Dinner tonight was fish and chips for DH and scrambled eggs for me.

I permanently installed my Starlink antenna/electronics. The cable from the antenna to the inside equipment has about 3 feet (1 meter) extra length. It barely made it. Anyway, it's working nicely now.

Dinner tonight is made in the store hot dogs with some of the homemade sauerkraut.

Kroger used to have the best strawberry or raspberry coffee cakes with cream cheese. I think their house brand was "Bakery Fresh", but I know "Entenmanns" used to make a decent one too. I picked up what they had this week called "Abby's Delicious" that looked the same because I had a coupon. YUCK. I ate a couple of bites but the rest will go directly to the trash can - except I will take the carton back to the store next time I go and find out why they switched after 40 years and recommend they drop this brand.

I had a 6pm "sip & talk" meeting for our Citizen's Patrol group. Not many showed, but we went over some important issues & enjoyed visiting. By the time I got home at 8pm, no way was I going to make dinner. Just ate leftover tuna salad from the bowl and didn't even bother with bread.

Chicken thighs tonight. Not sure about the sides. DH hates brussels sprouts, but I already bought them and cooked them, so I may add some parm and honey and hope it is "doctored" enough.

Taking my car in for routine maintenance on Tuesday and hope we don't need anything fixed or replaced with these embargoes.

Tonight was steak fingers, mashed potatoes, corn and a dinner roll. It was all good but now I’m uncomfortably full.

Eric, Hopefully your Starlink is working well. Are you part of the beta test?

Minus, Aldi’s store brand of raspberry strip Danish is good. Hannaford’s carries Entenmanns so that brand is still around. It is so annoying when stores change to an inferior product.

Wally, I sautee brussells sprouts in olive oil with cut up pieces of dried apricot which helps disguise the taste. Repair shops have been stocking up on parts in advance of the tariffs so hopefully any needed item will still be at the old price.

Illimae, You know it's a really good meal when you finish despite feeling full.

Dinner tonight was creamy Italian sausage and spinich on penne. It was soft but a real dinner!

Not a beta tester….just a regular customer. It is working quite nicely. Sharon can upload stuff to Youtube without killing the entire connection.

I didn't eat dinner tonight…I had eaten an apple earlier and for whatever reason, that filled me up.

Sharon cooks the brussels sprouts in the air fryer. It "toasts" the outer leaves and I think they taste quite good with a bit of salt and pepper, and Parmesan cheese.

Love the brussels sprout discussion. That was a veggie I would not touch for years. Now it's one of my favorites.

Got a rotisserie chicken yesterday. Thinking of pairing it with a salad and a side.

Ooh….Brussels sprouts - love them ! I boil them first for 5 minutes which removes the bitterness, and then bake sprinkled with balsamic vinegar, olive oil and fennel for 40 minutes. The outer leaves are crisp and the inside sweet.

Have been so busy , been ordering in this week. Grilled chicken kabob for DH and for me Grilled vegi kabob with butter rice, and side of grape leaves.. lasted all week. Side salad with olives and artichoke hearts.

Maggie - yeah for a real dinner (soft and sounds yummy) love creamy food.

mommy- have always loved a rotisserie chicken, a bottle of red wine, and salad with a fresh whole wheat baguette …

Illimae- I’ve been thinking of steak frites lately and when I read your dinner, I thought ooh, if I cheat with red meat I should add corn on the cob.. full is good..when I reach that point, a walk usually helps lol…

    I love food!

eric - I will be interested to follow your experience with Starlink, it is often what is used in the mountains in CO as well.

minus - I find the Entenmann's pretty good, but Publix bakery also makes a good danish with fruit - I think they usually have both apple and raspberry. Sorry your usual store has substituted an inferior product - that is a bummer.

maggie - I am sorry I was late to the party to wish you well ahead of your surgery, hope your recovery is going well. How long do you have to eat soft food? Your pasta dinner sounds yummy!

We have had some hot weather lately so have enjoyed some main dish salad combos for dinner. I had two roasted turkey breasts in the freezer so I took one out and made a salad with some mayo, celery, red onion, cranberries, and pecans. Also made potato salad with the mayo and sour cream dressing with dill. I made a Caesar for DH with homemade croutons, but I just had the two cold salads. I find I do this a lot during the summer here in FL, sometimes it is too hot to cook and eat hot food.

I just got done dismantling the gas stove and cleaning very thoroughly. Now I don't want to cook and make it dirty again, lol!

Last night we had a baked pasta - I had both leftover sauce from spaghetti with meat sauce (and baby bella mushrooms) and half a container of ricotta, so I cooked some gluten free penne and mixed it with the sauce and ricotta, added some parm and baked it. We had enough for two meals - yay! The pasta was a package I got at a local olive oil and vinegar store and it was from Italy - I was curious if it would be better than some of the GF pasta I have tried. It was good and I only used half of it, so I am happy about that. Hopefully I will still be able to get it in the future. I still do like the Caulipower brand that is frozen - they have pappardelle, linguine and penne - and I recently made lasagna with the Cappello frozen sheets and I will say it was nice to not have to cook the lasagna noodles ahead. The result was excellent, I just wish the Cappello packages were not so expensive.

As per the Brussells sprout convo - I like to cook some bacon and onion, crosshatch the sprouts and par boil, then combine the bacon, onion, and sprouts and roast in the oven until the sprouts are tender. Drizzle with balsamic. I have made several converts who swore they hated B sprouts.

illimae - I would prob eat too much of your same dinner too, and also loved your photo of the friends on the road! So cute!

Unlike me, DH is not a lover of Brussels sprouts but he will eat them if shredded and sautéed with shallot and bacon. And why not because Bacon.

Tonight is some version on franks and beans. Might be bratwurst, might be smoked sausage, might be hot dogs. There will be beans. And coleslaw. That's all I know.

I like brussels sprouts. I've tried every way to make them…frozen (QFC/kroger brand; tiny and adorable!!), bacon, bacon fat, the honey experiment, balsamic vinegar, boiled, microwaved, air fryer, roasted, pan fried, and adding stuff to it. NOPE. DH finally said, "please, don't ever buy these for me again." Noted.

We have leftover chix thighs. I may take the last of them for Sunday and shred to make yakisoba noodles.

Decided to change the menu a bit as I pulled the meat off the chicken for pulled chicken sandwiches and a salad

  • minustwo

Thanks for all the Brussels sprouts ideas.

I love rotisserie chickens. Since I generally feed only one, I pull all the meat off the bones when I first get home. I eat the wings & sometimes one leg and freeze the rest in separate packages - severak breasts and other packages of varying sizes of smaller pieces. That way I always have something to pull out for chicken sandwiches, chicken & pasta or potato casserole, chicken fried rice, or whatever.

I am definitely NOT a morning person, but woke up at 4am today & couldn't get back to sleep. All my efforts at napping today have failed. Mid afternoon I had a big bowl of cheerios & a banana. I'm sipping on a gin & tonic as we speak. I probably won't eat again, but may snack on cashew nuts or Godiva dark chocolate ganache hearts.

Special, DH insists I buy Italian pasta because they don’t use Roundup to desiccate the wheat to speed up its harvesting as is done in the US. I’ve never tried Italian GF pasta.

Rhonda, The Greek food sounds delicious.

I don’t mind brussels sprouts in moderation but I had my fill of them in Scotland where they, potatoes, onion, cabbage, turnips, parsnips and carrots were the only fresh vegetables available with tinned veggies as the only alternative.

Minus, It’s too bad that you woke up so early. I have never been able to nap during the day so I make do with whatever combo of hours I get at night.

Rotisserie chicken is so versatile and a real time saver.

Dinner tonight was flaked baked salmon in creamed spinach. I have another three days of soft food but there is plenty of variety now that it doesn’t have to be ice cold.

Maggie. Is your voice back to normal?

I can completely understand getting tired of a particular food. :-) Many of the MREs (military Meals Ready to Eat) contain Skittles candy. After a month of Skittles with every meal….sigh…… And, the MREs gave me a lot of practice in "fixing bland". A quart of Siracha, Cholula or Tabasco sauce works great and lasts about a month.

Special, so far the Starlink is working out well. Once I installed it so it has a good view of the sky, the streaming video pauses and dropouts have gone away. It's around 300/40 megabit per second for down-up speeds and Sharon uploading videos no longer slows everything else to a standstill.

Daisy has the Great Pyrenees personality and barks at anything that concerns her, such as the wind blowing, the moon and clouds moving, a car (3 miles distant) starting up, etc. This is okay except at 3am as it wakes up Frankie who then has the "since I'm awake, I might as well bark to 'go' outside".

Chicken is my favorite meat to cook. We've done whole chickens on the rotisserie-propane grill (if the wind isn't blowing), baked, broiled, pressure cooked and "dutch ovened". The pressure cook, while fast, still needs some oven time to get rid of the "soggy skin". We save the bones in the freezer for later broth making and "can" the broth.

I'm disappointed. Senator Bary Goldwater was a ham radio operator. A piece of equipment he owned came up for sale at a "fire sale price". The pickup point would have been about 150 miles distant. The equipment serial number and the serial number on the receipt showing Bary Goldwater's name, as well as correspondence to Goldwater from Collins Radio Company, matched. Someone got their email in a few minutes ahead of mine…

That would have been "neat" owning something that once belonged to famous ham radio operator.

So, I guess back to the sourdough bread. The oven is warming up to bake it.

Here's the best bran muffin recipe I have. Not the one with the prunes, but delicious:

    PEG'S BRAN MUFFINS

Pour water over cereal and set aside

3 cups Allbran Cereal; 1 cup boiling water

Sift and set aside:  2-1/2 cups wheat flour           2-1/2 tsp baking soda           1/2 tsp salt

Cream: 1/2 cup Crisco  &  1-1/4 cups sugar

Add:      2 beaten eggs & 2 cups buttermilk

Add       dry ingredients & bran mix

Stir in:   1/4 to 1/2 cup raisins or chopped dates

Grease muffin tins or use muffin cups

Bake 25 minutes at 350 degrees

You can keep extra batter in fridge for up to 4 weeks

Eric: Sorry you missed out on the piece of Goldwater history.

I subscribe to Arizona Highways Magazine. I was surprised to read some years ago that Barry Goldwater was a talented photographer and had numerous pictures included in past magazines.

Eric, My voice isn’t back to normal yet but I can speak. This recovery is much easier than the previous ones so I can’t complain. It’s too bad that you missed out on the Goldwater radio equipment. Great Pyrenees are noted for their ability to hear sounds miles away with heightened sensitivity at night. Nobody will get near your house undetected but there definitely is a downside.

Minus, Thanks for the recipe. Prunes could probably be substituted for the dates.

Dinner or whatever it would be called at 3:30 pm was Legal Seafood clam chowder and chocolate dipped ice cream bon bons. It was fortuitous that what I am supposed to eat just so happened to be one of my favorite meals.

Leftover yakisoba noodles for dinner tonight. Turned out great.

Eric, sorry for missing the sale.

I suspect too much of anything makes us look for new tastes. When we fish, there's only so much salmon we can eat before dreading it, LOL. And we adore salmon!

    I like yakisoba noodles.

I got involved in computer reports this afternoon and then a friend needed to come vent. So the dinner schedule was totally out of control. Ended up having a large green salad (out of a bag) with added cucumbers & fresh mushrooms. I meant to toss in some black olives, but I forgot. The salad was accompanied by two Hawaiian Rolls that were well past their "best" date but were just fine when heated in the microwave with lots of butter. As you can tell, I wasn't even interested in eating, but since I'll be at the med most of tomorrow I decided I needed the strength.

I buy the sauce (made in Japan) but may try to make my own when I run out. It is a super easy meal. A nice change from traditional tomato sauce. Best to you on your appointments, Minus. I envy you not stressing about them. I swear I have PTSD going to anything medical. The Lexapro is not doing what I had hoped. Not sure how long to stay on this.

Hood canal bridge was shut down today due to mechanical failure. Glad we are not going to Edmonds till next week. Crossing fingers the embargoes won't affect any necessary parts.

maggie - someone who had traveled to Italy recently had told me that they had GF pasta while there and it was amazing. That was what made me try this particular pasta - I liked it enough that I would get it again, even though it means a trip across town. I will prob save that until I need the garlic infused olive again, but the good news is that the pasta comes in a huge bag so I still have half of it left.

Dinner last night was in two acts - I was out running errands and was starving when I came home at about 5pm, so I had two chili dogs. I only had two buns so I snagged two dogs from the freezer and had that, although in retrospect I should have just had one. About 90 mins later I made DH a chef's salad with ham, roast beef, pepper jack, provolone, and a hard boiled egg from DD's chickens. I used some homemade ranch dressing on the salad which DH got on his shirt while watching Netflix, lol! I showed it to him this morning and he cracked up - he is the king of getting dinner on his shirt, especially if it involves a white shirt and spaghetti sauce…good thing I am a laundry wizard.

Speaking of ranch dressing - I have a good scratch recipe but also like the flavor of the original mix. I can't bring myself to buy it now because the price is ridiculous. I watched a YouTube video from a woman who had a recipe for the dry mix. I had all the spices/herbs except for dried chives, which I just picked up on my last grocery run. Will report back and post the recipe if anyone is interested. She also had a recipe for a dupe for Lipton onion soup mix, which I also usually have on hand. If the ranch dressing is good I may try her version of the soup too.

Edited to add that I just put a pork butt covered with Traeger rub in the oven to roast for dinner tonight, and also plan to make French Onion Rice and a broccoli salad.

  • minustwo
    minustwo Posts: 13,788

Yes Special - I'll be looking forward to hearing about your 'scratch' Ranch Dressing.

One thing I really like is the bottled Hidden Valley Ranch ColeSlaw dressing. I can't find that in the stores anymore. Quite often I'll mix my coleslaw with just vinegar & oil & garlic salt - but I will really miss the creamy bottle.

I'm going to heat up the 2nd hamburger patty I cooked the other day. Likely with "Better than Bouillon" gravy, but maybe soup based gravy. Either way it will include almost a whole container of sauteed fresh mushrooms and 1/2 an onion that's lurking in the fridge.

I make a coleslaw dressing with Ken's Ranch (my fave) mixed with some Mayo and a splash of cider vinegar. Sometimes I add a bit of sugar for Dh but I prefer it unsweet and tangier.

Marathon grocery shopping trip today in preparation for a four day visit from Houston DBIL and DSIL. I have no stamina anymore and I am tired. Dinner tonight is Costco chili with added mac.
