So...whats for dinner?

Sorry, I have no idea what I'm doing, but some sort of miracle has occurred and here is a picture. Working all the time.
- Beer for dinner.

hi everyone. I am feeling remarkably good so far! Too good. I have to keep reminding myself it's only been a week. I've been off pain meds since Tuesday. Only on my regular Tramadol not hydrocodone. One incision is about 20 inches long where he took my mudflaps off. LOL that is on my r side. So it hurts more. But my knees are cooperating and get me out of the chairs do all in all I'm doing well.
I see everyone has been busy cooking up a storm. Wow! I'll be lucky to get a ham dinner made. I have to decide if I'm gonna order roast beef slices for the neighborhood party or maybe just do pork tenderloins medallions I cook myself. DH says do it the easy way. My pride says cook. My incisions may win and I'll order the roast beef slices! LOL
Debbie I am so sorry you are having those breathing issues. I hope they can do something to relieve you soon. Minus feel better. Susan I don't know how you manage all that you do! Eric, I hope the phone you ate didn't make you ill. Although I see why you ate it! Lol. Nance you and susan both want to adopt me right? LOL. Bedo I love the totem!
To everyone i have not mentioned by name, you are in my heart and in my brain. Just a bit lost in there! LOL Much love to all.

Moon, I am so glad that you're doing OK. I hope that you continue to get better every day and am glad that you are not in too much pain. I hope that you stay warm and safe over the holidays.
Minus Tang and oysters. Yum was my first thought. I can see how that would be good. Go with whatever you crave

Thanks for the cabbage recipes, I have 1/2 head left that I couldn't think what to do with .
Baby sitting dog. tomorrow hiking, and trying to crochet. It's really hard. I don't know how I did it when I was 8. I thought there would be many snow flakes to hang on the windows and send to friends. There is only one thread that looks like a single helix from pulling out my work over and over again.
I hope you all have a wonderful weekend.
I'm making Amish corn casserole

Monica, glad you are doing so well! I'm with dh, use the easy button.
Ice storm here today. Woke up to a quarter inch off ice on everything. Supposed to continue until midnight then snow on top of that. Lovely. Thankfully, we don't have anywhere to go for the next couple of days but we're supposed to be -1 for a low Monday night, so the stuff isn't going away anytime soon. Oh how I hate winter.
Bedo, love the totem too. Glad to see you're continuing your adventurous eating lol!

Moon, I so wish I could still do more! Feel like I am giving into cancer/growing older as I have had to reduce the number of hours I spend being productive. So pleased to hear how you are doing. For Christmas dinner, you should do whatever makes you happy. Perhaps a combination of things you buy prepared, and then something special that you make. That way easy and pride can co-exist?
I have two batches of cheese crackers made. One uses cheese powder and should be fairly Cheez-It like and the other is a more sophisticated version with gruyere. They need to chill for a bit. Then I will bake a little of both and there will be a family tasting and vote. Hope to make the pate brisee as well today. These will be the crusts for the fruit tarts. Might even manage the pastry cream, though I need to peruse some recipes since I didn't care for the last one that I made. WAY too much cornstarch.
That totem pole is quite impressive. When we used to give performances on the Indian reservations in Montana, we often saw these. Very different styles however, which makes sense.
Hope Lacey is enjoying her active grandchildren about now. I bet her house has been turned a bit upside down.
Nancy, I HATE HATE HATE ice and it is headed our way. We are really hoping that my Mother doesn't get stuck up in the North Country for Christmas.

Wanted to say Thanks for all the warm thoughts.
susan I hope your mother makes it with the weather too.
Oh, Bedo, thread Crocheting IS HARD. The thread keeps wanting to turn around and that is why you are having so much trouble. My suggestion is to make the snowflake pattern in a yarn first. It's easier to see where the yarn needs to go into. Then once you see what it's supposed to be like it's easier to do the same thing in thread. You'll have Snowflakes piled up before you know it. And those kind don't have to be shoveled! LOL. Otherwise there are some very pretty snowflakes made of paper on the Internet to hang around.
Yeah. I think I'll do the Roast beef sandwiches for the progressive dinner. We will have a nice salad, perhaps spinach with strawberries or raspberries. Potato casserole and green beans and maybe corn. Since we have a house with apps and another with dessert and drinks that may even be too much. But any leftovers will be used at my DH side family gathering the next day so no problem. For that, I am making my famous desserts. Pumpkin cake and Christmas wreath. The pumpkin cake is a box mix of chocolate cake and a can of pumpkin. Just mix them together till it looks like brownie mix. Bake. Cover with whipped cream when cool. It tastes really good. The wreaths are my favorite. Take a rice crispie marshmallow mix. Sub Cornflakes (or mix wheat ie as or bran with the cornflakes) use green food color in the marshmallow mix. When warm form into 1 big one or 3 to 4 on 9 in plates into wreaths. The messier the more they look like wreaths. Add cinnamon red hots before they cool. You can also use craisens to look like the Holly berries but the red hots are brighter. Let cool and then use fruit by the foot to make pretty bows. They look so impressive for a few minutes work. I'll try to post a pic when I make one. But who doesn't love rice crispie squares?
Much love to all.

Susan - growing old is one thing, but giving into cancer NOT. I could not do 1/2 of what you do and don't know how you do it. Even with just the 3 of us and easy/peasy menu I'm stressing. Much of mine is premade anyway. DH doesn't care and prefers less mess. I'm trying to make some things today/tomorrow that I can freeze extras for DD to take home. Going to do overnight eggnog french toast casserole for Christmas morning - that is if someone gets in to clean out refrig. Must find room for turkey breast also. I hope your DM makes it safely to your house.
Nancy - sorry for the ice/snow storm. In the 40s and pouring rain.
Bedo - love the totem pole. Sounds like you have integrated well into life up there. I bought a crochet snowflake book last year and it still sits where I put it. Now I have never crocheted so that might be one problem. My DM was an expert. I still have many things she made.
Carole - looks like severe weather headed our way. Stay safe. I still have not put one ornament on our skinny tree. I think that must be an afternoon project.
Monica - glad you are feeling on the upswing. I'm with your DH take the easy route.
Yes, Nancy, I too got the little old lady cough on lisinopril. Now on metoprolol for BP and my annoying PVCs. DH has no problem with it.

I admire all you knitters and crocheters! I've never had the patience (and now with arthritis, dexterity) for needle arts, but I do appreciate the skill. I have a collection of crocheted snowflakes that my grandmother made. They are quite yellow with age but I think they are still beautiful.

I come from a long line of women who do NOT crochet. No snowflakes here! There have been a few knitters, and until the Industrial Revolution, they all learned to do needlepoint and embroidery, but not a crochet outlier anywhere.

Follow up on the cheese crackers. The King Arthur ones, the ones that used cheese powder, were good, but the winners were the gruyere crackers. A really sophisticated version of cheese-its!

Hard to tell in this photo, but they are only about 1/8" high, and very crispy. The red flecks are aleppo peppers, but I think these would be equally delicious with some rosemary.

Susan, that's not nearly enough . . .

No, that is just a test run, after the tasting. The rest of the dough is in the fridge. Will cook those up on Monday. Don't want them to get stale.

We could form a lisinopril club! Yes, it does or can cause an irritating little cough. I started on 5 mg and was on 10 mg when arimidex sent me on to something stronger and more expensive, Benicor. DH still takes the 10 mg. It's on the cheapie generic lists.
Nancy, I didn't realize it got so cold in Missouri. We're in short sleeves again today with doors open to admit humid air. It's supposed to rain tonight in advance of a cold front. I'm hoping by tomorrow night we can enjoy the fireplace and sleep under blanket and comforter.
Susan, I don't know if my mind could handle a "busy" Susan if the current Susan isn't busy and amazingly industrious. I've never know anyone to make their own cheezits! Yours sound amazing. I love gruyere cheese. Hmm. The thought just occurred that a good fundraiser would be the sale of chances for a meal at your house.
Love the picture, Bedo. I have one of those beautiful snowflakes. Year-round it hangs on corner of the frame of a little painting of an outdoor scene. I thought it was tatting, but maybe it's thread crochet. I've always crocheted yarn. The fun is all the colors and textures of the yarn. Very satisfying.
Another day of no cooking except for my breakfast frittata. Amusing picture of me and dh in the kitchen, each with our own little omelet pan and our own little cutting board with our chopped ingredients. Tomato, mushrooms, and a good mozzarella on mine. The broiler is on Hi. Chopped onion, mushrooms, tomato and chopped colored peppers on dh's board.
In the early afternoon we walked across the back yard to a neighbor's house to attend their Christmas open house. The goodies we consumed took care of lunch and dinner.
I think I'll go and brew a cup of coffee. I'm loving my little Keurig I found on sale a few weeks ago.

Carole, we're having an unusually cold winter already, considering it was technically fall until today! Weather here is nutso, St. Louis had 70 degree temps (only 59 for us) yesterday. There's a joke that goes around here that if you have had the air conditioning and the heat on in the same day, you must be from Missouri.
I really want a keurig but I'm afraid of all the bad reviews about them not lasting long. Costco has a pretty good deal on them that includes 60 k cups but I haven't bit yet.

I have been trying to keep up with posts with no luck. Sorry- I wish I could respond to you all. Just thought I would post where I have been off the grid for a few days.
I don't even know where I left off? Ds2 got the stomach flu- then I did. On top of the cold I already had I was miserable. Luckily DH. neighbors and family helped and I stayed in bed for 24 hours. As of last night we had not bought one gift. I went to sleep with the boys early and DH went shopping. This morning I felt well enough that I headed out first thing for about 2 hours and finished the rest of our list off. We are 98% done DS2 just needs a couple more things to even the pile out. Dh is going to go to the grocery store for me in the morning as I do not drive in bad weather and we are supposed to have an ice storm. I will sen him with a list- he will call me 100 times- but he will get the job done. God bless him.
My neighbor and I have agreed to split the day Monday- I take all her kids for the morning so she can wrap and she takes mine for the afternoon so I can wrap. I will cook the next two days as I go. And there you have it! Christmas in 5 days! Three people with stomach flu, 2 with colds and a DH working 60+ hours!!! And I can still laugh

Hope everyone is well!

Laurie, again, I am in awe of you!

Oh Laurie - you have really had a tough year. Looks like your Christmas is coming together. Glad you can still laugh. Hope you all feel better by Christmas Eve.
Nance - just talked to a friend who loves her Keurig but has relatively frequent problems due to our hard water. Apparently not as easy to clean as our old percs.
Bedo - now i'm even more jealous. How are you finding time to read? (oops-other thread). I love to make coleslaw with my cabbage.
Moon - do you have to delete anything from the chocolate cake box or just add pumpkin?
Garden - wow, you smoke your own fresh caught salmon. Yum.
Dinner tonight was appetizers w/two old friends I don't see often anymore. Cold boiled shrimp (my offering - from Costco I'm afraid), spinach balls, some kind 'tiny toasts' with Greek olives, etc. on cut up english muffins, mini quiches, tiny chicken tenders. Nothing else needed

Luv - forgot to say - wish you hadn't sent this weather our way. I don't mind the cold front & the rain - but the tornadoes? A friend's daughter had her fence just knocked flat by the wind.

Laurie, you are quite the woman! I am astonished by what you can handle in two hours or less. Hope you and all the men in your life have a wonderful week.
Costco ROCKS! Anything you bring to a gathering from Costco is just fine.
I have no interest in a Keurig. Someday I will talk about how we procure and then create our daily coffee. Needless to say, we don't take anything close to the easy way to consuming our caffeine. Is that a surprise?
Ice is on the way to the North Country. My mother is nervous. Not sure she will get here for Christmas. I think it will all work out.

everyone stay safe with strange weather! We are supposed to get a lot of snow tonite. We'll see. LOL
Minus, just take the dry mix in the box mix it with the can of pumpkin. Nothing else. No water oil egg. Nothing. Empty the can of pumpkin dump the dry cake mix on top. Mix. That's it. Choc cake mix tastes like chocolate. White or yellow cake is tastes like pumpkin. Spice cake mix is awesome.

Moon,
I am averting my eyes!

Sorry Minus Two about the weather. I thought yest. we were in for it. Got humid, hot, still but then cold front came right thru. Stay safe. It poured here through about 12-1 pm then cleared off some. And to think that today is only the 1st day of winter. Yikes.
Laurie - I'm in awe as well with your coping skills. Sounds like you have a great neighbor mom to trade kids with. Hopefully illness will leave your family alone for a while and visit someone else's.
Susan - I bought a French press coffeemaker and have yet to use it. I am back some to using my Melita one cup at a time hot water drip but right now some hot choc. sounds good after my shower.

Lol @susan. Oh no the food police! LOL but it actually is pretty good and so easy. So use an organic cake mix! LOL

Susan, no not surprised. I would expect no less lol!

Wow. Laurie....an especially bad time to get sick... Amazing that you can get it all done with the flu and a cold.. It's good having the neighbors to help.. It's weird out here....I think it's the remote controlled garage doors..the folks drive up, open the door, drive in, close it and go in... I've met the neighbors across the street and next door (we're on the corner), but in 10 years, we haven't met the neighbors 2 houses down the street. I don't really like it, but I never see them to say hi.
Moon, I agree with everyone else; take it easy.....I guess you could take a chair and relax in it while things cook. I did that when I broke my ankle a very long time ago.
Debbie, I hope the doctors can get you breathing easier. My mom gets short of breath when she walks and it frustrates her a lot--even at almost 96 years old.
There is ice out here, but one has to drive a couple of hours to find it. And I'm not looking for it. Sharon and DD may go up to Sunrise (in the White Mountains--Arizona has them too) to ski/snowboard. I'll probably stay down here. I like cross country skiing, but don't particularly like the downhill skiing....They usually end up having to re-groom the trails after each of my down hill runs.. :-)
I'm being paged to help DD wrap stuff. So, off to that. If I didn't mention you, it's *NOT* because I forgot you.
Eric

Moon - thanks for the recipe.
Susan & Nancy - sorry to be so basic with all your mouth-watering ideas. I really do know how to make homemade bread & clam chowder & lemon meringue pie & lots of things. I just don't cook elaborate things often since I live by myself and my only son & DIL are in CA. BC (before cancer) I used to cook more, so maybe again some day.

I've been trying to keep up with all your posts since before T-giving! I've enjoyed the vintage turkey dishes discussion and pictures. My sister is the keeper of the family turkey dishes and her kids are now old enough that she doesn't worry about them breaking them. I've also enjoyed all your holiday recipes, holiday prep and shopping and the pictures of your finished products.
This is my busy time of year at work so my cooking has been relegated to weekends. And 4 years and two days to the day of my original diagnosis, I found out I have high grade DCIS with microinvasion on the the other side. That same week, my husband was out of town, it was -10 with the windchill, it snowed twice and I had mouse in my kitchen drawer. It was a hard week. My dinners alternated between cereal with coconut milk and Christmas cookies!
I had an MRI, surgical consult last week and will most likely have lumpectomy at the end of January and then on to radiation. They've referred me to genetics counseling even though I have no family history. I can't believe I'm dealing with this again.
On on positive note, I received a great Christmas gift from a client that would appeal to all you cooks...It was a gift box from Penzey's Spices called "Kind Heart". It has 8 spices, Oregano, Cinnamon, Dill Weed, Paprika, Basil, Garlic, Ginger, Fresh Ground Pepper, tip cards for each spice, a kind heart magnet, pin and a very colorful tea towel. The enclosure reads: "The Kind Heart. Kindness brings such great comfort to our lives. Even the littlest acts of kindness have a way of spiraling into so much more. Kindness is at the heart of cooking and at the heart of making life great. In little acts of kindness is the magic to transform our lives into something wonderful." If I was more proficient, I would attach a picture. It is so cute and reasonably priced at $19.95.
Thank you all for being that kind heart and for sharing your kind heart with me. Thinking of everyone who has had their own and/or family health issues and who have lost loved ones this year. Take care, Gina

Minus, You mustn't apologize for what you eat. My goodness, cooking for one is such a hard thing. I fear that if I had no one else to feed I would live on cottage cheese and triscuits, with an occasional olive for color. Both my sister and mother live alone, and neither one can get very excited about that whole cooking thing. My sister, once upon a time, did a lot of cooking, but her enthusiasm has waned. She lives on soup now... makes a pot and eats it for days. But then she gets bored of it and her car drives itself to Starbucks for a treat. I try to stock my mother's fridge from time to time with one serving meals, but she lives very far away, so I can't do it too often. She will go home after Christmas with a bag of things to keep her going for a bit.
gina, that is a very kind and thoughtful gift. Penzey's makes the most lovely gift boxes. My local store is in the strangest building. It was originally built to be a Red Lobster, or one of those fast food seafood places. Then it was a Boston Market. So, the Penzey's is in a building that has that Red Lobster "look" plopped in the middle of a parking lot.
Today I begin the cooking in ernest and it is clear that my menu might be a tad too big. The kid, who claimed she would help, has yet to join me in the kitchen! So this holiday is no different than any other!

(((Gina))) I am sorry you have to go through this again.

Gina, I'm so sorry you have to do this dance yet again. Whatever your treatment road, I hope it treats you kindly.
Minus, you needn't apologize to me about cooking, much of what I do is basic, I just may not post it. The two planned "fancy" meals I do are Thanksgiving and Christmas. Like Susan, I like cooking for others. If left to my own devices I'd live mostly on bread and cheese or cereal for dinner. Though cooking has always been a hobby, I never considered myself a baker. But since bc, I've found baking very therapeutic and enjoyable. I can't eat much of what I produce (diabetic) so it gets fed to others.
I love reading about what others are cooking, no matter what it is, because it gives me a glimpse into your lives and personalities, as it would with any of those whom I consider friends.
