    susan - great minds think alike - we also had pork tenderloin for dinner. Peppered, roasted and served with a mustard sauce, some sweet potatoes, cut up and tossed with S&P and a bit of brown sugar and roasted alongside the pork. A romaine salad with red onion and herbed goat cheese dressed with olive oil and vinegar rounded things out.

    What to eat tonight remains a mystery at this point, although it is rainy so I am feeling some pasta with marinara or a meat sauce might be good. I also have some frozen mixed mushrooms to throw in the sauce. I need to go to the grocery store to shop for something for Sunday - will most likely do the traditional ham, au gratin potatoes and asparagus, but am making a lemon and coconut cake - just need to time my visit so I don't get rained on. I am not optimistic about my chances - it can be sunny when I go in and pouring when I come out - I must be causing it somehow.....lol!

    Just caught up here....a lot of reading! But I should not talk since I'm about to post a "long one"......

    Carole, it is sad to learn that you may have had the last of family dinners at your mother's home. It sounds as though she is doing well, though, and I hope she is able to move to a good facility near you.

    And Nance, I feel your anxiety related to your dad being on his own.

    So, I have been busy with my friend, J. from Florida being here. We never stopped moving from her arrival early Tuesday, through her departure yesterday. Squeezed a lot into two days! We celebrated an early Gemini birthday dinner with our other former co-worker and friend. That friend does not really cook, so we had lasagna and meatballs from Costco, a salad I brought, a little chocolate moose cake she bought, and then while we chatted until almost midnight, we managed to polish off several glazed lemon madeleines and walnut brownies that I'd brought. Oh my!!

    Wednesday, I drove J. up to Burlington so she could meet with a dear friend who just recovered from being ill. I dropped her off at Barnes and Noble's cafe, and headed to Macy's to look for a dress for an upcoming wedding....no luck, but did buy a fleece-lined light hooded jacket, and unintentionally learned about negotiating at that store. The jacket was originally $60 reduced to $30. I anticipated a further reduction with one of the too many coupons that Macy's mails to me weekly. Well, the saleslady told me it didn't qualify for the coupon reduction. After discussing my ambivalence about buying it (without it being a super bargain), I decided I'd leave it. Suddenly, she piped up with, "Oh, I'll give you another 20% off", which she promptly did! Then while browsing in another department, I heard all sorts of other discussions about items not being coupon eligible. So, from now until Macy's closes (which it seems close to doing), I will try to bargain! ;)

    So, I headed back to B and N and visited with J. and her friend.....for a long time. I love J's friends, so we had a great time chatting. Then we drove back home for some snacks (cheese, crackers, fruit) and catching up with my DH before heading into town for dinner and the Celtics' game. I had salmon and asparagus (I had them hold the tasty risotto it usually comes with since I had already been consuming so many calories).

    DS2, who J. knows, met us at dinner, then we headed to TD Garden for the game. IT WAS AMAZING!! Unexpectedly, the Celtics played so well despite the fact that they are missing their best defensive player, and defeated a much stronger team (Toronto Raptors). The whole Garden was so alive!! It was a wonderful night, which I had hoped would happen for J. How often do such hopes get realized?! :)

    Yesterday morning, I ran off to teach the K kids while she packed, then we surprised our old school staff with a visit (she has not been back since she retired 15 years ago!). Most of the people she taught with were still there! So that was great....yet a rather sad milestone, since she feels it would be her only time to return to see that school and staff. Then, on to Providence for a visit to her DH's relatives who had a luncheon of bought deli food set up as a buffet. I was going to have lunch with them, but some expected relatives were late, and I needed to get back to my 2:15 K class, so they packed me a little takeout plate, and I zoomed back up the highway for my lesson.

    J's relatives took her to the airport later in the afternoon, and that completed a perfect visit until she faced all sorts of weather related flight delays on the way to FL. That was unfortunate since we ended up escaping any too awful weather here, and had a perfectly wonderful, memorable junket! I am hoping the memory of this trip helps her as she deals with the rigors of all the constant caretaking she does at home.

    After my class yesterday, I was talking to DH and fell asleep sitting up in the chair. LOL After my nap, we had a big salad for dinner with a potpourri of things like hummus, cheese/crackers, and deli items from the takeout plate J's relatives made for me.

    Today, I am dragging, but I will bake something for the neighborhood Easter/spring coffee tomorrow morning.

    I'd love pizza for dinner, but I've been eating unwisely all week, so not sure.

    Susan, it will be fun to follow your sous vide adventures once the condo is complete! :)

    Lacey, it sounds like you had a triple good time -- friends, food and shopping!

    Tonight is a new recipe -- Mississippi roast from the NYT. It's an odd sounding one, pepperoncinis and a ranch dressing type mixture cooked with a chuck roast in the slow cooker. I've streamlined it a bit by cooking the roast with the pepperoncinis in the pressure cooker then will finish it on slow cook with the dressing. People rave about it. We'll see. As luck would have it, I only had two pepperoncinis so had to use some of my home pickled peppers instead. I hope it doesn't alter the taste too much.

    Talked to my dad's case manager this morning. It looks like he'll be discharged on the 30th. He won't be happy but I'm thankful for the extra time for him to have physical therapy.

    Tomorrow will be spent doing Easter dinner prep work.

    Nance, I saw that recipe, and read the long story, and couldn't get past the ingredients. One friend actually made it and used homemade versions of the pre-packaged ingredients. I can't remember if they thought it was worth the effort. Is your Dad headed home or to additional rehab?

    Lacey, Sounds like a very successful visit. Amazing that the Celtics had a great game on just the right night, isn't it?

    My Rye bread starter the Second is starting to mature. I got some nice rise and the stuff smells great. For the first time, I did part of the dough in a bread pan, thinking ahead to sandwiches. Maybe I should cure and smoke some pastrami? How good would that be? Tonight, we are having Magic Freezer Julia Child lamb stew with polenta. Not sure my day 3 stomach can handle it, but I know I can eat the polenta.

    Susan -- I did the "from scratch" version too, including the mayo (well, I didn't make the buttermilk lol.) It's doing it's slow cook now. I'm making some fresh egg noodles to go with it, so if it tastes bad at least there will be pasta!

    Dad will be going home and will be finished with rehab. It's been six weeks in rehab and 3 in the hospital before that. He's ready.

    I've got a new rye recipe. Right now it's on my phone but when I get it transferred I'll share it. It's a Mediterranean loaf.

    Oh, and yes please on the pastrami.

    So far things are good with my mother's transition from hospital to nearby Belle Maison nursing home. She is in a wing called the Retreat which is all skilled nursing/rehab patients. She has a private room and bathroom and those patients have their own dining area. She knows employees and a couple of the residents in the custodial nursing section. So far, so good.

    Susan, I know nothing about your new method of cooking. I hope you'll include some tutorial as you branch out. I remember that the sous vide machine was a Christmas present and that you have cooked eggs in it.

    I had thawed chicken breasts yesterday for last night's dinner but got home so late that I wasn't up for cooking. I was up for a Grey Goose martini! We ordered Domino's pizza, thin crust, and I was amazed when the pizza was delicious. The crust was very good. Who would have thought?

    Tonight we're having a chicken and broccoli stir fry with an Asian type sauce. It's a Cooking Light recipe that I made before and I wrote a note that the sauce was good. The recipe calls for different veggies but I need to cook the broccoli.

    Today Winn Dixie had sweet potatoes on sale and also artichokes so I bought some of both. Sweet potatoes are a typical side dish for Easter ham dinner. I won't be cooking tomorrow night because we're headed to the race track tomorrow for the Louisiana Derby and I will be treating myself to a corned beef poboy.

    Nance - You remembered bread is my favorite. Too late...I'm drooling over the rye. I agree it's good your Dad is staying a couple of extra days. Lacey - glad to hear your visit was so good. Susan - as always, I'm amazed that you're cooking and doing treatments at the same time. Special - lemon/coconut cake!!! I was already hungry for Nance's lemon pudding cakes. Carole - is your Mother in Hammond? I looked up the facility and love the bright colors. Also it looks like she could transition there is that's needed down the road. How far a drive is it for you?

    Dinner was a couple of "Nancy's Mini Quiche" selections.

    Dinner was roasted bone-in chicken breasts and truffle mashed potatoes. I mixed fig preserves with Dijon mustard, added some melted butter and chopped kalamata olives, and put half the mixture under the skin of the breast before I roasted it. I drizzled a little of the sauce over the chicken after it was cooked.

    Susan, those dishes are beautiful! I love blue and white. I have a couple of antique delftware pieces that belonged to my grandmother. I ended selling my mother's beautiful mid-century Lennox China when my dad sold his house 7 years ago, because we don't really have the room for it. Plus, I can count on two hands the amount of times I've used my China in my 15 years of marriage. However, I did keep her Baccarat crystal, which is still packed in the box. I couldn't part with it, but I tend to use every day glassware and dishes even when I entertain.

    I've been shopping around for a sous vide machine. I saw one from William Sonoma that I'm interested in, and it's not as expensive as some of the ones I was initially saw. Where did you get your machine?

    Your bread is gorgeous!

    Eric, great about your tooth! I'm pretty sure I've contributed to my dentist's summer home and his kids college tuition over the years from all the work I've had done to my teeth.

    Carole, I'm glad your mom is adjusting to the nursing facility. I'm sure that's a huge relief for you.

    Yesterday I left home in the pouring rain, and boarded my flight in snow! British's biz class is nowhere nearly as sumptuous as Iberia's last year--probably because British also has a wildly expensive First Class and Iberia has only Economy (with a few extra-legroom seats) and Business. On Iberia, the little sleeping pods had hangers for jackets, wine racks, cubbies for both shoes and carry-ons. On British, we had to have the staff hang our coats, and there was a single drawer for shoes--which had to be closed during takeoff & landing, so even purses had to go in the overheads! The food and drink was excellent, though not as wide a selection as on Iberia. Dinner last night was a chicken-and-eggplant terrine followed by grilled salmon over saffron risotto and "mushy peas" (it's a Brit thing,much tastier than it sounds). Yup, two starches, albeit one of them green. Left the risotto. Had a pink champagne. Dessert was a passionfruit mousse. Tried to sleep, but even with a lie-flat bed, mask & earplugs it's tough when the "bed" is hard, narrow and there's only one little pillow. Not to mention my scraped elbow was still rather raw so I couldn't lie on that side (even the armrest irritated it). Fresh fruit & ham/cheese/egg panini for breakfast.

    Glad I reserved a wheelchair again--long trip to Passport Control & bag claim, and the P. C. lines were very long. But there was only one HC buggy (albeit with four passengers) ahead of us. From landing to hotel check in was less than 2 hrs--and that included the wait for the wheelchair. But the taxi into Mayfair? $120. (Take the price in pounds, and in dollars it's half again as much. Even Switzerland's cheaper ). Hotel (Athenaeum) is under construction, but no work going on Easter weekend. Restaurant was moved to the rooftop lounge--as I waited for my lunch, here's what I saw:

    Had broiled halibut with assorted veg. and potatoes. Left the spuds. Accompanied by a Sancerre (most of which is sitting in my room fridge for a nightcap):

    Dinner was at Fergus Henderson's groundbreaking "nose-to-tail" restaurant St. John (inspired Chicago's Girl & the Goat and Purple Pig). Decided to go with three small plates rather than an entree, since I wanted to try a wider variety of animals & body parts. I settled on a DIY flight of (as my waitress put it) "skin, bones, glands." First up was the house champagne accompanying "Crispy Pig Skin & Pickled Radishes" over watercress. The skin was like very crunchy croutons--normally, pig skin is either inedible (at least from the "lechon" at Filipino banquets) or salty pork rinds or chicharrones:

    Next: Beef marrow bone & parsley "salad" and crostini, accompanied by a nice Corbieres:

    Order of consumption: first spread the marrow on the toast, sprinkle with the wet grey sea salt, and top with Italian parsley and pickled red onion:

    Finally (with most of the rest of the red, which I couldn't finish), the "glands," to-wit: the Easter Bunny's pan-seared liver, accompanied by braised celery root over arugula:

    Dessert? I could barely finish the liver and half the veg! Though I did get a decaf espresso, and back in my room I just polished off a decaf Nespresso (Vivalto Lungo), courtesy of the machine that's in each room--and unlike other hotels with Nespresso machines, they don't charge for the capsules. (Had I not brought some from home as backup, they would have). Now a couple sips of Sancerre for (hopefully) sweet dreams.

    Only one kid, DD2 and DGD1 is making it for Easter, her DH will be sleeping he's on 3rd shift. My DH is still working the outage and Sunday is his day on..He gives his Sunday to the guy with little kids. When ours were little he managed to come home so I don't fault him on that. And he could Make it home on Saturday, but then he'd be crabby and trying to get too much done in the couple hours he'd be home. Better for both of our tempers if he doesn't try. LOL My DS1 is staying home with my DDIL who just had sx on her ankle she broke last year stepping off the curb. 6 screws, 2 rods and a plate were put in. This sx takes out some of the hardware. DS2 is working that day. DD1 and DGD2 will be staying home with her DH who's on call. :( oh well. LOL

    Made another Plated dinner tonight. Peppers Stuffed with Feta, apricot and currant couscous. With a salad of butter lettuce and taking dressing. A lot of food. I had bought some lovely shrimp that I cooked as long as i had the oven on and of course I had too much food. The peppers tasted really great but I actually preferred the dressing on the peppers rather than the salad. Picture of the leftover peppers.

    I have one other meal to cook but knowing I wouldn't be able to cook it i Froze the ground beef. I figured potato, carrot, and parsnip would hold. It's a Shepard's pie (well cottage pie, because beef, not lamb LOL) then I noticed there's a small bottle of heavy cream. Oops. Here kitty kitty. LOL I'll just use milk when i make the meal.

    Nancy that recipe looked good and I was hoping it would turn out spectacular. Did you eat it like roast with potatoes etc. or on rolls?

    And I think a discharge date of the 30th sounds perfect for your dad. Mid week, not holiday time. Much better for setting up services for him.

    Carole - I am so sorry to read about your mom's stroke. Hoping the placement you've found for her works out. It does sound like she has determination on her side so also hope she gets the most out of therapy.

    Lacey - whew you are in rival mode with Susan lol. What a whirlwind time you and your friend had. So glad the Celtics won while y'all were there. So funny I was at Macy's on Wednesday looking for something for Easter church. Found a skirt which did get the extra coupon discount. The lady just b4 me was a bit disgruntled because her handbag was not eligible. One of the Macy's in Ft. Worth closed but this store was going gangbusters. Also went to Dillards where it's hit/miss and it was miss this time.

    Moon - I read on a friend's page that she and her fiance are using Blue Apron. She loves cooking and doing that with fiance is better. She is quite a cook so it would have to meet some high standards.

    Hmm cooking. I know we must have done some. Some Shake 'N Bake chicken, frozen Allen Brothers' hamburgers courtesy of Christmas gift from my brother, a pork roast over the weekend in the slow cooker.

    Tonight we had thin boneless pork chops that I made into a stir fry. I bought a bottle of the Kikkoman lime Ponzu which was very good. I marinated the chops for about 45 minutes in it and poured more on the vegies. And best thing of all there are leftovers for tomorrow night.

    My frost cloth appears to have kept my fig bush from dying down last week but it did nip all the tender leaves esp. on the tiptop. Had an unexpected frost last night and it was not covered. Not sure what the low was out here might have been close to freezing. There was lots of frost on garage/barn roofs.

    DH is off most of next week so no telling what we will be eating. I thought of spaghetti tonight but will save that for next week's easy/peasy stuff. I saw some Rao's sauce at of all places the Mexican grocery though this is the closest grocery to a tony neighborhood so that might explain it. Central Market had some sauce out for tasting last time I was there and it was BOGO so I will use that. The grocery had some nice ethnic selections - where I bought the Ponzu. Not the one I usually shop at but handy to most all my docs' offices. The one I usually shop at had the roof damaged by hail last week but I think it is up and running. I do so love grocery stores.

    Bedo - thinking of you and your upcoming repair. I'm not much of an orthopedic nurse. Can you manage alone after having that done? How are the summer plans coming? We passed a teardrop trailer in a junkyard type place just outside of town. Did a doubletake because I think I've only seen a couple and that was at a RV show or maybe a showroom.

    Carol It sounds as though things are working out for the best in this difficult situation. I hope that my daughter stands up for me as you have for your Mother. You seem like a wonderful daughter.

    Sandy That looks like the waterfront in Chicago. My daughter spent the best six years of her life obtaining three BS degrees from Depaul in Chicago and Auburn in Alabama (you read that correctly) before getting her Masters as an NP in Boston. Where did you fly in or out of?

    • Goats Now I want figs. I plan to be off work for a week only for my knee surgery. I have basically a desk job, so I hope that I can be very active this summer because....(singing...)Because....
    • "I might haaavee the time of my liiiiiifffee...". in the Poconos at a camp job this summer. All our contracts are up May 21 with my current job and all are posted for full time. I work 4 days a week and that was my offer when I started although they wanted me full time and it still stands. So if they manage to get someone full time it's OK. I turned down their offer to work 5 days a week for them at my current job.
    • I have an interview for a camp job -phone-Tuesday and an in person interview Wednesday at a prestigious local college for the Fall with summers off. For Camp they would have to allow me to bring my lovely cats (2) We'll see. Thanks for asking. I don't know what's up with the bullets. It looks kind of like a lecture :O Decisions Decisions...

    Carole, I am so sorry you are joining the "Dad" sub group with your Mom now....Sounds like her rehab placement is much like the one my Dad was in. I sometimes wish he could have stayed there, but the 3000 a month price tag difference made us try assisted living. Yesterday he told me it was PRISON.....and I asked him if he liked it better across the way (the Nursing home) and he wouldn't tell me. It will be a month on April 3....

    Susan, I hope your Dad does well. I understand completely about your fears. Even with my dad, I worry something will go wrong.

    I have completely lost my appetite with whatever this is, and nothing is sitting well, so I am doing Banana's, applesauce toast.....We have scrapped plans for Easter dinner as I don't think I could stand cooking smells. and he does not want me sharing my germs with him. PA thought it was related to an allergy attack I had Monday, but I was running a temp and congested/cough when I saw her, so I got 40 MG Pred 5X and Nasonex and Tessalon Pearl. Then my temp spiked 100.5 and I slept for 2 days. Now I will probably cough till mother's day.....

    ChiSandy---oh my goodness, your food pics are just divine and I hope you have the best time.

    Luv, my white star magnolia had just budded out and we got down to 29 the night I was so sick and in the morning, the little buds were drooping downward. But the stupid bush I planted 4 years ago and had never b loomed (was supposed to be forsythia) that I have been threatening every year with pulling it out if didn't get busy, was blooming when I backed out of the driveway----it is a forsythia.....

    I saw a funny church Marqee on Facebook for Easter---it said Duct tape will mend many things but on Good Friday three nails fixed it all.

    Feel better Red -- fevers are no fun.

    Our tender shoots made it through the light frost we had and the pear trees are in full bloom. One of the weather guys hinted at some very cold weather next weekend so I'll worry about my lilacs that are fully budded.

    I'm tired. Spent the day doing prep work for tomorrows dinner - glazed a ham, assembled scalloped potato dish, made a large carrot cake (froze half), made deviled eggs, put together dough for an overnight rise which tomorrow will be dinner rolls and cleaned up the significant mess all this created. But tomorrow all I'll need to do is let the rolls rise and bake them, fix a green bean dish and warm the stuff I made today.

    Tonight is grilled chicken with za'atar, pickleback coleslaw (it has pickle juice in it) and brown and wild rice.

    Nance, about 5 years ago, after my mom had been in the nursing home during rehab for her broken hip, when they said she could go home she asked me if I thought she could make it on the outside......Her male nurse and I about wet our pants laughing on that one. I don't know why they say that. I ran into a fishing buddy of my dads at the RX, his 99 years young mom went to a nursing home in Dec. and she tells him she's in prison. But her room mate convinced her to go to the manicure on day and he told me its the first time in her life she has had finger nail polish on and she can't stop waving her hands at him when goes to see her. (she has all her mental skills, just physically too weak )

    I cancelled a reservation for dinner at our club tonight. I was planning to have my complimentary birthday meal but I cancelled after spending a day taking o/c meds for a spring head cold/congestion attack. Instead we're ordering take out from Chili's which dh will go and pick up. We're both having "craft" burgers.

    Red and Nance, I wish we lived close enough to get together and form a parental support club!

    I am so pleased that we are going to DS2 and DGF's for Easter (or whatever) dinner tomorrow. I've been pretty tired after my days of prepping for, and then galavanting with my Florida friend. I am always a bit surprised and saddened at how little stamina I have these days. So making a meal for diverse palates would be a challenge right now.

    Last night I would have loved to avoid cooking, but just could not rationalize pizza, so DH picked up some cod fillets and we had them (baked) over a kale and onion sautee and brown rice. I also made a green salad. And of course we had to have matzah since DH saw it in the store, and he can't resist.

    Last night I baked some Hawaiian Banana Bread for the neighborhood Coffee and Easter egg hunt. It was fun to catch up with everyone's adult kids and grands who were in town for the holiday. And it was bad fun trying the various baked goods everyone brought....my favorite being pecan rolls that the hostess makes. Yum!

    We shopped for candy today from which I made a big Easter basket for DS2 and DGF. I also included a container of little madeleine shaped banana breads for them. I think DGF will enjoy the aesthetics of those, even if they are not true madeleines. The only other thing I am charged with for tomorrow is to make a salad for dinner. Yay! This is such an unusual holiday dinner circumstance for me...and a nice relaxing one.

    Tonight, DH decided that he'd like to make omelets for dinner. He asked for a bit of ingredient input, so we decided on red onion, asparagus (which I forgot to cook last night) and cheese. He learned how to break the asparagus stalks, and made some nice omelets with me basically staying out of the way. We finshed off the leftover brown rice, and had an expanded cuke salad....and of course, more matzah.

    DH and I are caught up in the NCAA games again this weekend. Up until Oregon lost to Oklahoma today, I was in first place in the large pool that DS2 runs. Very funny since I did such random picks that had nothing to do with the talent of any teams. LOL. These games are mostly so tight...talk about the thrill of victory and agony of defeat for those young players!

    Barbecue(d) ribs in the slow cooker for dinner tomorrow night. Maybe an omelet and sossiges for brunch, but I promise nothing.
