    I’ve been craving French fries lately.. then can’t quite bring myself to make them lol. My grandmother used to make them with the skins on, and they were so good. Maybe after teaching tonight I’ll make some with steamed bok choy!

    lol so instead I steamed the potatoes, and sautéed the bok choy with garlic in olive oil, and then added the steamed potaotes with paprika and salt and pepper. Yummy.

    Rhonda, Steamed potatoes seem more appropriate with bok choy. You can make the fries another day.

    Carole, It’s hard for other grocery stores to compete with Aldi’s prices. What is in stock can be variable, though. I go to Aldi first and fill in the gaps at another grocery store.

    Dinner tonight was an Italian version of marry me salmon on rice.

    The air fryer did a very good job on my "fries" last night. Potatoes/chips are like heroin. I could easily sit down to a 5 pound bag of cooked potatoes in any form.

    I'm making thai pumpkin coconut shrimp curry tonight.

    Gonna hit 72 (our hottest this year) and I'm glad it will only last a day or so…I'm wishing my life away—October can't get here soon enough.

    So my son is half way back to San Francisco. What a whirlwind. I definitely needed a nap. He came in Thursday night, went to his Dad's yesterday, back here last night, and to the airport today. He brought & installed & trained me on several new computer things - which maybe I understand. He brought a camera that is new to me which I have to master. Helped me plant my plumarias and did several other honey do items on my list. Tomorrow I'll weed the rest of the flower beds, but it has to be between 6-9am since after that it's in the mid to high 90s. I can work in the sun when it's 85, but yesterday was 97 and today 98 - even in the late afternoon.

    Dinner Thursday was his permanent first choice - Laurie's Salsa Chicken with black beans served on 7 grain rice. Last night was beef bourguignon served on Bob Evans mashed potatoes. A neighbor gifted me with 3 home grown tomatoes - better than gold!!!. Luckily my son doesn't like vegetables (although he lives with a vegetarian) so I'll get to have them all to myself. I also got a couple of home grown cucumbers so I'll probably make marinated cucumber & onion salad tomorrow.

    I can easily pass up potatoes in any form but my downfall is crunchy snacks made from corn. Our weather has been all over the place; after two really hot days it is now rainy and cool.

    Wally, The Thai pumpkin coconut shrimp curry sounds delicious. I’ll have to make some.

    Minus, I’m glad that your son’s whirlwind visit allowed you to enjoy his company and get several projects done. Between the leftovers and the fresh veggies you’ll have some good meals this coming week.

    Leftovers tonight. The canned pumpkin really thickens up the "sauce" and adds fiber/nutrition to the meal without much work.

    Maggie, I think I would love corn snacks too…I prefer salty to sweet, not that I would ever say no to ice cream or chocolate.

    Minus, wow on those temps. I marvel how you can work out there. I'm a wussy-girl with summer temps.

    We had dinner at Clancy's last night where we went to see an Elvis performer. Not something we would ordinarily do but neighbor Mary had reserved a table for six and she was desperate for someone to join her and Lyman. Not many people were here for the weekend. I actually enjoyed Elvis's performance. He is a good entertainer and roamed the crowd, posing with women for pictures that are probably on Facebook today.

    I had broasted dark meat chicken for my meal with fresh cut fries and salad bar. DH had a smoked prime rib sandwich with the same sides. He didn't eat the sandwich bread and was not impressed with the beef. I took a bite and it tasted ok to me.

    Tonight we're going to La Pasta in the village of Dorset for his birthday meal. We'll pick up friend Dorothy whose birthday is June 11th. Her husband Carl died unexpectedly last summer and Dorothy is having a lot of trouble adjusting to widowhood. After dinner we will have dessert and an after-dinner drink at her house on Long Lake.

    Wally, I also love chocolate. It’s the one thing I eat against doctor’s orders although I consume much less than I would otherwise.

    Dinner tonight was steak tips bordelaise with spinach on mashed potato in the pub with the garage door windows up for ventilation. The food was excellent and it was nice to eat inside a restaurant.

    Happy Birthday to your DH, Carole.

    Not much going on here. Sharon made the pressure cooker chili again and a chickpea salad. We made spaghetti sauce and had tonight had spaghetti and grilled corn on the cob.

    The peaches and plums are starting to show up in the stores, but both need another week or 10 days before "perfection". :-)

    Eric- corn on the cob from the grill sounds heavenly.
    Maggie - glad you enjoyed the restaurant experience. The food sounded perfect.
    Wally- I’m a salty snacks type of gal too. Roasted nuts are my downfall..
    Made Trader Joe’s Spanikopita and mesclun salad.. lol easy peasy evening. Opened a lovely bottle of wine, a Rose with grapefruit. It was a present, and before my next infusion wanted to taste it. It was quite nice..

    Early dinner tonight was turkey with pecan butternut squash, dressing and mashed potatoes from the hospital cafe, one of their better meals.

    Dinner was a skillet dish with ground beef, canned tomatoes, a can of chickpeas and napa cabbage. A lot of leftovers. Dessert was homemade oatmeal raisin cookies that neighbor Mary delivered and a scoop of double chocolate Moose tracks ice cream that I bought yesterday. Our MN ice cream favorite.

    I'm still eating leftovers from my son's visit. Black Beans today with the remaining two beef "strips". Scandinavian cucumbers marinated in sour cream & tarragon vinegar with onions & dill. Think I'll do fried rice tomorrow with whatever else is left. Then I can move on to the fresh asparagus & tomatoes.

    Minus, The marinated cucumbers sound really good. It’s a bit different from my usual cucumbers in yogurt, garlic and dill.

    Dinner tonight was takeout chicken satay and seaweed salad from the good Thai restaurant.

    Last night was baked cod and asparagus. Tonight will be whatever needs to be cooked or eaten before leaving to Houston for a routine Brain MRI. Saturday we’ll be grilling with friends and Sunday we’re heading to Galveston for seafood.

    I just had 50-60 cattle wander through the yard, followed by the neighbors on horseback. They were moving the cattle to another section of land and "this way" is a much easier route.

    This entire area is open range so if I don't want the cattle wandering about, I need to fence them out. However, I won't be putting up any fences (except around the garden). The cattle come through once a year, taking only 5-10 minutes to go by, they don't bother anything and the neighbors are awesome folks.

    About 1/3 of the cattle were young calves and all were looking good, so things are looking up for the neighbor.

    Frankie has seen this before and didn't get excited. This was Daisy's first time seeing cattle in the yard and she was "not impressed". :-)

    DH's PSA was 3.5…WOOOOOOOOOOHOOOOOOOOOOOOOOOOOO. Normal (for now). We need to see if they want to do something again, before it starts rising or wait till it gets up there and then deal with it. We may splurge on fancy steaks to celebrate, next week. Even his kidney function improved. Wish my labs were as good as his, LOL.

    Wally, Yay for the great PSA numbers! Definitely do something to celebrate.

    Eric, The annual cattle drive seems to mark the beginning of a new season. DH’s competition jumping horse was foaled on a ranch in NE and loved to herd cattle. In Arkansas it was funny to see the big warmblood working alongside quarter horses when cattle in the area escaped.

    Illimae, Safe travels and enjoy the food on the way. Seafood in Galveston sounds delicious.

    Today the phlebotomist put an instant heat pack on my hand when she couldn’t find a vein. It worked like a charm and I didn’t have to wait an hour for an IV nurse. I’m going to bring one to every blood draw.

    Dinner tonight was meatballs in Rao’s on spaghetti.

    Eric, your anecdote about the cattle coming through your property made me think of Lonesome Dove.

    Great news about your dh's bloodwork, Wally. A celebration is definitely required.

    We both enjoyed our simple dinner last night. Steak fajitas with sauteed colored bell pepper and onion. Home-made guacamole and sour cream. White corn tortillas. I didn't think of refried beans in advance but there was plenty to eat without them.

    Thank you again for thinking of my DH and wishing him well.

    We bought enchiladas (carne asada) at a food truck after grocery shopping, so that will be our dinner. Our high is 52 today….I know it won't last.

    Has anyone tried the Rao's 5 cheese frozen pizza yet? Apparently you add other toppings as desired.
