    Dinner was a hodge-podge of stuff…long day into Port angeles for our car maintenance. I shudder to think what my a1C will be next week…

    Nance, That coleslaw dressing sounds good. When I was a child on special occasions my parents would go out to Ken’s Steakhouse. My father along with others always asked if they could buy their salad dressing so they started their very successful company. The restaurant is still in operation in Framingham MA.

    Wally, I hope the car maintenance wasn't too expensive; all the stress does take a toll on you.

    Back from our river cruise. For two weeks the only question was "what shall we eat next?" But we did so much walking I came back the same weight thankfully! A few samples:

    We have a friend from Connecticut stopping here tonight until Friday morning when he goes to see his daughter south of us in Iowa. So no idea what we are having or doing just yet.

    It was Maggie. He made a roast with carrots and potatoes. Have enogh of the roast left over for another dinner. So since he cooked, I did the clean up. It was nice having a night off from cooking.

    I'm going to "fry" a couple of really thin sirloins and then simmer them with the leftover brown gravy sauce with onions & mushrooms. I'll probably boil the rest of the petite red potatoes and I made a batch of Cole Slaw. That's mostly with oil & tarragon vinegar & garlic salt, but I did add a couple spoons of a new cole slaw dressing I'm trying - Litehouse.

    Tomorrow I'm going to my 9 year old niece's Spring piano recital mid day. Since it's clear across town, hopefully I can find a Total Wine on the way home.

    Wally, I admire how you combine different cuisines to add variety to your meals. I used to like Drambuie on vanilla ice cream when we lived in Scotland.

    Minus, I had never heard of Litehouse dressing; it’s a clever name. Enjoy the piano recital.

    minus - we have Litehouse in the refrigerated section of the produce department at Publix - I like their Blue Cheese dressing. My DH likes Marie's coleslaw dressing which is also in the cold section. Many years ago my MIL made coleslaw and used Marzetti's dressing, which is in the regular dressing aisle. It mixes well with vinegar if you like a tart slaw dressing, but it is a little sweet - I find adding vinegar helps cancel that out. If I don't have any bottled dressing on hand I make one with mayo, vinegar (usually apple cider vinegar), a tad bit of honey, salt/pepper, and lots of celery seed. Works in a pinch. Hope you had luck with sourcing a Total Wine!

    wally - I was also interested in the mex/indian mashup!

    I made a pork butt with rub a few days ago so DH had that with Stubb's BBQ sauce, some of the French Onion rice, and a Caesar made with baby napa cabbage, Caesar dressing, parm, lots of black pepper, and homemade croutons. I've probably said this before, I keep a large ziplock in the freezer full of various bread - heels, odd leftover slices, sometimes if I have an extra bun with nothing to go in it. I spray a sheet pan, cube up the bread after thawing, spray the bread cubes and sprinkle with house seasoning (seasoned salt, pepper, garlic powder, and onion powder in equal measures), then bake at 350 F. until very crispy, tossing a few times and watching carefully - they can go from perfect to burned in the blink of an eye…. I let cool and keep them in a big mason jar in the pantry.

    I was not hungry at dinner time last night due to a late lunch of tostadas, but I did have a little cheese sammy with tomato on rye late in the evening. I have a plethora of avocados that will be perfect ripeness so I think I will make tacos tonight with the pulled pork and add some hot sauce and chopped pineapple for a lazy take on al pastor, then put chopped avocado on top with some lime crema. I think if I add some salsa to the leftover rice I can make that work too. Will possibly make a salad with corn, black beans, and red onion in a vinegar and oil dressing with lime chili powder and salt added.

    Special - thanks for the dressing recommendations. I think the Litehouse Blue Cheese is OK, but not as good as homemade. For coleslaw - I think I'll skip Marzetti since I definitely prefer tart or salty to sweet. Maybe I'll give Marie's a try.

    Today's meal was Tempura Shrimp from Costo. True to the Costco pattern, there were 30 (thirty) shrimps in the package. I pulled out 12 and figured out how to repackage keep the rest frozen. I ate half as presented & cooked in the oven. Then stripped the breading off the other half. They were OK, but not something I'll buy again.

    My son will be here for 1-1/2 days early in June. The meal he requested (again) is Lori's Mexican Chicken. That recipe is part of what sucked me into this thread - and of course all you wonderful folks - past & present.

    Minus, It’s great that your son will be visiting in early June. I made Lori’s Mexican Chicken with corn kernels instead of beans. It was delicious.

    Dinner tonight was Angus strip steak, baked acorn squash and fries for DH.

    Maggie - funny… the last time I made Lori's Mexican Chicken I served corn on the side - which of course got mixed in with everything else.

    I add all sorts of things to leftover rice. In fact, I have a bowl of leftover, cold white rice in the fridge now. Hmmm - and both leftover pork & ham in the freezer. I think the salsa would be better with pork.

    Last night was a seared tuna steak with asparagus and tonight is a simple salad of spring mix, red onion, radishes and cucumber with Ken’s balsamic vinaigrette and a glass of sangria. I had a late lunch, so not very hungry.

    We had fire planes dropping on a small fire in a nearby canyon, it was contained late last night but I had the dogs ready and a bag packed just in case. I didn’t sleep as well as usual but ok knowing that the forestry folks stayed on it all night.

    Illimae, How scary to be that close to a fire. I’m glad that they were able to contain it and you didn’t have to evacuate. Have another glass of sangria for me. I love it but can’t drink anymore.

    I've been finishing up the goat/sides. Tomorrow will be frozen pizza.

    Edmonds on Wed for DH's treatment. Hopeful tourist season doesn't clog up the ferry system and the bridge works.

    I braved doing my labs today…my hospital seems to have adjusted lab values for their range on some things. Still have a week or two for the stuff they ship to Seattle for the MGUS draw.

    wally - hope your trip to Edmonds is traffic light. Hope the results of your labs are good,, with.readjusted lab values and all. Years ago I used to love a goat curry, and have been dreaming of pizza. There is an Italian restaurant here that makes vegan pizzas, I migt have to tr it soon.

    Tonight made shiitake mushrooms with spinach, and gnocchi with vegan cheese sauce ( nutritional yeast and olive oil with salt and pepper) . I’ve been enjoying playing with nutritional yeast recipes, it’s really yummy.. who knew…

    And DH and I added wine to the menu, at least for tonight lol.. a lovely red .

    Wally, I hope your labs come back with good numbers and the tourists don't get in the way of your timed to the minute trip.

    Rhonda, Nutritional yeast has a wonderful savory flavor. When I visited my daughter in Queens we had an excellent vegan pizza.

    Dinner tonight was steak tips and spinach in bordelaise sauce on creamed potatoes. The restaurant had its wall of windows on garage door frames open so we were able to eat inside rather than take out to the hotel room. What a treat!

    Tonight is chicken crème brie (frozen individual pieces) with asparagus and sautéed squash and zucchini.

    Illimae, Another awesome looking meal. I’ve cooked chicken with so many things but never Brie. I’ll have to try it.

    Today I had to do PFTs which leave me coughing continuously and exhausted. At least I didn’t pass out like I did the last time. We beat the bad traffic on the way home so I’m grateful for that. Hopefully Wally had a smooth trip back.

    Dinner tonight was Campbell’s tomato soup since I wasn’t up to making or eating anything else.
