    SmileSmileok...I have always wanted to make banger and mash and today was the day because tomorrow is my last chemo and my taste buds will only go down from here!  Turned out pretty good too.

    I love to hear about all of your cooking adventures!  I love to hear all your stories too!

    And Minus....don't feel bad about not cooking much.  I remember how much of a chore it was to cook alone.  For me, a large part of the joy of cooking comes from being with others and enjoying their company in the kitchen.  It doesn't matter if I'm cooking or keeping somebody company while they're cooking...and when there is no company...it's not much fun at all.

    This thread is a virtual kitchen.  The only thing missing is the smell of something cooking.

    ok. Don't know what is wrong with me. We are snowed in pretty deep. LOL.  Got at least 12 inches on the ground. But it's pretty warm it's about 24 degrees. My DH is out snowblowing. But for breakfast I made potato pancakes. I haven't made them for about 15 years. Must be the snow.... LOL

    It's 30 degrees here, but not warm enough to melt the 1/4 to 1/2 inch ice coating everything. If we had gotten some snow, at least you could walk on the stuff, but no such luck. Dh has had to de-ice the satellite dish twice now.

    Speaking of good smells, I just baked some Old Bay nuts (sounds like a reality tv show) and boy did they make the house smell good. Even with my sniffly nose I can smell them.

    Big cooking prep day tomorrow so something simple tonight -- tikka masala with some brown rice and naan. This will use up the last of the rotisserie chicken and make room in the fridge, which I desperately need.

    Sooo yesterday was 54 and rained cats and dogs for about 12 hrs straight!  So miserable and all of the snow we had is gone.

    Gina  -10? Yikes!  So sorry on your new diagnosis... you have had a rough week. Hugs for a better Holiday week ahead.

    We did a potluck dinner at a friends last night, with soup, calzones, pizza, and lots of other goodies.  quite a feast and we all sat mesmerized by the movie "the Wizard of OZ"  Saw lots of details that I don't remember from childhood.  We all laughed and sang...lots of fun.

    Tonight we are doing strips steaks out on the grill, baked potatos and veges.  Must take advantage of the warm weather and get the grill going.  Kids request. They are busy in the kitchen making cookies.

    Minus, I think we are eating twins, like Susan's sister, I live on soup and pull random things out of the cupboard or fridge for dinner. sometimes I get creative. Today I'm putting canned salmon, white beans, onion, olive oil and ? together. I like to cook best in the summer when my garden is growing. I make soup in the crockpot and then freeze portions so I always have a variety.

    Moon and all. In an hour I have to face my knitting and crocheting group.  They will display their work and I will bring my "string of shame" I looked up paper snow flakes under Martha Stewart's children's crafts.  I can do it.  I will ask for a crochet hook and yarn as think as a pencil

    I've been walking up and down the steep hills of the island this weekend and have met a few potential fiddle teachers. I will always stink until I go home in June, then will practice a LOT as I will take 4-6 months off before going to Ecuador or Costa Rica for some immersion Spanish.

    Today I have to make something with all the potatoes and still the 1/2 cabbage on hand.

    Umm Nancy Old Bay nuts. Tell me more. Your ice storm sounds like ours but no electric/tree problems. Just no walking where the sun doesn't shine for several days. My path to goat yard is like that. I made it to storage shed, fence, along fence then finally broke out onto thawed grass.

    Made what I hope is the last grocery run but forgot pineapple for ambrosia. Almost got a fresh one but then DH would have to cut it up and not sure I can deal with that. Hope I have a can in cupboard. DH & DD wouldn't know what is proper in it anyway.

    Well, chicken did not get thawed this am so enchiladas tonight. Baked chicken tomorrow and leftovers into chicken tetrazzini for Christmas Eve. I kinda winged recipe in grocery - chicken, creamed soup, cream, onion, mushrooms, noodles, herbs, garlic. I pretty much had everything. Good thing I went, DH had almost finished the eggnog that I need for French toast.

    Bedo sister I love you. Stay warm and safe. Alaska to Costa Rica is a big change, I guess not so much to Ecuador. No whale blubber in either I would venture to say.

    Gina - We are glad to have your join our group but sad for the reason. So you're onto another LX in January. I only cook for myself and DH so we have a lot of skillet meal stuff but I love leftovers and he "tolerates" them. I'm trying to make some things to send with DD when she comes out (a whole hour away) Christmas. I remembered the pizzas DB sent came in a styrofoam cooler and guess what she's getting her meals in. I'll send turkey and trimmings, enchiladas, chicken tetrazzini and meatloaf. Pretty good. She DOES not cook but eats lunch in company cafeteria. Poor girl did not get home from DB's with her turkey leftovers - I mistakenly took hers and she got my green beans. Must make sure she is well fortified. Your spice gift sounds wonderful as well as the accompanying poem. Keep us posted and I will be praying for you.

    Luv, the actual name is Chesapeake  Bay Party Nuts (which could still be a reality show.)  It's easy.

    2 tbs melted butter

    2 tbs Worcestershire sauce

    1/2 tsp garlic powder

    1/2 tsp Louisiana hot sauce

    2 tsp Old Bay seasoning

    2 cups pecan halves

    2 cups whole almonds

    Mix them all up together and bake for 30 minutes on a foil lined baking sheet at 300 degrees, stirring twice. Cool and store in an airtight container.

    This time I used a can of deluxe mixed nuts which created a saltier snack. I warn you, they are addictive.

    Joyce. I am sorry about your aunt. You have had a very rough year. I am glad Rick will be spending time with you. 

    Nancy those nuts look like they're amazing. Yum. 

    Susan, the potato pancakes are savory. Basically shredded potato, shredded onion, couple tablespoons flour, egg salt. I add A Couple Dashes nutmeg and I do add baking powder and baking soda. That's how mom made them. You panfry them with a little bit of oil slow enough to cook the raw potato. Serve with applesauce and or sour cream. Unless you are a unusual polish person who hates sour cream. LOL 

    Bedo cook those Potatos with the cabbage it's yummy! 

    And yes, Mr. MOON planned to get here yesterday to snowblow! My neighbors who normally do that are on vacation. So he did it for them and helped others too. Sometimes my DH can be real nice! Lol. 

    Went to Costco and bought the roast beef slices. Also brought the pulled pork. I'll make the sauce for that. But the pork is pretty good so not much to be done for that either. I'll make a potato casserole and green beans. Also a salad of spinach with berries. It's so pretty. I'll have that for next Saturday so I didn't buy the greens yet. 

    For Christmas I don't even know if anybody but my DH will show up. We are having the kids on the 4 of Jan. It's the only time all 4 and spouses can make it. With two in health care and one with a new job and no seniority you do what you can. So i don't know if I'll bake the ham or just do some pork tenderloins for the two of us. Oh well. Much love to all.

    I lost this thread 2 or 3 weeks ago and only realized it tonight so have been catching up. 

    My DH has not been doing well for several months, would not see a Dr.  He had not been to a Dr for 5 years and no longer was considered a patient by his former one.  When he finally agreed to go to a Dr aa week ago last Thursday I could not find one that would take him.  That night at bowling I talked to a Nurse Practioner that has a clinic right here in our community.  He saw him the next morning and after less than 15 min. called an ambulance.  He came home Tuesday evening. He seems better but still is not good.  He seesTom again tommorrow.  Please keep him in your prayers.

    Chabba - been following your DH on another thread. Prayers that the doc (or is it NP) has some better answers for you. Arguing with my DH is like talking to the proverbial brick wall or similar to the a$$ that lives in the field next door.

    After Christmas I think we are going shopping Friday for a new car. Mine has 110,000 miles on it and though I love my Equinox it is getting some annoyances. I think a Mazda 3 is in our future, a 2013 closeout. Get it paid off b4 retirement kicks in severely. DH says it will save him $75/month in gas money so that goes a long way toward the monthly payment. I will have his truck for local and the car for Sundays/trips to Ft. Worth.

    Joyce - so very sorry to hear about your aunt. My prayers are with you in your travels and with your aunt.

    Now to make one final trip to grocery this am and clean out refrig. and find room for turkey breast and French toast casserole.

    Laura, count me among your fan club.  Wish I could accomplish in a week what you manage in a day!  It seems to me that you and your sons are ill quite frequently.

    Love Susan's reaction to Moon's miracle cake recipe!  Susan, I would imagine that you build a fire in the back yard to brew your coffee in a tin coffee pot?  LOL.

    I haven't heard about any problems with the Keurig one-cuppers.  My sil in Atlanta has had one for a couple of years.  That's where I first used one.  And my sil and bil in IL have a big one in their house and a small one in their rv.  I pooh-poohed the whole business as too expensive and here I am buying boxes of the little coffee portions from PJ's Coffeehouse.  It's nice to make one cup of coffee any time you feel like a cup of coffee.  In the mornings dh and I drink a whole pot of Community dark roast decaf.  He can drink only decaf because of an irregular heartbeat.  With the Keurig I can make myself a cup of coffee with caffeine. 

    Today I made the shrimp mold for Christmas day.  I peeled and deveined the shrimp and was chopping them into pieces when suddenly I remembered, "The shrimp have to be cooked!"  Normally I boil them in the shells and then peel them but I had forgotten.  So I sautéed the chopped raw shrimp in some butter. The recipe is the popular one with plain gelatin, tomato soup, cream cheese, mayo, green onions, and hot sauce.  My family love it. 

    Tonight's dinner is flank steak, which is in a marinade in the refrigerator.  I'll cook it on a cast iron grill pan.  Sides will be roasted asparagus and green salad.

    Winter came back and our highs this week will be in the low 50's.  Today it felt colder than that with a wind blowing.  Tonight and tomorrow night a hard freeze.

    Carol-What exactly is a shrimp mold?  Sounds interesting and might be better than just my shrimp cocktail!  Yes we are sick a bunch.  I think it has to do with me being an at home mom with kids- we just entered the school system last year and seem to be catching everything!  It makes me feel a little better that everyone around here is sick too with the same thing.


    Both boys just went to the neighbors for a sleepover!  Yee haw!!!

    ROFL!!!! Carole, you are funny, but not that far from the truth. I have actually felt that I should be roasting our own coffee to save money. I have beaten myself up over this. But, I did the math. Given a roaster that we could afford, and how much coffee we drink, I would be roasting coffee almost every day. Who has time for that? Plus, we found a roaster in NJ who sends us the five roasts that we use for our house blend as a subscriber. Their prices are so reasonable, that is no longer a place to save money.

    And, of course, I live in the city. No open flames allowed!

    Eric, ewwwww!

    Well I had Susan growing her own beans, or at least knowing someone who does, and then roasting them in her fireplace.

    Well today, the cheesecake got made, the Wellington got it's initial wrap of mushroom duxelles and prosciutto and is sitting tightly wrapped in the fridge awaiting it's puff pastry. Lots of vegetables got cut up and things got cleaned. The potatoes got sliced, creamed and prebaked and the jalapeno dip got assembled and is ready to bake. I even managed to shower. Did I mention I'm tired?

    Kids should be here around 11 a.m. tomorrow. We'll have hot appetizers,  snacks and finger foods for lunch (including some of those pasties!) before a big dinner. I'm enough ahead of prep that I should be able to enjoy the day and company and a Christmas cocktail (or two). Ddil is a chef by trade but acts as my sous chef when she's here so getting dinner on the table should be no problem (in spite of the cocktails).

    Have no idea when DH and DD will get home tomorrow. I have chicken boiling for tetrazzini. Turkey breast is in fridge. Now have dishes to wash and sheets to put back on DD's bed. I haven't done near what you Nancy or Laurie have posted but I need a nap b4 DH gets home. I hear the couch calling if only briefly. Hockey game comes on at 9:30 - don't think I will see the end of it. Watching bits/pieces of "Meet Me in St. Louis".

  • Christmas Eve dinner is a big pot of New England clam chowder, dinner rolls and a bunch of finger foods. Christmas day is a big breakfast following Mass and then Roast Beef dinner.  This year we decided against a rib roast and are trying a NY Strip Roast.  We shall see!  DH's parents were supposed to be here but canceled last minute!  Will have plenty if anyone finds themselves in central NY with no plans!  lol... If not, zwe'll have lots of leftovers so no cooking for awhile :)

     DH cooked our 'free' grocery rewards turkey today and used your spatchcock method and it turned out Great!!  A 13 pounder and done in a little less than 1 1/2 hours and so moist and juicy !! Can't beat that... Thanks! Glad you're getting to use your pasties!

    Merry Christmas to all my friends here!  For those who have suffered losses or set-backs on your own journey, may you find comfort in those here who care.  My Christmas wish is for no family or friend to ever have to say good-bye far too soon to a loved one ever again due to this hideous disease.
