Dinner tonight was balsamic braised top round steak with acorn squash and mashed potatoes.

I have company arriving tonight, my younger brother and his wife, who live in Oklahoma. I have 3 lbs of large shrimp to peel and devein for a scampi dish with linguine for dinner. The side will be a Caesar-type salad with romaine.

Had a lovely anniversary dinner after chemo on Wednesday. It was almond crusted mahi mahi (crab cake appetizer) and it was delicious. DH had prime rib and shrimp. Taste bud issues are becoming nearly intolerable as I approach year 4 on Enhertu, so if March scans are stable or better, I’ll be looking at a break, then a dose reduction.
DH is currently making tamales, hopefully I can enjoy them. I’m around and thinking of you all, just not in a food mood as often.0 -
@intolight The high dose it tough, and most get a reduction but the trade off is how well it works. We’ve been at this a long time, ups and downs…
I forgot to post a pic of my great dinner. It was a special at Landry’s, definitely recommend.

I hope the tests, MRI, CT, etc. have good results, and also that everyone had a great day yesterday.
The no gluten changes for DD weren't too bad.
The only "non gluten free" was the stuffing. I didn't have time to make any "special bread" for the stuffing.
The local supermarket sells King Arthur gluten free flour and I used that.
The zimt kuchen was "couldn't tell the difference".
The apple pie crust was quite good, although it was very fragile. The bottom crust was fine…the top crust…well, I should have called it a cobbler. :-)
The rolls were okay. Since they didn't puff up at all, I was expecting little golf balls, but they were surprisingly light. The rolls looked done at 25 minutes, but I think 20 minutes would have been better.
The rest of the meal did not require any changes…mashed potatoes, fruit salad, squash, gravy (using corn starch), cranberries, turkey, duck (see below).
We had a neighbor over for dinner last night who otherwise would have had a "just me" Christmas dinner. She brought over the roast duck she was going to eat. I will have to find some duck to roast!
The turkey carcass is simmering in water in preparation for putting up more broth/stock (it has meat on the bones, so I guess it's both).
Tomorrow we'll be leaving home around 5:30am to get DD to the airport. I'm just starting to get back to normal from the cold, so, hopefully, the 8 hour round trip won't be "uggh". :-)

Carole, Prepping shrimp is lots of work but the meal is worth it.

Eric, I’m glad your dinner worked out well with the changes. I see lots of turkey soup in your future. I’ll bet it’s just as good as chicken soup for a cold. Have a safe drive to the airport.
Dinner tonight was pizza made from Aldi’s dough, Italian sausage and whatever veggies were in the fridge.

Last night was pork chops, rice and a veggie. Tonight is who knows at this point. Watching the weather as it looks like we are bracing for more snow coming.

Mae and Mommyof3, so good to have you post. Mae, I hope you can get a break and regain taste. Happy Anniversary. Mommyof3, I read on another forum that you enjoyed Christmas day at an aunt's house. It seems your move is working for you.
Eric, good that the adaptations were successful without sacrificing flavor. Also good that you're over the cold. I saw duck breasts at one of my supermarkets a few days ago. I may have to take the plunge and try cooking duck. Wally will have to share some tips.
DH is cooking red beans with smoked sausage today for a dinner tomorrow with three of my siblings and spouses, so 8 of us altogether. Two siblings aren't coming. I'll cook rice and make a potato salad tomorrow and heat up garlic bread. One brother is bringing a shrimp mold and a tray of boiled shrimp for appetizers. The shrimp mold is my recipe. It's a family favorite.
Dinner for tonight will be "whatever." Our houseguests will be off for the day with her family and there will undoubtedly be a lot of food. I have sandwich makings and leftovers in the refrigerator.

Oh my Carole, three pounds is a lot of shrimp to clean but how special to be able to get that much fresh locally. Envy here.

Mae - happy anniversary. I understand about changing taste buds, mine too have changed over treatment cycles. Such is the eating life, another adaptation ❤️ hugs for scans and treatment updates.
Wally - yeah DH was hungry and wanted to eat, small joys .
mommy - I love cooking enough for three days lol.. i gre up on stuffed cabbage, and a good lasagna sounds heavenly. Anyone have lasagna recipes to share ?
Nance - fried fish also sounds heavenly. My favorite cheat when I was teaching in Ireland was to go to the chip shop for fried fish and chips.. couldn’t believe all the choices and how wonderful it was and one meal lasted for a few days.

Tonight experimented with chick peas and sweet potatoes with sautéed kale and onions..seasoned with tamari but nothing to write home about. I think I need to keep keep chick pea recipes to hummos and play with recipes for lentils and black beans ( not at the same time lol) instead.0 -

Rhonda, I didn’t know there was such a thing as bad fish ‘n chips until we ate at an authentic looking chippie in Gibraltar which used some strange tasting Mediterranean fish. All the patrons were in agreement.

With just two people and most recipes "designed" for four people, we tend to alternate meals.
I was pleased with the "no rise needed" gluten free stuff worked out. As for rolls…that would/will require some more experimenting.
The turkey broth has been through the pressure canner and is now sitting on the shelf waiting to be used. Like with the roasting turkey, the dogs were fascinated with what I was doing. :-)
rlschaller If you like experimenting see We get a 5 pound bag of each variety every few months for when we want something different than the standard Pinto or black beans.
MIL is yearning for salmon, but every time we invite here here, "No.", and by design, the rooms have no cooking facilities. She does have an outside balcony and I do have a very small propane powered grill. I'll have to see if the place allows that.
Minus, I laugh when I think that MIL's parents were born in the same years as my mom. I guess I did "rob the cradle". :-)
Dinner tonight will be continuing to eat down the leftovers.

The Christmas turkey carcass made a huge pot of turkey soup. I could have supplied a soup kitchen. Fishing out the bones is always a pain. I had to skim off a lot of fat, too. The last step was adding noodles in the hope of not adding too many and adding not enough. We had bowls of the soup for dinner and have much much much more for lunches.
Winter has returned. It's 35 degrees outside and sunny.
I always feel a sense of relief when the "holiday season" is behind me. Now we have to put up with recaps of the year for a day or two. Enjoy the New Year's Day meal and move on.

Carole I share your sentiments about the holidays. The decorations never make it to new year's in an effort to "move things along " i suppose.
Last night was a taco casserole. Tonight is a mystery but will most likely be a brisket rerun.

I'm joining the ranks of glad "it is over" sentiment. Especially this year. I do leave my xmas night light trees in till Valentine's day, but that is basically our whole decorating, LOL.

DH requested a tuna melt for today, so that is what we'll have. Tomorrow, the duck breasts. Hope I don't eff them up. Always a bit nervous since they are so expensive.
We actually had a dusting of snow on Sunday; didn't last. Still, it made me smile when I woke up. Something good, for a change. And it's been in the 30s/40s.

I didn’t put any decorations up so I had none to take down. I did baby proof some rooms so I returned things to normal.

I was going to make meatloaf last night but neither Costco nor Sam's Club had ground pork. Or at least I didn't spot any. I went to Costco's to get the Rao's eggplant parmesan and didn't find it either. I cruised the freezer cases twice. I did manage to spend approximately $150 on other items. I went to Sam's Club next and noticed that some prices were lower. The Premium Protein was $4 lower and the Rao's marinara was about $2 less for a twin pack. As mentioned before, we use the Sam's pharmacy, and I had two prescriptions to pick up.
Last night's meal was leftover red beans and rice and baked sweet potato. I'll make the meatloaf for tonight and a side of chopped okra and tomato. Maybe leftover sweet potato in some version.
Meanwhile the corned beef brisket I bought recently will be thawing. I'll cook it tomorrow with cabbage, potatoes, carrots, and onions. We'll probably omit the black-eyed peas that are traditional, like the cabbage.
One of my blessings in 2025 was this forum. I hope we continue to share our cooking and our lives in 2026.
