My fatigue today was from staying up too late, getting up too early and a low blood sugar episode that while they don’t happen often, when they do they always wipes me out. I’ll be fine tomorrow.

DH's potato and leek soup was delicious again last night. I asked him about his recipe, thinking that we should save it. Turns out he chopped up ingredients and dumped everything into a pot, including the butter. LOL. Added h & h at the end since we didn't have cream. He didn't use the immersion blender because of the pickled pork. I enjoyed the "chunky" quality.
I'll get out the slow cooker today and cook the pot roast I bought yesterday at Sam's Club. I'll use a packet of Italian seasoning. I also bought a cauliflower and will make cauliflower mash as our side.
I weighed at the gym yesterday and have gained weight during the arctic freeze. Since the damage was already done, I had a slice of pizza for lunch in the cafe at Sam's.

Carole, Leek and potato soup however it is made is an excellent cold weather meal. It's good you found your pot roast. Recently the grocery stores near me haven’t always had them, probably because people aren’t buying them because of the cost. The arctic freeze has not been conducive to outdoor exercise unless you count shoveling.
Dinner tonight was chicken scarpariello and boiled potatoes.

My sister recently had a surprise birthday party at Gloria Ferrer’s winery in Sonoma. She told me they had Swiss cheese/sparkling wine fondue for lunch with cooked shrimp and lightly steamed veggies as well as the more traditional bread for dipping. Coincidentally a recipe for this showed up in my local free shopper newspaper. This really appeals to me but I’d have to simmer the sparkling wine in a frying pan for much longer to boil off the alcohol. It’s a balanced meal that mimics appetizers.
Dinner tonight was beef stewed in pumpkin tomato sauce with oven roasted squash added on penne.

Love reading about all your meals. My meal today was egg salad w/dill on two Hawaiian rolls. That was more than enough. Still not back to eating "real" meals yet, although I know I need more protein.

Eric - surprised at the lack of snow. My brother now has a cabin in Duck Creek Village and instead of 14-18 feet, they've only had 14 inches.

Minus, so sweet…I hope you can eat more soon. I'm so envious of the cold and snow. We just missed 60…hopeful for a few cooler days.
I finally called DH's radiation onco nurse (because they are nicer than the onco dept) and she was wonderful. Will refer us to home-health/hospice and see how we progress. Today was a really bad day.
I made sockeye, broccoli and air fried potatoes. Didn't microwave first; used yukons. DELISH. DH ate some, which made it doubly wonderful.

After grocery shopping, I had a couple of options for dinner last night but ended up serving leftover meatloaf, leftover cauliflower mash, and coleslaw. During the afternoon I got involved with doing our federal tax return and ran out of time and inspiration for a new meal. I found eggplants at Rouses and have mushrooms in the refrigerator for a mushroom stroganoff.
For lunch yesterday I had a small Italian beef sandwich. Not Portillo's but good with the major food components.

carole I’ve been looking for a vegie meatloaf recipe and nothing sounded good, though your cauliflower mash sounds nice..minus building up your strength is slow I know, maybe a protein smoothie might help
Made a stir fry in olive oil with mushrooms, garlic, kale , green beans and peas served over whole wheat penne, and chicken meatballs for DH. I don’t eat a lot of animal protein, but they were really good. Kale turns into crispy chips in olive oil, (after 10 min) so they added a nice crunch to the vegies and pasta with a touch of marinara and Parmesan .

Hi all - have been catching up on the last couple of pages, everyone's meals sound yummy and comforting! We have been eating a lot of pasta for the last couple of weeks, and also some soup/sandwich combos, and chili. Because it is chilly! Not as much so as for many of you, but I am a Floridian with some thin blood and when the "real feel" is 17 degrees we are like, um…what???
Thanks to all for asking about DS - he is doing well. He and DDIL spent a week in Cancun for their anniversary, and Southwest airlines asked them to extend for a few days because of the storms (they live in CO) so they happily obliged! This was their 3rd anniversary celebration/DS birthday and also a respite from what has been a stressful year for both of them. His insurance has covered payment for a UVB light machine to use at home - looks like an upright tanning bed, but it is less expensive for insurance to have your own machine than to keep going to the facility. This is more convenient for him since his schedule is weird due to fire/medic shifts. He is dosing the light as instructed by the doc so at least he is not freestyling it. The original projection for clearing his skin plaques was a year so he is really only a few months into the process. Humorous side note - the thought was to put this large light bed thing in the basement. Their home is more than 100 years old and has teensy rooms. When they finally wrestled it down the stairs they realized the ceiling is not tall enough, so back up the stairs it went. It is now in the first room you walk into from the front door - which on a good day is about 6'x10'. 😐️
minus - glad you're on the mend! DH didn't get hit too hard, but he was in bed for more than a week - super unusual for him, he is usually trying to do too much. He actually had the flu last year too - caught it from me - was not as sick as I was, but sicker than this time.
rlschaller - yay for split pea soup! I love it but nobody else in my family does. They are missing out.

auntie - my house looks naked when I take down all the holiday decor, I have to readjust afterward. Last fall we did some puzzles on our CO trip with DDIL - she is really good and fast at the 1,000 piece ones. Of course, she is in her 30's, so there is that… My job was sorting pieces and DH's job was edges. Lol! I sent her two puzzles for Christmas, one was almost an exact representation of the view of Positano Italy from our hotel that we had on our trip for DH's active duty retirement in 2009. The other was LaJolla because everyone in the family has been there - thought it would be fun. Hope you are feeling better from your up late, up early, low blood sugar event. That is a bad combo lady!

carole - one actually does have to save up to purchase beef at this point, right? I have gone back to buying ground beef in bulk and packaging in freezer paper. I have a warehouse membership but don't shop there often but I am rethinking that approach right now. I had to laugh at your pizza rationale - we have the same thought process!
maggie - so interesting that your ophthalmologist felt previous docs missed your diagnosis due to a demographic observation. Also interesting is that I was asked about parental geographic origin on the genetics intake forms - so they definitely do consider that. I am adopted but have done DNA testing and because I am 99% Western Euro I felt safe saying that this would have been true for my parents as well. We share the same Irish counties!
I had my genetics appointment this morning - very early this morning, so much so that I was undercaffeinated and forgot my cell phone at home… I did learn some things, and we did develop a plan. The carrier status for MUTYH is not an issue for me, but would be one for my children if my husband is also a carrier. Both kids will test next month - I am waiting to tell DD until after her expo event at the end of the month because her hair is currently on fire getting ready for that. She was trialing a horse who managed to impale itself on part of the fence and got a very fat (size of a finger) splinter about 5 inches into his chest last week, so she had an emergency vet visit for that and a big bill. Maggie, I know you know. Squirrels have chewed the wiring in her 4x4 vehicle, fortunately insurance covers but she has a $1K deductble. And the hat trick is new brakes for her big pickup truck. She needs no more stress right now, so I will wait. She can be tested at Moffitt, where I went for this appt (NCI center that fortunately is about 10 miles from me) and if her crappy insurance won't cover testing the Myriad panel is only about $250. If she is positive for PALB2 they will handle her high-risk monitoring for breast, ovarian, pancreatic. Less problematic for DS but he would need accelerated prostate checks, now instead of ag 50, pancreatic, and not sure how they would approach the breast risk - he has less risk than DD for that. I have been referred to the high-risk monitoring folks so they can follow any breast risk even though I have had bi-lat mastectomy, because this mutation raises new primary risk. I am also referred to the oncology GI so they can screen for pancreatic risk. So, now i wait for contact from those two clinics to set up appts.

Minus, I saw a recipe that added nutritional yeast and some grated parmesan to egg salad with dill. I don't know how it would taste but it would add more protein to what you can currently eat. That flu really knocks you about.
Wally, More hugs for you. I've dealt with palliative care for me and hospice for my mom. While both are something everyone wants to avoid they helped with navigating difficult circumstances. I hope that’s the case for you and your DH.
Rhonda, My sister makes a good vegan meatloaf using mushrooms, chickpeas and other things. It has a hoisin sauce and ketchup glaze. I’ll have to ask her for more details.
Carole, I’m disappointed they discontinued the IRS Direct File this year due to lobbying by tax prep firms. When we permanently moved back to the US DH had mixed US/English income, mine was Scottish, and all the tax years began and ended on different dates. An accountant wanted a ridiculous sum to do our taxes so I just told myself I was earning that money for my research work.
Special, It’s great that your DS had a relaxing anniversary trip and that he can do his UVB treatments at home on his schedule. I sympathize with your DD.; vet bills are worse than doctor bills. It’s good that she wasn’t injured. All that genetic testing will help you and your family know what to watch out for. I’ve never had any done but have so many surveillance scans now that I figure they’ll find anything wrong before it gets too bad.
Dinner tonight was moussaka made with ground lamb. There were more pans than usual to wash but it was worth it.

Dinner last night was mushroom stroganoff with egg noodles and a side of sauteed fresh spinach. A good combo.
On the federal tax return, I ended up buying a Turbo Tax download because of one tax complication. We neglected to make a required withdrawal from dh's IRA funds, so have to file a form requesting waiver of the tax penalty. Last year I used a free tax software recommended by the IRS. I used Turbo Tax in previous years, so my email address was attached to that former account. I couldn't remember the old password and went through an ordeal establishing my identity. I ended up taking a photo of the front and back of my driver's license and doing face ID before eventually creating a new password. It's good that Turbo Tax is so protective of old tax information, but I did get exasperated.
Surprisingly, Louisiana has user-friendly income tax filing software online, so I use it. Therefore, I'm in for numerous refusals of Turbo Tax's insistence on filing my state return.
When I made turkey meatloaf some years ago, the recipe called for a lot of ground up mushrooms. I would think vegetarian meatloaf would have mushrooms, plus other vegetables like onion and maybe beans and carrots.
Dinner will probably be eggplant dish similar to lasagna.

carole - I only have one experience with requesting the IRS waive a fee/penalty. The first year of tax prep after DH retired we realized we did not have enough withheld from other sources (pensions) because we had previously relied on withholding from his regular paycheck and it all balanced out. We were penalized essentially for not providing the IRS with withheld monies during the course of the year - i.e., even though we paid that year they didn't like that the payment happened at the tax filing deadline of April 15th. They waived the $700 penalty, no questions.

Carole, NH has no state income tax so that’s one less thing to do. We make up for that and no sales tax with really high property taxes.

The eggplants I bought at Rouses were small with a glossy exterior but they had seeds, I discovered, when I peeled and sliced them. I salted and stacked the slices, hoping to remove any bitterness. Before cooking I rinsed off the salt and dried thoroughly. I used the air fryer, which took a while with so many slices, but it was easy. The ingredients for the layered dish was cooked eggplant slices, Raos, bagged Italian cheeses and fresh-grated parm reg. Cooked in the oven. Turned out delicious. Not bitter at all. DH was complimentary and had a second helping. The side of yellow squash was good, too.

Thank you, ladies. I called home-health/hospice and they were cruel. No idea if we'll get help. Rad-onco phoned and put him back on the steroids….DH doesn't understand why I'm exhausted. Sigh.
NO idea what dinner will be. Maybe frozen burgers.

Wally, Sometimes there is more than one hospice/palliative care provider available for the county where you live. My county has four options, two in VT 30 minutes away. Most states have websites where you can find information or an office you can contact. I hope the steroids help.
Carole, I read a tip that suggested slicing the eggplant, brushing both sides with olive oil and baking 25 min at 350 on metal sheets, then using them in the recipe. I always thought the salting, rinsing and drying was essential but it works pretty well. It doesn’t look quite as nice, however.
It snowed again today and we’re back in the sub zero deep freeze.
Dinner tonight was lamb chops, cauliflower and sautéed baby potatoes. I found some smaller lamb chops and correctly guessed they were from a young lamb; they were good.

I wish we had other options but no. It is a small area and few choices. I fear a lot of people take advantage of hospice because things become "free." I've offered to pay for everything…I just need skilled folks with compassion and blah, blah….I am willing to do 99% of anything required and/or instruction to do it. DH yelled at me when I mentioned I even called…so strangers in my home = desperation to provide exemplary care for him. He deserves it.
Frozen burgers were yummy (yay, costco).
I finally understand what new mothers feel when they say exhausted. Not a fan.

My mother was on hospice for some months when she was in the nursing home the last three years of her life. It was a wonderful experience. The hospice nurse had angel status for her kindness. She would bring nail polish and do my mother's nails. She also evaluated my mother's meds and made some changes that brought so much improvement that my mother "graduated" from hospice care, much to her delight. We have numerous hospice agencies in this area. I realize your situation with your dh is completely different, Wally, but I hope your initial contact isn't indicative of the available care. Hospice is for the caregiver as well as the patient.
Last night's take-out pizza dinner was good. DH is off to the supermarket this morning to buy large lima beans and ham hocks. He said he had a taste for lima beans. I hope he finds the large beans. They're not always in stock. I usually buy the small limas. We buy Camellia brand dry beans. I'm happy to let him cook whatever he wants to cook. I'll cook brown rice and make a potato salad large enough for leftovers.

Today is another sourdough bread bake day.
In 1983, the local hospice was fairly new and I think we were their first experience with people in their early 20s. Still, they learned quickly and we were glad they were there.

Our experience with hospice with my mom was nothing but positive. I’m so sorry your experience was not Wally.
I use TaxSlayer for our taxes (which are uncomplicated) and received a federal refund a week after filing. This is a first for us. We never get a federal refund.
Tonight is food we rarely eat - Buffalo wings, Little Smokies in bbq sauce for DH (cold shrimp for me), jalapeño poppers and potato salad for balance. I’ll add some celery sticks and blue cheese dressing for the wings. No football, just the food. We’ll watch the Olympics instead.

Wally, Sorry your local hospice is being difficult. Maybe you could start with palliative care or a pain relief doc and eventually get transferred over. It might help to have your DH's PCP make the initial contact. Here's hoping you can get your foot in the door.
Carole, I also prefer the baby lima beans but DH likes the big ones which are definitely harder to find. They call the big ones butter beans in Ireland.

The Patriots are my local team so I'll watch and cheer for them. I'm shocked they have made it this far given how bad they were the past two years. They ended up with an easier schedule and had a couple of lucky breaks along the way but I credit the new coaches for getting the most out of what was already there. If I were placing a bet it would be on Seattle, however.

I had leftover burger/repeat of yesterday. DH was not very hungry today. We went to the grocery store and grateful a guard caught him before he slammed his head on the floor and knocked over the display. UGH. He promised he'd stay in the car. If wishes were horses….
Rad-onco phoned on Saturday and will start pushing stuff through tomorrow. I don't know how helpful home health is since they cannot be here 24/7…the delirium DH experienced at 5:30am was a shock.
I was going to nap, but the dog idiot neighbors managed to let their mutts bark for over an hour. RANT. Why can't THEY be as sick as my DH?!!!! sorry, just hate them after over 7 years of this crap.
Off to have some wine and try to unwind before the night takes over with care…….

Wally, hopefully whoever you dealt with was having a bad day or is someone who will be replaced. I'd certainly mention it to DH's oncologist.
