Carole, your after golf meal sounded lovely!

Our lake house is only 2 hours away when there is no heavy traffic. Remember, everything is closer for us Easties. In fact what is funny is that our Cape time share is exactly the same distance from our house....tho it is rare not to have traffic when we go out there. The NH trip, if we time it well, is always fun to try to make in under two hours...I have been known to do it several times over the years.  Leadfoot! ;)

Spent most of the day putting food by -- corn,  peaches, roasted tomatoes. I feel like a farm wife.  This is what living  in the country has done to me.

Tonight is grilled ham steak, baked corn, and stuffed tomatoes.

Susan - so glad to hear from you but I too am sorry for the curve balls life is throwing you.  I'm mentally arguing in my head about selling my piano since I can no longer play with the neuropathy.  But for years I've only played for my own enjoyment when no one else was around so it's nothing like your loss.

Special - good luck with the skin surgery.  Had my 6 months full body exam a couple of weeks ago.  My derm doc was thrilled last year to see that chemo had "killed" all the pre-cancerous lesions.  Now they're growing again and she had to freeze 15 spots.  Adding my condolences for your friend.

Hi to all the rest of you.  Love reading your adventures and my thoughts are with you in your troubles.  Sorry I haven't checked in much but my son has been back & forth from CA helping me get a new roof.  That was finally done 2 weeks ago & new gutters last week.  This week I have Herceptin infusion then I'll start researching windows.  All this house maintenance stuff planned for when I retired was put on hold for BC so now it's catch-up time.

Grilled T-Bone steak and spinach tonight.  I cooked a baked potato too but it was too much to eat.  In honor of Bedo, I think I'll have candy corn for dessert.

Tonight I made two stir-frys and fried myself in the heat. The first one was a broccoli with shitake mushrooms. Added some Thai peppers but couldn't taste them at all. Need to amp up the peppers if I make this again. Local broccoli is so good it hardly needs cooking. The other one was Beef Chow Fun which I haven't had in years and never made. I was too lazy at 5pm to head to the H-Mart for fresh rice noodles, and way too lazy to make my own, so we settled for rehydrated dry ones. Absolutely delicious! Definitely goes into the rotation for nights that I want noodles instead of rice. Enough leftovers for two lunches for both of us. Tomorrow, I am going to let someone else do the cooking and sit in air conditioning while I eat.

Minus, I have recently had my violin appraised. I have decided, if possible, we won't sell the instrument so that we avoid the capital gains taxes. The value resets when my daughter inherits it. The value would buy a nice house in most parts of the country. In the Boston area, it will be a nice downpayment. Now what to do about all that music?

Susan - oh yes the music.  I have much of my grandmother's sheet music from the turn of the last century, and most of my mother's music - not to mention what I've collected.  Discovered 3 boxes in the attic when my son was here in addition to the shelves & shelves in the den.  Mind you, I was really a singer & not an instrumentalist.  But the piles of scores for choral works & symphonies & musicals & operettas.  Oh my!!!  My DS is not in the least interested and niece & neph not musically inclined.  Let me know if you find a good outlet.

minus - This time I did a burn and scrape procedure because the spot was right on my spine.  The last were wide excisions, with a cubic inch of skin removed - much like a lumpectomy.  They could not have done that in this location as it was not fleshy enough (probably the only place on me that isn't, lol!) but it was not too bad.  I seem to be on the schedule of removal of at least one bona fide cancer at each six-month appointment, last time there were three, including a recurrence.  The burn and scrape is interesting, it had been a while since I had done one of those.  They numb, use a shallow cylindrical sharp instrument, then electrodessicate, then repeat.  I am actually surprised it is not hurting me more, but pleased it is done.  I go back in December when I am sure they will find another.

SpecialK, I had a burn and scrape procedure on my neck before we departed in June.  DH had told me how slow those are to heal.  He has had a couple of big ones on his back.  But mine healed fairly easily and hasn't left nearly as noticeable a scar as I expected.

Susan and Minus, you both were very blessed to have musical talent and training.  And the joy of those years when you were playing music or singing.  I'm envious because I didn't have the opportunity to learn to play an instrument.  When I was a kid, I wanted to play the piano and took a few lessons from a woman who came to our grammar school and gave lessons for almost nothing in payment.  Maybe $1?  But we didn't have a piano at home.  Couldn't afford one and didn't have room for it anyway.  So, yes, it's sad for you to have to give up performing.  But, I repeat.  You were blessed.

I had a great "nature" day today.  DH and I went out on the lake fishing this morning.  Sitting at anchor we watched a gorgeous loon float up close to the pontoon boat.  So close I could see his/her red eye.  When the bird dived down and surfaced seconds later, I actually saw the tiny fish in the beak.  It was quite thrilling!  At our next anchorage, an eagle flew overhead low enough that we could clearly see his white head and white tail feathers.  Another thrill!

Finally, when I was taking an exercise walk later after returning to the campground, a pretty deer bounded out of the woods, stopped and looked and me before bounding into the opposite woods.

So who cares what's for dinner!  LOL!  Actually there's a whole chicken cooking in the slow cooker.  All I did was sprinkle s & p, onion and garlic powder, poultry seasoning, and Hungarian paprika all over the chicken on both sides.  Shove it down into my not-so-large cooker and turn it on High.  It smells really good.  A while ago I turned the setting to Low.

One side will be salad.  A second one will probably be corn cut off the cob and cooked in butter with some chopped colored peppers out of the freezer.

I love loons Carole. They are always one of the highlights of our Wisconsin or Minnesota trips.

Tonight was roast pork loin with a balsamic glaze, squash and potato hash browns and sliced tomatoes with olive oil and basil.

Water aerobics at 7pm on Monday & Wednesday means dinner is small or non-existent.  I usually try to eat a big noon meal those days but had Herception infusion today and I had a peanut butter & jelly sandwich.  So dinner was sushi from the grocery store.  Don't worry - it was California Roll since I understand we're not supposed to eat raw fish after BC.  Or was that only during treatment?  Anyone still eating raw?  Also I had it with Wasabi mustard and not soy, just in case the rumors about soy & BC are right.

Carole, what a wonderful day! I too love loons and we are always on the lookout for the very few that inhabit our lake. It is also a thrill to see eagles at close distance. While I would be fine saying "hi" to a deer on a walk, some of my neighbors at the lake have run into bears and foxes while on their walks in our neighborhood. That worries me a bit.....

We were busy all day, today, yet managed to pull a nice dinner together and actually ate on our deck, which is rare due to my resistance to any extra work at dinner time.

We started the day with a couple of hours at the gym, then went to Triple A to a travel agent to finalize some tours in Italy for September, then DH needed a bathing suit, so we went to  Marshall's where we both shopped the clearance aisles, then picked out some adorable outfits for sweet DGD who turns two next month. Then off to the food store to get food to make dinner.

DH grilled chicken breasts that I marinated in a chili pepper balsamic sauce. We had corn on cob that travelled home from NH and was delicious, asparagus that was not, and an arugula salad with red onion, feta and chunks of watermelon that needed to be used. ;) Odd but good!

Tomorrow after a dentist appt we head north again....where the house needs a good cleaning. Ugh! But we will be enjoying happy memories of those cute busy kids with every area we clean! ;)

Special, hoping your healing process goes like Caroles!

Minus, I am pretty careful about the bc food warnings, so I hope it is not all for naught!  I hope you are enjoying a feeling of accomplishment as you get those big house upgrades done. It's great to have your DS on hand to supervise!

My back seems ok - but the spot is looking a bit angry at the moment.  I have experienced slow healing with some of these spots - the derm always says the farther from the heart they are, meaning lower extremities, the slower they heal.  I had two on the shin just before chemo - they scarred badly and took forever to heal.  The good news about this one is that it is not in a place that will be seen much.  The area is about the size of a quarter and they warned me the scar may be larger than that as the skin stretches.  Nice, right?  Dinner was non-existent.  I am home by myself and spent the evening on Skype with DH and phone with DD, but kind of never got around to eating.  I am headed to the east coast of FL very early Fri morning - will be a challenge to maintain any kind of healthy eating, but I will try!

Didn't go out to dinner last night even though the kitchen was 94º. Instead, I baked [can you image] some crackers and we nibbled on cheese, salami, tomato salad, raw cut vegetables, a tiny loaf of French bread and these delightful crackers out in the garden. I have finally found a cracker formula that gets crispy! I can never bring myself to buy those boxes of fancy crackers at $8 for a tiny amount. And now I don't have to. In case anyone else is stupid enough to bake in this heat, here is the link: http://www.annabel-langbein.com/recipes/sesame-lav...

I reduced the amount of oil to 3 tbls. Baked at 325º.

Susan, I'll try them. I've never made crackers although I've wanted to.

Count me as one of the stupid ones. I made what is quite possibly the best cherry pie I've ever made yesterday.

Tonight is chicken and"slicks" and a tomato tart.

Susan, your "snack dinner" sounds delicious.  I checked out the link and the comments, which were positive.  It would be fun to try making crackers when I get back to my home kitchen and oven.

Last night's slow-cooker chicken didn't look pretty like an oven-roasted chicken but it tasted good.  As usual the entire breast is left over and I plan to put together a dish with chicken and canned artichoke hearts, carrot, potato, and snap peas for tonight.  I saved the liquid the chicken produced and will use it after I skim the fat.  It will be a throw-together version of chicken pot without any dough.

Special, your scrape and burn is much larger than the one on my neck.  I have detected a tiny problem growth on the side of my nose up near my left eye.  It has the feel of something that will have to be removed.  Would prefer basal cell rather than squamous.  Had one of the latter variety near my eye on the right side in 2013.  It was small on the surface like a little pink bump but went deep.  I went to a PS to have it removed.

Another gorgeous day here today in northern MN.  Love the way the air is clear when not laden with humidity.  Hope everyone has a good day.

We had frozen chicken strips Shake 'N Baked only because it only had the oven on for 20 minutes. Leftover dressing and carrots and salad. No idea what tonight will be. Maybe dribbles of leftovers. Maybe pasta salad if I get it made before noonish. Under extreme heat advisory thru tomorrow but bet it gets extended at least thru Sat. poss. Sunday. I need to buy more of those frozen dumplings. I have a few of the froz. chicken strips left and the turkey carcasses. We are supposed to be getting another cool spell the middle of next week. Need to plan for these things. Wish I could remember how I did the chicken/dumplings the last time. I'm just terrible about making notes these days. I did put the blueberry ice cream sauce in my recipe book. DH loved it. Maybe we need some lowfat vanilla BlueBell ice cream.

Special - I know I forgot to express my condolences for your DH's dear friend's passing. What a wonderful testament to his life that he made so many special friends even without a wife/children which I consider a gateway to ready made friends. Have a safe trip to the "other" side tomorrow. Special prayers for an uplifting service for your friend.

Welcome back Susan. I have been tempted - in cooler weather - to make homemade graham crackers. Even bought the graham flour which I really should use up on something. Maybe a project to look for today.

Going with DH to doc appt tomorrow. Not that he needs me but I need to get a tetanus shot. Mine is long overdue and we have so much stuff to get hurt on - barbed wire, goat feet, you name it plus a horse and a donkey living next door. I made him promise I can run into TJs for my beloved figs. Not too far from where we are going but not exactly the route home he would take. My fig bush/tree is bigger than it usually is by this time of year. Hoping it might put on a few. Thank goodness the numerous varieties of grasshoppers don't really like it.

They are really good figs Nancy even though they look a little green around the ends. I've yet to get a bad one and the ones I bought about 2 weeks ago are just getting - some of them - to be a bit on the past due stage. $3.99/lb I think - a very good price. Central Market had them same kind for $10.99/lb then went down a bit but not as good a price still as TJs had them. Good luck.

Not looking forward to the graveside service in Miami in July at 10:00 a.m. - hopefully the minister will survey the crowd, take note of the 80-somethings and make it brief!!!  The rest of the day will be air conditioned but it is a rough way to start out.  I did just rent a Cadillac to drive over, so I will be pimpin' all around Miami in it, lol!  I am so not a Cadillac girl, but I have to transport some of those 80-somethings around so I need a big and cushy car.

minus - thanks for the condolences - he was a lovely gentleman, and you are right - he collected friends and made them family.

carole - very smart to have a PS do the removing - derms are more concerned with removing than facial aesthetics I think, so it was wise!  All of my spots have been basals so far, I am not clear on the mechanism that makes something turn into one or the other, but I believe that basal cells are somewhat less concerning than squamous, so I hope your new spot is one.

susan - I like the "snack dinner" thing too - we do that often when it is just the two of us.

Bummer Nancy. May not bode well for my trip tomorrow. TJs and Cent. Mkt. plus Sprouts are the only places I've ever seen them fresh. Whole Foods prob. has them but closest is mid Arlington not far from Cowboy Stadium or the Rangers Ballpark (not one of my usual haunts). Maybe DH will let me stop at Sprouts too - in the same general area though a bit harder to get to. He will hate the parking at TJs but it should be very late morning maybe noonish so not too bad I hope. Fingers crossed. Bad thing is the road has been under construction with varying lanes closed.

Did you get anything else good? I've been slowly working my way thru a pkg of choc. covered ginger and dark choc. almonds. Their price is better than local grocery but oddly enough I like the local grocery's better - the almonds that is. Never seen choc. ginger anywhere else. I did look up some recipes for it last year - as far as I got with the idea.

Special - Caddy girl you. We drove to St. Louis many years ago to get things my DF had wanted my DH to have of his after he passed. We rented a Crown Victoria with a huge trunk. My DD persisted in calling it a Queen Victoria. Hope you have a folding fan hidden out somewhere. Maybe not during the actual service but for visiting with friends time. Many ladies have them discretely hidden in their Bible covers.

Snack dinner it is at our house tonight. I have a ton of dishes I need to do and don't want to add to them.

Just drove the caddy home - it is a really nice and comfy car.  Very good for a road trip - I have to leave by 6 am at the latest.  I will coffee up and hit the road.

Special, you will be styling on the highway. Have a safe trip!

Costco had some lovely wild Salmon. I trimmed it up to get about 10oz and made some Salmon burgers. These burgers are so delicious. No mayo. No bread. Just a bit of whipped egg white to hold them [sort-of] together. Served with a vinegar cole slaw. The rest of the salmon, all squared up, will start to cure tonight for Gravlax. The perfect "snacking" protein for these snacky dinners for those of us who don't think they should eat that much salami.

Though most of MA got ferocious storms last night, they petered out before reaching us. The air temps were cooler today, but it took a while for the roads and house to cool down as well since we had no cooling rains.

susan - thanks!  One should definitely style in Miami!  It is not a bad drive, I change roads about every 60 miles, so just when it gets boring you are doing something new, then you're there!

Special, have a safe and comfy drive. You have been the energizer bunny, of late, in a caddy yet!  The elders will appreciate that...and they might share some good long time ago car stories with you during the drive. Peace to all involved!

Drove to NH this afternoon and feeling too tired to head out to dinner (why go if you aren't going to enjoy it!), so we ordered veggie pizza and a salad, and I loved staying home with that comfort food. Quite cool here tonight!! Brrrrr! I think tomorrow may be our only beach day.....

"Styling on the highway."  A great turn of phrase!  Hope everything goes well as you attend the service, SpecialK.

My attempts at making salmon burgers have been less than satisfactory.  I've had a couple at restaurants--in Alaska--that were really good.  I have learned to cook salmon, following Alton Brown's instructions, so that even DH will eat it and admit that it's pretty good.  It finally got through to me that undercooked is much better than overcooked!

Reading the posts on this forum, I feel SO Trader Joe's deprived!  I've never seen one let alone shopped in one.

DH and I biked this morning and then had lunch at West Forty in Park Rapids.  The restaurant's slogan is "Where the Food isn't half bad."  Talk about Midwestern enthusiasm!  I ordered one of the specials.  Barbecued beef on bun with red cabbage slaw and baked beans.  No mention of steak fries but they were on the laden plate, too.  All this food for $6.95!  The bbq sauce was too sweet for my taste but I was very hungry and "ate the whole thing."

DH had the chili and grilled cheese special.  It was hearty, too, and looked good.  The chili was definitely home-made.

Tonight we're going to a Spirit Lake outdoor concert in the village of Monagha where Monroe Crossing will be performing.  They're an outstanding bluegrass band.  We saw/heard them in concert last year.  There are usually a couple of churches or organizations selling food so we won't have any dinner ahead of time.

Carole - You'll be passing a few TJs on your way home in the fall.  Maybe you can convince DH to do a drive by?  BTW - thanks for sharing not only your meals but your vacation.  I'm having a fun vicarious vacation since I can't travel this summer.

Carole, Well, I am the only person I know who doesn't care for TJ's and there are plenty in the area. For me, it is a store filled with snacks and frozen dinners. Anytime I have bought something fresh it has become moldy within a day. No reason for envy.  :-)

In an effort to leverage our leftover cole slaw, my husband grilled some burgers. Served with a sliced tomato. Sadly, it is time to grind some more meat if we ever want more. Farmer's market in the morning so we can replenish our greens.

Susan - I actually don't buy much at Trader's either.  They have great tubs of orange or raspberry 'jelly' chocolates (sort of like Sweets if anyone remember that brand).  And I love their Peppermint Green Tea - only available at Christmas.  I agree - great frozen foods for singles but it's too far for me to transport well and somehow they languish in my freezer.

The latest thing I'm enjoying is the fresh fruits & vegetables at Sprouts.  Another long drive & pricey, but good looking.
