So...whats for dinner?

Happy Anniversary, Gina! What a treat to dine at Ruth's Chris's. Her first restaurant was in New Orleans. She bought a restaurant named Chris's whatever, maybe steakhouse. This restaurant established a good reputation for excellent steaks and good side dishes. She branched out within the greater New Orleans area and opened other restaurants calling them the same name. I love the creamed spinach side, which is decadent like the other sides. I don't think you can get a better steak.
Laurie, sorry to hear the bad news about your MIL. And glad that you had some ME time for a change. Everybody needs that now and then.
I made a delicious chicken salad today, using poached chicken breasts I cooked yesterday. In addition to the cubed chicken, other ingredients were diced celery, grated carrot, purple grapes and golden raisins. The dressing was Hellman's light mayo, plain nonfat Greek yogurt and a generous amt of curry powder. I made a big bowl so it should last a few days for lunches. Plus I got a couple of containers of chicken broth for the freezer.
Nancy, I hope you get lucky at the casino! If not, the martini is worth the trip!

gina - happy anniversary! Love Ruth's Chris - went to a military retirement dinner there not long ago. Yummy!
carole - I like to make curried chicken salad with those same ingredients, although I hadn't thought of splitting the dressing with Greek yogurt - great idea! - then I put chopped cashews on top. It is also good in a pita pocket or on croissants. I'm thinking the croissants are not WW approved though... I used to serve the mini ones with that filling for parties I catered.
laurie - yay for alone time!
All - I will be running about tomorrow, then having surgery on Fri. morning so may be out of commission for a bit. I am having new dermal matrix (allograft slings) put in - mine from BMX are failing. An outpatient procedure but I have no idea how I will feel afterward. If I am right back on here then things are good. If not, I'm probably sleeping, lol!

Special K - thanks for reminding us of your surgery. We will all be sending out thoughts & prayers for a quick, easy procedure Friday. Check in when you can. Thanks also for all time you've taken to answer my questions & the tips you've given me about this journey we're all on.

minus - it was my pleasure, I appreciate the good wishes! Hopefully this will be an easy surgery - or is there such a thing?

Good luck with the sx and fast healing Specialk! Be thinking about you.
Carole I was reading your comment on ME yime and I was trying to think what abbreviation ME stood for. LOL felt dumb when I realized you meant it about the alone time. LOL.

Special, positive vibes being sent your way for Friday's procedure. Good luck!
Gina, Happy Anniversary!
Laurie, I'm sorry that you are all having to deal with your MIL's serious illness like "the elephant in the room". So sad for everyone.
Carole, thanks for the history on Ruth's Chris's. Never been to one but always wondered about the origin of that name. Would you say it is better than Morton's?
Last night's turkey breast turned out to be the best I've ever had....so juicy! Tonight we made sandwiches with it on ciabatta rolls and an avocado spread. I skipped the roll and supplemented with some leftover cabbage soup which is really tasty with a splash of balsamic vinegar in it. Trying to stay true to my eating plan. I learned from my trainer today that since I started working out there last May, I've lost 25 lbs....which is 5 more than the 25 I lost from Jan to Jan, so thirty total over 13 months....but who's counting! LOL! Me! Aside from some joint issues and the ongoing tamoxifen side effects, this has been the healthiest winter I've experienced in years....I guess exercise really is good for you!

Special K - here is to an easy surgery tomorrow.
Need to cook something for dinner but no motivation, zilch. Maybe try the pancakes/bacon route. Today is our 38th wedding anniversary and DH is working.

Happy anniversary, Luv! Hope you and your dh will be celebrating when he isn't working.
Lacey, I believe there's a Morton's in downtown NO, but I have not eaten at a Morton's. I would guess that the high end steak restaurants all buy the best steaks and know how to cook them. We don't buy the best but I enjoy our steaks here at home. I seldom order a steak at a restaurant.
I had a yen for tomato soup today and made a pot of it that tasted good and was super simple. One can of diced tomatoes, 14 oz, 2 cups chicken broth. Onion and garlic power, s & p. Simmer fifteen minutes. Add 1/2 cup half & half. Blend with immersion blender or regular blender. I had a cup with a helping of left-over chicken salad.
Tonight we had a broccoli and cheese mac n cheese dish. I cooked a lb of lean ground turkey and added to it, also some wedges of Laughing Cow cheese spread to make it cheesier. The pasta was wheat rotini. We both enjoyed it with a salad.
Saturday is my birthday. Tomorrow I'm going to lunch with my Friday golf group. It's too wet for golf so we'll just meet for lunch and celebrate my birthday. Saturday night dh and I are going out to dinner. So I won't be expecting any weight loss when I weigh in on Mon. morning.

Lacey, the great thing about your weight loss is that you enjoy your food and don't seem to feel deprived in any way.
And good recipes for cooking cod? Our Fresh Market will be selling cod at a good price on Fridays during Lent.

Just popping in to say hi to everyone.
In your pockets SpecialK.
Carolehalston: Happiest of birthdays for Saturday - here's to many more.

Hi Tazzy. Glad you dropped in.
Lacey wow. You have really had a great winter to lose 25 lbs.
Happy Birthday Carole.
LMG , Happy Anniversary!
Special good luck tomorrow.
Supper tonite with a friend. Went to the Pasta shop. I got Mannicotii and sausage. yum. Of course have leftovers.... LOL. But it was so good. Haven't been to an Italian restaurant in a long time. Do I have to admit we shared a flour less chocolate cake? Dark chocolate? You know it's high in magnesium and my blood test for mag is tomorrow so I did it for my health.....LOL

Luv - happy anniversary. Hope you'll celebrate later.
Carole - happy birthday. Of course I love fish & chips, but I'm avoiding fried foods. Here's a recipe for Steamed Cod that I cut out from our newspaper today. Might meet w/your WW plan.
2 lemons; 1 medium zucchini - sliced; 1 medium summer squash - sliced; 20 cherry tomatoes; 4 Tblsp margarine or butter; 1 bunch fresh basil leaves; 4 boneless, skinless cod fillets (5 oz each)
From 1 lemon, squeeze 4 tsp juice. Slice remaining lemon.
On work surface, place 4 (12" square) pieces alum foil. Divide zucchini, squash, cod fillets, cherry tomatoes & lemon slices among the foil pieces. Top each with 1 tblsp butter, 1 tblsp lemon juice, 4 to 5 basil leaves and 1/4 tsp salt.
Crimp foil edges tightly to seal packets & transfer to jelly-roll pan. Bake 20 minutes or until fish is cooked through. Serve on brown rice.

Hi Taz.
Happy anniversary "Mrs. Goat". :-) and to you, too, Gina. It sounds like March is a popular wedding month.
Special, hopefully this will be one of those no big deal surgeries and that you're quickly back to normal.
Awesome..Lacey. I gained 70 pounds 30 years ago and over the years lost about 1/2 of it...."it ain't easy"..and I'm not fighting tamoxifen....
Sharon wants to go out for a walk and that sounds good to me.....

special thinking of you as you sleep on the table. Sending prayers for an easy recovery.
Thank you everyone for thinking of my mom. Phase 1 yesterday, met with specialist that may scope her to look at pancreas (cant have mri due to pacemaker) today is a gastric emptying study, next week will be colonoscopy and endoscopy to look around for causes. Did not hear any results of blood work identifying cancer markers. long slow process but at least she seemed in pretty good spirits, we talked a lot about what she will plant in her table top garden on her deck.
So, after leaving the house at 7a.m. for her apt,(hr drive each way) back at noon dropped car off for oil change, then to work till 9..... we had no choice but to do subs for dinner. All of your "hot" meals sound so good.
Minus I have cooked fish that way on the grill too...yum! I add capers, too, cause I like the combo of capers and lemon.
Tonight my hubby owes me a dinner out, as I am doing all this running around with the vehicle to get a hitch and wiring done! Him and his bright ideas!

Gina and Luv, happy anniversary! I thought March was a weird time to wed (DH picked the date) but I see now I have lots of good company. Congrats!
Carole, happy birthday! Hope you have a marvelous day! I'm going to try your tomato soup recipe. I have some of our summer tomatoes in the freezer that I think will be good in it.
Tazzy, good to hear from you. Hope you are doing well.

Carrie, our posts crossed. Wishing the very best for your mom.

Carrie, your mom is lucky to have a daughter who is so caring and good at providing comforting distractions during anxious medical procedures. (((((Carrie and Mom)))))
Best wishes to all the March brides and birthday girl! March seems a good time for personal celebrations since there are fewer competing national/family holidays so you don't often get pre-empted.

Carole, I usually just bake cod with a bit of garlic (either fresh minced or powder), paprika, basil, pepper and any other spice that appeals....and serve it with lemon over a combo of sautéed spinach/onions/mushrooms. A sprinkle of bread crumbs and parmesan during baking is good too. That's one of my favorite low-cal nutritious meals. Carrots or winter squash goes well with this too. Minus that recipe sounds tasty, tho I prefer baked fish to steamed. Another easy tasty idea for cod is to just bake it in salsa and top with some cheese towards the end of baking. I love cod.

You are right, Carole, I have not deprived myself much at all ( except not much pizza in recent months, but I've rarely missed it...have a feeling we'll be seeing some this weekend while visiting grands). I also indulge in chocolate "as needed".
Wouldn't want to be cranky, afterall! I think that keeping to my daily exercise regimen has been the key to maintaining steady weight loss over this whole year. Hope I can shed these last ten lbs. My knees are thanking me!Moon, glad to know that you are taking such good care of your magnesium level!

Happy Healing thoughts off to you, SpecialK!

Lacey: I love the idea of cod on the spinach/onion/mushroom 'bed'. Thanks.
Carrie: Hope all your Mother's tests go well and the waiting isn't too difficult.
I finally managed to put on two pounds in the last 10 days & need to gain at least 20 more. I was always a snacker - not bad snacks, just eating all day - like a handful of nuts when I went through the kitchen or a cookie or two. I think that habit is gone. And bread was my favorite. It will be a year next month since I started chemo tx and food still doesn't taste right. I sure miss cashew nuts & bread & rice & pasta. And I love reading your posts - since everything still tastes good in my brain.
Thinking about Debbie & Bedo. Hope you are both OK.

Wonderful 60 degree day today. Grilling a ham steak and pineapple with a side of asparagus. Sounds "springy" to me. Tomorrow it's out to a local steakhouse with friends.Although I love their steaks, I love their fried chicken better with a grilled whole sweet potato.
I think I will make some hot cross buns this weekend and some rye bread. Haven't baked anything in a week.
Hope you all have a wonderful weekend!

If DH comes home today well go out for fish. If not I'll have leftovers.
Carrie praying for you and your Mom.
Well. 21 months PFC and needed ANOTHER mag IV. Sigh. Worse yet my kidney function isn't as good as it could be. So they gave me extra fluids along with the mag. At least the Slo Mag isn't any WORSE than the mag oxicide. But it is so much better on gastro issues that I won't go back to the oxcide. As for the kidney issues it's wait and see. They have no clue what the problem is. Dang I should have had the WHO LE piece of that choc cake!!!! LOL
Much love to all.
0 -
Well the kidney stuff just sucks Monica but at least the mag change will be easier on you. Hoping you can get it all straightened out.
0 -
Moon: Sorry to hear about the additional Mag needed. Hope it's an easy IV. Please keep us updated about the kidney issues. How frustrating that they don't know what's causing the problem.
0 -
The mag is easy. I just sit there:) LOL. And mag through iv is easier on my gastro than the pills. It's just that it hangs on so long. Oh well. As for my kidneys my mind goes to my diabetes and kidney problems. But my numbers have been pretty good with a. A1c of 6.9. But.... LOL oh well. DH is home for the weekend so off for brunch! Much love.
