    oh my the pork ideas are wonderful. I really do think pork is my favorite meat. I usually start out roasting w/some glaze or other. Then using left overs either with mushrooms & a brandy/cream sauce over noodles, or stir fry w/lots of veggies & maybe terryaki over rice. Special - I like the sweet & sour treatment. Nance - pork piccata!!! I'm headed to my freezer right now to take out some pork for tomorrow.

    Read an interesting thing from a food bank yesterday. Of course they always need canned foods - but the comment was they would prefer canned fruits other than pineapple since they get too much of that.

    For dinner for DD (5 months pregnant) made a few requests;

    Mom, could you make me a big crock pot of cabbage, potatoes and kielbasa? Sure! She ate it all

    Now,

    Mom, could you make me scalloped potatoes with ham? Sure! will deliver tomorrow.

    She used to be "kind of" vegetarian.lol

    Oh, I don't know. I keep getting Locum offers for three months or so. I always refuse permanent jobs. So not sure, but I haven't worked for three weeks! So good to hear from you and I hope you (and everyone else) is well :) I'm really kind of enjoying doing my own thing. XO

    Leftover salad and perhaps order-out pizza or Chinese food. To make a long story short(er), awoke to find my master bathroom toilet's tank leaking down into the kitchen ceiling right above the fridge. Have a bunch of containers, plastic bags & towels surrounding the rear of the toilet and everything in the kitchen beneath the leak(s). Emergency plumber came to inspect and shut off the toilet fill-valve (which came off in my hand when I tried to do it, with the valve stem hissing and dripping as I tried). Full crew will be out in the morning to repair or replace the tank and the tubing, and a restoration crew to suck the remaining water out of the kitchen ceiling and give me an estimate about replacing it and all the other damaged ceilings. Hope we don't have mold—we would have to move out IMMEDIATELY.

    Sigh. I bought some nice new bags at the Coach outlet, and got my new spare glasses from Warby Parker yesterday. Should've known: every time I make a large-ish purchase or take a vacation, it will be followed by a major expense (over the years it's been car repairs, veterinary emergencies, home repairs, dental emergencies—which Medicare doesn't cover). We'll see how much we will have to take out of our retirement savings (old enough now to dip into our IRAs too) to cover whatever expenses the restoration company recommends that State Farm won't cover). And these things always happen on weekends, holidays or late Friday afternoons when banks, creditors, & insurers aren't open.

    At least pipes didn’t freeze…..yet.

    Sandy - so sorry to hear about your plumbing issues. Yup, just when we think everything is solved or running smoothly - BOOM. All of us with BC have been there!!!

    Linner was frozen P.F. Chang's Fried Rice - easily nuked, accompanied by left over coleslaw. I was going to do something w/chicken breasts, but they were hiding in the over-stocked, messy garage freezer and it was too cold to hold door open & look around. The rice jumped out at me. Not too bad.

    Dessert was Victoria Toffee from See's. Bed time snack will probably be popcorn with lots of melted butter.

    Soooo annoying that I just lost a whole post! Has not happened in a while...but still annoying!! Consider yourselves spared!!

    Recent meals....Michael Symon's veggie chili with orzo, and salad

    Tonight was modified make ahead chicken marsala. Very good.

    DH is excited as he anticipates making paella for some friends on Sat evening

    But have to share that we learned on Friday that we are NOT being removed from our fitness center. Yay! For some reason the woman who is COO worked the issue (some legal issue about not allowing non-employees access) out, so we are back. Even more than us, I am happy for the little 80 something ladies who show up religiously to keep their bodies going. So tomorrow, back to stretching and zumba....really need it!

    Pulled pork sandwiches (barbecue sauce) because I made this yesterday and leftovers are the best! I will make sweet potato fries in the oven to go with. It is freezing here too and we got about 5-6 inches of snow on the ground where I live.

    I opened this site up and landed on an earlier page which I either never read or never "registered", which had to do with the marital "division of labor" topic, LOL. Nance, it looks like my DH and yours are cut from the same cloth as far as home task involvement. I recall when I first met DH he owned an upright vacuum for his large shag rug, which was always nicely vacuumed. Must have known then that he was a keeper! And now he is the one to buy us a Roomba for Xmas. Obviously still a priority. Haha. He also makes pancakes when the kids are around, but has never ventured on to waffles. He recently suggested that I open and start using the pressure cooker...maybe I should steer him in its direction since he enjoys figuring machines out! ;) Eric, I suspect that if DH cooked too, our main meals too, we would both clean up. We also lived on our own for several years before meeting and marrying, and his one home cooked dish was steak and Ricearoni. That takes me back!

    Tonight we will have "jump ups"...probably the Michael Symon veggie chili with lentils over orzo, and maybe cuke salad....which will be eaten quickly after zumba class and before my human trafficking awareness meeting.

    Oh, weather related....we had about 8 inches of snow Saturday...light and dry in texture which made for easy snow blowing acc to DH. But man, is it cold now!! Below 10 degrees is not fun! DH just returned from a task of receiving and storing over a thousand Army (?) issued blankets for the homeless with other folks who also serve the homeless in Boston with clothing, food, etc. thru a weekly delivery van from our town. This is an awful time for them...and it's easy to see why cities in warmer climates attract more homeless people.

    DH started cooking breakfast in earnest when I bought a very inexpensive non stick griddle on sale. He cooks everything on it except waffles (and scrambled eggs). He asked for and received a cuisinart waffle maker and now he does it all. Except omelets. I'm still the omelet and frittata maker.

    I tell my dh that one reason I married him was because he had his own washer and dryer. Irresistible.

    Last night was chicken breasts pounded thin and stuffed with scallion cream cheese, then wrapped in bacon and baked. One of DH's faves. Serves it with chipotle mased potatoes and steamed broccoli. Tonight is looking like short pasta with Rao's sauce and turkey spinach meatballs - and a green salad.

    Last night was cold, in the 30's which is cold for this area, but today is beautiful. I was a little worried about all of those people who are here in Tampa for the College Football Championship, and spent megabucks on tickets, and whether they would be cold watching the game, but it looks like good football weather tonight - albeit there will be a need to slightly bundle up!

  • We have been eating beef veggie noodle soup for a couple of days. More to eat.

    Dinner tonight will be chicken thighs. Thanks, Lacey, for reminding me of Marsala. Also brussel sprouts as veggie, dh's least favorite

    Ordered out for Cantonese—vegetable soup, egg rolls, shrimp potstickers, beef chow fun and moo shu pork. The chow fun was mediocre—you could tell they used the dried rice noodles because they didn’t bother to unroll them once boiled (PIA to pick up with chopsticks), rather than use the fresh ones. Have some of it, and lots of moo shu, left over (though only one pancake, so I will use low-carb tortillas instead tonight). And we’ll kill off the leftover spinach/ahi salad.

    Nance - how's your Dad doing?

    On the washer & dryer subject, My Dad washed the only cashmere sweater I ever had on hot with the towels when I was in college. He wasn't allowed to wash again. My son on the other hand is the only one who does the wash. When I asked my DIL to show me how to use their new washer so I could run a load, she said she wasn't allowed to touch it.

    Special - is your MIL adjusting OK? Is she amenable to coming to visit you? Such a difficult time.

    April - I'm so glad you joined us here. The pulled pork sounds delicious.

    Dinner is leftover Mexican Chicken w/beans & green chili salsa. I think I'll also make some kind of a winter crunchy salad - cauliflower, radishes, black olives, beets, whatever.

    minus - from what I understand my MIL is a combo of OK and not. She doesn't want help, but won't do routine things and seems somewhat overwhelmed. She is struggling to get through the mail, but wont agree to have her kids arrange auto-pay on bills. She refuses to give up her car keys, but is displaying some symptoms of confusion, although that has been going on for a while. I don't think think she has really grieved yet. Her children are worried, and with the holiday being so close to my FIL's passing they were there off and on, so she really has not been alone long enough to sort herself out. My in-laws stopped traveling several years ago, I would be surprised if she would visit now, and she needs the familiarity of her own environment. It is a dilemma. Thanks for asking, that is so nice

  • Special- thinking about you and your fam as you all grieve the loss of your FIL an try to work through "what to do with mother"....it can be SO stressful! hugs!

    We are having horrible wind here today----rain and dark and d25 mph with 45 mph sustained gusts. I went out for breakfast and dropped off y overdue library books. checked out a cookbook called "Victuals" I think it is Appalachian food......should be entertaining.

    I don't know why but I cannot get Susan out of my mind today. She popped into my head at the library when I was looking at the cookbooks and I just am concerned. She hasn't posted anywhere since Christmas eve, but must have logged in a couple days ago. I just pray she is comfortable and has that precious little Olivia snuggled up on her chest. Lifting up a prayer for her and everyone else with mets.

    I had a French toast combo at breakfast today---and then I ate veggie soup for lunch and have been noshing on chili cheese corn chips. there will not be any dinner tonight for me. I am stuffed like a flea. Going to hunker down on the couch with a quilt and a book--although I should be organizing my dad's bills and getting ready for taxes.
