Nance, Hoping too that everyone is just busy!

Monica- That is cold!! brrrr! Hope you stay warm and safe!

specialk- I have used sausages in this too and have added cream but when I want less calories I use this but good both ways.

I have a new favorite food, it is seasoned Kale in a can by Allens it is so goood! I put a little butter and parmesan in it so tasty can't get enough of it. dont know if you can get that brand where you live but if you can give it a try.

So to make it up to DH I am making chicken cor don bleu with sauce, rice and green beans.  DS2 is sick with a cold and fever and has been so quiet all day.  So not like him.  Also he is not eating where he is usually an eating machine.  Hopefully he will feel better in the morning.  We had a quiet day by the fire today watching movies, snuggling and napping.

Inspired by Debbie, I made carbonara. Had to make something in a hurry. It was fabulous! Of course I used cream . .

Yum Nance and Laurie! Wish I were at either of your dinner tables!

DH is at a meeting, so I was going to make myself an omelet, but I took the path of least resistance and had two apples with some cheddar and gouda cheese on these delicious Traders' Rosemary Italian Style Crackers I had leftover from Christmas. It actually hit the spot, and nothing to clean up! :)

Thinking of Susan these days and hope she is doing well.

Day from hell yesterday...car wouldn't start...late for an interview within the same org that I am working for...total waste of time, as she basically lied to me about what the hours were (she really wanted someone from 9pm till 5am) who works those kinda crazy hrs? Not this old gal!! An hour drive for me to hear that? She could have called me...did I say we work for the same org? and we have e-mail. Sooo because my DH saved me and picked me up and I used his car, had to pick him up after work....supposedly around 8pm, but had a stubborn client that wouldn't leave the office (high on heroin) and had to call the cops, never left office till 9:30. Poor DH that works out in the cold was tired and frozen and hadn't had any lunch was not happy. Thank goodness I had some chicken fingers all cooked and we did a chicken salad. Whew.... lets see what today will bring.

I am thinking those same cooked chicken fingers cut up with peppers, onions, tomatoes and some orzo all in one skillet and will be all ready....just in case!! ha ha

Oh Carrie, condolences on having such a crap day! Not sure if I feel worse for you or your DH. Bad stuff all around...glad you had dinner available...and I like the sound of tonight's melange. :) How annoying when people in positions of authority are basically inconsiderate and use lying as a strategy to fill a job. The only people I know who take those shift hours are new college grads who are needing a tide over until a saner  job materializes....hope something seriously better comes up for you. Meanwhile, keep warm....can't imagine how cold it must be in upstate NY.

We are back to trying to deal with the overstuffed freezer....I thawed two beef burgers and a lamb burger for tonight, loaded them up with tomato, lettuce, red onion and condiments and then made a side of "power veggies" (baby kale, baby chard and baby spinach) from Trader's, which I sautéed with chopped onion, garlic, fresh mushrooms, and a splash of balsamic vinegar.

Wow Carrie, what a day! Definitely calls for comfort food.

    Lacey, your dinner sounds wonderful.

Made oxtail soup today. Tasted good on a cold night wIth some rosemary garlic bread.

Tomorrow dh and I are going to some wetlands on the Mississippi to watch eagles and a large  flock (hundreds) of trumpeter swans.

Well the blue cheese potato soup was a bust. The potatoes just barely cooked in the time it said so we had potatoes with blue cheese. DH said they were good but not soup. Not sure it would have worked because the only other liquid it wanted me to add was water and chunky mash the potatoes.

I think frozen pizza tonight. Just cannot make myself cook anything. Can't tell if I'm trying to come down with a cold. Hinting we may have some snow next week, maybe just a bit or maybe a bit more.

I wish I'd baked some plain chicken. Just what I'm craving but will do with pizza if I can find it buried in the freezer. Brrr.

Carrie - sorry about the evening from you-know-where. Job interviews to nowhere, dead cars and looney patients. I was basically lucky when I was doing hospice - not too many car problems. Hope tonight is a better evening.

Carrie, hope today went better. Luvmygoats, too bad the soup didn't work but blue cheese Potatos don't sound bad either!

Much love to all. Went to lunch today. Ate breakfast though!  It was warm today a whole 10 degrees!  I'm not kidding. People were wandering around without hats. Gloves were in pockets. Weird. I was one of them! LOL

    Much love.

Thanks everyone, last night much better.  Hubby and I decided we needed a night out after work, so he picked me up from work (car still wouldn't start) and we went to the local pub for a steak dinner, beer, and Syracuse basketball. The seasonal restaurant located at the marina that we keep our boat at happened to have been having their Christmas party here at the pub.  Got to see everyone that we only see during the summer. Fun night and no cooking.

We are trying our best to just find fun things to do on weekends to help us get through this long, cold winter. I NEED some sunshine!

Tonight we will do leftovers, to try and clean out the fridge as well.

Anyone got fun superbowl plans? Or fun superbowl recipes?

supper was a chicken breast cooked in a pan with some lemon infused grapeseed oil. I had some corn and made a sauce for the chicken with a bit of Hoisin sauce AND Some Orange juice with the orange segments and a tiny bit of Tiger sauce.  It turned out really good. Much love.

No - I'll probably watch the Superbowl but DH won't. But I will have to take a break for Downton Abbey at 8 pm. Had one of DB's Christmas deep dish Chicago pizzas last night. DH gets the last piece tonight. I just had toast and hot chocolate. Still fighting tummy not feeling well in evenings. Didn't help that we were under grass fire warnings all day. I think we will get a little - emphasis little - rain next week with maybe bit of freezing rain/sleet on Sunday. We surely need the rain. My rosemary bush was dry, dry and I never water it, even in the summer. Dumped 2 watering cans full on it. Same thing with Texas sage, looks terrible but stems are green inside. Does not bode well for the hay crop.

Monica - so funny about the chicken. We were clucking for about a week with so much chicken. I must have moved 3 packages aside to get to the pizza so I guess we need to get back to it. I bought a can of Pride of Szeged Chicken Rub. I use their sweet paprika and this caught my eye - garlic, basil, paprika, oregano, salt and "spices". Don't think you can get any more "spice" than garlic, basil, paprika and oregano. Maybe old fashioned pepper. Saw some recommendations on BBQ sites for it. Mine will most certainly be in the oven.

chicken does seem to be the daily special! LOL.

Luvmygoats, I hope you get the rain you need. We just got 2 more inches of snow today but the temp is up to 30 so 6 of one half dozen of the other! LOL.  It IS winter in WI..I USE My Cast Iron Fry Pan A lot. Or my foreman grill too. When it's just me I find it hard to turn on the oven for just one chicken breast. Even 2 pieces seems a bit wasteful..

    Much love.

    Monica, love tiger sauce!

Tonight is whatever the store has to offer me for inspiration. More snow and ice on the way so I'll probably be baking again. Dh has requested the PITA cinnamon bread, so that will take up a whole day. Whole chickens are on sale Saturday here too, so I'll try to get out to stock up.

Tiger sauce!  OMG!  I haven't had that since I was growing up.  My mom always bought it.  I will have to try to find some.

Last night was sesame chicken stir fry, one of Dh's favorites.  (not mine)  The boys have been eating what they want or not at all since they have both been sick this week.  Tonight I am hoping to get them to eat with chicken parm.  Usually BOTH boys eat when I cook that so fingers crossed.  I have spent the whole week watching kid tv and I believe my brain has melted!

Carrie- I can't remember if I commented before or not but wow what a yucky day you had the other day!  I am glad yesterday was better.

We still need to figure out what we are doing for the Super Bowl.  I haven't been able to go to the grocery store so not much on hand.  I might have to go on a weekend...eeek!  But go to foods are the buffalo chicken dip, mexican dip, sweedish meatballs, chili and a pan of mac and cheese for kids/adults.

I'm probably the only guy with TV access in North America who won't be making a big effort to watch the Superbowl.

Eric- If it wasn't for socializing my DH wouldn't care that much either as our home team is out.  I honestly don't watch- I just eat and talk :)

Chicken parm sounds good Laurie...hope the boys are well enough to  enjoy the lure!

We have made no plans for the super bowl either....the game means little to me, but I do look forward to the  commercials. :)

DH and I have not seen a movie in a theatre for many many months so decided to go on a mini movie binge.....yesterday saw Philomena, which we really enjoyed as a quiet emotional movie. Guess it was almost a true story....glammed up a bit by Hollywood, but nicely so.

Today we did a double feature (not exactly the way we did in the olden days!;). We first saw August: Osage County. It was wild! The performances were amazing, and at the end I felt like I needed to sit down with my clinician friends to examine all that was going on in that poor pained family. But it also had some very funny lines, and Meryl and Julia were outstanding! We ran out to have a quick early dinner at Chipotle. I had a salad with shredded beef and all the toppings, and DH had a chicken burrito with same.       Then back to the theatre to see American Hustle, which was also well acted. I, however, always have trouble staying on top of movies that that involve "cons". I was tired (probably exhausted from Osage Cty!) so I dozed a bit and lost track of who was conning whom. I will see it again a home when I am awake and can follow the antics better. So many more movies to see (before the Oscars)... So little time.....

So since we had a super early dinner, there was no cooking here tonight....but I knew DH would have a bit of space in his tummy, so I made him a plate of dates stuffed with blue cheese with crackers on the side. I just had some too. Hit the spot!

Lacey:  Thanks for the reviews.  I loved Philomena.  Thought the acting in American Hustle was probably good but I too got bored w/the story line.  Will be going to see Osage County - specifically for Streep & Roberts.  Also want to go see Dallas Buyers Club.

I played Chicken Foot all afternoon so it's popcorn for dinner.

I am sorry that I haven't been able to read all the posts and respond to them all

Lacey, nothing like a good movie in the theatre, great winter activity.  I want to see the Dallas buyers Club.

Went out with friends last night to Syracuse for dinner....big mistake...totally did not take into account the big Syr/Duke basketball game in town. all restaurants had lines out the door, 2hr waits.  we ended up at a Ruby Tues  just because we were all starving, and it was a horrible experience, really had to make the poor waitress work for her money, just to get things as we ordered them.  Poor girl, it was not her fault, we tipped her well for her efforts.

Today will be homemade soup and sandwiches of some kind, curled up with a good book and the Syracuse game on.  I can sit through sports on TV if I read at the same time or have people to talk to. ADD?  maybe  Oh yeah and eating!

    Maybe French lentil soup today.

It's 60F outside at just before 9am.  Today, I'm going to be installing a transmission in thr car that DD will be driving--a 1993 Vovlo 960.  A friend is giving us the car and it's a 4 or so hour job.  It survived his two daughters (my "test daughters") teen driving years, so it should do fine once again.

Carberry, Sharon just about bleeds orange.  It's still a huge joke around here that Sharon watched, on TV, Syracuse beat Georgetown on March 5, 1989..The morning after we were married.

Dinner is likely to be a slow roasted pork roast and "other stuff".

Oh Bedo - scallops!!  It's so hard to get good scallops here in Houston.

Carberry - Do you want to comment on Dallas Buyers Club?  A friend told me it was 'stark', but I still want to see it.

Eric - I guess we're holding up the warm areas.  It got to 73 on my back today.  I was soaking up rays until the rain started.

Nance - have you posted the French Lentil Soup before?  If not, could you?  I think I would love it if it's not too challenging.

Going out for salad pizza with some neighbors.  This will be another try to see if my taste buds can stand salad yet.  How I miss it.
