Maggie - eating 'whatever' only works because I live alone. If I had a husband or kids still home, I'd be cooking balanced, nutritious, meals - and likely be back to at least 2x a day instead of my normal one meal.
This evening I finished 2/3 of a bag of chopped broccoli and cut up & re-heated the Pasta Roni with LOTS of milk. That was decent once the boxed sauce was diluted - if boring.
"Coffee with Cops" in the morning hosted by our City Council representative. Pastries & doughnuts will be on tap. I'll have to come home & brush before I head to the periodontist in the afternoon.

I'm making a cauliflower, sweet potato egg casserole of sorts. We'll see how it turns out…topped with cheddar cheese. This WI gal thinks if you put cheese on it, it is perfection personified, LOL.
Eye doc went ok. Not ideal but pretty stable.

Tuesday was crab..all I could eat
Yesterday several of us went to Harpers Ferry. Most everything was closed by the time we got there, but we were able to walk arounad a bit and had dinner there at The Rabbit Hole. It has a US Forest Service sign motif and one of the signs was for Palace Station (Prescott National Forest). Sharon and I had our first date at Palace Station.

This morning we had a very informative "Coffee with Cops" meeting sponsored by our City Council representative. Great question & suggestions. Then my periodontist said my gums are OK. I spent several years after cancer treatments to 'remediate' the gums. They're not perfect, but I got a gold star for doing a good job. Of course that means flossing, water pick AND sonic care toothbrush every night. I've given up cleaning my face in favor of cleaning my teeth.
Stopped at Chicken Salad Chick on the way home. They still have that yummy Dilly Diva chicken salad, so I bought a batch of that and a broccoli salad.
Eric - oh my… all you can eat crab!!! I know you'll be glad to get back home.

I went to the dentist today and finally got a crown that fits. The third time was the charm. With Wally’s stable eyes and Minus’s OK gums I guess we are holding steady.
Eric, one of the things I miss most about Salisbury, MD is the crabs. The Palace Station sign was quite the coincidence. I hope you have a good flight home.
Dinner tonight was meatloaf and mashed potatoes.

LOL, Maggie, on the status of our group with healthy gums, eyes and a crown that fits! I was lucky with my crown. It seems to be good on the first try. Knock on wood.
We went to dinner at Buster's Oyster restaurant last night for the Thursday oyster specials. Our neighbors went with us and picked us up. DH had a dozen raw oysters and a bowl of crab and corn bisque. I had a garden salad topped with fried oysters and remoulade sauce for dressing. This is two Thursday nights in a row and dh said he might like to go again next Thursday.
Neither of our neighbors ordered oysters. Rodney had a huge hamburger and Belinda had yellow fin tuna.
I think we will finish up leftovers tonight. DH also has the option of meatloaf out of the freezer.

Hi all - I know I said I would try not to have extended absences again, but, rather unbelievably (at least to me), I got sick. Again. I assumed it might be influenza B, since I had already A, but it was my first case of Covid. I had managed to dodge that particular bullet for 5 years! Symptom onset was 3/29, and I just tested negative for the first time yesterday. I am glad that the symptoms are more mild with these recent variants because I was still pretty sick and still have a cough like a coal miner. I have had an upper respiratory something since the first week of Feb - very unlike me - and I am not usually a catcher of things. Bleh. I am now suspecting the pulmonary function test I had on 3/25 - it was my only interface with another person for any extended period of time, in a small, closed-door room, which involved putting my hands and mouth on equipment. The tech was masked and gloved and the mouthpiece was disposable, but it is the only thing that makes any sense timing wise. In any event - I am back now!
Dinners have not been a thing for the last two weeks, DH has been fending for himself except for the corned beef I had postponed from St. Patrick's Day. That was his prep day for colonoscopy so not a good time for it! Despite my mom always cooking corned beef and cabbage on the stovetop my whole life, I baked it in the oven with brown sugar and mustard on top, in a shallow bath of the spices and water, tightly covered. Then you add potatoes, carrots, onion, and cabbage, cover again and up the heat for 30 mins. Then uncover for another 30 minutes. Super tender, and something of a sheet pan meal. We sat on opposite sides of the kitchen to eat, lol! Distancing and masking seem to have worked - DH escaped illness this time.
We are currently having our pool enclosure and deck refurbished. The lanai and enclosure currently have no screens, and the cross beams and side rails have been primed. The cage is currently white but it will be bronze once it is painted. Our covered part of the lanai has Ipe wood decking so we think the darker color will look nice, and will certainly show less dirt. The cat keeps looking longingly out but he can't go because there are no screens. Hopefully no gators, bobcats, or snakes realize this and come in.
minus - I did read back to where I left off and saw that you asked if I was still on Prolia. I stopped in 2018 (had been on since 2012) and did not do a supplemental Reclast - that recommendation came slightly after that. I think you and I discussed it back then. I was an exceptional responder on Prolia, had the largest gain in density my onc had seen among his patients. I have had multiple DEXA scans since then and my density is holding. I just had one in Jan and slipped minutely, but still in the normal range, so no additional intervention has been needed. I also saw your avocado dilemma - you can halve then, remove the pit, and flash freeze them. Then gather them and put in a ziplock and keep in the freezer.

eric - besides the stellar public school education my kids got while we lived in Fairfax County, VA I was always grateful for the many interesting places they got to go on field trips. Gettysburg was the fifth grade trip and we went for the whole day, battlefield and museum. I went two years in a row because my kids were only a year apart. I always tried to be a chaperone on any field trip because they went to such cool places. I share your thoughts on how it feels to be at Gettysburg - indeed sobering. On my list of similar experiences that I did not get to when I lived there was the Memorial illumination at Antietem - 23,000 candles lit at night in the cemetery. There is a driving route through and the cars are to only have parking lights on.

Carole, The fried oysters with remoulade sound yummy. I love oyster stew but that is very New England.
Special, I'm sorry that you ended out with Covid after avoiding it for so long. The PFT room theory makes sense since someone infectious might have been in there earlier. The cough hangs around for a while. Your non-traditional corned beef sounds delicious. Mine is still in the fridge but needs to be cooked sometime before mid May.

we had leftovers of choice last night. Any leftovers of the leftovers will be discarded.
Today we'll have a heavy lunch at a cookout hosted by a member of the Woodworkers Guild at his camp on a bayou. He cooks chicken, ribs and sausage on a gigantic outdoor grill/cooker. He makes his own barbecue sauce. I love the chicken and usually bring some home. I'm making a pasta salad and have to finish it up this morning. I cooked the fusilli pasta yesterday.

Special - thanks for the prolia updates. Yes, we did talk when I approached the 5 year mark. Now I'm at 11 years. My original endocrinologist (who wrote the book & recommended 10 years) retired and I've only met the new one once. Last year she agreed with the warnings that taking a break could make benefits reverse very quickly. Because she has scheduling conflicts, I'll only see the nurse for my shot again this month and get a DEXA scan. I won't meet with the doc until later this summer.
Carole - your cookout party sounds delicious.
Maggie - always nice to finally get a crown that fits correctly - especially since they are SO darn expensive. Hope you've had no more problems.
Yesterday's meal was cottage cheese & campari tomatoes with a piece of thick, toasted sourdough bread. I just ate today's meal a little early - leftover Dilly chicken Salad and broccoli salad from Chicken Salad Chick. I actually popped some of the chicken salad in the freezer. Not sure how it will turn out, but I couldn't bring myself to toss it.
A neighbor is re-gifting me some liquor he won't use - one bottle Messina Hof cab, one bottle of Bailey's Irish Cream and one bottle of Kahlua. I told him I'd make him Special's 'one step' devil's food cake.

Carole, Cookouts on an outdoor giant grill are the best. It's even better when there is a variety of meats to choose from and potluck sides. I miss the unspoken competition of potlucks in the south since everyone brought their special recipes. Up north people just bring what is convenient.
Rhonda, Thanks for the recipe. I prefer the taste of white wine with chicken so this should suit me better than the usual red. Reading recipes is a great way to taste things in your imagination even if you never eat them.
Minus, You can make many delicious desserts with the Bailey’s Irish Cream and the Kahlua. The Messina Hof cab is too nice to use as cooking wine.
I baked an altered version of Aldi’s brownie mix today with espresso powder, vanilla, chocolate chips and melted margarine. Butter was recommended but it’s for DD who can’t have milk or soy while she’s breastfeeding. It smells good but I’ll have to wait until tomorrow to taste it. Lots of label reading was required to get the right ingredients but I’ve been doing that for years.
I hope the four inches of snow we got melts soon. I thought I was done with shoveling.
Dinner tonight was chicken in barbeque sauce out of the freezer, creamed corn and mashed potatoes.

minus - FWIW my BFF in Sacramento receives Prolia due to osteoporosis not caused by any cancer treatment. Her endocrinologist has said she will be on it forever, and she is 66 years old. She has had a number of non-spontaneous fractures - all have been while playing soccer or cycling. She also has some spinal issues. Also wanted to say if you have Grand Marnier you have the ingredients for a B52 cocktail since you have the Bailey's and Kahlua. That was the plane my husband was in for the first 12 years of his Air Force career and we often drank those when everyone gathered before going out - what is now referred to as pre-gaming, lol! Have you ever had one? If not, in a shot glass layer the Kahlua, use an upside down teaspoon and pour a little layer of the Bailey's over the back of the spoon so it doesn't mix. Do the same with the Grand Marnier. You should get visible layers. Some people then stir it and sip, but we would do a toast and then drink it like a shot because we were young and reckless.
Last night's dinner was mushroom ravioli with a sauce made from chicken Italian sausage cooked through with a handful of frozen spinach added, then a jar of Trader Joe's rosa sauce stirred in and heated through. Topped with parm. I had leftover Olive Garden breadsticks in the freezer from our holiday lasagna dinner night so I took them out and let them thaw, then put them in the oven wrapped in foil. After about 10 mins I took them out of the foil and spread a little butter on the tops and sprinkled some garlic powder and left them for another minute or two. DH had a little salad as well.
I made some potato salad with little red skin potatoes and the dressing is equal parts mayo and sour cream with salt, pepper, and lots of dill. I am thinking burgers to accompany, but will have to cook them in the house because the grill had to be moved for the pool enclosure painting. It is now landlocked on the lanai surrounded by patio furniture.
maggie - has your DD tried the Country Crock plant butter? I have used both the sticks and the spread - I don't mind it at all and have also baked with the sticks.

On my walk in the neighborhood minutes ago, I came up with a dinner plan. Fried rice using smoked sausage and smoked chicken from the cookout yesterday. Also some chopped celery and colored bell pepper. I love fried rice, understandable since I like rice so much. I don't have enough leftover rice cooked so I'm cooking a batch as I write. My favorite brown jasmine. I'll cook more than enough for a meal so there will be leftovers to eat topped with an egg.
SpecialK, that layered shot sounds yummy. The summer folks up in MN are big on shots. Personally I like to sip them and savor the flavors.

We are having the last of the casserole thingie I made. Carole, your talk of rice made me hungry for my short grain brown, so I will make mapo tofu with brown rice for tomorrow. Just cooked the rice so all I have to do is reheat it (and I get resistant starch).

Special: I've had a B-52 before, but it's been a long time. I don't keep Grand Marnier around. I'm going to be trying a French Dream. Equal shots of Kahlua, Chamboard and Baileys Irish Cream. I'll report back on any updated Prolia info after I see my endo in May. Your potato salad sounds like mine - no mustard but I like to add some celery if I have it handy.
Maggie - thumbs up on the deserts with Kahlua or Baileys - but I usually skip desert. Instead I've taken to sipping just one shot glass before bed of those. Have now added Sambuca (licorice taste) or Tuaca (an Italian brandy) or several other after dinner liquors to the rotation.
Carole: I too love fried rice. It's my go to meal when I have lots of vegetable leftovers in the fridge.
Wally: How is your DH doing?
Food today is once again (for the last time) Dilly Chicken salad mid afternoon and Broccoli salad for supper. I know I bought too much, but there is not a Chicken Salad Chick close to me so I get it when I can. The plan tomorrow is for Naan Pizzas.

Hey Minus, DH is hanging in there. Extreme fatigue and some tummy issues, but overall, OK. We recheck his labs towards the end of the month before deciding if he goes in for another treatment.

Special, Thanks for the recommendation. Unfortunately it contains soy lecithin and both soy and milk are off limits to try to prevent future allergies for the baby. DS is still allergic to milk protein but DD who never had it until she was 2 is not. The brownies tasted good with the margarine.
Carole, Your dinner sounds like a good use of the cookout leftovers.
Wally, I think of resistant starch when I eat leftover rice and pasta. Making it resistant in advance is a great idea.
I got to hold my grandson today. He’s cute but colicky like my son was. My ability to stay in constant motion came right back but the traffic in Queens doesn’t allow for my former favorite solution, driving up and down I-65.
Dinner tonight was vegan veggie pizza which was good even with the fake cheese.

It dawned on me yesterday that we're departing on our trip to Amsterdam on THIS Sunday. Yikes. The river cruise I've been trying to imagine will become a reality.
Dinner last night was oven fried catfish fillets. They were delicious, cooked in a 450 degree oven until very crisp. Side was boiled small potatoes with butter.

Sharon had cooked up some chicken thighs and we had those on a bed of noodles. It was quite good. I need to ask her about the spices she used.
Today was two reminders of "I'm getting old". Older test daughter is 50 today. Younger test daughter's two sons…both sent prom pictures, and the eldest also sent a graduation announcement.
Holding a newborn grandchild…I can imagine that's a great feeling. As for the colic, Sharon and I were lucky…no colic with DD. She did, however like riding in the 1950 Jeep.
Special, that potato salad sounds a lot like how we make it….except for more sour cream and less mayo. (Sharon's "pet peeve" is too much mayo in potato salad).

Carole, enjoy your river cruise! (We did ours in the opposite direction and got no time in Amsterdam other than the bus ride from the boat to Schipol—at least the bus driver gave a mini-tour). Will you have a couple of days ashore before setting sail? If so (or at least a free evening), I highly suggest you find an Indonesian restaurant that offers rijstaffel. (When the Bar Assn. did a continuing ed trip to Amsterdam & Israel back in 2019, the group had rijstaffel—lots and lots of dishes to pass around).
I'm almost certain my osteoporosis is due to having stopped Prolia after 3 years, which was the protocol back then. Before stopping, my osteopenia had improved to the point where some of my measurements were "normal." 2 years later, the DEXAscan showed osteoporosis, requiring me to add an endocrinologist to my army of specialists, who told me the new protocol is 10 years to life (especially for osteoporosis). A side effect of having an endo was her noticing my weight gain (after quitting the keto prescribed by the hospital's weightloss clinic 2019 at 198 lbs, going down to 145 before getting tired with the restrictions and then experiencing stresses & bereavements). She saw the scale (183) and my a1c (5.8) and gently asked if there was anything I wanted to tell her, so I unburdened myself and she put me on Zepbound 2/1/24. I hit my first goal (150) in April, then the next one (140) in June, and finally 134 in September. All on the starter dose of 2.5mg. At that point, she told me to stop losing and start maintaining. I've since been bouncing between 131-134, depending on time of day and, uh, "intestinal contents." I've noticed stress related carb cravings to which I began to give in (though not binge), so she raised my dose to 5mg.
I had to see a cardiologist today (my PCP insisted on one who specializes in women) after a coronary calcium scan showed a score >1400 (but I aced the followup nuclear imaging & stress tests). My LDL (84) is the lowest I can remember it ever being, but per my PCP I need to get it under 70 due to the calcium score and horrible family history. The cardiologist agrees—and said ideally to shoot for 55. Besides ditching the red meat (apparently, my one beef meal per week is too much) and joining the gym ASAP, she wants me to ask my endo if I can cut back on calcium supplements—she says they might be partly to blame for the calcium deposits in my coronary arteries. I think I'll halve the dose to 400mg, seeing as how my multivitamin gives me an additional 300 and the dairy & dark green leafies in my diet another 300-500. She also wants me to increase fiber.
It's Passover, so I've switched out bread for whole bran matzo. Last night we went to Cooper's Hawk, where I had half a wedge salad plus miso-glazed sea bass over rice and more raw veggies (cherry tomatoes, red onion, and cucumber). Left over most of the rice, took home half my portion of the wedge. Cottage cheese with chives & 1/3 "board" of whole wheat matzo for breakfast, leftover chopped liver (from Sat. night's Passover dinner at Joe's Seafood & Steak) on 1/4 "board" of the bran matzo. I ate my leftover halibut from that meal Sunday night. Want to go to the local Greek joint for dinner tonight (they always have great fish), but Bob noticed (en route home from the freeway) that the lot looked jammed and the valets might not have anywhere to park any more cars. I think we should try anyway. I don't feel like cooking—but if I have to I will defrost some salmon (Bob has leftover skirt steak from last night).

Before heading back today we were able to meet up with my son at LaGuardia after he changed his flight home from LA to a red eye. That was an unexpected bonus.

I had lunch yesterday with a neighbor and a former neighbor. I bought home half my shrimp salad, which was salad greens topped with whole shrimp fried perfectly. I had the leftover salad with my dinner, small portion of meatloaf and small dab of mashed potatoes. DH had a larger slice of meatloaf and larger portion of mashed potatoes, courtesy of Bob.

Tonight's dinner is about as basic as it gets. Large hot dogs, the ones Sam's Club serves in its cafe, and canned Bush's baked beans. Also a cole slaw with fresh pineapple. No buns.
We're about packed for the river cruise. I've been checking the weather in Amsterdam, and it isn't cold. Mostly 50's and 60's, my kind of temperature range. I am amused at dh's approach to packing for this trip. He has been reading tips for folding clothes. He ordered the zippered bags. We have new luggage since we got rid of our travel worn suitcases after the Ireland/Scotland trip.
