laurie - I couldn't imagine not knowing what my kids were doing every minute either, but you do find that as their world enlarges, they are less focused on us - and this means they have been successfully raised!  In my son's defense, he is busy!  He is a firefighter, also works three 12-hour shifts as a tech in the emergency room, and goes to school full-time for sports medicine.  It is interesting though - if he is hurt - I am his first phone call.  He has had a sprained ankle, a separated shoulder and a relatively severe allergic reaction within the last year - he was immediately on the phone with me.  Not his dad, definitely with me!  Some things don't change!

Have you ever noticed that when a college sports "kid" ends up on TV...it's always "Hi mom!"

It's been a very lazy day for me. The sciatica is getting better, the exercise really has helped. I'm dicey on stairs but at least I can stand and walk fairly straight (if slowly.) Haven't taken any Aleve today at all. Yay! Progress!

For dinner tonight I'm making  Grace Young's kung pao chicken, my favorite takeout dish. Quite impulsively, I made a Texas quarter sheet cake on a whim. Some friends are coming over tomorrow so I'll feed the remains to them so as not to overindulge in my cake obsession.

Auntie I am glad hour sciatica is better!

Olivada is the vinegar and oil store. I have tried the butter flavored, lemon flavored and garlic flavor for cooking. I love the apple maple vinegar. My daughter bought me the sample pack with 6 oils and 6 vinegars to try. It was fun pairing them up.

SpecialK and Eric they do remember Mom when they need her.

    Much love to all.

Nuance. What is a Texas quarter sheet cake?

Funny my son called me today to ask about cooking his turkey they gave him at work for Christmas. His girlfriend is working and he is in charge of dinner. Those are the random things I get from my son

Travelling home today. Will be road food blah :(

I like the sound of those oils  just saw an oil store in our new town. Maybe investigate when we go back in march

Carrie, it's a Texas sheet cake made in a quarter sheet pan lol! A Texas sheet cake is a simple chocolate cake, sort of like a cakey brownie made with cocoa and buttermilk. It's disgustingly sweet and will cure any chocolate craving you might have. I've never seen a church cookbook without a recipe for one and it seems like every family has someone who makes one.

The good thing is it's so horribly sweet, you can't eat much.

DD has an amazing sweet tooth!  I think she got it from Sharon's dad.  He could eat peanut brittle a pound at a time.....

The quick chocolate cakes with vinegar also taste great. They are also known as Depression cakes or wacky cake.  And most of them make an 8x8 pan so a nice small size. LOL

Ok- I have a question.  When I cook an eye of the round roast with the 500 degree oven method, 5 min per pound turn oven off etc. ( we have talked about this a bunch.)  It always comes out a perfect medium roast.  BUT when I do a shoulder roast the same way it comes out very rare.  WHY?

What is a round roast? Why does it have an eye?

    The shoulder is muscly.

    And taller?

    Maybe?

Sorry. No help. I am averting my eyes in shame.

You are a great cook and Mother.

I bet the boys will eat any of your yummie cooking.

Hiked for 3 hours today with a friend and a borrowed dog.

Making split pea soup for the week ahead.

    Sorry, Laurie,

I tried to figure it out but IDK :(

I am making a bucket of split pea soup for the week. It called for dry mustard. That should be interesting.

And I bought the most beautiful apples from Washington State, They are huge. Honey Crisp

Laurie, I can only think that it might have something to do with the thicknessfof the roast.

My guess and that's all it is...A guess....heat travels through the muscles of the different cuts of meat....differently.

I must have been posting while others were too....

Honeycrisp and Jazz apples are my favorite ones.  I'll *have* to get 5 pounds each Sunday.

laurie- I HAVE NO IDEA. There that's my input! LOL

Bedo I love Honey crisp apples. I really don't like the taste of delicious. I like Jonathan or any of the tart ones. In other words if it's a cooking apple I love to eat it! LOL.

Went to Chinese with DH before he left for work.  Looks like hell be getting sent to work in Florida after all. Who boy. Well see h ow it goes. Not the first time in 40 years of marriage he had to work out of state. He's been in NC, NV, GA, CA, and IL. Sometimes for months. But I'll miss his weekends with me. His parents passed last year; I'm not in tx (kept for the darn magnesium) so it's probably a good time for it. Our daughters wedding will be in May and it's looking like a June will be the move. Anybody down there want a visitor? I'll probably drive down a couple of times to visit. Nothing is ever easy. He still has a couple of years before retirement. Sigh.

I am not much of a meat roaster, so I don't really know the answer to your question, Laurie.

So last night after touring 699 Boylston st. with DS2 (he is dying for us to try to understand what a commercial real estate asset manager does) we had a nice dinner at a newer restaurant in the Prudential  area. Had lobster popovers for appetizers, and roasted kale salad with scallops for my main. Both were yummy. Stayed away from ordering things people complained about on Yelp since all dishes were pricey, and it worked out well. Very little news on the girlfriend except that she is coming into town over St. Paddy's Day weekend. We will just be patient, and when he's ready to, we'll be happy to meet her! He's a good guy....and I know he feels a bit "watched" by his many married friends as well as relatives, so patience is the key here.  I love that your son made the recipe SOS call, Carrie. ;)

Nance, that cake sounds wonderful. I think I might plan a dessert party. :) I have a terrible sweet tooth so could down a couple pieces of that! Chocolate heroin!!

Tonight I made a toss of chicken, broccoli rabe, red pepper, onion, capers and orzo. Sauteed some extra   chicken pieces so we can have chicken parm one day this week.

wherever Florida Power And Light has its office. He actually works for a division of that Company - Next Era. I'll find out where. Just hate all the uncertainty.

moon - FPL is all over the state, as is Next Era from what I can tell, lol!  After 30 years as a military spouse I am a pro at uncertainty, but there is no doubt that change and moving is very stressful!

When I moved to Texas, I was given this Cookie Sheet Brownie recipe.  Interesting to compare to the Texas Sheet Cake.

    COOKIE SHEET BROWNIES

    1 stick soft butter

    1 cup sugar

1 lb can of Hershey’s syrup

    4 eggs – beaten

    1 cup flour

Beat together & pour in 10x15 pan

    Bake 350 for 25 min

    FUDGE FROSTING

    Boil together:

    1 stick butter

    1-1/2 cups sugar

1/3 cup whole milk (I always use 2%)

Take off stove & beat in

    ½ cup chocolate chips

    Pour over cake

Oh my goodness - Page 600.  Laurie - way to go starting this thread.

  • Minustwo-holy moly!!! that recipe is downright sinful :)

  • Okay, I just went back and looked at the Pioneer Woman's recipe...and that one is ridiculous too! They are very similar :) I like the addition of the nuts!

So more on the chocolate sheets -  USPS just brought my new Penzey's magazine/catalog.  On page 41 is ... Chocolate Sheet Cake.  The only difference from the one Nance posted seems to be this lady uses half butter & half shortening and adds cinnamon.  I need to find a group who isn't on a diet and will eat cake if I make one.  Bought a couple of triple chocolate cup cakes at the store today, but I just know they won't be the same.

Minus, that's the reason I made the cake in the first place, the penzey's catalog started me thinking about it!

  • Minus, the scales zoomed up when I read the ingredients in your recipe!  Sounds delicious and I'm sure I would indulge if tempted to do so.  I love chocolate, especially dark chocolate.

We're having turkey carcass soup and a tossed salad for dinner.  I got out the frozen carcass (from Christmas dinner) and stuck it in a large stock pot this morning to start thawing.  DH took the hint and oversaw boiling the carcass with veggies and canned tomatoes.  It was all cooked when I got home about 4 pm.  So I fished out the bones and cooked some cavatelli to add to it.

I did some shopping in Hammond, about 30 min. away, following a dental apptment.  There's a great produce store there and I bought fresh okra, yellow squash, cauliflower along with staples like onions and potatoes.

I went back to WW this morning.  Since the last meeting I attended in April, 2013, I'm up about 10 lbs.  It was good to see some of the same women who have stuck with attending meetings.  The leader is outstanding and I enjoyed the meeting and found it motivational.  I'm hoping dh will drop some lbs, too.  Wish us success!  There are so many temptations.

What really sent me back to WW was seeing the photos from our recent trip.  I couldn't believe how fat I looked!
