    Lacey! Wow! YOU Sure pack a lot In your days! I love lobster but dislike mayonnaise so lobster rolls are out. I'd rather have the lobster salad like you had as long as the dressing wasn't mayo or sour cream based. I hope you have a great time with the little ones this weekend. 

    Carole that chicken in the crock pot sounds like an easy way to make it. 

    LMG that bean dip sound delicious too. 

    Specialk what the one thing you is most on the diet? Or have you put some things back?

    Dinner tonight will be a small streak and maybe potato. Depends. I could use a lovely salad but I'm still avoiding raw veggies. I've doubled up on probiotics eating yogurt and mostly Brat diet except I did eat the pineapple.... sigh. I WANT fruit! Applesauce is boring. So is white rice. And I don't even like bananas. LOL

    moon - the only thing I have put back is the occasional egg - like one a week.  Other than that I have just stayed with it - not having any of that stuff is ok with me - I don't miss it.  I walked around the Fresh Market today with my friend after her chemo and their bakery is pretty amazing but I don't crave sugar or sweets now that I haven't had any.  Weird, right?

    One thing I have made recently is taking leftover brown and wild rice and cooking it in a skillet with a little sesame oil, some thinly sliced green onion, and small pieces of pineapple until all is heated through.  Served with chopped salted cashews on top.  Love it.  Good with a steak and mixed green salad.

    The store had choice T-bone steaks on sale for $4.50 per pound, so we got enough for tonight.  Not sure what else we'll have tonight.

    The Isuzu Trooper passed its smog test.  

    Tomorrow is going to be 110F (45C).

    It was hot here today too, high 90's, but after the winter, I'm not complaining.

    made a Costco run today. Intended to get some of their calzones for dinner, but alas, there were none!  Sooooo, I had to make them myself.  While  I was at it, I decided to make a cherry clafoutis.   So now, the house is warm but we have dessert! We have our priorities here lol!

    Should have made sauteed veggies with the calzone as I picked the first zuke  today, but just too tired after a hot day in the city.

    Well it was nice here around 78 today. But they say right after the werkend it going down to 60 for a high. Yuck. I finally have 3 red cherry tomatoes on my plant! It had 6 green tomatoes on it when we bought it after Memorial Day! Those 6 now are 3 red and 3 almost red! Took a month to get red. So much rain no sun and cool really kept them green. Sigh.

    All of my tomatoes are slow to turn too.  I've had a few red but most are still very green.

    This evening Napi's did not disappoint! DH got his Portugese Bouillabaisse and loved it! We shared a baby greens salad with pear, pecans and gorgonzola, and I had the most delicious broiled local scallop and Maine lobster tail dish with hollandaise sauce, asparagus and julienne carrots (instead of the potatoes it came with). 

    Lest I sound like an ascetic, (skipping the potatoes;)after dinner, we headed back to the Portugese bakery where DH got their special fried dough (still warm!) and I got an almond macaroon....followed by a cup of ginger ice cream from a store we passed on the way back to the car. Ha! We definitely have to stay away from that bakery....after tomorrow! LOL   And I am actually looking forward to heading back to the gym Monday after I get home. 

    Carole, my brother and I used to fish all the time as we lived right by a lake....sunfish were mostly all we caught until we got older and fished from boats on the ocean....then flounder, fluke and bluefish. I remember fondly my single Aunt Anna (a business administrator, artist and local opera singer)who took us on those trips. What a good sport she was!    Glad you are making use of the available pontoon boat!

    Special, no surprise that you no longer favor/crave/feel you need to have...sweets. It's amazing how our brains and physiology alter with behavior. I should try eliminating sugar! ;)

    Nance, no doubt your calzones would surpass any store's version! And cherry clafoutis??? Be still my heart....and palette....and sweet tooth! Clearly the extracted tooth was not that one!! LOL

    Better get to sleep so I can do that long walk in the AM.....

    We have had a lot of rain also, but scorching temps - even with the daily rain the lawns in the neighborhood have some dry spots.  Typical Florida summer - nobody lives in this state for summer weather!  The snowbirds are the smart ones!  I did go to the fruit stand and got a lot of good stuff - yellow zucchini too, can't wait to try it.  Also, some nice cherries.  They had a selection of different jams and preserves, and had one called Traffic Jam - has anyone heard of that?  I just looked it up - not a lot of references, but it seems to be a multi fruit concoction - raspberries, cherries, strawberries and blueberries or cranberries.  I didn't buy any jams because I don't eat them anymore, but I enjoy browsing! 

    Last night's dinner was chicken breast, avocado and tomato in a pita.  Not very exciting, but it filled my tummy.  I would have rather been with lacey and shared the lobster and scallops with hollandaise!  Yum!  DH is out of town until tomorrow night, then leaves again on Mon for three days, so I won't be cooking much.  I have been working on a project - finally finished late last night.  I am a recipe clipper/collector.  I had many pages torn from magazines I subscribe to, or recipes I had copied onto scraps of paper while sitting in doctor's waiting rooms reading magazines.  I finally typed them up, or cut out the ones I wanted and glue sticked them onto card stock in categories and added them to my binder.  I already had the tried and true ones in there, but I had collected many in a folder and it was always a wild goose chase to locate the one I wanted to use, that I was sure was in there - so now they are all organized.  I know it is low-tech, but there is something about handling that book that makes me happy.

    The other inducement to skip the desserts is that I tried the "everything in moderation" way of eating and could not lose any weight at all, even with a daily fast five mile walk, so the fact that all of those clothes that were hanging in the closet for the last three years now fit me again makes it easier to resist.  It is the old "nothing tastes as good as skinny feels" thing.  One of the reasons I remain on this eating plan is that I have determined that if I add food back in that has no redeeming value other than tasting good I will gain again - I have tested this!

    Lacey, you're making me crave lobster!  And MN is not the place to crave lobster!

    Nance, I agree that your calzones are undoubtedly better than Costco's.  I don't recognize the dessert but I'm sure it's delicious, too.

    Today is July 12th, our 45th anniversary!  We're not doing anything special to celebrate but we're enjoying a leisurely (and for me, lazy) day. 

    Dinner tonight will be expanded leftovers.  I have a package of baby bella mushrooms that I will sauté and then add the leftover barbecued chicken and rice to the skillet.  Also garden salad.

    I got ww religion this morning when the bathroom scale was most uncooperative when I moved it from here to there.  I had a smoothie for breakfast:  almond milk, chunks of fresh nectarine, half a banana, frozen strawberries, 2 T of ground chia seeds.  Delicious.  Light lunch of cottage cheese and tomato.  I should go for a 3-mile walk....  Maybe Lacey will send me some willpower!

    carole - the charity clothing pickup truck just came and took all of my too big clothes away about an hour ago, so there is no going back now!  Happy Anniversary to you and your DH, you must have been a child bride!

    We had a very large lunch today with my 87 year old dad,  so dinner was just a large chef type salad with lots of veggies from the garden.  it was 98 here today, so I was happy not to cook much, although I did warm some yeast rolls in the toaster oven.

    Tomorrow  i must process 2 dozen ears of corn for the freezer. I hope it's a little cooler then.

    CRole, Congrats go you and your DH on 45 years! Ain't easy! 

    My DH had a gift certificate for a restaurant near a memorial service we went to. So we ate there. Wow!  Really inventive and good. My dinner was Panko encrusted chicken breast with Brie and raspberry balsamic and rice pilaf. It came with brocolini but I didn't eat that my DH did. I may pay tomorrow but yum!

    Carole, Happy Anniversary! I agree you must have been a child bride! :) 

    Today is also my DS1's birthday. 37 years old...seems odd to have a 'child' that old!

    Special, good for you to have those larger clothes gone! I have been doing that this Spring and Summer as I organize closets. Brave move, eh?! There is something very satisfying about it tho.

    So we are finishing up our last day in P-town, and it was a beautiful one. The temps were close to summer-like, (about time!!) and we took our 3 mile walk into town, had coffee there (and in the effort of full disclosure, shared a delicious piece of ingredient rich zucchini bread) and enjoyed the harbor view. Then bought a few  items (a cool necklace from a multicultural artisan store for a friend who invited us to the Vineyard at the end of this month...her DH died suddenly a couple of years ago, so she loves to have company to vacation with.....and six cobalt blue small water glasses from a marine junk store for the bargain price if 2/1.00). 

    Spent the afternoon at Herring Cove Beach, where, of course I collected more beautiful rocks, and actually swam in the 62 degree water. DH and I decided to take a long (two miles) walk down the beach and discovered a less populated, gorgeous part of the beach (unprotected by the lifeguards), which is also accessible from the lot in which we park. So next year....    And boy did we feel walked out today!

    On to food, since that is such a big part of this vacation week...

    We decided we really wanted Italian for a change and made a reservation at Sal's Place, which is very good, but at the very end of town with minimal parking. We deliberated about the method for managing the car issue and both started to admit that we would be perfectly happy to return to Napis (which has the rare asset of free parking) and get entrees we saw being served last night that looked wonderful. So....we cancelled our other reservation and went to Napis. We totally indulged! Shared some kale chorizo soup, and an appetizer of crab cakes. Then I had scallops provencal  over linguini, and DH had duck with veggies and mashed potatoes. It was a lot, and all wonderful! Needless to say, we walked around town for a while after!  Now I have to pack up so we can leave early in the AM. No walk tomorrow, but a trip to a beach on the way home.

    I will need to be brave to get on the scale at home! Even with the long walks, I'm sure the low weight numbers just prior to this trip will have bounced up!

    Better get moving on the packing up!

    Hahahaha Joyce.....sounds good to me, and quite moderate after our food binge in P-town!

    We are finally back home and will head to the gym later today....badly needed! And my body will be thankful (if a bit shocked) after our stretching class tonight. Confession....up 3 lbs!! :(  Even worse, DH is down a lb!!! :(((((.   Oh well, it was fun while it lasted. ;)

    Went to Head of the Meadow beach in Truro on our way home yesterday, where we enjoyed the antics of a few seals who swam and frolicked in the glistening water not far from the beach. No shark sightings, fortunately.

    When we left, we picked up two sandwiches to have later for dinner (BLT for me, of course!) at a local seafood and sandwich shop, (that has nice bathrooms that pass my germ phobe standards, unlike the ones at the beach) before starting the 2+ hour drive the home. So eating those sandwiches last evening was our understated "amen" to a week of fabulous food!

    Washed off my zillion sea stones so they are ready for arts and crafts in NH with the "grands" and other kudsat our beach this weekend. Checked out pinterest ideas for stone painting, and made a list of supplies to get for that project. Unpacked, started up washes, caught up on email.....and crashed!

    We're having workmen here this week installing high tech "mini-splits" in our family room and bedroom. They are getting quite popular here for air cooling/filtering and heating parts of houses. We chise to do this instead of replacing our furnace which is old but functioning fine, and using these will take some burden off the furnace. Supposedly, these are very energy efficient. I hate having workers traipsing through the house, but will have to just suck it up for the purpose of progress. ;/

    Lacey, all I can say is Yum, Yum to your eating adventures.  Same response to Moon's pictured dinner! 

    I ventured off to the Laundromat about noon yesterday with plans to go to Coburn's Supermarket afterwards to buy Canadian walleye to cook for dinner.  DH texted that one of the fishermen at the resort had given us fillets from a walleye.  How nice is that?  I used the cooking method of Barry, the handyman, who is a walleye fisherman, too, and a MN native.  Seasoned the fillets with s & p, lightly dusted with flour and pan fried in liberal amt. of  butter.  DELICIOUS!  We also had steamed asparagus and a wonderful salad of romaine, tomato, cucumber, avocado and blue cheese with vinaigrette of white balsamic and EVOO.  DH always makes a tartar sauce of mayo, dill relish and horse radish.  He eats most of it. 

    This morning the scale is showing a downward trend.  ThumbsUp

    It's in the low 50's here this morning and the heat pump is humming and making the interior of the camper comfy.  It's also windy out.  We usually bike on Mon. but the out of doors doesn't look inviting.  This week we will have the resort to ourselves.  Even Barry, who is here much of the summer with his son Kyle, went home.

    Oh Carole, to be in the land of walleye . . . . .

    I spent the better part of the day processing dozens of ears of corn for freezing. I'll probably continue to do that weekly as long as I can get the local stuff. This afternoon I made preserved lemons. There are a couple of Mediterranean dishes I want to try that call for it and I have never seen it even in my Global Foods store. Maybe I just over looked it. Anyway, they're not hard to make, but it will be 30 days before they're ready. I made a jar for my DSIL too.

    In the meantime, tonight's dinner will be all on the grill:  pork steak, grilled corn and veggies from the garden (zucchini, yellow squash, Japanese eggplant and onions) and a couple of grilled peaches.

    It's supposed to be only in the 70's and lows in the 50's for the next few days. Wow what a summer. Perfect weather. I don't think it'll help the tomatoes turn red, but a few have begun. So far, I haven't been impressed with the flavor.  Too much rain I imagine. The heirlooms haven't started to turn yet. Those will be the tastiest.

    Oh yes, I also made 2 more gallons of hummingbird juice. The little buggers are going through about 4 -5 gallons a week. I'm serious! I've lost track of how many pounds of sugar I've gone through already.  And they haven't even started migrating yet. That's when it really gets busy.

    Lacey, I'm betting those few pounds come off in a hurry. Gotta say, it sounds like it was well worth it!

    Nance, you are the most impressively productive kitchen diva! :)

    And how lucky are all those hummers?! Since we haven't been at the lake in well over a month, we haven't seen a one. But I'll get the feeders up  this weekend when we are there with DS1 and crew. The kids will love watching the little guys. We get a small fraction of the hordes you so generously feed.

    By the way, was it Susan who used to preserve meyer lemons? I miss her posts and hope she is doing well.

    Joyce, that salmon dinner sounds delish!

    We went to the gym yesterday sfternoon, and our stretching class. I had to laugh that afterwards, our class instructor came over to chat about restaurants with me. Guess my reputation is out! 

    We stopped at Trader's on way home and picked up their chicken cacciatore and salad fixins. I made a bit of pasta to go with the chicken and a spinach salad with baby portabellas, red onion, cranberries and feta. I actually like my salads better than any restaurant's......probably because I clean the greens so carefully, so I really enjoyed this one!

    Carole, so I mentioned walleye to DH, and he thought it was what we called "pike". We used to catch pike as youngsters too. Can't recall my mither fixing it tho. Sounds delicious! There was a pic on the news of a Minnesota woman fishing, bundled up in a parka and raingear, so I guess she is not so far from you!

    Have to get some meal ideas ready for the crew this weekend.....

    It's a nicer morning here today.  Cool but the sun is shining.  A great day to play the short golf course nearby and walk with our push carts.

    Dinner is an unknown.  Will look into the freezer for inspiration.

    Meant to comment that it was Susan who made the preserved lemons.  I've seen the process on several chef programs and it's fairly simple.  Lemons and salt, as I recall.  Patience to let the process happen. 

    I, too, would love for Susan to return, if only to tell us how she's doing.  Hi, Susan!

    Since I'm the only person on the planet who hasn't tried the Salsa Chicken, tonight will be my maiden voyage. I'm going to try it in the slow cooker, but will brown the chicken first. Sides will be rice, a cucumber salad and sliced melon. I'll probably make some guacamole for me with this very ripe avocado sitting on my counter next to some rapidly ripening tomatoes. DH is not an avocado lover, silly man.

    Nance - good luck.  I like green chili better than red, but that's just me.  I'll be interested to hear how it turns out.

    Carol - Did I say thank for the crockpot details?  I did look in a crock pot cookbook and EVERY recipe w/chicken said to make sure the chicken is frozen before starting so it doesn't cook before the veggies.  That was for 6-8 hours of cooking so wouldn't apply to the Salsa Chicken that you recommended at 3 hours.

    I'm amazed that throwing raw chicken, salsa and black beans together produces a tasty dish!  But it does.  On my last effort, I forgot the order Laurie had given.  I put the black beans before the salsa.  The taste was the same but chicken was a little dark! 

    We're having white chili tonight.  Our of the freezer came a pkg. of ground turkey (blah), two pkgs of cooked cannellini beans, some red and yellow bell pepper, a pkg of chopped green onions.  Other ingredients:  pureed onion, diced garlic, can of diced tomatoes w/chilis.  Liberal amt. of cumin, Hungarian paprika, s & p.  No chili powder made its way from house to camper.  Just turned it off and gave it a taste.  Not bad, to quote the Midwestern version of a compliment. 

    Hm...  Just remembered the fresh spinach in the refrig.  That would probably be a good addition? 

    Nance, how will you use the preserved lemon?  Chicken tagine?  I've watched several chefs prepare that dish and have meant to attempt it but have not.  I love that special tagine dish that is used in Morocco. 

    Minus, I would ignore the frozen chicken advice in this instance.  Your timing is all about cooking the chicken and melding the flavors.  The salsa and beans are already cooked and safe to eat.  The slow cooker recipe book I have gives lots of recipes with thawed raw chicken as well as frozen and cooked chicken.  I can't remember the name of it but it's very popular and in all the book stores.  I didn't bring it along.  In your case, you'll probably want to substitute green enchilada sauce for the red salsa.  Is there a green salsa? 

    Maybe if you wanted to start the slow cooker in the morning and have it going on slow all day, you might start with frozen chicken.

    Thanks again Carole.  Yes, at least in Texas & the Southwest we can get green chili salsa.  My favorite is Hatch Chili salsa from New Mexico. Since I'm retired, your 3 hours in the pot will be perfect.

    BTW - really jealous about the Walleye & the fishing.
