I remember that day 45 years ago - I was 9. I said to my Mum that I wanted to be an astronaught.... she said 'well lets just see how you do at school'.... needless to say I didn't make it ! Wow though 45 years ago ?!

Nance, I agree with the others, stretch it out! A lot of restaurants around here have birthday meals free if you sign up. I usually get at least two when it's mine so I stretch it out too! LOL
Tazzy, I am glad no homes got lost in the fire. Those are always so scary. And I'm glad you're just a bit battered and nor hurt in the accident. Rear enders are never fun. Dumb b*TCH for hitting you! I hope you recover well.
Carole, I cook the meatballs in a microwave sometimes. You cook them in sauce or gravy and don't mix them for the first 5 min. After that they hold their shape. But they work better in the sauce pan. If it's just me I do the microwave because I only make a couple out if a frozen bag. Sad I know! LOL
Eric the chicken sounds great. But i would leave out the cilantro. I really dislike that one herb. LOL. It's one that people either hate or love. LOL How's your MIL? Week 3 was my turning point. I would wake up at night and move my leg without thinking and it hurt just a little. I am finally off narcotics at week 4 and a half. So tell her to keep taking them. That's what they are for.

Summertime and Kids, seems that I have no time for anything. Meals have been quick lately. Tonight it will be grilled salmon and corn on cob and fresh fruit salad for dessert. Kids like grilled corn but I have to cut kernals afterward because of braces.
Trying to up my protein intake to get ready for next surgery, time has flown its less than 3 weeks away.

Dinner was from Farmer's Market purchases yesterday---fresh greenbeans with new potatoes bacon and onions (cooked in crockpot) and the best corn on the cob----and a grilled ribeye. Pfrobably not best choice for WW but I devoured it and scale be damned. Mowed the lawn to burn off a few calories, that took 90 minutes by the time weed whacked and watered garden. I have some tomaotes coming on, buds on the eggplants, blossoms on the zuchinni/summer squash and a few baby cucumbers. Garden was late because of rads until mid MAY.

A quick run down on what's been going on with me (if that's possible) HA! We went to see my brother in our RV on July 2nd in the middle of the night I had dropped my oxygen finger thingy and got up to get it on the floor, some how twisted my back and spent the next 7 days there in pain, couldn't lay on either sides, only sitting up on pillows, which I hate sleeping on my back or straight up! Every breath I took hurt OMG the pain was terrible, thought I had cracked a rib but couldn't even get dressed to go to the ER. We finally made it home and spent the next several days in bed, with Chuck doing everything but at least while visiting my brother he got to play golf everyday and had a good time even if it was without me. Finally went to ER a few days ago even though I was getting better it still hurt to breathe, no fractured ribs thank goodness, he said there was a little collapse of the spine and some arthritis but most likely the pain was just due to me twisting my back. Glad to hear it wasn't anything real serious. I feel much better now and am able to sleep on my side! YAY!
My brother has been here the last couple of days so we have been on the go a lot and finally taking some time to check up on all of you.
Funny on the rice dishes you have all been eating, we have been eating rice until it has been coming out our ears. ha! I know the ratio of rice and water and how much you get, but last week I wasn't thinking when I made rice, I was thinking one cup of rice was not enough for a few meals so I put in 8 cups of rice with 8 cups of water, omg! What was I thinking, it was all the way to the top of the pot. I totally was not thinking clearly that it expands and one cup of rice is not one cup of rice.haha! So the first few days we ate Pork fried rice, then I made just regular rice with butter. Then I made portuguse sausage with rice, pineapple, coconut, green onions and eggs (delish) Then I made flour tortillas with beans and rice. I still have tons left so since it is cheap I might just toss it now. ha! But it was funny after all the rice we ate I come on here and read your all eating RICE!! LOL!

Debbie LOL! That's a lot of rice. But it does freeze well. You can package it in single servings. LOL
BTW. I looked at my pic of dinner and have to clarify, that's a half potato and the dish is a salad plate, not a dinner plate! LOL I needed fiber but it looks like enough fiber for a marine doing heavy duty! LOL

I remember going out in the driveway when they landed on the moon to see if I could see them - they didn't really seem that far away. My dad was an aerospace engineer and actually did some of the work connected to the lunar lander. He predominantly worked on satellites, and also helped with development of GPS, which everyone uses these days - thanks dad! I drove back from the east coast this evening by myself after visiting and helping my DH arrange inpatient hospice for our friend. I no sooner got in the house and my DD (there with DH) called me to say our friend had passed away. We brought his beloved dog in this morning so he could see and cuddle her, and many friends came by. I am sad tonight but glad that he is suffering no more.

Moon, LOL I was going to mention but forgot in my last post about your dish, it looed yummy but couldn't see the potato ha! I Didn't know rice could freeze well, wish I would of came here and asked it would of saved me a lot of rice dishes. hehe!

Debbie - thanks, he has no family - never married, he created a "family" of friends. He was my DH's middle school history teacher, and was my DD's godfather - he was like an uncle of sorts. Today his high school friends of 70 years were there and my DH, my BIL, and another friend who was one of his students were there too - they had known him for 40 years. Two generations of friends, linked by schools he either went to or taught at. He was 86 years old, lived a great life, had a wonderful sense of humor, and was a two time cancer survivor. We will miss him, but celebrate his life and how lucky we were to know him.

SK - sorry about your friend. It seems you and your DH were good friends to him.
Thanks for the birthday wishes everyone! It was a good day. Plan B turned out to be lunch at a new micro brewery in Hannibal. DH ordered a hamburger (of course), I opted for the PBLT (pork belly, lettuce and fried green tomato), which was a nice concept but the pork belly wasn't nearly crispy enough. It came with handcut fries which would have been outstanding except for the sugar that was sprinkled on them. Didn't really get that, unless someone just made a mistake in the kitchen. We sampled several of their craft beers and found a couple that we really liked for the next trip. After lunch, we walked several blocks to my favorite gelato store. DH had cherry cheesecake flavor and I had key lime. He made the better choice, mine just tasted like vanilla.
For dinner, DH had a filet and I had lobster claws. In spite of the sad fact that they were frozen and not fresh, they were quite delicious. I even have enough leftover for a lobster roll for lunch tomorrow! For sides we had salt potatoes, corn on the cob and sliced tomatoes. DH made me coconut cupcakes instead of a birthday cake and they were terrific too. So as I said, it's been a good day!

Eric, I remember the moon landing very well. I recall gazing up at a beautiful full moon and trying to imagine what was happening up there!
Our beautiful cool weather has turned humid and warm for a few days but by Wed. it's supposed to be comfortable again. We turned on the a/c yesterday afternoon.
When at a loss for what to cook--have pasta for dinner! We had a home-made tomato sauce with Ital. sausage and wheat spaghetti for dinner last night. Grated Asiago cheese on the pasta. A delicious green salad with avocado. And leftovers for another meal.
Tonight's dinner may be the leftover pasta. Too soon to tell!
Today we'll do some biking on another segment of paved bike trail.

auntie - yay for the b-day and your DH making you cupcakes - how awesome is that? I'm betting sugar on the French fries was a sugar for salt mixup, lol! I have had sugar on sweet potato fries - actually cinnamon sugar - but not regular fries.
Debbie - you poor thing! Sorry about your back! Back pain is so hard because you can never really get comfortable, it is hard to wait it out.
carole - pasta is my fallback too! You can make a palatable sauce out of some many different things and we are pasta lovers.
Thanks for the condolences - we will be busy for the next couple of weeks as DH is the executor, so a lot of short-term arrangements need to be handled since there is no family. DD is once again proving her mettle, as she did when I was diagnosed, by helping her dad today. She has to go back to work tomorrow, so she will leave from Miami once they have made all the arrangements. I'm on the phone and computer at home in Tampa (came back last night) handling legal stuff and advising them on details. I feel weird being so far away and doing things remotely but they are getting things done over there very well. My DH is doing some second guessing about how things were handled in the last few days, but I think that is normal because there are no perfect scenarios when it comes to this, it is just hard.

SK, sorry about your friend. You and your family did a lot for him. Tell your DH that his just being there meant so much.prayers. and my FI didn't work on the Moon landing but he helped developed the radar systems for the airports.

Hi all.... it has taken me four days to read all the pages of this thread from January on, and am peeking my head back in, hoping that I am still welcome.
I have no idea why I feel that I need to explain my disappearance, but for some reason, I do. My world has gotten smaller since January. I have receded from almost all of my communities. I resigned from the union, which crushed me. I have been a member of the musician's union since I was 16. Sending that letter was one of the hardest things I have ever done. The fact is, my hands are shot. I will never play again. The essence of my self is gone. And, along with that essence, I no longer see all my friends. No more gigs. No more long breaks hanging with the group. No more long rides chatting about our lives, our kids, and telling jokes. Along with the violin, I now have to be very careful about cooking. Too much chopping results in fearful pain. So, my self-expectations and my culinary investigations have also been curtailed. So, I have not been active in my online cookbook club.
To be honest, the two things that I _do_ are gone. I have always been goal oriented, and now the ones that gave me joy are gone.
Professionally, the other kind? Things couldn't be better. I have four major projects on my desk right now. I am billing tons of hours. For once, I actually have income. These projects are pushing my skills, in a good way. I am working at least 60 hours a week, and those are the billable hours. Then there are the hours researching and learning which I never bill for.
The kids have settled in completely. The cats rule this roost completely. The fuzzy one asks me to brush her. The other one yowls when we leave the house. They race up and down the stairs, and then sleep for hours. My kid's doctoral program pushed her absolutely, especially at the end of her Spring semester. I ended up taking care of all their food needs for about 6 weeks.
My Mother is downsizing, and she misses my Dad, and I suspect, she is totally lonely. She calls and just drones on and on. But she is my mother, and I allow her to talk and talk and talk.
My husband's need continue to expand little by little. I need to remember more and more things, reminding him about what is coming, what is happening, what we need to accomplish. I am checking our accounts to make sure he is paying our bills. Soon, I will need to take over a lot of these tasks.
I am resenting how dependent I am on doctors. Every month I have to go to that hospital, bare my butt, presenting it to Nurse Judy for a painful injection. The pain never goes away anymore. The drugs have given me arthritis in my back which I am told I just have to live with. Getting enough Synthroid from that other doctor is like pulling healthy teeth. I have to beg for an increase, and I am still far in the hypothyroid area. I made the mistake of mentioning how concerned I was that I keep gaining weight, and they pegged me as a potential Synthroid addict I think. Huh? Synthroid? I am a patient with mets, I can get any drug I want and you are worried about synthroid knowing how difficult the side effects are for me? I just don't want to get larger than Rhode Island and not need two naps a day!
I find myself emptied, and without the violin, I haven't figured out how to replenish my soul.
Now, we haven't starved. I am not miserable. I am learning to use modern tools like a mandoline and food processor to do more of my prep. I am scaling back the number of complex elements I prepare for one meal, and have even resorted to buying a few items at some of the area specialty stores. We have been working through the pig and lamb that we bought last Fall. There have been lots of roasted turkey breasts to provide sandwiches for the entire household. This was the winter of soups, mostly chicken broth [and some turkey, see above] with stuff. Good stuff. The garden has a forest of tomatoes and we actually each got one cherry tomato yesterday. Our first of the season. My daughter has completed her first year of her doctoral program and is kicking some butt! Her grades are astonishing and she was one of the participants in the forum that Lacey didn't make it to with all those governor candidates. The boy is feeling comfortable around here and has even invited friends over. I got new dishtowels! They cost a fortune but I was tired of having only towels with holes everywhere.
And yet, living only moment to moment does bring a certain contentment. Heck, making it through this horrific winter and getting to sit in the garden once again brings contentment. In spite of having three incurable diseases, I am here and strangely, healthy.

Lacey, I can not believe how your allergies have taken over and that you have been able to do this elimination thing. So pleased that you have finally met the DS2 girl though appearing unannounced was a bit cruel. At least give a Mom 60-minutes notice for goodness sakes. And I am amazed at your weight loss.
Laurie, my condolences to your entire family on the death of your mother-in-law. I am so sorry that some of the family focused on conflict instead of your MIL during those last days. Hope that your SIL finds some solace and comfort hanging out on a body of water this summer.
Debbie, I am so very sorry to read of your medical troubles. Nothing I can say to make it better, but goodness, you are handling this with grace.
Deborye, Congratulations on the birth of that beautiful grandchild. What a joyful way to end what must have been a most difficult year.
Moon, so impressed with your recovery from your knee surgery. That is a big surgery and not everyone does as well as you. That potato with beans made me giggle. I have never had beans and a baked potato together, and based on that photo, I may never! I read some implications that you will be moving? Did I read that correctly?
SpecialK, so sorry to hear of your friend. Sounds like you, your husband and all his friends surrounded him with love as he transitioned. Congratulations on your weight loss. Very significant, and impressive.
Auntie, again, thank you for your PM's. Happy Birthday! I am the other person on the planet who hasn't made the salsa chicken. Our family has enjoyed many loaves of the Rye bread, especially with our roasted turkey.
carolehalston, I have never heard of a frog strangler, but this is a phrase that now needs to enter my vocabulary. So rice noodles...... place them in a glass bowl [metal would get too hot, plastic might melt], boil some water, and then pour it over the noodles. Generally the noodles are in nests, so "toss" the noodles with two forks until they are no longer tangled. Let them soak until they have softened, but haven't yet turned into mush [7 minutes or so.] The thinner the diameter the less time to soak. You can toss them with ingredients you have cooked on the stove, or quickly cook them in those ingredients. Expect to fail a couple of time until you get the timing right.
Joyce, so nice to see you posting again. I am so pleased that you are still seeing Rick. He is such a special man, and I know that this has been very difficult for him. Please let him know that I send him my best.
Eric, sounds like your DD is growing up quickly! You must be very proud of how well her approach to adulthood is going.

... And finally, since this thread is all about the food...
Two nights ago we grilled a whole chicken, spatchcocked [such a great word], dry brined, and then mopped with a spicy Caribbean mustard based habenero hot sauce I had made up for ribs a few weeks ago. That has been the basis of our meals for the past three days. Night one we had it with the first local corn of the season and a large salad using many market ingredients.
I made some herbed goat cheese which was delicious on a roast beef sandwich, but we were out of roast beef, so I made some pumpernickel crackers and we had those as an appetizer in the garden before dinner last night. Dinner itself was more chicken, string beans lightly steamed and local tomatoes.
Tonight we will finish the chicken. I have some local potatoes, more tomatoes, more lettuce, and broccoli. Some combination of those will appear on our plates. Will let Mr. Susan decide if he wants carbs tonight or not.
Dessert will be one of those peaches or apricots we got from the market this weekend, assuming they are ripe enough tonight.
Tomorrow, the carcass will be soup!

How in H*** can one be a Syntharoid addict? I remember Mickey studying the thyroid and if I recall correctly, there wasn't much judgement needed to decide if a dose adjustment was needed. That doctor doesn't make much sense, but then, some of Mickey's doctor's made no sense.

Susan, so very happy to hear from you, although like Eric, I'm sorry the news isn't better. I really don't get the synthroid issue. is there another doc you can consult? It seems that sometimes you have to kiss a lot of frogs to find a good one. I'm struggling with hand issues too. It definitely affects my knife skills. Certainly not a loss as great as yours

Thanks all for the condolences - will be heading back over at the end of the week to help DH with the house and the service - he is staying afloat and I am helping him from a distance with research on florists, old testament readings, court filings, lawyers, locksmiths - you name it! Had to have a skin cancer removed on my lower back this afternoon - the reason I came home - not too bad, but starting to sting a bit now. Tomorrow is the dentist, and Thursday is a mole removal from my FACE! Eeeeks! Hopefully that goes well since I will be seeing a bunch of people on Saturday - bad timing on my part, but what can I do?

Sorry that last post ended so abruptly -- my phone decided that's as much as I could post.
Tonight was the remains of last weekend's pasta dish and a pretty ho hum salad, the highlight of which was the garden tomatoes and Caesar dressing. I managed to roast some tomatoes today, in spite of the 90 degree heat. I have an abundance of tennis ball size tomatoes that are a good size for roasting. The trick is not to eat them straight out of the oven but get them in the freezer. They are too tasty! I'll try to do some more tomorrow morning before it gets too hot.
SK - you must feel like a pin cushion! Hope the latest removal goes smoothly.
Susan, I hope you won't withdraw from this little community. I know being so busy with work and finding enough energy to live your life is challenging but even if you can only check in occasionally, I hope you will. We miss you when you're gone.

Susan, what a pleasure to have you check in! Sorry that some of your news isn't good. I have been taking synthroid for at least 15 years and my dosage is determined by the blood test. That dosage has been the same for quite a few years.
SpecialK, I'm always impressed by your "competency" in handling situations. I'm sure your dh is appreciative of your help from a distance as he handles his duties as executor.
A thunderstorm swept through last night and took away the high dew point causing the Louisiana-like mugginess. This morning feels like northern MN again!!! DH and I plan to play golf at Eagle View, the little course down the highway. It's short enough that we can walk using our push carts.
Yesterday we pushed ourselves with the biking and were pooped by the time we finished. I didn't have a dry thread since I'm a "sweater." So last night's dinner was the leftover pasta and a scrumptious green salad.
If we go to town after golf, I hope to buy some Canadian walleye for dinner.
Nance, those roasted tomatoes sound delicious! I'm envious of those of you with home-grown tomatoes.

SUSAN!!! So happy to see you back, but so sorry to learn of those major tears in the fabric of your life. Hopefully music can be a source of joy in other ways for you....and, like Nance, I can in a small way relate to the hand impairment. It is so damn frustrating, since retirement has allowed the time to do the very things that I love but now hurt to do, and sometimes can't even manage. I am glad that things are going well in other areas of your life, and congrats to DD on her very successful year! Please keep us posted when you can!
Special, since I've been offline a couple of days, I'm just seeing your post about DH's friend who died. It sounds like your DH and you helped him have a full and peaceful end of life, surrounded by many who loved him. What a wonderful example of a "caring community" for a man who obviously helped raise its members! I do hope your next skin procedure is gentle for you. I would imagine that the people you are seeing on Saturday have probably all dealt with the skin cancer issues, so they will get it.....and probably remember to make their derm appts!
DH and I are back home for a couple of days before heading back to the lake. We had such an absolutely delightful time with our little grands, our sons, and DDIL The kids are a riot, but wow (!) are we exhausted from their high level of activity. Makes us realize what an old retired couple we really are..... I did get a chance to make sea stone faces with DGS while DGD napped. He only stops moving for puzzles or arts and crafts projects so it worked out well....we enjoyed creating them, and made one for his sister too.
We half-cleaned the lake house yesterday after their departure, (we'll regret that when we return on Thursday) and in the process I came across a squiggly tiny thing that I think could be an infant snake? DH put it outside. Hope we don't have snakes coming up through the drains!! And really glad I'm not snake phobic!
Made it to the stretching class yesterday after bombing down the highway, and stayed to do my much needed whole exercise regimen! For dinner we had leftover pasta and shrimp and salad...it was well travelled.
I actually went to sleep early.....we were both wiped....and I'm moving slowly this AM, but need to get moving since there is much to get done here. It does not include planning dinner since DH has food after his late afternoon meetings.....yay!

No cooking tonight. After our golf game, dh and I drove to town (Park Rapids) and had lunch at The Good Life Café. I had the Walleye BLT on ciabatta bun with a lovely little side salad that was mostly fresh greenery. The dressing was citrus vinaigrette. I also munched on some of dh's battered French fries that he had with his sandwich, the special of the day. Grilled chicken with onion, peppers, and rhubarb bbq sauce. He said the sauce was very good, with a hint of tartness. And that the chicken breast was cooked just right as were the veggies.
After a heavy late lunch, we'll probably skip dinner or have a snack.
