Today's meal was broccoli salad with cheese & bacon bits. Served with a slice of "Rustic Italian Bread" that Costco had on special this week.
Wally - I agree with everyone else about your darn dental issues. UGH I hate dentists. (even though I like mine personally)

Minus, I buy Aldi’s Italian bread and seedtastic bread (a dupe of Dave’s Killer bread) which are both pretty good. I’m sure neither holds a candle to Eric’s sourdough.
Dinner tonight was pizza made from Aldi’s dough. It looked a bit rough since I haven’t mastered the art of stretching dough one handed but it tasted good.

Last night, scrambled eggs, sweet potato and spinach.
We are in the midst of uninstalling our broken dishwasher (finally) and I ordered a new one. Animal control came out because (wait for it…) the idiots next door are starting up the loose dogs again.
DH's dental follow up will have to be in Seattle (still no call) and his new medication for the cancer has been declined, so we are appealing. Can't believe they said it was because it was not FDA approved, which it was, in June.
Maybe a frozen pizza tonight.

I tried a new restaurant in my area - Blue Claw. The parent company is in Toronto & this is the first one in Houston. I had the grand opening special - small Lobster Roll for $18.00 that came with great skinny fries. I actually picked the lobster mix out of the roll and it was good but too much dressing. The regular price will go up $28.00. No lunch menu so lunch for two was $50.00. I guess I'm showing my age with my horror of $50-$60 lunches.

@minustwo I am with you on the prices. It is ridiculous. Yesterday my DH and I went to lunch at a local pub. All we had was hamburgers, onion rings, and cheese bites with iced tea and it was over $50. No wonder the place was about empty. The food was delicious, but at what cost? I don't appreciate $17 hamburgers. We used to go out a lot but not anymore even though groceries are also pricey. I don't know how young parents do it. I know my son rarely goes out with his three young boys.

DH's drug got approved. WOOHOOO. Thankful drug costs are capped at 2K because this is 17K/month. Now I hope it will work.
Removed the door off the dishwasher, undid everything but getting it out is proving to be a challenge. UGH. Always something.
Can't wait for pizza and wine-o'clock.

I hear you about the prices. DH and I had breakfast out yesterday to the tune of 40+ bucks. This was not a fancy restaurant either nor was it a fancy breakfast.
Good news Wally. Hope the pricey drug works.
Tonight is a crockpot dinner of potatoes , cheese and ham. First time making it so we'll see how it goes. I'll fix something green for contrast.

Wally - Agreeing with Nance - I'm glad the drug got dispensed and hope it works. Sorry to hear about your dishwasher saga. My son installed a new one for me a couple of years ago. But honestly I never use it. One person usually eating only one meal a day doesn't seem to produce enough dishes to justify it in my mind.

Eating out including takeout has become very expensive. I bring food with me, buy something premade at a supermarket or take out from the hospital cafe where prices are lower to benefit employees.

Nance, Potatoes, cheese and ham sounds like a combo that should always taste good. I hope your recipe isn’t the exception.

I just caught up on reading about several days of meals that all sound delicious. The taco casserole has the same ingredients as nachos, my Tex Mex favorite.
On Monday night at Clancy's I had the dark meat broasted chicken meal and enjoyed it. The sides are coleslaw and fries, and the coleslaw is good. Tuesday and Wednesday nights on the journey home, we stayed at Drury Inns, which have the Kickback buffet from 5:30 to 7:00 and also three free alcoholic drinks. We combine our three into one for a vodka martini for me and a gin martini for dh.
The buffet on Tuesday night featured taco makings and the buffet on Wednesday night featured pulled pork. We didn't go away hungry or dissatisfied.
Last night at home, we had a Subway tuna sandwich with lots of veggies.
I have thawed ground beef and bulk Italian sausage that traveled with us. I'll have to make something with it for dinner.
DH is in the kitchen making one of his elaborate breakfasts. He went to Piggly Wiggly yesterday afternoon and stocked up on his breakfast groceries. It always takes me some time to transition from LA to MN and MN to LA, but dh hits the ground in stride.
Wally, others have already expressed dismay about your dh's dental issues. I feel the same. And great news that the new med was approved. Those neighbors of yours are the worst. I'd like to say something political about their politics but am holding my tongue.
We always buy an appliance from a store that includes installation and taking away the old appliance.
Now to the chores of the day. Reversing what happened four months ago when we departed. Hauling things inside and putting them away.

Carole, sadly, their politics are "sane," it is just that their brains aren't, LOL. Mean-spirited, bullies, and ego-maniacs. I'll leave it at that.
We did order from Costco (which typically includes haulaway and installation) but we live in a godforesaken wasteland and they won't install.
Your meals sound delicious and I'm glad to see you are home and safe and adjusting. Thank you all for the well wishes for DH.
We will have leftover frozen pizza tonight.
I'm trying to wrap my brain around Maggie's (and now Nance's) meals…DH and I are rarely fans of fruit in our main course (even duck l'orange is a no-no); I have made sweet/sour chinese meals using pineapple so it seems I need to expand my thinking.

Our neighbors are 1/2 mile, and farther, distant so it's difficult for anyone to be bothersome.
I made aebleskiver and cooked duck eggs. I'm not sure if that's an "elaborate breakfast" or not. :-)
We're getting our camper "ready". I ordered new batteries for the camper and they are supposed to arrive tomorrow. The camper battery charger is capable of charging lithium iron phosphate or lead-acid batteries by moving a switch; I went ahead and got the lithium ones. They are half the weight with twice the capacity for a camper, every bit of "weight loss" is a good thing.
We were far from home earlier this week when we got hungry, so we ate at a fast food restaurant. It was $32 for two hamburgers, two small packets of fried cheese balls and two medium sodas.

Carole, I’m glad you had an uneventful trip home. I miss Drury Inns (none near current travel locations) since they provide breakfast, an evening appetizer buffet and have microwaves in the room. Homewood Suites used to do the same until commercial firms started housing their working away from home employees there to avoid paying for dinner. I’m with you on unpacking before grocery shopping.
Wally, Botanically many things we call vegetables are fruits (tomatoes, cucumbers, squash, peppers, peas, avocados, green beans, olives) so I guess it just depends on individual taste. Many dinner recipes with sweet fruits have vinegar in them.
Eric, Do you have an aebleskiver pan? I suppose your breakfast is no more elaborate than waffles if you have a waffle iron (I have neither lol.)

Maggie, I was thinking of the cranberries and pineapple…but agree, tomatoes are common for savory meals.
Went to pick up rx for Dh and was told the drug is too new and they won't fill it. Now trying to find a specialty pharmacy (working with hospital)…oy…2 pharmacies didn't even realize this was FDA approved in June.

Yes. I have an aebleskiver pan, a plett pan and a cast iron waffle maker. They were given to me by an elderly gentleman getting ready to move into an assisted living facility. He was disappointed that none of his kids wanted "the old fashioned cast iron" and relived that I would take it so it wouldn't end up in the trash.

I sauteed the ground beef and bulk Italian sausage and added a jar of Raos to half of the cooked mixture. Froze the rest of the cooked meat for a future meal. Cooked a lb. of linguine and added part of it to the sauce. Grated romano. Ta da. Dinner.
The Raos had stayed home instead of making the trip to MN. I was happy to see it.
Wally, I don't cook dinner main dishes with pineapple or cranberries, either. Yesterday I had cottage cheese with canned cranberry sauce with berries for lunch.
Eric, the elderly gentleman couldn't have found a better person to adopt his old-fashioned cast iron. I am not familiar with the first two pans. We have a small electric waffle maker stowed in a cabinet.
Grocery shopping is on my To Do list today. Dinner will be chicken. Maybe oven barbecued. I definitely need to stock up on some fresh vegetables and salad makings.

Eric, I'm jealous of your plett pan. Those pancakes are like crepes but easier to flip. It's also good for making fried eggs in a neat standard size. That gentleman must have had a connection to Scandinavia. I'm glad you gave his pans a good home.
Carole, I've had cottage cheese with many things but not cranberry sauce. I'll have to try it.
Wally, The specialty pharmacy will probably deliver.

Yes, I hope they will deliver since we have no specialty pharmacy in our little area.
I ended up using a can of Amy's Indian lentil dal soup and fleshed it out with roasted cauliflower, cherry tomatoes and some spinach. Turned out better than I thought it would.
I'm thawing boneless, skinless chix thighs for tomorrow but no idea what I'll make yet.
I think the problem with this dishwasher is that whoever built this house had it installed before they put in the flooring. We may have to rip out a part of the flooring to get it out. Always something.

Dinner tonight was kabobs (beef) and some really delicious Olathe corn on the cob.
Tomorrow is DH's birthday and the kids are bringing fried chicken for lunch. They're bringing Mac and cheese too and I'm making coleslaw and a fruit salad. After such a big lunch dinner will be minimal. We'll go out for a birthday dinner Monday to a favorite Italian restaurant.

Lucky Nance's dh! Fried chicken for lunch and a later dinner at one of those great St. Louis Italian restaurants. I'm envious. The salads sound good, too.
My chicken thighs I meant to cook for dinner last night went into the freezer. DH cooked up a big pot of corn soup with corn that traveled with us. I took the easy path and we had bowls of soup for dinner.
I bought catfish fillets yesterday and I will cook them for dinner tonight. Haven't decided on the method. Or the side.
Prices in the supermarket are noticeably higher here. And the vegetable selection at Winn Dixie was pathetic yesterday. The broccoli wasn't even green.

The first two are the top and bottom of the aebleskiver pan. This one will not work on an electric stove as the heating is uneven. The man explained how to use this as I was "??????".
"Get it hot so a drop of water will sizzle in the pan. Brush a little bit of butter into each hole. Fill a hole about half full of batter, add a couple of apple chips, then fill the hole even to the top with batter. Do each one in order. Then go back and use something to push on the edge of the batter so it rotates all the way over to get the other side cooked. Turn each one right after the other. Then wait about a minute, and remove them in the order the holes were filled."
I use a fork; the handle to turn the balls and the tines to remove the ball.
The next two are the old waffle iron. It, too, will not work on an electric stove. The paddles can be rotated in the base so that both sides of the waffle can be evenly cooked.
The last picture is the plett pan, it is flat bottomed, so it works on an electric stove.
All are so well seasoned that nothing sticks. Even waffles, which have a "million" opportunities to stick, just fall out of the paddles.
Oh, and everything is about 10 inches/25cm in diameter.

I checked out a cookbook for wok cooking (kenji lopez-alt) and made a chicken stir fry. YUM.
New dishwasher arrives tomorrow. Ugh. hopefully, DH's meds will be enroute.

Maggie, since I uninstalled this dishwasher, I can install our new one. My problem is getting the old one out…and as I said, I suspect the floor near the area has to be sawed out because the previous owners put flooring in AFTER the dishwasher was installed. They clearly did not think it through and stay long enough to realize the issue. Sigh.

I had to replace the dishwasher in our previous house and there was tile installed after the dishwasher was installed. I was able to retract the leveling legs up into the dishwasher body…this provided just enough extra clearance to be able to slide out the dishwasher.
