Laurie, so good to hear from you....and I hope you have a wonderful ski getaway! I am always impressed with your ability to plan meals when your family travels. Do take it slow, however, so you can reclaim your energy after being so sick!
Nance, I just learned on our local news that Tamoxifen is running out....and that next month Tamox takers will have to switch to another (un named) drug. So I may not be returning to Tamox after my few weeks of hiatus, whether the AI agrees with me or not! My oncotype score was 4, so a part of me may just to decide to take my chances if the AI makes me as brainless as Tamox has......
On to more important stuff....making fresh cod with salsa tonight....tired after a day of errands, so not anything but cuke salad for a side....and maybe a slice of cranberry/ginger bread from the loaf I impulsively bought at Whole Foods today. ;/

Dinner was Ribeye steak. Was going to add frozen Brussels sprouts but they'd been in the freezer too long and weren't tasty. So now I can add 'lemon minis' for dessert. What? Not the same food group? Oh my!!! As we've discussed before, cooking for one can be a challenge.

laurie - glad to see you, and smart plan on the non-skiing, lol! I am hanging in on the surgical front - went to see the PS today, have two one inch open areas of skin and we are now going to try xeroform dressing and antibiotics. Hope it works. My dissolvable stitches dissolved early - so need some healing and probably a re-stitch. Trying to eat protein!
lacey - I am on letrozole and have lost 16 lbs. since Jan 1st, so it can be done - but will say calorie control and exercise did not help me, this new diet did.

The pizza was DELICIOUS!!! I need to learn how to post links. I used Mary Ann Esposito's recipe for Wheat Pizza Crust. You can find it on the Ciao Italia website. But I modified the recipe and used all white wheat flour instead of part whole wheat and part white wheat. You don't have to let the dough rise. Instead use the pizza crust yeast. The recipe is super easy and delicious.
I do have a pizza stone and my oven heats to 500 degrees. It takes only 10 min. to cook the pizza. The other half of the dough is in the refrigerator. I may freeze it for later use.
Last night's turkey meatloaf was very good. I recommend that recipe. I actually liked the turkey better than ground beef meatloaf. It came as a big surprise to me when I first started cooking ground turkey that it tastes good. With WW, I have to use the lean turkey. The regular ground turkey isn't much better than beef.

Carol I'm glad you enjoyed the pizza. I like the turkey too but you have to be extremely careful with handling it. It's a bit more touchy than ground beef. It goes bad way quicker.
SpecialK I so hope those holes close quickly! If they do n t hurt would salt water help? I know it helps my skin when I get a weepy rash that is open sores. But i scab over night when I use it. And because I don't want to use abx unless I have too, I use it anytime I have skin issues. But it does sting....
Minus I am so there with you, cooking for 1 is not easy. Today I re purposed my leftover taco salad into burritos for supper. I pack the meat separately so I can heat it up. Added a can of beans and voila! LOL
Lacey, Did you like the cod with salsa? It is one of my favorites.
I heard there was a shortage of tamox. There is always some med that they can't seem to make.

Laurie- So glad you checked in, I was getting worried (we all were) Sounds like just what you need is a nice get away. I used to love to ski. the last few years I went though I just sat in the bar and drank hot totties and pretended I was there to ski. LOL! Chuck now has Diabetes, I'm about the same but still going to my rehab. They put me on some new breathing meds and they seem to open my lungs more, the oxygen levels are not better but the breathing is easier at least. :-))

Monica- I would not recommend the brineing, I don't think it made a difference.Normally my CB only takes about 3 hours to cook but after 4 hours it was still tough, I bought a big pot (dutch oven) to cook the corn beef and veggies in, and it overlapped the stove top which I think is why it took so long. We didn't end up eating until late and it was not very tender, so probably will not do that again!

Lacey, could you give some details on cooking the cod and salsa? Did you put salsa on the cod before cooking?

Carole, I rarely time my cooking exactly, so can't say how long the fish cooked, but here goes...... I rubbed about a teaspoon of olive oil on the bottom of the corningwear dish, added the cod to which I added some fresh garlic and paprika. Baked it at 375 uncovered for probably 15 20 minutes (depends on size...I had a 12 oz, thick piece). Then took it out and poured off any liquid that formed. I also poured off some liquid from the salsa (I happened to use a brand that is not so much "creamy"), then covered the fish with it and some shredded cheese, and baked it for another 15 or so minutes until the cheese was nicely melted. Can you see why I am not a good baker?! I hardly ever follow recipes the way they are written....and that doesn't work for baking.
Off to the gym.....tho my back is acting up....oh dear.

Had a nice lunch today following golf. Our club chef has designed some new items on the menu that are under 600 calories and meet other criteria for low fat and sodium. I tried one of them, salmon served on a spinach salad with a garden veggie sauce and topped with--can't think of the term! But the unnamed was chopped tomato and raw onion. The salmon was a generous portion and was good. The veggie sauce was yellow and delicious. I inquired about the color and was told it was made with yellow tomatoes. I don't eat raw onions so scraped them off.
My dinner will be a leftover slice of last night's pizza and a tossed salad. DH will probably have leftover turkey meatloaf and a salad.

Not sure what dinner will be tonight - DH is getting a haircut at the moment, and will be home shortly. I am thinking he will want something hearty because he will be having oral surgery tomorrow! Milkshakes and mashed potatoes are in his future!

Hello all,
I roasted 2 whole chickens. One was eaten with mash potatoes and steamed broccoli and carrots. The other I'll chop up to put on salad and maybe tacos. Kids asked for mexican night, will do that on Friday...need to buy a few things.
Caroleh...I know the tomatoe and onion mix as ....Pico de Gallo.

Coincidentally, Nance, I came across a cod vera cruz recipe I made a couple of months ago. We really enjoyed it, too. I should keep it on the counter so I remember to make it again.

Today, after the gym and a short clothes shopping trip, I came home and made some kale soup with beef stock ( I usually use chicken stock or broth) and lots of veggies. Using parmesan rind, some fennel in a tea ball, hot sauce, and some golden balsamic gave it the depth it needed. So we just had big bowls of soup for dinner with (tsk tsk!) crusty bread I picked up at Whole Foods yesterday. Tomorrow I am meeting a former colleague for dinner at Not Your Average Joes, right here in our town. They always have a good menu.
Special good luck to your DH.....and I hope he sticks to the shakes and mashed.....my DH was too cavalier with his food choices and landed back in the periodontist's chair for re-stitching. I was upset with him, especially because I am the smoothie queen, and can liquify just about any food.....he just needed to chew, I guess.

I've been trying to keep up here....work, plus 3 three hours commute time, along with my mom's stuff and helping DD with her algebra II midterm exam (she got a 92% on it)....has kept me busy.
The kayaking was a lot of fun. I'm not sore, but Sharon is sure feeling it--even though she goes kayaking fairly often. I worry that it might be some side effects from the Arimadex. I've been noticing her wince when she moves her left arm a certain way and that it seems to take awhile for her to walk upright after she has been sitting awhile. She as an oncologist appointment soon and I'm going to mention it to the doctor.

lacey - thanks! I think he will be good, mainly because he will just eat what I give him! I did not eat dinner tonight and when I asked him what he wanted he said "something I can chew" so I made stir-fry with peppers, onions, asparagus, pepper flakes, sesame oil and shrimp over Asian noodles. He whined a little though, very out of character - I think he is nervous - I think he really wanted a steak!

Eric, that stooped over look upon immediately getting up from sitting is classic AI. It's only been two years for me and I can't remember what it was like to get up and stand up straight. It passes quickly and exercise definitely helps (and some days aleve.) I envy you Carole!

auntie - this is a man who is always enthusiastic about what I prepare, so I think it was apprehension! He seemed to enjoy it once he got into it! One of those evenings when I just grabbed things and threw them together - I really like the toasted sesame oil - I miss the soy less when I use it.

Lacey, I always think of you, the Kale Queen, when I see kale in a grocery store! It sounds as though you have a lot of good not-run-of-the-mill restaurants in your town and vicinity.
Eric, the behavior you describe is classic arimidex (AI) SEs that many women experience. I have found that it either gets better with years passing or else you get used to the SEs and don't notice them as much. After whining for 4 plus years about my weight issues on arimidex, I am slowly losing some lbs by strict adherence to WW program.
This morning I had blood drawn for lab work. At my PCP's office I talked to two women who raved about the Ideal Protein Diet. They had come to the office for a weekly visit with the diet consultant. Both women had been on WW. One was a lifetime member. I got the brochure purely out of interest. It costs $150 for initial consultation and $100 a week for the food packaging and $10 for the weekly apptment. Very pricey and then there's the challenge of keeping the weight off that every "dieter" faces. One woman mentioned strict limits on carbs and no alcohol. A red flag for me! But she was very happy about losing fat and not muscle.
Tonight's dinner will feature a stroganoff using the leftover flank steak that I froze for later use. I saw a recipe in Cooking Light that I'll try.
This morning I planted more herbs in my patio pots. A lovely sage plant, a dill plant and a basil. I spotted the first two as I was entering Walmart's yesterday and the plants were so nice that I had to buy them. So now my patio garden is primarily an herb garden with rosemary, thyme, oregano, chives, garlic chives and the herbs mentioned. I still need to plant a flat-leaved parsley and cilantro. The funny thing is that I'm not that big on using fresh herbs but I love growing them and smelling their fragrance when you pick some.

SpecialK - scope out the parking beforehand. They seem to be known for not making enough parking space. Ours in Ft. Worth is on a busy intersection with a sharp R turn into lot. Wonder how many rear end accidents there? Still no word on what the other new grocery will be that is about a mile away as the crow flies. Hope your DH has a successful dental surgery today. Ouchie. Dentists are not my fav., never have been even b4 BC. And gosh I have to go next week. Dreading teeth cleaning.
We are having pantry clean out. Had dried flageolet beans with ham and cornbread last night. (Can you imagine spell check doesn't have flageolet? lol) I love southern cream peas and these remind me of them. I will put out some sausage for DH tonight; I'm off to a church function with too much snack stuff to eat. Making some pkg. Ghirardelli brownies to take - another item cleaned out that we don't need to eat.
Nancy and Carole - I agree with the stooped over look and AIs. I swing my hand ape like for a minute or 2 to get going. Not great for posture.
I just love to put those herbs down my garbage disposal. My rosemary bush gets trimmed reg. for that. I passed up a pineapple sage the other day. That is my fav. but I did buy a chocolate mint at WallyWorld. A big tub of mint survived the winter again; we'll see how much it perks up. There are green sprouts on it and I put it out of protected area into the sun yest.

Also jealous about the herbs, and am afraid to get too comfortable with the beautiful weather we're having in case it's 14 tomorrow.
Tonight we're having spinach-broccoli quiche, clementines, and something else to be determined, or the grown-ups are. The six-year-old (for just a few more days! how is that possible?!) will have separate ingredients since he prefers his foods unadulterated by other foods. LOL.

luv - I am not going near TJ's until next week - it is at least a 30-40 minute drive from my house, but the PS office is right down the street - so I will have a two-fold trip when I go for my post-op next week! I agree - their parking lots are small and this is also just off a busy intersection, so I think there will be some issues. DH is home after his surgery, just had a nice chocolate milkshake with protein powder, and is currently high on Vicodin. He should be a hoot later - he has a pretty virginal system so narcotics bring out his hilarious side! Right now he looks like an adorable hamster.
