - they've just put a new one in somewhere out NE. Teaser in business section about new groc. not yet named in a new development truly not far from the Central Mkt/TJs/Sprouts road. Might just be a local venture. Not on a road I travel often just because I'm usually on CM/TJ/S parallel road. Will have to make a point to drive over there in a few weeks time. DH teases me because I read the business sect. with a fine toothed comb. Bestest info found there esp. with headline of "WestBend to have high-end grocery store". Lol.

I think Christmas Day we will have turkey breast, sweet potatoes, ambrosia, maybe sugar snap peas, rolls and I don't know what for dessert. I need to make most ahead so we can eat and DD can scoot home. That or I will flip it and have a brunchy type thing and have the heavier meal for Christmas Eve since I can cook all day.
