    Nance, I enjoyed seeing all your wild creatures second hand. I know we have deer in the woods here and they do venture into the campground but I have never seen them. They probably come too early! They have eaten flowers especially those in sites close to the woods. DH and I saw a pretty doe on the golf course last week.

    Specialk, stuffed shells was one of the dishes that Laurie cooked quite a bit.

    Eric, you adjusted to retirement almost instantly! You sound very happy.

    I bought a couple of eggplants today at Walmart and some ricotta (not the whole milk--sorry, Nance!). Also some ground turkey. Later at home I made two layered eggplant dishes, one to freeze. The red sauce was 1/2 lb of ground turkey made into Italian sausage and a jar of Rao marinara. I peeled, sliced, and cooked the eggplant on a flat grill pan. Instead of brushing the slices with olive oil, I sprayed them with canola spray. First time I've ever done this. I layered the eggplant with sauce, ricotta and grated mozzarella mixed with grated romano. It's also the first time I used ricotta in this dish.

    My choices for heating the casserole or hot dish, in MN lingo, is the grill or the convection/microwave oven. I'll probably use the grill as an oven. The side will be a romaine salad with lots of good additions like we had last night.

    Outside is a lot of machinery noises. The street through the campground is being asphalted.

    Beautiful day here today. High in the low 70's. The weekenders would have loved having this day for their Saturday or Sunday.

    We grilled a whole spatchcocked chicken with rosemary and lemon and some fresh corn on the Weber last night.

    Tonight we'll be having lamb chops and roasted carrots with harissa and greek yogurt.

    I finally tried Galbani brand whole-milk ricotta. Wow--smooth, creamy & sweet. I'd always thought ricotta (even the hand-dipped kind) was inherently grainy, but this stuff is fantastic. I used it to make fake cannoli--mixed with a bit of crushed pineapple, sugar-free apricot jam and rum extract, on toast. (Old WW recipe). No mascarpone necessary.

    Magari, I'm a self-invited guest! Your dinners sound wonderful.

    The eggplant lasagna-type dish was delicious but the ricotta was not a taste enhancement. I will leave it out in the future. Maybe if I had used Sandy's whole milk version, I would have a different opinion! Using the outdoor grill as an oven worked fine. I lit only the main burner and even turned it down a bit. Normally I light all three burners to heat up the interior grill space. Not necessary.

    Today is Tuesday, ww meeting at 5:30 pm. Afterwards dh and I will eat out at a restaurant that is "new" for us.

    Tonight was cheeseburgers with chipotle gouda on flat bread and sweet potato fries. Tomorrow is brats and red potato salad, with maybe some green beans with dill. I have a skin cancer removal surgery in the morning and will be wanting something easy for dinner.

    I had to speak at City Council this afternoon & I have a full battery of blood tests tomorrow - so dunch was an omelette with leftover mushrooms & broccoli. Even though I'm not fasting until after midnight, I thought I'd go easy on my choices today. My PCP has thrown in more tests on top of my MO's orders. Oh well, this should be the last 6 month appointment. If everything goes well, I should be moved to once a year follow-ups.

    When I got back to my car this afternoon, it was 107 degrees. By the time i got home 40 minutes later it had cooled down to 100 degrees - but that was the actual temperature on my back porch in the shade. Long hot summer ahead. And there's a name from the past - an old 1958 movie with Paul Newman & Joanne Woodward that my Mother would not allow me to see. Soundtrack sung by Jimmie Rodgers. (think Honeycomb and Kisses Sweeter than Wine and Oh,Oh I'm Fallin' In Love Again)

    minus - I always loved Paul Newman's quote about cheating on his wife - he said something to the effect of why go out for a hamburger when you have steak at home. Seems fitting for this thread...

    Yesterday we made it up to 80. At bedtime it was 70, so I turned on the fan but not the AC. Late this morning, I awoke shivering, thinking I had a fever. Nope--my phone's weather app said 52...projected high of 60...which we'd already had before dawn. When even the TV weatherman utters the phrase "pneumonia front"...it was a hot oatmeal kinda morning. In June.

    Dinner was leftover Vietnamese beef stir-fry with rice. I crisped up the rice separately, put the beef chunks & greens on top, and topped it with a fried egg. Voilà: a blander version of bibim bap. (The latter is Korean, I know).

    I was down .6 lbs at ww weigh in yesterday afternoon for a total of 7.8 lbs. Not exactly a ww poster child! LOL. I was prepared for a slight gain or maintenance. I enjoy the meeting but it's so different from my Louisiana meeting where people speak up and share. These MN ladies are more reticent. The leader makes a good effort to get a discussion going. In Louisiana the meeting is more of a support group. I am making an effort to sit with different people each meeting. There are two men who attend regularly.

    After the meeting we went to Boulders restaurant for the first time. It has a nice main room with large windows on three sides. Tablecloths and rather formal. I had a by-the-glass cabernet, Grayson from Napa Valley, and liked it a lot. $9 a glass so I had only one. I ordered a lemon pepper walleye which came with a tasty tartar sauce, slice of lemon, steamed veggies that were almost raw, and a wild rice blend with cranberries.

    Dh ordered a night's special, lamb shank which was served with a gravy-like sauce on the side and mint jelly. His side was mashed potatoes which he said were ordinary. He enjoyed the lamb which you're not likely to find on most menus up here.

    We both enjoyed a hot roll, medium to small size, dipped into an olive oil and seasoned parmesan mixture.

    My conclusion was that Boulders is pricey but does offer some more "sophisticated" menu choices you won't find at most local restaurants. We won't be going there every Tuesday after the ww meeting.

    Tonight will be ribeye steak and baked potato and salad.

    Today I'm playing golf with the 18 hole women's group at Headwaters Golf Club.

    Hello Ladies:

    I lurk mostly... but would like your input on the cut of beef to use for Beef Stroganoff. I want it tender. Any suggestions? A friend is ill, and is requesting my old recipe. Wellllll, can't find it. Haven't made it in decades. I remember my secret ingredient for my sauce, but can't remember the cut of steak/beef I used.

    Help!!!!

    val - hey! Missed you! Hope you're doing well. I can't really help on the stroganoff quest - but someone will come along who can I am sure. I usually use leftover rib-eye that is somewhat rare, slice it n strips, and add it toward the end just to warm though. I rely on larger quartered mushrooms cooked over high heat to be the start of the sauce, with some Wochestershire, sour cream, and a teeny bit of tomato paste.

    I love checking in to see what everyone's eating! And hey, SpecialK, your burgers sound soooo enticing...but because of doctor's orders, I have to remain faithfully (primarily) plant-based, so our dinner tonight (while I fantasize about your chipotle gouda...) will be a favorite recipe from a friend who's an expert on cooking for lots of conditions. Her sons have various dietary needs and she has celiac. I don't share any of those conditions but I love her recipes! So we're having this tasty Quinoa Taco Salad and I'm bumping up the protein with some black beans; husband will sprinkle on some shredded mexican cheeses and we'll both enhance with favorite salsas!     I'm making enough for 2 meals because we have to be in Phoenix all day tomorrow for my RO post-brachytherapy checkup and my MO appointment (getting the word on what treatment/s he's putting me on; also my OncotypeDX results). Since we are leaving at 7am and not returning til dinner time (it's 2 hours away) I want dinner DONE. So leftovers will do.

    Val - I'm glad to see you too. We've missed you. I usually use round steak for Stroganoff.

    Food today was cottage cheese with leftover canned peach slices. I may have a green salad after water aerobics, but maybe just some watermellon.

    patsy - I hope the day goes smoothly tomorrow and will cross fingers for a low Oncotype score! My skin cancer removal went smoothly - I basically had a lumpectomy on my shoulder - have a 3cm incision and it was comfortably numb until about two hours ago. The area is at the top of the shoulder without much flesh underneath and this is my dominant arm so I need to try to stay a little quiet. I'm not good at that, lol! I did make dinner early consisting of cold salads - green beans with bacon and feta in vinaigrette, and red potato salad while I was still comfortable, just reheated brats so it was easy. I think tomorrow will be sore, but just have a quick dentist appt and the rest of the day I can try to keep still. In the interests of full disclosure - I left the cheese off my burger and also skipped the flat bread, so I was fantasizing right along with you!

    minus - love cottage cheese and peaches! My mom frequently made cottage cheese salads and added tomatoes, sliced scallions and old school “French" dressing.

    What about hanger steak for Stroganoff? It's a flavorful but not photogenic cut that butchers used to save for themselves before foodies discovered it. More expensive than skirt or flank steak, but cheaper than strip, filet or ribeye.

    Tonight was weird. If I were Catholic I'd have been praying nonstop to St. Anthony (patron saint of lost & found objects)--mid-evening, I was trying to gather the stuff I'll need for the dulcimer festival this weekend, but couldn't find the tote bag I'd taken to my last gig in Madison, which I thought had my harmonicas, velcro wrist wrap (for holding ice packs), Traumeel gel and an ice pack. So after sending a text to the venue where I'd played, I went out to the car to see if it was in there with my emergency duffel and stash of reusable shopping bags. Reached into the closet for my leather jacket, but it wasn't there! I realized I'd forgotten it this afternoon at the nail salon (it had warmed up outside and everyone else was walking around coatless). Salon owner, who lives in my 'hood, dropped it off. On the way back in from the garage, I saw a big black (likely expensive) metal water bottle tucked into a corner of the deck--texted the landscaper, who replied it was his. Went back inside and there was a really pretty pair of glasses I don't own--they're my housekeeper's (I lusted after them and wanted to buy a pair, but she got them at the V.A. eye clinic, not open to non-vets). Texted her that they're on the dining room table. Then I found the harmonicas in the accessory pocket of one of my dulcimer cases.

    So dinner was kinda late. Fortunately, I'd defrosted a piece of Copper River sockeye salmon, which I pan-seared. Sautéd snap peas, and steamed & seasoned some freekeh--always wanted to try it, because it's high-fiber and cooks more quickly than rice.

    Special - that's my other 'go to' - cottage cheese & sliced tomatoes. I eat that w/no dressing. Hope you were able to sleep w/o rolling on your shoulder. That's a pretty good chunk removed. You need someone to tie you down today- lol.

    I rarely make stroganoff. Once upon a time I think I used a tough cut of beef like round steak but I like the idea of a tender cut that wouldn't be overcooked. At some point in my life I stopped liking tough beef that has to be cooked and cooked and cooked to be chewable. My mother "smothered" round steak and made a delicious dark brown gravy. The flavor was in the gravy, served over white rice, a staple in our southern family.

    Last night's ribeye was a bit overcooked but the slices in the middle qualified as medium rare. I had half a baked potato with butter and a delicious romaine salad with tomato, cucumber, avocado, blue cheese and Greek olives sprinkled with olive oil and white balsamic.

    Tonight's menu will be boneless chicken thighs, sweet potato chunks and salad. We don't seem to tire of our romaine tossed salads. DH always adds generous amount of sweet onion to his and uses a bottled onion dressing, Ken's brand.

    minus - exactly - I do need someone to tie me down! I keep forgetting and then moving too suddenly. Surprisingly, I did sleep ok, but I am a side sleeper and usually sleep on the unaffected side - so yay for that!

    My last frozen Wagyu sirloin filet, seared on the grill in cast iron (had started it on the stove but I set off the smoke detector)! Mushrooms with butter, dry marsala and the juices left over after slicing the steak--8 oz, fed two of us. Broccolini with garlic, lemon, olive oil and chili flakes. Leftover freekeh with butter and porcini-infused sea salt.

    Considerably less sophisticated fare this weekend, as I'm doing a dulcimer festival in a small town about 2 hrs. SW.

    Today is dh's birthday. We ate breakfast out following exercising at the gym. He doesn't want to go out for dinner so we're having a pork steak, a favorite of his. Sides will be corn cut off the cob, another favorite. And probably a salad. Maybe cauliflower mash.
