    Minus, I’m glad the spring rolls were good. With 50 in a box I wouldn’t have been brave enough to buy them untested.

    Carole: They are Bibigo brand frozen spring rolls. Option for Air Fryer or Oven, but I don't have an air fryer. So oven at 425 degrees for 11-13 minutes from frozen.

    I'm dreading mailing Christmas packages later this week.

    Unstuffed pork cabbage "stew"-like meal.

    Call from onco dept….dh will see onco tomorrow and not PA; I guess they get the urgency (after my rant when they tried to push us to Saturday).

    Maggie, could you give some recipe info about your artichoke chicken casserole? It sounds like a dish I would like.

    We had the leftover pork piccata with a side of carrots that were lightly "candied." Simmered until tender, drained and flavored with butter and brown sugar. Dh commented that this pork piccata was the best I'd ever made. I didn't point out that he said that the last time I cooked it. LOL.

    I haven't made piccata in a long time. I need to pick up some tenderloins at Costco next week.

    we have a giant box of those spring rolls too. We like them a lot. I use the air fryer function on my oven to fix them.

    Terribly windy today. I have to bring in my Christmas reindeer doormat for fear of it flying away. Oh the irony lol.

    Artichoke Chicken Casserole (4 servings) I cut the recipe in half.

    1 cup mayo, 1 cup grated parm, 1 tsp (or to taste) garlic powder, 4 4oz skinless boneless chicken breast halves, 14 oz can drained artichoke hearts, 8 0z sliced cremini (or other) mushrooms

    1. Preheat oven to 350 F. Mix mayo, garlic powder and cheese in a bowl.
    2. Arrange chicken breasts in a 9x13 baking dish with cover (or whatever size works.) Top with artichoke hearts and mushrooms. Spread mayo mix over artichoke mushroom layer.
    3. Cover and bake 35 - 45 min until cooked (165 F.)

    Carole, Sometimes it's a positive when your DH doesn't remember so a recipe can be the best ever multiple times.

    Nance, At least an expensive chuck roast provides more than one meal. I wonder if the reindeer mat would shout "Merry Christmas to all and to all a good night" if it blew away.

    We have 4 inches of wintry mix to be shoveled tomorrow morning.

    Dinner didn't happen tonight. I'm mildly hungry but too tired to eat.

    But I did get all the presents wrapped & packaged that have to be sent out of town & out of state - four substantial boxes. I'm hoping I can still get away with FedEx ground, except for the one to Panama. That leaves everything to wrap that's local, including nephew's family, ex-DH and wife, the mailman, garbage man, paper carrier, police dept, etc. At least it's spread all over the living room floor and no longer on my son's bed - since he'll be here for the weekend on Friday. I won't have time to deliver before he comes but hope to get everything at least wrapped & tagged & stacked in a corner.

    Nance, how do you make a pot roast into Italian beef? I always ordered the Italian beef sandwich at Portillo's when we visited relatives in Chicago area.

    Maggie, thanks so much for the recipe. I will definitely use it but substitute boneless chicken thighs. I would never have guessed the mayo ingredient. I googled chicken/artichoke recipes yesterday and came up with nothing appealing.

    Minus, I am amazed at your gift giving. Do you accumulate gifts all year long? I plan to buy a ChuckECheese gift certificate for my nephew's two young children, who are both autistic. And I have intentions of buying a book for each of them and for the one-year-old child of my great niece. That's the Christmas list. Both the nephew and great niece are low income. I help them out by buying a supply of diapers each month.

    Tonight is the woodworkers guild Christmas dinner at an event place.

    Carole I use a package of Louie's seasoning in the crock pot adding peppers and onions at the end. It's pretty delicious. Shred the beef and served on French bread or hoagie buns. Messy.

    Tonight is a new dish called by the appetizing name of "Swamp Cabbage ". It's a stovetop mix of smoked sausage, onions, celery, peppers, tomatoes and cabbage. I have all the ingredients so we'll give it a try.

    Finishing up the unstuffed cabbage dish tonight. Nance, your swamp cabbage made me laugh. I have made the shredded Italian beef (I use a copycat of the Good Season's spice for dressing) and even DH, who is not a big pepper fan, loves this.

    DH loves mayo but not artichokes; I'll see if I can tweak that recipe…I love all the ingredients.

    Love reading all these inspirations.

    I admire all of you who do the gift-giving. I was raised atheist and never grew up with the holiday obligations. When I started dating, I joined in. I'm not sure how I feel about all of it at this stage of life.

    DH will be taken off this med and put on a PARP inhibitor (this is "only" 13K/month, LOL) and we'll see. Chemo may be his last and only option. I pointed out his other mutation for a possibility of immunotherapy but I think the doc thinks his body can't handle the med with age/state-of-body….crossing fingers for the inhibitor to do something. His calcium wasn't worrisome to the doc, yet, so labs every 2 weeks and revisit doc on NYE. If calcium goes up, he wants to do a bisphosphonate….I'm doing research and suggesting a parathyroid drug instead. He cannot afford to lose more jaw. I hate all of this. I'm getting huge bags under my eyes from crying. 😭

    I have slowed my gift giving to miniscule amounts focusing on the grandchildren and a small gift here and there. It is too much stress for me with everything else I go through daily. I think everyone understands. If they don't, it's on them.

    The swamp cabbage sounds good. I'm looking up Louie's seasoning. I've never seen or heard of it. DH would eat the peppers and onions in the Italian beef and go light on the beef. LOl. We had steak fajitas last night with thin ribeye I bought for making fajitas. I sliced a large onion and a whole red bell pepper. DH nearly cleaned up the onion and pepper and ate a few slices of the steak. We also had refried beans and a delicious guacamole that dh made with some perfectly ripe avocados. Sour cream and grated cheddar for condiments. I ate none of the onion, one strip of the bell pepper, and mostly beans, steak and guacamole. The corn tortillas were home-made.

    maggie - I would do almost anything - maybe even hide a body - for my BFF, lol! We have been such since 1981, which is a long time ago! She has no family locally and also coordinates care for her 91 year old mom in a private medical assisted living situation. She has a lot on her plate. We managed to mix humor and accomplishment of useful tasks along with helping her with her own immediate medical needs. It was indeed difficult to plan my trip to CA waiting for news from the DS oncology appt, but thankfully we got the positive staging news before I got on the plane and I was much more relaxed. I too am going to try your artichoke chicken recipe!

    carole - how do you make your pork piccata? I have several chicken based versions, but I am often at a loss for what to do with pork. I do have a pork medallion (tenderloin cut into slices and pounded a bit flatter) recipe that has a good pan sauce with tarragon vinegar and Dijon and sour cream.

    I have made a mash-up of Italian beef and French Dip sandwiches - especially good for the slow cooker if you have to be gone all day. I have also used the Mississippi Pot Roast recipe for sandwiches on rolls. A friend and I volunteered for Mercy Chefs after the hurricanes last year and that is what I had cooking in the crock pot for when we got home! There is also a good Valerie Bertinelli Italian Beef sandwich recipe online with an intriguing aioli sauce for spreading on the bread. I've done the beef part but not the sauce part - I ended up doing a creamy horseradish one instead, but I would like to try hers.

    auntie - hope the wind has calmed down so your festive doormat can return! I am curious about the Swamp Cabbage - please report back. I have a recipe with kielbasa and cabbage that I have not made for a while since the GI issues happened - cabbage is not my friend… but I love it. I have my follow up with the GI doc next week and plan to ask if I can reinstate some of the foods I have been avoiding. I have a sneaking suspicion that he will say I should try them in isolation and see what happens.

    While I was in CA with BFF she gave me several gifts for my birthday that was just before I arrived. I hate to check a bag so I use a smaller rolling carryon that is packed to the gills. She gave me some Ugg boots so I needed to mail them home. I discovered that Fedex now has a version of "if it fits, it ships" which was less expensive than if I had shipped the same items in my own box. You can get the complimentary boxes at the Fedex place. I need to send to Vermont, California, and Colorado and plan to try to cram stuff into those kind of boxes. I may have to do the Ground Advantage at USPS for the Colorado stuff because there is more of it.

    wally - sorry about the duck, yikes! Hoping for some good news for your DH, makes me sad that you're stressed, but I totally get it. Joining in for the virtual hugs!

    minus - you and I are in a similar boat, but you're ahead on the wrapping. I have piles of unwrapped stuff still but am done with shopping after today. We joke every year that we only have a pool table (came with the house when we bought it) so we can use it for gift wrapping at the holidays, haha! It is actually perfect for it!

    Dinner last night was grilled ribeyes, pilaf with pine nuts, oven roasted carrots with hot honey and some broccoli, with champagne and shrimp cocktail beforehand with DD and beau to celebrate our 42nd anniversary! DH and I went to the restaurant at the little airport in St. Pete and sat on the patio for lunch watching the planes land and take off - good food and fun! After lunch we walked over to the Dali museum across the street and toured it and saw the Van Gogh immersive experience when we were done inside the museum. Sat in traffic for way too long on the way home, but that was the only negative to the day!

    Wally and Special- so sorry for all that you are going through , sending extra hugs and light your way.

    I’m finally recovered from my radiation fatigue, so nice to have energy again.. I do miss my CSA though. I got spoiled with the home delivery of farm fresh goodies. But DH does the food shopping and I loving being in the kitchen again, and looking up new dishes. I ordered Nora Cooks ( vegan blogger I like) self published a cookbook. I love cook books, which we’ve shared about before. I just living holding them reading the recipes as if it’s a mystery novel lol. Tried her Red Lentil Daal which she makes with coconut milk, a little too rich I think, but red lentils with garlic, onions, turmeric is a winning combo. I served it with peas and also roasted cauliflower, seasoned with onion salt and paprika and olive oil, for 35 min till it was crispy .. yum!

    i also discovered a vegan sausage , plant based not tofu, which is great, highly recommended. My DH who loves pork couldn’t tell the difference.

    Carole - I to try to buy gifts throughout the year, but actually have cut back to only the young kids. I'm a sucker for wrapped presents under the tree and these kiddos are all under 10. And yes, the gifts are often books. My only son has no children so these are the children of nephews and nieces. Their families receive one 'food' gift for everyone - like Harry & David pears or Sunnyland Farms gourmet nuts - since all but one live out of town & I'm unlikely to see them for any holidays. But I do like to give a little something to the mail carrier, the trash collector, our local police officer, the girl who has been cutting my hair for 30 years, etc. My close friends and I celebrate by going somewhere delicious to eat and have dispensed with gifts.

    Special - I wouldn't be ahead except everything was sitting in piles on my son's bed and he's coming to town tomorrow for the weekend. Be prepared to be shocked. I sent 3 boxes FedEx GROUND today - not much larger than shoe boxes - and all were over $25.00. Even the one going from Houston to San Antonio!!! FedEx also told that the prices go up every day the closer it gets to Christmas. Maybe I'll brave the post office again next year. And happy anniversary. I love eating at small airports, sitting outside & watching the planes.

    Wally - OMG - $13K a month? Hope things get better. Holding you in my thoughts.

    Rischaller - thanks for the sausage recommend. My DIL is vegetarian and my nephew vegan.

    Carole, Nice books are a great gift for kids. Every Christmas our neighbor who was the buyer at the art museum gift shop gave each of us a children’s book from there. My kids loved them and they’ll be passed on to my grandson. He’s the only one who’ll get presents and they won’t be wrapped. Enjoy the woodworkers guild dinner.

    Intolight, I currently don’t decorate at all for Christmas but my living room is green/red and we have close to 100 CDs of classical Christmas music and carols to listen to.

    Rhonda, I'm glad your grades are in and the rads fatigue is lifting so you can enjoy the holiday season. My DH's aunt used to read cookbooks in bed. Sometimes she would get up in the middle of the night and bake something that sounded too good to wait to try.

    The Swamp Cabbage turned out to be a hit. I halved the recipe and we consumed the whole thing. Will definitely make again.

    I went Christmas dinner brisket shopping today trudging through two large grocery stores looking for the best price. Walmart won the price contest but didn't have the size I wanted. Although I really wanted a whole brisket i ended up with two trimmed flats which will save me some effo rt. I've trimmed one myself many times but it's time consuming and my back is uncooperative so I'll call it a win.

    After wandering among the Christmas shoppers I'm tired so tonight is carryout pizza.
