bedo, I a tally eat a lot of venison..If it is handled properly it'd not bad. Gotta serve it Hot! Physically not spicy. Although it can be spicy.
Nancy it has been one of the long cold winters here. It's like the winters when my kids were little. They are 36 to 28! LOL
Luv, that is in Manitowoc, WI. About an hour north of Port. Our snow banks are not quite so spectacular! LOL I am glad you didn't go to the Doc when the weather is that bad. They canceled school here 2 days when it was in the negative teens. And I make the omelets in the muffin tins in the oven. You just mix up a egg and seasoning and milk in a bowl. Pour into tins and then add your leftovers in any combo you want. That way you can mix and match..

I know what you mean about the brutal sustained cold weather, Nance. Even in Boston we do not usually have the likes of this deep freeze either.
I had a food prep day today. Made ham roll ups with herbed cream cheese and chives for an appetizer, and a ham, spinach, onion, kale and mushroom quiche for a pot luck gathering my next door neighbor was having. I had a little bit of the egg cream mixture left after the two ham quiche, so instead of pouring it down the drain, I created another one using Pillsbury croissant dough I had....this time making a bacon onion quiche. I also stocked up on chicken yesterday, and tomorrow will probably make some soup from the breasts with bones in, then make an Italian casserole or chicken piccata with the boneless breasts. Then I may take a cooking break for a couple of days and start to catch up on all the sewing I have not been getting done for the past few months. I know five new babies I need to make taggies for.

Viv, yes very creative omelets! Isn't it a great feeling to use leftvers creatively and have family actually enjoy them!?

I have a rock in my stomach. I forgot that I lost the enzymes to digest meat a long time ago Same thing happened 10years ago when I ate a few bites of steak to be polite. It hurts. It will be like this for 3-4 days.. The venison wasn't bad. It was made with some kind of white sauce.

Lacey I have no more burritos! I'm freezing PB&J sandwiches for work today. 5 haha. I hate mornings and want to be ready. Then hard boiled eggs and oranges and of course, ginger ale goes with them
I'm looking for a new soup to make a pot of.
I looked out my window today and saw one of those nuts that live on the island across from here, coming over here in his skiff to buy groceries It will take about 1/2 hour. Basically an island off an island. There are no roads there and everyone visits each other by boating along the shore line. Then there is Prince of Wales Island. So beautiful. I will have to go when it gets warmer. It's been about 32-40s the last few days, no snow on the ground and so sunny that I have to put my shades down at work. I hope it gets warmer for all of those in the cold.!

No I can't get any deer bones!!!! But I did notice that their freezer is stocked full of deer meat and halibut. They are very organized.
I asked my friend why people live on that island. Her answer, "They think they're special"

Can you get beans? Dry or canned?
They make a good "Potaje" as we call it in Spanish or a thick bean soup. I would normally use chorizo , ham, bacon , piel bone to season but they can be made without.
They also freeze / reheat very well.
I take advantage of our few cold days to make up a pot . It too hot in Miami for me to eat regularly. But my Mom believes it's not a meal if there isn't potaje. I can send you recipes for red , white, chick pea, split pea and black bean . Also there is "Ajiaco" that is made from root veggies. They are relatively simple , you mix , boil then simmer for a few hours and done.

Tonight is spaghetti, more meatballs, and marinara. I'll also heat a couple of sourdough garlic rolls that I made the other day. Not very exciting, but also not very labor intensive since I've already made all the components.
Hope everyone has had a good weekend. I'm so excited, they're promising 40 degrees Thursday!

OMG, Nance, quick get out your tankini!

So last night my neighbor sent us all home with any remnants of the food we brought. I had about six little ham roll ups, so tonight, using some of the chicken I overbought this weekend, I made chicken breast roll ups. Just pounded them thin and popped a leftover ham and herbed cream cheese roll up inside each breast, rolled it, fastened with toothpick, bathed in a bit of egg, then rolled in breadcrumbs. Baked in a greased shallow corningware dish at 350 for 30-40 minutes. I actually baked them a bit longer and shouldn't have, since they were a bit dry, but I always prefer dry to undercooked chicken, unlike DH.

Spaghetti here too, Nance. Was gonna do meatballs, but DH bailed on me to go watch the cuse game at our friends house. I did not want to leave the house, too snowy and cold! So I just had plain spaghetti, at home, alone, my favorite. Oh and a glass of wine.
Bedo I love your Alaska stories. Sorry bout the meat causing you so much trouble. You were a sport to eat it.

Bedo...I wasn't trying to be smart a-- with the deer soup. I made some from rib bones and it was really good. I made it the same way as beef soup.....
I was going to cluck tonight, but the store had no whole chickens. So, I oinked instead and went with a pork shoulder as the main dish.
The Trooper that had its wiring make smoke from under the dash is fixed enough to drive home. I still need to rewire the power windows and cruise control..and then put the dash and instrument panel all back together. I used that car to take Sharon to the hospital for DD's birth, brought DD home the first time and it will be driven by DD....not bad! :-)

Yes! Vivian I can get beans. I like the dry ones because they don't have added salt and things. I love, black bean soup, so if you have a good one, bring it on! Post it Pleasssse.

Feijoada for a Brazilian exchange student once but had to go to the farmer's market to get all the ingredients.
I've also made split pea out of , well dried split peas and nothing else, although I'm sure there is a better way.
And another soup that I love out of great northern beans, sweet potatoes, kale and ?? which I can look up if you want it.
I see that the computer has gotten all fancy on me mid post and then cut me off, so it probably thinks, I should stop typing. At least I was able to bring the post back, except the fancy letters, which it has done for me again. I find that doing whatever anyone want
s from me is easier. So I will sign off.

Bedo: Can you have meat broth for a base or flavoring? Or only vegetable? Are chicken or fish OK or do they cause the same problems? Hope your stomach feels better soon.

I usually only use vegetable if I buy or cook for myself or others.
But if someone serves me something I don't go psycho and refuse to eat it or say anything because it's rude and they feel bad and people never remember anyway. so I end up eating it about once a year if I can't eat double of everything else and then say I'm stuffed and can I bring it home because it is all so good. I was vegetarian only for 40 years. But got hungry for FISH during radiation and started eating it about 2-3 years ago.

I am still thinking about the people who live on that island without electricityy or running water unless they have a cistern or a generator. How do they cook?

I'm glad this thread has been "quiet," or it would have taken me a week to catch up on the posts! DH and I got home this past Wed. from our big trip to Australia and New Zealand. It was our first tour experience and we were told by other people in the group that we were especially lucky because our guide was so good and everything went so smoothly. In brief, we had very interesting experiences in Australia, which is such a large country that we travelled by plane from one place to another. The Great Barrier Reef was something of a disappointment. It was blustery the day we were there and the water was stirred up. The reef structures are amazing but I was expecting a lot more color.
We loved Tasmania and New Zealand. Both are very beautiful. The Tasmanian Devil is an ugly little critter!
The food was good wherever we travelled. We had some delicious fish with unfamiliar names like barramundi. I sampled the local "bugs" and scallops in Tasmania. The bugs are an ugly shellfish like a very large flattened crawfish with the eyes on either side of the head. My appetizer dish was one bug split down the middle. I have a picture I'll post. The scallops were small and had a little orange "leg" attached. At the same restaurant dh ordered a fish called blue-eye that he thought was delicious. We called it the Sinatra fish!
All the breakfasts in the hotels were rather lavish buffets and there were some unfamiliar selections for the Asians. Big tureens of Asian broth soups (like miso) with an array of condiments including seaweed. Some hotels had rice and rice dishes. Also odd to us in the English breakfast section, baked beans and broiled tomatoes. The latter was delicious and I had it most mornings. I tasted the baked beans and they tasted like...baked beans, which I don't particularly like. I felt quite pampered going down to breakfast every day with a vast array of choices.
Another difference we noticed besides the high prices in restaurants was the lack of any free extras like bread. Bread and butter were included among the "entrees," or appetizers or among the side dishes and you paid for it. All the menus were a la carte. The main dishes are called "mains." We sampled a lot of wine in both countries. I enjoyed the white wines, my preference, but dh wasn't as impressed with the reds. However, I drank the Pinot Noir on the South Island in NZ and really liked it. The white wine that is the favorite is Sauvignon Blanc.
Bedo, we saw herds of deer in NZ, where deer are raised as livestock. Also herds of elk, also livestock, and millions and millions of sheep. We ate lots of lamb in NZ, and it was delicious, not strong like the NZ lamb sold here.
One other high spot. In NZ we stayed overnight with a local family, and that was fun and interesting. The dinner we were served was wonderful and all the food was from their farm, lamb, beef and vegetables.
It's good to be home and back to cooking! It's not good to be back on arimidex. I took a break from the little white pill from hell during our trip and felt much better. Eight more months.

I am so sick of the side effects of Tamoxifen.....hadn't thought about leaving it home when we head to Italy in Sept., but I think I'll consider that....so I can (1) sleep, (2) remember anything about the trip, and (3) stop all this horrible allergic itching! Eric, that car has seen some milestones!
By the way, we are also two people with three cars, but DH puts his little blue convertible to bed each winter in NH. Wish I had car insurance company stock with all these excess autos hanging around!0 -

For 1 lb of black beans I use Olive oil, 1 green pepper, 1 onion, 4 garlic cloves, 2-3 bay leaves, 1/2 tsp cumin, 1 tsp vinegar, salt and black pepper. ( have omitted the salt pork bacon strips and ham hock which add salt )
Clean beans and place in lidded pot with water covering them and about an inch extra. Leave soaking all night.
Next morning check water level if receded fill to same and set pot to boil. Once boiling reduce to simmer/low boil , cover pot and cook 1.5 hours.
At 1.5 hours make the sofrito. Chop up small green pepper/onion/garlic (if you like to find these in your food, I put thru food processor after cooking) In fry pay place olive oil ( don't let it get too hot) onions, green pepper,garlic and saute until soft do not let them brown.
I then puree, but that is to my liking. you then take what is in pan and put into pot and add the bay leaves , vinegar and spices . Stir and close lid and cook another 1.5 hours on simmer. Let sit 1/2 hour before serving.
The cumin,vinegar,salt and pepper are to your taste you may want to add more. This is my mom's recipe and I have omitted 1/2 teaspoon of sugar, bacon and ham hock and my mother also roasts the green pepper then adds it whole to the beans when she adds the sofrito. This step adds a stronger green pepper smell and taste. My mom also insists on apple cider vinegar. I have used that and red wine vinegar also.

Eric. Glad you got the car running.sounds like it has a lot of love in it! My DH leased the Nissan electric car in the pic. He uses it for commuting to the plant and back. Although he said he was scared the day it was 19 below because he had just one bar by the time he got home! I would not want to depend on an all electric car. He has his other car to come home in. He is almost at the cars range to make it home normally. In the real cold he would not make the 80 miles!

fake your way through your meal when you don't eat meat. My family was
all vegetarian too and even though there friends knew this most of them
would cook a meat dish and say, oh try it you'll like it, some people
just don't understand. I have never liked venison, too gamey for me.Carrie- Sounds nice having spaghetti, wine and a lone time! Can just hear you belting your songs out and maybe a dance or two?? hehe!

Huge Costco trip today. As always after such an outing, I'm too tired to face dinner, so I planned ahead and picked up a Costco meatloaf and mashed potatoes. They're very good and we'll get several meals out of it. Also was pleased to see that the 2013 Tuscan olive oil was in, so got a bottle of that.
I snagged a very nifty deal that was a bamboo cutting board that has a slot underneath that holds six flexible silicone cutting mats. There is one for chicken, meat, cheese, vegetables, bread, and one all purpose one. I like using these mats on top of my wooden cutting board but they slide some. This board has a depression for the mat so it doesn't move. There was only the display model left so they sold it to me for ten bucks. Score! My dh made my current board for me to my specifications and the new one is somewhat smaller. I hope I can get used to it.
Tomorrow it's back to the gym and orange chicken with stir frIed vegetables for dinner. Happy Chinese New year!

Carol, it sounds like you had a good time. I'll be interested to hear more about the trip. My dad spent some time in New Zealand during World War 2 and liked it a lot.
I like deer meat...if it is prepared correctly. The biggest problem is that it is often over cooked.
We have Costco stores here but we let the membership lapse as there are other similar style/price stores that don't charge a membership.
For what it's worth, it's going to be in the upper 80F degree range this weekend.

Bedo- I can't believe you ate meat! I hope your belly feels better. I was a vegetarian for about 6 years or so and very, very slowly added meat back into my diet. Your body is just not used to it. I have a great potato leek soup recipe if you are interested.

I had a cold which has no turned into a sinus infection. I went to a minute clinic at CVS today and got anti biotics. It made me think of Michelle. She always seemed to know when my cold turned to an infection. So I have a sinus infection and an ear infection, low grade fever. I am hoping to feel better soon. I am still functioning
Dinner tonight will be a new recipe that my boys ate at the neighbors house and loved. Haddock dipped in milk, tossed in bread crumbs and baked at a high temp drizzled with butter. Hopefully Dh and I like it too!Debbie- Thanks for asking about my MIL. Not much of a change. Tired, sleeping a lot. Her CA125 count went from 75 to 150 in a week and a half. So not a good indication. How are you feeeling Debbie?

If I weren't feeling so lazy, I'd hoof it up to the store to get some fish for me tonight. Very tired this week since my allergic itching (my bodily response to what the tamoxifen is doing with my estrogen levels) has reached annoying proportions, and wakes me up all throughout the night, so I get up feeling like I never slept. I thought I had mastered the non-sleep issue (from my friend tamoxifen) once starting a controlled release melatonin a few months ago.....and now this! Benedryl use is a no no with Tamox, so I'm in a catch22. Zyrtec is making no dent! Sorry to take up space venting....

Lacey, do consider stopping the tamoxifen for your trip. It was so nice not to have hot flushes during the night for a month. As soon as I started the arimidex, the flushes were back. They're especially uncomfortable at night. No matter how cold the temperature in the bedroom (dh likes an open window), I have to pull the covers aside and cool off. I'm fortunate, though, in not having the severe joint pain that some women experience on the med.
Tonight's dinner was pork piccata made with pork tenderloin medallions, brown rice and a tossed salad.
This has been an unusually cold and wet winter here in Louisiana. I didn't miss a single golf outing during our trip in Jan. because they all were cancelled. After a trip to the gym this morning, I started some much-needed housecleaning. I also have to label pictures from the trip and prepare our tax return. So there are lots of indoor jobs to be done.

It might make it to 90F degrees this weekend here in the Phoenix area.This summer may get "interesting". I wish I could send 10-15 degrees to the southeast USA.
