Dinner tonight was linguine with kale-walnut pesto. I’m trying to eat more vegetables, but don’t like a lot of vegetables, so I was happy to not taste the kale. Our high temperature in southeast MA today was 5 degrees. Tomorrow is supposed be be a balmy 29 degrees!

Dinner tonight was two Oscar Meyer Bun Length hot dogs served with coleslaw. I got home too late from Chair Yoga to dig into cooking - and beside I was sooooo relaxed I didn't want to. I had planned to make an omelette after reading about Celia's dinner the other day - but I totally forgot. Maybe tomorrow.

Hi Green - When I left Western MA around 11 AM today, the high was -4 degrees! Funny that you mentioned kale. That was my dinner tonight - (kale salad with some roasted sweet potato slices on the side, and a piece of cranberry tart made some time ago but defrosted today). Yum..

Carole, hope you and DH are feeling better and that the rest of 2019 treats you better! So glad there was left over stew for dinner tonight. So nice to not have to make dinner.

My son reported 7+ hour delays at the Boston airport earlier today. He's stuck overnight, and walked several blocks to a restaurant w/o a stocking cap. Brrrr. When you don't live in snow country, it's easy to forget how fast your ears can get frostbite at close to "1" degree.

Oh Carole, I’m so sorry to hear about your illness and hospitalization. Hopefully 2019 will improve along with your lungs! Thanks for posting so we know how/where you were.
We are in serious deep freeze here along with the rest of the east coasters. The only good thing was a relatively clear drive into Boston tonight...few people venturing out given the single digit temps, terrible wind, and the holiday. Minus, we could have given your DS a lift somewhere tonight on either end of the game..not a night to fight the icy wind tunnels of the Boston streets on foot! Hope he is fine....
Nance, I love the bird story! And yes, winter without sun is no fun!! Today at 8 degrees a few hours of sun melted the thick frost on my upstairs windows. Sadly I missed the lunar eclipse due to that opaque window status last night.
Green, the kale walnut pesto sounds delicious. I bet you’d do fine with kale in soups with a tomato base and lots of veggies. It softens nicely and taste is hardly detectable.

Last night I defrosted the last of our turkey chili and made a big platter of nachos grande to eat for dinner while watching the footbal games. The games (due to my concerns about brsin injuries) and nachos (don’t need the calories) are a real departure from my typical habits, but DH was in heaven.
Tomorrow I might make omelets for dinner to avoid a trip to the store.

The salsa started out looking like football laces....haha.

Last night was two chicken legs prepared using the NYT Braised Chicken Legs recipe with a side of brown rice. We spooned some of the lemony pan sauce on the rice.
Tonight will be jump ups.
I finally opened the big box with my order of copper cooking products that I ordered before Christmas. I was too sick to care about opening the box when it arrived so it has been sitting there.
An ugly day here, rain earlier and very gray outside. Good to be cozy indoors.

Took a friend to lunch at PF Changs. Her choice since she has lots of dietary restrictions. I hadn't been in 8 or 9 months but it was always a reasonable lunch deal & decent food. The food's still OK (note - OK but not great), but they have removed the "soup included" from the lunch menu items. The base price stayed about the same, but now you have to order separately & pay extra for the soup. 44 degrees here today so the soup would have been welcome. On the other hand, the Tempura Bowl was enough for two people. Rice topped with tempura shrimp, beans, asparagus, broccoli, cauliflower, sweet potatoes. My only real complaint was that the food was served in a regular bowl and didn't stay warm enough while eating. Delicious sriracha/honey sauce.

I, on the other hand, woke up with all the trappings of a head cold. I decided something spicy was in order so threw a frozen half chicken in the pc and started chopping up veggies for gumbo. The chicken is done and I've started on the roux (my back hurts already from standing at the stove.) I have some jarred roux so I don't know why I decided to make it from scratch when I don't feel that great, but here I stand. I hope I still have some frozen okra.

Lacey - thanks for the thoughts about my DS. He did have a stocking cap in his suitcase. Just didn't take it from the hotel. I don't know where they stay when they are RON, but apparently he has a restaurant that he particularly likes. He doesn't eat fish or crustaceans, so it won't have been chowder.

How about a survey on cooking oils? Many years ago I switched from plain old Wesson Oil (which my Mother always used) to Canola Oil. Now I'm looking at switching to Safflower Oil. That said, I don't ever cook fried foods. Again, my Mother never did either. We just weren't raised in the South. I do saute some and might use it in baking. Often I use EVOO to saute.
What oil (s) do you all use?

I use EVOO for sautéing and salad dressing and canola oil for baking. I just bought some avocado oil, as it’s supposed to be good for sautéing at higher temps like in an Instant Pot

We use sunflower oil for frying and olive oil for the sautés and such.
Soup (chicken and lots of veggies) and salad (Cesar) for us tonight. DH made the soup and it was perfect.

Minus, I use canola for the occasional frying I do, evoo for sautees and salad dressing, peanut for wok cooking, chili and sesame for Asian cooking, I have some blood orange oil and walnut oil that I use for salads mostly.

The only seed oil I use is grapeseed—it is neutral (no fishy-linseed oil aroma like canola) and lower in omega-6s than safflower, sunflower, cottonseed or corn oil. For frying Asian foods I use peanut (especially on the rare occasions I make shrimp chips), but I’m careful about what pot or pan I use in case a dinner guest has a peanut allergy. I sauté with EVOO (California Olive Ranch Everyday Blend) and dip breads or dress my salads with either EVOO (a Ligurian brand I bought at Eataly) or infused olive oils I get at Old Town Oil or Vom Fass.

I use saffalo and coconut oil ( especially popcorn)for cooking. But that said sometimes it just has to be olive oil. I use olive oil for salad dressing, marinades, a lot of fresh type cooking.
Dinner tonight is teriyaki chicken/grilled pineapple sandwiches. Have been getting good pineapples so I had a craving for this. Also a side of stir-fry peapods.

I make my popcorn with coconut oil—and I also use it to season my cast iron skillets.
Went to Le Coq d’Or in the Drake tonight, where we’re staying after a massive wine tasting. Gordy came down to celebrate my birthday. The restaurant was disappointing—it’s basically just a pub. It does have a few dishes from the late lamented Cape Cod Room, but it’s just not the same. Had a cup of Bookbinder’s soup and crab cakes with baby potatoes and asparagus. Meh. Or maybe I was just tired. Bob had a bowl of the soup and a Caesar with seared salmon. We sent Gordy home with plenty of leftovers. No room for dessert—not even baked Alaska

EVOO here for most things and avocado oil for the high temperature stuff.

I use California EVOO for salad dressing and sauteing. Canola oil and Grape seed oil and ghee for pan frying. I started buying the California EVOO when I learned that the olive oil from Italy and Spain sold in the US is an inferior grade that doesn't measure up to those countries' high standards.
Not sure about dinner tonight. DH is still battling bronchitis and not feeling his best. I'm encouraging him to decide what he might like. I will go and visit my mother at the nursing home today. I prefer staying with her in her room because there is so much illness this winter. She was in the hospital a few days during the same time that I was hospitalized.
It got down to freezing last night but is supposed to be a sunny day.

Tonight was a cheesy alfredo with shrimp, asparagus and thin whole grain spaghetti. Swiss chard on the side and a glass of wine.

Looks yummy, Ilona. (Nice plating too--looks more impressive than on a paper plate). Tonight is half of last night's leftovers (Gordy ate the other half): a crabcake and a half, grilled asparagus, and roasted "marble" (baby) potatoes. There's half a bottle of good chardonnay in the fridge, which would go perfectly with it, but after last night's mega-tasting I can't face another glass of wine....

Everybody seems to be complaining about the cold. Not sure I could stick so many days of no sun! Calls for warm soups and comfort foods. It's cold here too for us with temps of 48 and 50 though! Sorry but that's cold for us here. First topic of conversation with anyone you meet is "Oh it is cold today!"
My yearly robin is back visiting the garden this year. Sadly DD's pet rabbit passed on last week, so it is kind of lonely at home in the morning.

Made lots of soups in the last week or so.
Broccoli and Stilton soup with garlic bread was one. Worked out ok. I liked the stilton taste with the broccoli.
Pea soup made with dried peas, carrots, potatoes and gammon was another.
Butternut squash remains one of my favourite.
Might do a thick vegetable soup today.... though not quite sure yet.
Rice baked in a Bolognese sauce was another comfort food this week.
Yesterday we had spaghetti with sea urchins and scallops. I had an open bottle of Blue Nun wine in the fridge and I added that to the sea urchins and garlic and tomatoes but it didn't work out as well as when I add a dry wine. So I'll stick to the usual chardonnay or soave even if it means opening another bottle. I bought the scallops on the sheel and baked them in the oven with a little butter, garlic, tomato, parsley and olive oil and those turned out really nice.

It's 1° degree right now. The sun is shining but it's not supposed to last. We had several hours yesterday thankfully. The has been the worst winter we've had in several years and the prediction is that it's not going to get better until the end of February.
"Birdie's" tale had a sad ending. DH took her in her box outside on one of the only above freezing days we had. She managed to get herself down to the yard but she clearly was not flying well. We decided to keep an eye on her for a while to see if she improved. After an hour DH went to look for her and to bring her in if she was still there. He found her little body - something had attacked her even though we had been keeping an eye out for predators. It was an impossible situation but we feel like murderers. My only hope is that we've saved more birdies than we've killed with the 250 pounds of sunflower seed we've gone through so far this wretched winter.
Not sure about tonight - maybe fettuccini alfredo. I'm sick of soups and stews even though they are most helpful with this stupid head cold.
Ok, I promise not to whine anymore today.

Off to the Med Center for Prolia shot #6. My MO said to complete 5 years then take a 1 year holiday before starting again. I'll stick with that if I don't have any tooth issues. I have plans to finally make an omelette tonight when I get home - spinach, mushrooms, onions & cheese. But since I'll stop at the grocery store on the way back, who knows what inspiration & excitement may occur.

Sunny here again today and cold. Nowhere near 1 degree, of course. Probably 50's. I went outside briefly to shake out a rug and it wasn't bitter cold.
Dinner last night was navy bean soup made with ham (diced ham steak), diced carrot and celery, and a small can of diced tomatoes. I added chicken broth to make the soup "soupy" and then tossed in some little ears pasta. The soup was very good and there's a lot left over.
Tonight will be more leftovers. Warmed up meatloaf and red beans and brown rice.
Hope you get over that cold, Nance. My sister Linda has rescued many baby birds that fell out of the nest. I don't think any of them survived.

Oh dear sorry about the bird.I burnt the vegetable soup whilst helping the DD do her English homework! I ate my plate anyway, though DH and DD opted to forfeit their supper. Lots of rain tonight, and feeling chilly.0
