  • The Inner Beauty Sauce is good, and spicy, but forget that stuff...... We did family dinner tonight with all four of us and the kids thanked us for the condo crap that we have put up with. And then, they gave us a gift. I am going to live to be a grandma! I am absolutely weeping.... I am going to be a grandma! *susan*

    I've had three cats, Pest (a Main Coon), Pooh (a 3 pound, fully grown black cat) and Jessie (a Main Coon).

    Pest was a stray and adopted me. After I met Mickey, I was Pest's 2nd choice human. She was Velcro cat to Mickey.

    Pooh was my 2nd cat. One of Sharon's co-workers talked Sharon into bringing home the last of the "apartment kittens".

    Jessie was an animal shelter find..he looks a lot Pest and, according to the shelter paperwork, is now over 16 years old.

    All of the cats knew, the first time they saw one, all about cat boxes.....


    Dinner tonight.

    I'm playing with pot roasts again......I got a cheap ($4/pound) cut of generic pot roast and am hoping the many hours in the slow cooker in a balsamic vinegar-soy sauce-Worcestershire sauce-beef broth-mustard-garlic liquid...will tenderize the meat. I got rid of all the sinew like stuff I could find in the meat, so I'm hoping it will work.....yet another experiment. I hope it won't be one of those, "If we have company...let's not serve this." results.. :-)

    Susan....YAY FOR,YOU AND THE WHOLE FAMILY!! This is such good and welcome news! And we won't whisper a peep about it!! ;) I am so happy for you all.....SmileSmileSmile

    For the record...there was one vegan oriented gal at the beach dinner and a few other takers, but certainly half of the pasta salad came home with us.....minus any artichoke hearts. The peach/raspberry crisp was gone in a flash. I decided that there are so many pasta dishes at this social event we should hold a half marathon the following day to burn all those carbs!

    mommy - yay for your scan, sorry it took me so long! See my note below.

    Our next door neighbor is laying new sod and had the irrigation guy there on Friday to check her sprinklers - he cut my Verizon FIOS line so we have been without landline, TV and computer since 2:30 on Friday afternoon. Friday night we watched Netflix stuff and last night unearthed the home movies - hilarious! The tech guy came this morning so we are back in business!

    lacey - lol! I also took my iphone off wifi and could still use it for internet - I just hate typing on it. We also have so much concrete in this house to make it hurricane proof that it also makes it cellphone proof - so I have to be near a window or outside, which is too hot. It was a bit comedic when I was on the cellphone diagnosing the problem (we initially did not know it was the irrigation guy who had cut the line so I had to go through the backup battery reboot process) because the battery thing is in my closet behind the clothes and the phone won't work in there - so I had to run back and forth. The first call dropped after I was on hold for about 10 mins, so as soon as I got a human on call #2 after 10 mins I gave him the cell number and made him promise to call me back if the call dropped again. Ugh! What was funny was the panicked look on DD's face when she came home from work on Fri night and was faced with no electronic services, lol! She resorted to reading a book, which she does enjoy.

  • Roast chicken with root vegetables--more a fall dish which feels a bit silly as the weather's hot(tish) and humid (for Michigan) But nutritious and tasty.

    Congratulations Susan and Mr. Susan...what a wonderful secret you have shared.....HUGS and HAPPY DANCES.

    I have beef short ribs in the crockpot cooking with red wine, garlic and carrots. They looked kinda overly marbled, but My dad said he did not want me to make vegetable soup on his account, so I did this instead.

    His sister is coming to stay for a month with him. I wish I knew something easy to make that I could put in the fridge for them to have. She gets here at 3:30 after flying all day probably. And I know she does not eat when she flies. My dad is of zero help, since he thinks tv dinners and fast food is the way to go. I asked him what kind of food he wanted me to stock the house with for her, and he said when she gets her, her and I will go shopping.....yes, they probably will after a day or two, but still I need something to feed her till that happens. . I can get melon and slice it up or do a fruit salad, but I need a main dish that isn't much fuss. He hate's meat loaf and is diabetic and she watches her calories so she can be a size 12 at age 80.......

    Ideas?

    Redhead - lasagna's always easy. Laurie's Salsa Chicken? Couldn't be easier w/3 ingredients plus cheese. A quiche? My Dad loved just crackers & cheese.

  • Red -- how about some cold salads - chicken, egg, tuna, etc., along with some decent breads. Quiche is good too or perhaps a rotisserie chicken with some veggies on the side.

    Tonight is hamburgers on the grill with new potato salad (with the homemade mayo) and sliced tomatoes. Susan has the right idea about the mayo. It takes all of two minutes with the stick blender and is soooo delicious.

    How about stuffed vegetables? Set them up in a pan, and they can throw them in the oven. Figure friendly, and you can fill them with the stuff that the two of them will [and should] eat.

    Grocery shopping got in the way of previous dinner plans. That ham steak will keep. They were roasting hatch chilies at my grocery and they smelled so good. I may be sorry I only bought a few. Then I found 3 packages of chicken fajitas in the clearance (2 already put away in the freezer) so I thought why not make chicken enchiladas with the fajita meat and some of the chiles.

    Queenie - your fall dish sounds no more silly than my enchiladas. It's 103 on the patio but it is popping some little showers around. Got DH up off the sofa and we have skinned and seeded the chiles. Then I read not to rinse them because it dilutes the flavors. Oh well. Might need to make another trip to grocers tomorrow.

    Red - I agree with the rotisserie chicken and the roasted vegies. Bread, fruit and you've got a meal.

    OK - DH has just about talked me into a Costco membership. I've still got to get those new glasses and I've read about their optical shop. And yup you do have to be a member, I called. Someone please sell me on the goodness of a membership. It is still 40-45 minutes away, one far north side of town, one mid south. Neither convenient. I guess I will go see what they can do for me. I have a friend who has one with now only herself and DH. I can see what other friends use it for, they own their own small business storefront. TP/paper towels/coffee alone would prob. pay for itself.

  • Luvs: (drools) Hatch chiles? You have to go back and get more, if only to determine just how much rinsing alters the flavor. No, really.

    Red: maybe too late now--I don't know when father's sister will want to eat, although my sympathies! as nerves mean I can't eat before I fly. But is there a decent/slightly high-end grocery store convenient? If so, for today a rotisserie chicken, good bread, selection of 'salads' from the deli (Potato, kale, whatever) sounds like a good idea. Minimal fuss, other than going to buy it, and she can eat whatever she wants.

    I'll be out on my porch spitting, to see if I can precipitate some pop-up thunderstorms around here. (Chemist father-in-law jokes)


  • I probably should PM you, Special, but if you don't mind, I will ask this question here. What about soy? I read a lot of different reports about eating anything with say? Also, I think you said you do not eat dairy. Why? And, you do not eat peanuts. Why? I need to gain some weight or at least stop loosing. I am trying to eat healthy......no white sugar. I cannot get enough calories in the day. I hear, exercise, exercise, exercise, so I try and do that too, but that uses up calories. Exercise helps the joint pain from Arinidex. You can PM if you want. Thank you!

  • Luv, you should go with your friend sometime to check out Costco. It's great for large purchases such as tvs or tires. I would belong just for their meat. They do have lots of convenience foods, but of course in large quantities. I have to travel nearly an hour to mine too. Perhaps you could consider splitting a membership. That's what my friend did -- she and her daughter are on the same account (although I think you're supposed to live in the same household. They don't. Shhh) Although I buy lots of staples there, it doesn't take the place of a regular grocery store. It might if I had more storage though.

    Luv - I go to Costco maybe once a month but since I live alone, it doesn't make sense for me to buy the large quantities of TP or paper towels, or even canned foods or beans & rice. I buy my vitamins there and I like quite a few of their wines (often good house brand is $6-7). Their bakery is good & I like the shrimp salad. Again, I have to find a neighbor to share whatever I buy if it can't be frozen. I agree w/Nance, the meat is good. Dying to try the artichoke/jalapeno 'dip', but it says use in 5 days after opening so I'll need to have a party. To be honest, I took out the membership years ago when I was smoking because their cigarettes were cheaper. I quit in 2007. Probably haven't gotten my money's worth since then.

    I've had several friends who've recently gotten new glasses at Wal-Mart. Yeah, yeah, I know - but all three have been really pleased w/the service & the quality & the price. I think it's a matter of picking which Wal-Mart you go to. The one closest to me is nasty & scary, so if I go, I drive some distance to one that is cleaner & brighter where customers don't run into you or push you aside and employees are actually helpful. Anyway, you might check that out since there's no membership fee.

    Met my SIL & BIL for brunch at Baba Yaga's. Sunday buffet is every breakfast thing you could think of in addition to a full buffet - chicken, salmon, beef, veggies, salads, fruits, breads, desserts. I had an omelet w/mushrooms & spinach, two small waffle pieces, mini- blintzes w/strawberries on top, triple helping of lox & cream cheese (only white bagels - but hey, this is hard to find in Texas), watermelon and Tres Leches cake. I'm so full I can hardly move 8 hours later, but I didn't begin to taste everything. Wonder what the scales will say tomorrow.

    mysunshine - I avoid soy, for the most part, for a couple of reasons - the jury is still out on whether it is estrogenic enough to be an issue for ER+ women, and because so much of the soy crop in the U.S. has pesticides. When I do eat it I try to find organic, but it is pretty universally advised that if you do consume it try to eat the food form - avoid the processed soy, which is found in protein bars, etc. I avoid dairy and peanuts because they commonly cause inflammation and are among the seven foods that cause allergies or sensitivities (soy, sugar, dairy, eggs, corn, peanuts, gluten), and because it has helped with the pain caused by AI drugs and with weight loss after chemo and the hormonal therapy. I gained during chemo and tried to lose weight by limiting calories and exercising and I could not lose weight - at all. I tried this anti-inflammation diet and lost 22 lbs. with no exercise. If you are underweight I would not necessarily advise this, and also please note that this is a personal choice - I was not told to do this by any physician, or cancer diet authority. You might want to read David Servan-Schreiber's book Anti-Cancer - A New Way Of Life - it has a lot of good diet info.

    Thanks for the great suggestions ladies---how could I forget about rotisserie chicken---I eat it like twice a month for a few days at a time...... And the sandwich type salads and roasted veggies----YOU All are life-savers...... just proves you need to have someone else that's a step away from your problem help you solve it!!!!!!!


  • Special, I do have that book and have read parts of it. I also have Cancer- Step Outide the Box. Both have a lot of information and it is overwhelming. I have been searching for yogurt without a lot of sugar and I hsve found none. I do like yogurt but am avoiding that because of all the sugar. I think I am becoming paranoid about what to eat, but am scared because of all the things I am learning that are detrimental to our health after Cancer.

    A roasted chicken is one my "standards" for when I'm cooking to have leftovers so Sharon doesn't have to cook much when (and it usually happens) she gets home before I do.

    For what it's worth, a couple of weeks ago, I noticed the foodsafety.gov web site has changed their chicken "fully cooked internal temperature" to 165F degrees. I tried the new recommendation and I don't have to brine the meat to have it moist.

    The chicken and pork comes from a mom and pop meat shop that gets their meat from "wild raised" animals. The chickens are about 3 pounds with little white meat and the pork is very, very lean....it is definitely a different product than the normal fare from the stores. They also sell a great smoked salt that works very well as a rub.

  • Sunshine, it's easy to make your own yogurt. It tastes better and you can control the ingredients.

  • I surveyed the contents of the freezer yesterday and made a list. Not a single piece of chicken. I'll check the cabinets and write up another list. Surplus food in the cabinets can travel home with us at the end of this month but the frozen food must be eaten, given away or thrown away.

    What's for dinner? No clue.

    I'll have to check the carton of the plain Greek yogurt in the refrigerator. I don't taste any sugar.


  • There is less sugar in plain yogurt, but there is sugar. And, Carole, my good friend lives in Mandaville. It is still hot there. However, it will start to be tolerable in a month or so. Unlike where I live....southwest Florida. Hot until January, then in the low 80's. Really too hot and humid!

    Auntienancy, I never thought about making my own yogurt. I have also been thinking about your recipe for homemade manaise. I am still a little concerned about the raw egg. How long can you keep it? Does is taste like Helmans? Do you have a recipe you have used for yogurt?

  • The sugar is part of the milk in a plain yogurt. Even homemade yogurt will have lactose.
