    Ribs, slaw and canned corn. YUM. It hit 82 …first time over 69 since last year. I prefer 30-40s (or lower). Glad it is only a 3 day event. Sigh.

    Great minds… Yesterday I finished another batch of potato salad & made Scandinavian cucumbers & onions w/dill marinated in Sour Cream with a splash of Tarragon Vinegar. Tonight was salmon poached in white wine served with Asparagus sauteed with garlic. And the last piece of Special K's chocolate cake. Although I did freeze 1/2 the cake this time and will be interested to see the results next week.

    We'll probably have homemade meatloaf tonight and skip Clancy's. I think I have enough ground beef and pork in the freezer. I hope I can find the same recipe I used a couple of weeks ago. Sides will probably be Bob's mashed potatoes and fresh corn off the cob.

    Trucks of corn are parked everywhere. We bought half a dozen at a little stand that operates on the honor system. You put your money in a box. It was $6 a dozen.

    I miss the corn in WI. I hope those in WI aren't too affected by all the flooding. I checked where we used to live and ..yow. We hit 86 yesterday….Should get better…

    The crockpot ribs, then bbq glazed and broiled for 3 minutes, turned out perfectly. I may never do ribs another way. Leftovers tonight.

    70 mils is a LONG way for the actual flames to reach us. One of the reasons we picked this area is because its very low wildfire danger. When the places farther south have to be evacuated, they head this way. Also, I've thinned the vegetation starting about 200 feet from the house to deny (much) fuel to a wildfire. It makes the place look a bit stark, but it's better than coming home to an ash covered cement slab.

    I just got a text from Sharon. "Her train" is crossing through Raton Pass. This is just south of the Colorado-New Mexico state line fairly close to the I-25 highway. From her texts, she is having a great time.

    Homemade cheeseburgers tonight and probably bean and cheese burritos tomorrow. I’ll likely want/need salad after that. No idea for the rest of this week but I’m looking at a couple of new recipes to try soon (white pizza and seafood lasagna).

    Oh Carole - you are so lucky with all the corn available. I've been waiting for Olathe Corn from Colorado, but looks like it won't be in the Kroger stores in Houston again this year.

    Eric, Good thing that you cleared the area around your house. There was a news item the other day about local municipalities in Spain setting out herds of goats to eat the underbrush so fires could be more easily contained. It’s great that Sharon is enjoying her train trip.

    Wally, I’ll have to try your crockpot/broiler method for ribs.

    Carole, The local corn here hasn’t been very good, probably because of the weather.

    Illimae, Seafood lasagna sounds really good. Let us know how it turns out if you make it.

    Wally, I'm up in the northwest corner of WI, not far from Lake Superior, no flooding here, just air quality alerts due to the wildfire smoke coming down from Canada.

    No clue yet what i'm going to do for dinner.

    I located the meatloaf recipe I used a few weeks ago. Again the meatloaf was good. I was careful not to overcook it. Sides were mashed potatoes and corn off the cob. The corn was very good. This recipe will make its way into my notebook of recipes at home.

    Hi all - dinners here have not been happening with frequency - DH has a new volunteer job at the USO at the airport. He has been working the 4-8pm shift and then it takes him almost an hour to tram back to the parking garage and drive home. Also, football has started so he is also back to doing attack flags at the Tampa Bay Buccaneers stadium. I will join when it cools off - there are games we will miss in September when we go to CO, but I will be happy to man flags in OCT/NOV/DEC, when I am less likely to melt. I have been snacking on whatever when he is gone, but nothing worth writing home about!

    illimae - seems like a meatloaf theme lately and the photo you posted looked particularly yummy!

    The corn convo makes me want corn. unfortunately, it is not low FODMAP. I need to give this way of eating a solid try, so no corn for me in the foreseeable future. The posts about dried beef and SOS made me laugh. I didn't eat it growing up, but DH did. I have a simple recipe for using the dried beef - finely chop the beef in the food processor, add a block of softened cream cheese and several green onions. Procss until well combined. Roll in a ball and roll in chopped nuts of choice. Yummy = you get salty, creamy, and crunchy.

    eric - did Sharon make it home OK? Glad you're not in fire danger.

    maggie - sorry to hear about your water heater, but 15 years is a solid run! We are on the third one in 20 years here. The water heater is in the garage so I also think the heat exposure might compromise them sooner. Same with AC units… speaking of which, we had an electrical inspection yesterday (we have an inspection plan with our local AC/Plumbing/Electrical company) and they noted the surge protectors on our AC units are ones that had a product danger notification, just short of a recall, for combustion. Eeks! How fun about the international bagel selections! There are some places here that import water from NY to make their bagels - likely because there are so many transplants here from NY.

    carole - I too was sorry to read about Illinois Lady, I too was familiar with her posts. /she will be remembered and missed. Your BLT description is making me hungry for one. DH is anti-tomato so he has avocado in place of the tomato, and I sometimes add avocado to mine to make a BLAT.

    auntie - glad the shower is done and someone that is not you cleaned up the dust! DH's parents lived in the low country of SC for 30 years, Frogmore stew was a frequent thing!

    wally - yay for DH's PSA! So glad for both of you that you can relax for a minute about that! Your Napa cabbage is beautiful! I often make a salad from it with chicken on top, almonds, scallions, and a sweet and sour dressing.

    intolight - yay for your DH and the Chinese food!

    Funny train story - when we moved to Florida DD was going into her senior year of high school. Too young to drive from Virginia to Florida by herself. There was a train that went from Lorton, VA (right outside DC) to Sanford (right outside Orlando) and you could put your vehicle on the train and then ride in the passenger car. I got an extra ticket for one of her close friends so she had company because I had to stay in VA until DS was done with his job and was ready to drive down to start at Florida State. We broke the rules and packed DD's ball python in his tank in her car, kind of buried under her blankets and pillows and suitcases, etc. I just prayed the whole time he didn't escape. Worked out fine, but I was nervous for about 15 hours. We traveld by train a lot in Germany and Italy, on separate trips. German trains run like clockwork. Italian trains, not so much. Interesting experiences, but I prefer trains to driving ourselves in foreign countries.

    Special, I like the idea of putting a car on the train. I’ve done car ferries before but never a car train.

    We’re still without hot water. The one gas certified guy from our plumbing company is coming on Thursday. When I was teaching, the plumbing certification courses were held in my classroom and plumbers would hang out there until class began at 6:00 pm since it was one of only two locations in the state. I sure miss that and the showers in the girls’ locker room.

    Dinner tonight was creamy lemon chicken with dill, sautéed zucchini and mashed potatoes.

    Because of high winds the trains (both freight and Amtrak) had to slow way down, and stop for awhile, until the winds cleared. That put them behind about 4 hours, so Sharon didn't arrive until around 11pm. We got home around 1:30am and, of course, the dogs were needing to go out at 5:30am.

    I looked to see if bagels can be made with sourdough and I found several "recipes". I'll have to try it.

    Our little town's "fever" broke…we hit 88 and by 8pm, dropped into the low 70s….this morning…50s…aaahhh, what a difference.

    DH is going to see a PA for his bad right knee this morning. I suspect walking in the sand at the beach didn't help anything already brewing with it. We'll see how soon we can start fishing again.

    Making refried bean nachos tonight.

    Well I somehow convinced my husband to let me order HelloFresh while on treatment to make it easier for him. 😂 Jokes on me because I ended up cooking them all so far! They have been tasty and I have enjoyed cooking them. Portions are too small for him and just right for me. May switch to Factor meals in a couple weeks so it will just be a reheat since they are precooked. Anyone else have good premade experiences with these companies?? I’m open to trying some. Although the meatloaf recipe above totally snaked me in so I will be making that this weekend!!!

    My DD just tried Hello Fresh for the first time last night for her and my DGD. I tasted it and it did taste fine. She ordered a couple of ready-made too and I will taste those before deciding for my DH and I. There are the four of us here, and we decided she will cook for her and my DGD on nights she doesn't have to work to give me a sort of break, but of course I still have to cook for us on those nights. Let me know how Factor works as the whole reason for me to order them is so I don't have to prepare them since I am the cook around here.

    Today was a day that a million little things went wrong. Nothing major just exhausting annoyances. So, easy dinner tonight - brats , corn on the cob and a sweet juicy cantaloupe.

    Carole - I make my meatloaf just like your recipe except NO ketsup (or substitute) . And my favorite thing for meatloaf is still sandwiches with the leftovers - when I do spread ketsup & mayo on the bread.

    I've been fightingor 10 days with a rash & swelling that may or may not be eczema - mostly on my face & neck. 4 different docs so far. Itches & burns & even eyes are swollen. On my 2nd round of steroids. YUCK. One doc ordered a cream for my face that cost $2000.00 - needless to say I didn't pick that one up.

    Dinner was leftover Scandinavian cucumbers in sour cream with dill and a couple of mini Hatch Chili Scones. Luckily I got to Central Market after yesterday's doc since they're in the middle of the Hatch Chili festival. Fresh roasted chili & so many other yummy things. Texas peaches are almost over, but I managed to buy a couple. No corn from Colorado or the mid-west so settled for two ears from Mexico. I'll report, but not won't be the same.

    $2,000 for medicated face cream?! Does it take 20 years off too? That’s nuts. I’m sorry you’re dealing with that, it’s sounds miserable.

    Tonight was a really great salad with the usual plus cabbage, grilled chicken, cheddar and buttermilk ranch.

    Tomorrow will be a fridge cleaning dinner or possibly soup, something easy.

    Minus, I hope the second round of steroids does the trick. It’s so annoying when you can’t get a diagnosis so treatment is trying things to see if something works. My mantra is the punchline from a little story my pulmo told me, “Math is magic, medicine is not.”

    Dinner tonight was chicken herb tortellini and mushrooms in Alfredo sauce with cucumbers marinated in dill yoghurt.

    minus - are they sure this is not shingles? I feel for you, I am a rash girl. You are also sensitive to adhesive, right? We share that I believe. Hope things are better soon.

    I make a sauce/glaze for my meatloaf that I put on in the last 15-20 mins of cooking. It is chili sauce, brown sugar, and dry mustard. The remainder of my recipe is very similar (slightly different measurements of ingredients and some warm spices) to the one above, and I also make it free form on a foil lined jelly roll pan. I wrap the outside in bacon slices - that is the naughty part I have posted about previously. It is a fave in my house.

    Dinner last night was his and hers. DH had a big salad with sliced steak, gorgonzola cheese, pine nuts, scallion, and balsamic dressing. I had rice vermicelli, rosa sauce with a dollop of lactose free sour cream stirred in, topped with sauteed zucchini and yellow squash and parm. Very yummy and fast with pre-made rosa sauce from Trader Joe's. The rice vermicelli is kind of like ramen but you just pour boiling water on it and let sit for 3 mins.

    Dinner tonight will involve chicken, but that is as far as I have gotten in the planning… I got a package of split breasts (bone in, skin on) yesterday for a great price on 4, and will roast them and eat some of that tonight, then take off the bone and use for other things or freeze in portions for later. I like having cooked chicken available in the freezer. I used to do that more when DH was still working because I could make dinner fairly quickly and his schedule was inconsistent - I never knew when he would be getting home. I should get back to that model of prep.

    illimae - your salad sounds delicious - I have salad envy since I can't have lettuce.

    auntie - hope today is better than yesterday!

    I, too, am rash-girl. I wonder if you had touched a noxious weed in the garden or de-veined some hot jalapenos, then inadvertently touched your face. DH did have shingles on his face, close to the eye…and it itched and looked more rash-like than pus-like, but his also hurt A LOT.

    We are going fishing in a bit. A gorgeous 55 at the moment with clouds and fog…the dreamy PNW weather is back for now.

    Dinner is TBD. Hope we can eat fresh salmon :-) update: DH's knee cannot let him stand easily, so drat, fishing cancelled. I'll be making yakisoba with another huge napa cabbage.
