Carole I share your sentiments about the holidays. The decorations never make it to new year's in an effort to "move things along " i suppose.
Last night was a taco casserole. Tonight is a mystery but will most likely be a brisket rerun.

My kids returned home and the freezing rain followed by a deep freeze arrived.
Dinner was meatballs in Rao’s on spaghetti.

With just two people and most recipes "designed" for four people, we tend to alternate meals.
I was pleased with the "no rise needed" gluten free stuff worked out. As for rolls…that would/will require some more experimenting.
The turkey broth has been through the pressure canner and is now sitting on the shelf waiting to be used. Like with the roasting turkey, the dogs were fascinated with what I was doing. :-)
rlschaller If you like experimenting see We get a 5 pound bag of each variety every few months for when we want something different than the standard Pinto or black beans.
MIL is yearning for salmon, but every time we invite here here, "No.", and by design, the rooms have no cooking facilities. She does have an outside balcony and I do have a very small propane powered grill. I'll have to see if the place allows that.
Minus, I laugh when I think that MIL's parents were born in the same years as my mom. I guess I did "rob the cradle". :-)
Dinner tonight will be continuing to eat down the leftovers.

Lamb chops, sweet potato and roasted cauliflower for last night's meal. Leftovers tomorrow.
I'm thawing duck breasts for NYE/Day.

m0mmy, Cooking once for several meals is an efficient use of your time.
Rhonda, I didn’t know there was such a thing as bad fish ‘n chips until we ate at an authentic looking chippie in Gibraltar which used some strange tasting Mediterranean fish. All the patrons were in agreement.
Dinner tonight was shepherd’s pie.

Mae - happy anniversary. I understand about changing taste buds, mine too have changed over treatment cycles. Such is the eating life, another adaptation ❤️ hugs for scans and treatment updates.
Wally - yeah DH was hungry and wanted to eat, small joys .
mommy - I love cooking enough for three days lol.. i gre up on stuffed cabbage, and a good lasagna sounds heavenly. Anyone have lasagna recipes to share ?
Nance - fried fish also sounds heavenly. My favorite cheat when I was teaching in Ireland was to go to the chip shop for fried fish and chips.. couldn’t believe all the choices and how wonderful it was and one meal lasted for a few days.
Maggie - hope you enjoyed your thanksgiving redux and with company sounds awesome .
Tonight experimented with chick peas and sweet potatoes with sautéed kale and onions..seasoned with tamari but nothing to write home about. I think I need to keep keep chick pea recipes to hummos and play with recipes for lentils and black beans ( not at the same time lol) instead.

Carole, It’s great to have a meal you can prepare the night before when having people for dinner.

Wally, Dinner doesn’t have to be gourmet to be good.
Dinner tonight was roast turkey, Thanksgiving redux, except this time my son, daughter, spouses and grandson were here. That made it better.

I hope the tests, MRI, CT, etc. have good results, and also that everyone had a great day yesterday.
The no gluten changes for DD weren't too bad.
The only "non gluten free" was the stuffing. I didn't have time to make any "special bread" for the stuffing.
The local supermarket sells King Arthur gluten free flour and I used that.
The zimt kuchen was "couldn't tell the difference".
The apple pie crust was quite good, although it was very fragile. The bottom crust was fine…the top crust…well, I should have called it a cobbler. :-)
The rolls were okay. Since they didn't puff up at all, I was expecting little golf balls, but they were surprisingly light. The rolls looked done at 25 minutes, but I think 20 minutes would have been better.
The rest of the meal did not require any changes…mashed potatoes, fruit salad, squash, gravy (using corn starch), cranberries, turkey, duck (see below).
We had a neighbor over for dinner last night who otherwise would have had a "just me" Christmas dinner. She brought over the roast duck she was going to eat. I will have to find some duck to roast!
The turkey carcass is simmering in water in preparation for putting up more broth/stock (it has meat on the bones, so I guess it's both).
Tomorrow we'll be leaving home around 5:30am to get DD to the airport. I'm just starting to get back to normal from the cold, so, hopefully, the 8 hour round trip won't be "uggh". :-)

The Denver Botanic Gardens does a Blossoms of Light show every winter. Many of the displays, like the archway, are animated, so the still pictures only capture part of the effect.
