Quinn, It's understandable why he wouldn't want to take the car out during the winter. MN winters are harsh. Your pineapple chutney sounds delicious.
Dinner tonight will be leftover bbq pulled chicken sandwiches topped with leftover Cole slaw on brioche buns with left over mashed potatoes as the side. Basically a repeat of dinner last night.

Dinner will be warm ups from the past couple of days.
The Indian spiced cauliflower and potato mash was quite tasty and all that flavor makes it possible to cut down on butter and cream. I added about 3 T of cream and 1 T of butter. I had forgotten that the turkey/brown rice/spinach stuffing was spicy, too. So dinner was peppy last night! DH commented that it was good.
Now I'm thinking about lunch, which will be a toasted sandwich with goat cheese and roasted grape tomatoes. When I have tomatoes that are getting past their salad stage, I toss them with EVOO and roast them in the toaster oven. They are so sweet and full of flavor. Great with pasta, on a pizza or sandwich.
I have been doing well with keeping on track with my WW points and the scale was kind today.

Hsant how do you make coleslaw? I finally made it with cabbage and cole slaw dressing for one of my husbands who said, "this is the best coleslaw you've ever made!" Humph.
Susan, it is traumatic. I cried when my daughter moved 45 minutes away, but we still see each other and text all the time. (phone calls are so 90s)

Carol I think your Mom is funny and I hope she is doing OK, as well as the rest of the parents. Mine died when I was 5 (dad) and 25 (mom) I used to think that it was the same as people who were their parents power of attorney and caregivers in their 40s and 50s, but it is different for people who's parents have dementia. My Mom had a different kind of cancer. I wish you all well.

I can't go back too far as I am getting ready for surgery tomorrow, stocking up food, kitty litter and such. But I will be returning to my childhood this summer!
I have two offers for camp, one in Woodstock and one in the Berkshires both of which I would love, and an interview for student health in the fall today. Whoo Hoo!
I am so over checking linemen and welders for hernias for their DOT licenses lol among sicknesses lacerations and injuries. Men are clumsy. Sorry Eric!
For dinner the last of the Hello Fresh meals, Edamame and sweet potato rice bowl. I hope I haven't waited too long.

Carole - the chops weren't from our The Pig but I'm trying to make room for it in the freezer. The Pig is supposed to go to the butcher this week but I haven't heard that it has yet. Congrats on your friendly scale!
Sad Dad update: Feel free to scroll through the on-going saga . . . He was released from the hospital yesterday evening and taken back to the rehab center. Unfortunately, they moved him out of his room (understandable since they didn't know how long he would be out) but now he has to share a room with "some old guy" as he put it. He is not happy because he was in one of the few Medicare private rooms. To make matters worse, since he had a stay in the hospital he now has to be re-evaluated for physical therapy, and to make matters worser still - he managed to fall while the physical therapist was in the room working with the other "old guy" . He wasn't hurt but I'm sure it didn't make him look ready to go home. To be fair -- he is a faller (runs in my family) which is why he has a lifeline at home, even before all this happened, and I'm not sure that's ever going to be fixed no matter how much physical therapy he gets. Just to add insult to injury, he's on a soft food diet because of the throat ulcers, which he HATES. He begged me to come over and take him out to lunch. It was rather pitiful. I'll be taking him to the foot doc on Tuesday so we'll go out but he may lose his mind before then. SIGH.
Nothing very exciting for dinner -- pork burgers, cole slaw and maybe some roasted vegetables.

Nance - of course we aren't going to skip the Dad update. It's all part of the kitchen table. I'm so sorry he's unhappy, but certainly understand. I get cantankerous when i even think about the time down the road when I'll have to give up my driver's license (may it be at least 2040!!) I finally solved the problem w/my Dad by finding a young lady to stay w/him at home. He hated it and wouldn't have anyone overnight, but finally came to the realization that he had limitations & this was the least invasive. She started coming only 10-4 every day but before he died a couple of years later at age 96, we had someone there all the time. These were just 'companions' since he had no major medical issues, but 3 girls took shifts & someone was there listening to the baby monitor all the time.
Good news from my ortho. The bones seem to be healing so hopefully the thoughts of surgery & pins are behind me. I'm stuck in the darn sling for another 4 weeks and can't drive yet, but I'm adapting. You should have seen me trying to change pillow cases with my teeth. I start exercises for 2-3 minutes a couple of times a day - adding one each week. The absolutely hardest one - OK get ready to laugh since most of us who've had BC are already familiar with this - so the hardest one, not to be attempted until week 3, is to stand facing the wall and walk my fingers up the wall. I hope I haven't lost that much muscle tone, but oh my.

Nance - forgot to mention that my Dad fired the first 3 or 4 people I hired as soon as I flew back to Texas. He finally had to give in when his doc told him that he (the doc) could loose his license for condoning what could be charged as my 'elder abuse'.

Nance, I'm so sorry about your dad. It's extremely difficult to witness a parent (or any loved one) suffer or unhappy. I've been down a similar road with my father, where things were progressing in a positive manner only to have some kind of emergency or emergenciesoccur. I know that it's very stressful and a constant worry. Ultimately, my dad recovered 100%, but the process was a nightmare.
Your dad sounds like a strong man. He's been through a lot, and is holding his own.
As far as him being prone to falls, would he be open to a cane or a walker?

Bedo, I use 6 Tbsp of mayo, 2 1/2 tbsp of apple cider, 1 tbsp of sugar, 1/4 tsp of celery seed to 1 10 oz bag of angel hair slaw. I like my dressing on the vinegary side, but if you like more of a mayo emphasis, I would leave out the 1/2 tbsp of vinegar. Best of luck with you surgery today.
Minus, yeah, my dad wasn't a fan of the caregivers either. He's patient and mild mannered by nature, but at 86 he wasn't all that open to strangers taking care of him.
Not sure what I'm going to make for dinner, yet. I'm thinking halibut if the store received a fresh shipment today.

On the final day of March, we have reservations for dinner at our club tonight to collect on my complimentary dinner for my birthday. The restaurant is the grill fancied up with table cloths, not the more dignified dining room, which we actually prefer. There are two specials on Thursday night, a small filet with sides and a fish entrée. I like both and will decide on the spot what I'll order.
My mother is having difficulty learning to propel herself in her wheelchair. Many of the residents in the nursing home get themselves about very well using their feet and arms. I think part of her difficulty is physical and part is mental. She did not ride a bicycle in her youth and did not ever have a driving license. She has wrecked her house with the electric wheelchair she has used for quite a few years. Her tendency when she runs into an obstacle is not to back up but full speed ahead. Walking is not a realistic goal and the therapists realize that now. She has bone on bone in her right knee and also has spinal stenosis. The goal is to build strength for transferring.
Hsant, how lucky you are to have fresh halibut available. It's a wonderful fish. I stopped at Fresh Market on Tues. hoping to find some appealing salmon, but what was in the case didn't look good. I avoid the farm raised with color added by the food.

Carole, my dad has trouble wheeling his own chair too, mainly because of the weakness in his arms. At home he uses his walker or electruc wheelchair. He mashed his arm against the door frame the first day he got the chair and has been more careful since then.
Tonight was chicken cutlets breaded with parm and panko and a lemon, asparagus and basil pasta. The pasta sounded better than it was. The sauce used cornstarch, which I don't care for, and made an unpleasant texture to the whole thing. I won't make it again, at least not with that recipe.
I need to venture out to the store tomorrow. I'm out of fresh vegetables and other staples like butter and cream. A splash of cream would have helped the pasta dish tremendously.

Dinner out at the Oak Grill was delicious. We had a cup of the soup special, kale and Italian sausage chowder. Than we both ordered the filet with au gratin potatoes and haricots vert. The dinner would have been enough without the soup. I enjoyed a tiny crusty roll with butter.
I have a lunch date with some of my golfer friends. Afterwards will go to visit my mother. Not sure about dinner. Maybe a Subway for dh and a snack for me.

Carole - and the nice part was the dinner was a B-day freebie! I wouldn't have been able to limit myself to one roll. Glad to hear your Mom is working so hard in re-hab. Does she think she's going back home eventually or is the subject just taboo? Hope your sinus issues stay on the allergy side of annoying & you manage to avoid an infection.

Minus, only the entrée was free. Not the extras like the soup and my two glasses of wine! The rolls were like mini ciabatta loaves, very crusty. One was actually enough.
The goal of all the patients in the Retreat is to go home. And many of them do. Some go home walking when they haven't walked in quite a while. Humans have the amazing ability to build strength at any age. Tufts University demonstrated that some years ago. My mother is working on balance and the ability to transfer. Walking as her primary method of getting around isn't in the cards. She will need to rely on upper body strength. The therapists regard electric wheelchairs as more detrimental than helpful for the elderly. With a manual wheelchair, an older person continues to use the arms and feet if they're maneuvering the wheelchair themselves and not just being pushed.

These stories of aging parents just prove that it is not a straight line back to strength and health. I have eagerly read each update, and I am rooting for all of them to reach their goals. And, I admire each of you for all the support you are giving.
Cat hanging on Tuesday was less intense than expected. The kid came home early from work due to a migraine [she can't take the good drugs while pregnant], but until she returned, they actually snuggled with me! They are exploring as only cats can. They have found favorite spots already. And, the Yazzie came running to greet me at the front door! They will forget us soon enough, but for now, I am a "piece of home."
I have a huge pile of "stuff they didn't take" and it only seems to get bigger all the time. We will move all of that after tomorrow's Celebration party. So far, we have set up some metal shelves in the basement, leveled the extra fridge that the sellers left in the basement, and I set up the kitchen. Now, we need to install all the bathroom hardware pieces. There are a few other items, but the list is getting small!
I washed out their fridge yesterday and boy did it need it. And now, I have my condiment and vegetable overflow fridge back! I bought this machine when the kid started her master program and moved back in. It moved into the space that we had set up for making cheese. It is a 24" fridge, and is extremely efficient. Here it is closed, and after the condiments moved in. Twelve kinds of mustard!!!
For the party tomorrow, I have my assignments. I am making two roasted vegetable terrines; one with a basil goat cheese and one with tomato. Both are vegetarian, but only one is vegan. I am also making a huge amount of potato salad, marinated mushrooms, and some salad dressings for the large amount of greens I will take over. For the salad dressings, I am thinking about a lemon-mustrtrd vinaigrette and maybe some kind of buttermilk something. Guess I should research before I head to the store.
Woke this morning with significant foot HFS, so Mr. 02143 went to Costco without me. I will however, go with him to the supermarket, Whole Foods and chicken store. I have to save my feet for standing while cooking. Almost everything I am making is better the next day.

Oh Susan, that looks so much like the inside of my overflow fridge. Except one of my door shelves is jammed with Asian seasonings and sauces. Yours is a very nice size.
Just spoke with my dad's case manager at the rehab facility. He is scheduled for discharge next Thursday. Fingers and toes crossed that this all goes without a hitch this time!
Tonight is Taco Friday -- for DH anyway, I'm having tostadas -- with all the fixin's.

Minus not driving is the pits. I understand why my Dad wouldn't give up the keys easily. Even when he told us he "Just drives between the two images he sees...." LOL. Dads been gone More than 10 years and I still remember the fear that statement gave me.

Went up to cover for my on call daughter yesterday. Took my meal - flat iron steak with a pepper salsa carrilla and roasted potatoes. (Home Chef) the food was pretty good. The steak was REALLY good. I did add two extra potatoes so DD2 could pack some for lunch for her DH that night. But i wasn't giving up my steak. LOL. After we cleaned up and she was called out or a visit. So I gave the little one a bath. We had fun. And after, she let me cuddle her IL she fell sleep. Usually she fights to stay wake til momma comes home. LOL.
Tonight supper is pork chops. (Home Chef) I don't have any meals ordered for next week. But i may the week after. I'm liking them.
In regards to pics of kids, DD1 only posts my DGD2 on First smile, a closed network like this one. I had to sign up to see her pics. I asked if I could post one here. She said yes. So here is DGD2. 7 months.

Carole, I'm not surprised about that study. I have found that people tend to underestimate the elderly. It sounds like your mom is working hard. PT is tough at any age. Best wishes that she goes home soon.
Tonight for dinner my dad requested tomato bisque, which I have in the freezer and mashed potatoes. For myself, I'll make a salad with a bag of romaine, a jar of tuna in olive oil, lemon and a couple tbsp of parm.

Adorable baby! The meals sound good, Moon. It's such a good thing to have the right amount of ingredients without extra stuff to throw away after it goes bad.
Ok. Advice needed on another kitchen gadget. A spiralizer. I recall that somebody--Carrie?--mentioned having one. The lunch menu today at Copeland's included a selection with crab cakes and shrimp over zucchini pasta. I decided to give it a try and, somewhat to my surprise, the veggie pasta was quite good! It was very fine and I had imagined a thicker strand. So I've decided to purchase a spiralizer. Recommendations welcome.
I thawed a package of pork chops, always a favorite with dh. I'll bread and pan fry them and have a veggie or salad or possibly both. Kind of a Friday diner's special!

I have a spiralizer and have used it to some extent. I bought one that attaches to the KitchenAid. It also does apple spirals, sweet potatoes, any softer squash, but carrots are a no-go. It does a really nice job, and since I got an "introductory" price I was able to justify the expense. My other justification was I can make the future grand baby fun vegetables and fruit. My Asian stuff is under the counter right next to the small fridge [you can see a bit of the box] and the stuff that needs refrigeration is still in the downstairs fridge. The downstairs fridge may not be needed anymore except for big holidays and when we need extra ice. We shall see as we get used to spreading out.
The d*mn vegetable terrines took most of the day. I started at 2pm, took a 30 minute break since my feet are so painful today, then a half hour break for take out dinner, and have just finished them. I still plan to make the mushrooms and lentils tonight, but Mr. 02143 hasn't washed the 'shrooms just yet. My hands can't be in water for that long anymore, so I have to rely on him to help. In fact, my hands are beet red tonight. The first night that I have had a full blown HFS episode on my hands. This really sucks!
Since I cooked for so many hours, we let our Indian place make dinner. An order of tandoor chicken wings, a simple yellow dal with ginger and tumeric, some rice and as a treat, a piece of garlic naan. There is enough left for one more modest meal for two.
Sounds like Moon and Bedo are fans of these ready to prepare meals. Guess I should have participated in the kickstarter campaign! Moon, what a gorgeous child! So nice that she fell asleep for you.

I bought one of the inexpensive, hand-held spiralizer for $15, since I love the descriptions of food I've read on here but have no cupboard space. To be honest I haven't tried it yet, but I wish now I'd bought the next step up that sits on the counter and has a crank like the old meat grinders. I believe if I got going with it I'd use it frequently. Looking forward to the rest of the reports.

i had an older version of the apple peeler corer that would spiralize potatoes. I know it turns by crank and you set the tooth for peeling deeper
than for apples. My DH loved doing that. LOL. But our old one you couldn't swing the corer out if the way so you had these cylinder shaped potato pieces left over. LOL. I just cut them up for mash anyway. But if anyone has these it's worth a try. Here's a pic of one, you can see the peel is like a spiralizer. . Mine is like this. It's great for Apple pie. Takes just seconds to peel, slice and core apples for pies. 0 -

Surgery went well, I'm doing well I have chosen the camp in the Berkshires for 7 weeks. It is amazing with a water park,yoga crafts,hiking and I have my own little apartment which I will share with my camp kitty! Only bringing one. Plus there will be MDs there and 6 other nurses. The ice cream stand is right outside my room. haha I finish my current job end of May and have a few jobs before camp starts. Hoping for the University job for the Fall
For lunch and dinner and breakfast frozen things in the microwave.

Hi Minus crutches are leaning against the wall and tonight I get to take the giant toe to thigh wrap off. I totally get how the Moms and Dads feel as I have had- The Worst Nurse On The Face Of The Earth-a friend who is not medical helping me. She tells me What To Do and doesn't do things the way I want and was an hour late with my car that she nearly cracked up to pick me up at the surgery center and never stops talking. I sent her home the first day.

Bedo - my dad will be going home with help. We are all looking forward to it lol. Hope you're on the mend. Could not do the crutches thing but I did use a cane after my repair. Summer camp sounds like a blast!
Monica -- my peeler does the spiral slicing but my corer moves so you don't have to have that extra piece left over. I did potatoes a couple of times and something else that I can't remember -- a cucumber or zucchini I think -- I don't have much use for spiraled vegetables. Nothing takes the place of pasta for me. I'd rather do without than pretend lol.
Made pie crust for ham and asparagus quiche for dinner along with a salad. Leftover pie dough will turn into a couple of apple hand pies for dessert.
