    Made rye bread this morning so dinner will be patty melts, oven frIes and a salad.

    Tomorrow it's back to the gym and eagle watching in the afternoon. There are large numbers this year because if the harsh winter.

    Carrie, I think your DH's football watching will be more relaxing than my DH's Pat's game experience was last night. He came home around 1AM drenched and full of hilarious stories about how the grp of my DH2's  friends all decided to park at one of his other friend's houses not too far from Gilette Stadium....only problem was they had to walk in the dark thru a "short cut" in the woods to get there. It was not a very well trodden path, so they struggled in the rain  to get to the end over rocks, mud, tree branches hitting them in the face.... only to meet up with two sets of fences on the perimeter of the stadium property. Ha! They eventually found a hole cut in the first fence by some other "shortcut genius", and then made their way up huge mushy snow banks and over the second fence, and back down more snow piles, then on to the game, which they enjoyed in the rain. I had a good laugh about this adventure. Then they had to try to remember how to get back thru the woods to the friend's house. One of my DS2's favorite funny guys said....didn't anyone drop any crumbs?? Somehow they made it back..... And I imagine they felt less of the tree branches on their faces.;)

    So Tuesday I am having a family over for a lunch who I hardly know. This is the DIL of my college friend and her three children under eight years. They are staying in Boston while one of them performs the child's part in the musical "Once".

    I offered to have them over since it is going to be a crummy weather day and figured they might enjoy a home cooked meal in an acutal house since they have been living in hotels totally since September. It sounds like her kids are healthy eaters...only fish, no chicken or steak....so since they like salmon, I was thinking I'd make a sort of dinner/lunch with baked salmon, broccoli (which they like), winter squash, and maybe mac and cheese? Since I never make real mac and cheese, (used to make boxed versions for my kids...yuk), I could use some help with that. Am hoping it is easy.....And can I make it in advance....or partially so? I am not the  greatest early morning person these days, so would love to have just the minimal to do on Tuesday morning before they get here. Thanks for any ideas.

    I'm just going to make oatmeal cookies for dessert. Then after we eat may take the kids to a play spot up the street to do some crafts....then back into town in time for her show. We already saw her perform in Providence...a very cute, talented kid....who is definitely loving being a part of a cast.

    I find myself making this version more than any others any more.

    By the way, the cinnamon bread was well worth the extra effort - some of the best I've had, much less made.  The recipe is available for a limited time I think.  It's pretty special.

    Lacey- A super easy mac and cheese which is excellent.

    One box of the type of pasta you like

    4 cups shredded white cheddar cheese (I buy pre shredded)

    1 stick of butter

    milk

    cook the pasta, then put a few pats of butter on the bottom of your pyrex dish top with a layer of pasta top with 2 cups shredded cheddar and a few pats of butter add a layer of pasta top with the next two cups of cheese and a few pats of butter.  Fill pyrex dish 1/2 -3/4 full of milk and bake at 375 for about 45 min- till it startrs to brown.

    Thanks Nance and Laurie!  Don't suppose I could do either of these ahead and refridge it, eh? 

    I always amaze myself at how hesitant I am to make things I rarely make....that everyone else makes, and with ease!! For instance, mashed potatoes....as well as mac and cheese. Of course after I make this, I will have to find some victims to finish it off after the guest family leaves....I'd bet that the twin seven year olds next door would be good for that! :)

    lacey - I do mac 'n cheese old school and you can definitely make it in advance.  I just make an ordinary béchamel with 1/4 c. flour and 1/4 c. butter melted and stirred until golden - a couple of minutes, then add 3 C. milk and stir until thickened.  Cook the pasta and drain.  When the white sauce is thickened add whatever kind of cheese you like, but I usually do a combo of American and cheddar, because the American makes it creamy.  I usually do a hunk of American from the deli - at least a 1" piece diced up, and about 2 c. of shredded cheddar.  Taste the sauce for seasoning - I usually add pepper, but not salt because the pasta cooked in salted water and the cheese is salty.  Pour the sauce over the pasta and you can add some more grated cheddar if desired.  Put it in a greased casserole dish and sprinkle with seasoned bread crumbs.  Bake at 350 F. for about 30 minutes or so.  This is a flexible recipe - I sometimes add different cheeses, or leftover ham, or sautéed vegetables.  You can make it at least the day ahead and either bake it and re-heat it, or leave it uncooked to be baked as you make the other dinner components, your choice.

    Lacey- You can do it ahead of time and throw it in the fridge.  I did it yesterday.  Made it around 1 and went to a friends house, threw it in the oven to reheat and ate around 6.

    OK, I'll be making it tomorrow night for Tuesday noon baking. Laurie, if I do your easy peasy sounding recipe, I assume I will t the milk in right before I cook it, so the noodles don't soak it up  overnight. I'm eager to try this now. Got the ingredients tonight! You'd think I were making a complicated French recipe! ;)

    Off to make oatmeal cookies for their dessert.....

    Today was fun eagle watching. Saw lots and lots. I tried to get pictures but the larger groups were on the other side of the river or in a tree I couldn't get close enough to.  There was also a large group of white pelicans that show up every year. Had lunch at a local Mexican joint, always good. Tonight was a simple cheese omelet and a bagel.

    Good luck with the mac and cheese Lacey, I'm sure it will be good!

    Last night on the spur of the moment I made several cherry handpies. If this baking frenzy keeps up, I'm going to have to check into the Betty Crocker clinic for rehab.

    DD passed the driver license test.  She had to wait 1-1/2 hour to get her license printed because the computers quit working while she was out with the examiner.


    It's about $1400 per year for her to be on the car/liability insurance.... !!!!!

    and, Eric. We won't mention what happens when they have their first fender bender or in my family's case, first mailbox hit... LOL of course if they get a ticket for stupid stuff they pay the difference after it goes up again. Good luck. 

    Finally got out of the house to buy yeast. I thought I had some but nope. So after my Livestrong program I will try my hand at bread making.

    Eric - congrats to your DD.  I only had a son so I agree w/Moon about that price.

    Nance - gorgeous sky & water even if the eagles are slightly understated.

    Lacey - anxious to hear how the mac & cheese worked out.  Talk about entering The Taste, I'm in worse shape than you are.  I can cook most anything w/a recipe, but I can't just toss things together.  I've only used a recipe similar to Special K's.  I don't buy pasta in boxes but I'm guessing Laurie meant 8oz.  How much did you use?  And what kind/shape of pyrex?  9 x 13 or deep dish?  I have so many sizes & shapes.

    I'll let you know about my ridiculous mac and cheese caper later tomorrow....if I see the little kids it is for, spitting it out, I'll know! If it is decent I'll ship the rest to the little boys next door....I could not in good conscience each that much fat while on my effort to lose more weight! But it may be tempting....:)

    Meanwhile, cherry handpies!!???!! Be still my taste buds!!! I adore any kind of cherry pie, with or without eagle spottings. Yum! Love the pix.  I am getting a kick out of your baking spree, Nance, so I hope you don't have to check in.....;)

    Yes Eric, be happy you don't have to pay the xy gene rate! I still laugh about the first (and only, tg!) fender bender DS2 had. He was driving to meet up with us at the Cape shortly after getting his license, and when he arrived told us he had just bumped the car of the woman who was stopping in front of him. As it turns out, she never felt the need to exchange papers since there wasn't much evidence of the hit....and she was driving a rental car, so didn't care. Swell...great role modeling for my son! It's always good to get that first bump out of the way. ;). DS1 is a very fast and precise driver, who to our knowledge never had a crash, tho he can be hair raising to ride with. Now that he zooms around in a Tesla, I am more nervous than when he was young and driving our old cars. We may get to see that this weekend since he is coming up for a Celtics game....I won't be asking to ride in that bat mobile!

    Just stopped in to say Hi to everyone! I have been trying to play catch up on all the posts for a week, but after reading so much I have to go to bed and the next time there are dozens more. You all have been so busy!

    Can't remember everything I have read but I hope you are all doing well.

    Laurie, sorry to hear your MIL is progressing more and wish her comfort during her final days. And love and peace for you and her family.

    Deb- So glad to see you took a vacation, hope it helped ease some of your pain and helped in your healing. We never get over it, we just get through it.

    Eric- Yay on the DD getting her license, boy are you going to be one busy dad, you think you were busy before just wait! Also it was a nice pic of you and your family, it's nice to put a face to some one who is family here on BCO. You handsome devil you!

    Lacey- Hope your mac and cheese came out great and the kids didn't spit it out!! ha!

    My mind just went blank, I know there were lots more things I wanted to say but I can't remember now.Sorry for those I missed, I do think about all of you every day. And your always in my prayers.

    Things have been pretty busy on my end. between DH app in Portland and having to travel there alot, and mine app and not feeling well, I just havn't had the time or felt well enough to do a whole lot. Plus with being away so much I can't get on BCO with my cell phone, only on my lap top at home so I miss a lot.

    Went to my lung rehab yesterday, when I walked in I was struggling to breathe, but my rehab guy (Will) got me calmed down and showed me how to breathe right and turned up my oxygen I was more at ease, then I did very well on the exercise machines, at my pace but felt like It did some good. Last week, he told me I was as bad at breathing as he had ever seen,, I was pretty upset about that ,and I said well, that's not good,  but he said, I have hope for you. So I will take whatever I can get at this point. It is a small class room of about 6-8 people while Will was taking my vitals I was chatting with another lady in there, and was not paying attention, I realized he was taking my BP on my left side, I went Oh shit, and ripped it off my arm, I had told him last week, but he forgot, well so did I so he is not to blame in any way, but I just hope it wont' do anything just from that one time. I have always been so careful, my mind is getting senile these days.

    Things are still so very hard for me, missing my sis, the end of this month will be a year for her, god, it feels like yesterday,I must of blanked out this whole year. and of course my dad which hasn't been that long. My heart still feels so broken and to be honest, I am having such a tough time healing through all of this. I guess that is one reason too why I don't come here as often, I am not myself these days. I know too that you all have had your losses of your loved ones and with that brings pain, I wish you all healing and love through it all.

    Ok, I will change it up a bit... Last night I made a chicken oscar which was so yummy. I bought some fresh lump crab meat at the local fish market, took some chx cutlets and lightly floured them, sauted in some butter, garlic and shallots, S&P,  steamed some asperagus. Made some home made hollindaise sauce. Plate the chx put some asperagus on top, then some hollandaise sauce, top with the crab meat and a drizzle of more hollandaise sauce and some of the pan juices it was pretty darn yummy!! Oh and a sqeeze of lemon juice too.

    Sorry for all those I missed. And for those going through more TX I wish gentle SE for you.

    Debbie, so good to hear from you!! Love your long, textured note. I admire your stamina, given those significant breathing problems, to work hard in your lung rehab program. I also appreciate your remembering to post to us at all give what you have on your physical and emotional plates! You are a strong lady! ((((HUGS!))))

    So our afternoon with the little "Once" performer and her younger sibs was so much fun! I went all out making the equivalent of a "Sunday dinner at Nana's" for them even tho it was Tuesday (they have been living in hotels since September!). They are a healthy eating crew (even the three year old), so I made baked salmon, winter squash, steamed broccoli, baby spinach salad with cranberries and walnuts, whole grain bread, and of course the much obsessed over, mac and cheese. I used the recipe Laurie posted, (thank you!:) which was easy to make, and the kids LOVED it! The eight year old girl (the performer) kept giving me compliments on it, and they all went for seconds and thirds.  Clearly this is a kid friendly mac and cheese! And DH ate lots of it too. I made two kinds of oatmeal cookies for dessert and it was a riot watching all of the kids negotiate with their mother for extra cookies.

    After our big lunch/dinner, I offered the kids a few indoor activity choices, given that it was pouring rain out.They were dying to use my new old maid cards, and we played for as long as their sibling competitiveness could stand it! So funny....

    Then they wanted to make puppets with fabric and materials I had left over from school activities I used to run. They were a riot....so creative, crafty and self-directed. Impressive! I didn't need to do a thing (except make sure my good sewing scissors didn't end up bathed in tacky glue;), and they had a ball. Before we knew it, it was time for DH to get them back into town so the performer could be ready for her 7:30 show. It was really weird to hear an eight year old lament, "Oh, I wish I didn't have to go to work tonight!" Definitely, an unusual life (tho filled with amazing experiences in so many cities) she and her sibs lead. Her six year old brother is already in an upcoming movie, and lord knows what the three year old girl will be doing given her current experiences. Fortunately they are really nice kids....and wow, how adaptable!

    So off they went, and I was exhausted!!  Even skipped my daily exercise regimen. Carole, I have a new appreciation for your efforts with your Sunday  suppers at your mom's.

    Tonight DH has a business dinner meeting, so I think I will make myself something like a crabmeat salad. Stopped at TJ's to get shrimp and they were all out, (!?) so bought a can of crab claw meat. I can use the rest to make a crab quiche (have whole milk leftover from yesterday), or a crab and pasta dish.

    I think I'll get off here and get dinner together!

    Wish I could be more helpful about the easy mac and cheese measurements....I pretty much winged it. :/ I think you can get away with that. Laurie wuld know best.....

    debbie - good to hear from you and your dinner sounds fantastic!  Sorry you are struggling with the breathing and with feeling yourself after so much loss - it is hard I know.  One day at a time...

    lacey - sounds like a busy fun-filled event for you!  I am impressed with the menu too - those are healthy eating kids!

    This thread has been so quiet.  I think we are all missing those that we have lost.

    Lacey- I wing most  of my recipes.  But I would say a 9x13 dish 4 cups of shredded cheddar cheese, 1 average size box of pasta and fill the dish once prepared to about 1/2 full with milk. I am so glad it turned out well for your guests,  You are such a sweet woman.

    Hi Debbie ((HUGS)).  I understand you not feeling like yourself and not coming around so often....but I still miss hearing from you.   :-)  

    I would hope that the BP cuff on the LE arm just one time won't make things go crazy.  Having said that, I watch the folks around Sharon to make sure no one forgets.  Sharon says when I get like that, I look like I did when DD was 4 or 5 and at a house with a pool.

    Debbie so good to hear from you. I can't imagine not being yo breathe that must be so hard for you. I am glad you are in rehab for that. 

    Lacey, it sounds like you had a lot of fun with your visitors! What a wonderful experience for all.

    Debbie - I'll add my thanks for updating us and send thoughts, hugs & prayers.  We really do miss you but understand you have other priorities right now.  Hope things improve.  

    Better safe than sorry, but the LE specialist I've seen told me that he didn't think a BP cuff or "stick" a couple of times a year would hurt.  Hope that holds true for you.

    Debbie Good to hear from you...keep the faith and stay strong. Sounds like the therapy is a good thing? Sometimes just being with others that are having the same difficulties is a comfort and encouragement.

    Lacey Glad the mac n cheese was a huge success. Sounds like a great day all around.  Keep your eye on those future "movie stars" !  What fun! I can still remember our Sunday dinners at Nana's house. She made the best chocolate frosting for her cakes, it was just like eating fudge on top of the cake.

    Did a quick pasta with chicken, cherry tomatoes and spinach in a garlic wine sauce. Made a big pan and husband took the remainder for his lunch today. Tonight meatloaf, cause I got the meat out of freezer for burgers and found out I didn't have any ketchup...wth?  who runs out of ketchup? I swear there is a fridge thief in my house....I swear that I remember buying things and then cant find them. Wouldn't be my old Tamoxifen brain, would it?

    Yesterday was pasta day. Made a batch of lasagna noodles, spaghetti and pappardelle. The best part of pasta day is eating the scraps for lunch wIth just a little garlic butter and parm. Tonight will be lasagna and a salad.

    Woke up this morning to everything covered in a layer of snow. That was unexpected. It's not  going to last long because the next few days are supposed to be sunny and in the forties. Suits me just fine. I am so ready for spring.

    I think I'm over it. I've gone two days without baking anything.

    Debbie, good to hear from you. Get better and drop in when you can.

    I hope Carole is having a blast in Australia.

    Lacey, kids and mac and cheese just go together. Hard to go wrong there. Glad it was a success.

    I also hope Susan is ok and just busy. She has posted recently on the stage IV boards. She did mention that she was going to be quite busy for a while. Miss hearing from her.

    Today is clean out the fridge day. I'm trying to do that more often so as not to find any of those nasty little fuzzy surprises.
