Carole, I hear your angst. I am not so much concerned with civil war as I am with the authoritarian stuff…time will tell.
I have no idea what will be for dinner. I forgot to thaw the sausage I wanted to use for a spaghetti dinner. Good news on DH's meds. I called early this morning (to the specialty pharmacy specializing in cancer meds only—located in Arizona) and they will be shipping out the meds fed ex, arriving tomorrow. "Only" $2,000. Grateful for the max out of pocket for drugs. They wouldn't ship till we paid up front.

We had tacos last night and I’m making a big salad tonight topped with cheddar and leftover fried chicken strip pieces. But, I thought I’d share my wonderful breakfast since the avocado toast was just beautiful.

Grilled Prosciutto (Italian ham) and sharp cheddar cheese sandwich. Used up my leftover napa cabbage to make a slaw for the side.
DH just ordered tools to saw down the floor. Nightmares.

Yes, thank you betrayal! I'm in an airport just coming home from a lovely vacation. It will be hard to return to 'real life'!

trishyla, thank you so much for your feedback. This is my tribute to a great woman, whom we all admired and loved. I will be on vacation from 10/8 to 11/2, so I will not be able to post. I will post on my return.

Carole, Those pork medallions in a lemony sauce sound good.
Wally, Taking out part of the floor to lower it sounds like the safest way to get the dishwasher to fit. Actually doing that is not in my skill set. DH did woodworking in school and has made furniture but structural repairs are different.
Dinner tonight was fish and chips with cauliflower.

The red beans and rice meal was delicious. So was the salad with romaine, compari tomatoes, cucumber, avocado and blue cheese. I'm using a Ken's Northern Italian Lite dressing that is quite to my taste. DH prefers a creamy Ken's Vidalia Onion dressing.
A large carton of red beans left over. Most will go into the freezer.
What a pleasure to cook rice in my little rice cooker. We ate almost no rice this summer. A lot of potatoes instead. Maybe the influence of all those Norwegians. LOL.
Tonight will be another dish we didn't have all summer. Pork medallions from a pork tenderloin with a lemony sauce.

Wally, If your floor or countertop were in bad shape it would be a good excuse to renovate but it doesn’t sound like that is the case.
Carole, It sounds like you are enjoying meals that were not easy to make in the camper.
Eric, It’s satisfying to finish a job that will last a long time.
