    Fireside was "meh," as usual (but it was Christmas and open). Good app. of bacon-wrapped shrimp and Caesar salad; but prime rib was seared (why??) and medium to medium well--and just plain mushy, as if it had been sous-vided too long (but this isn't the kind of joint that knows from sous vide). Ordered broccoli & green beans as sides, but they ran out of green beans and gave me corn niblets w/o asking me first. (Packed leftovers, but not the corn--should've asked for sweet potato tots). They ran out of gløgg early in the evening, so no dessert. Got home, confirmed we had no plum puddings remaining, so dipped into last year's Collin St. fruitcake (worth cheating) and heated up and spiked some sweet spiced wine. Going to put together some berries and a square of dark chocolate.

    I love cookbooks even though I don’t use them much since I came to rely on Google. I usually read a new one from front to back.

    We have leftover pork and other leftovers for dinner. I will probably reach for pre-Christmas dishes like greens and eggplant casserole

    butternut squash ginger soup, burgers, oven fries, salad for 12. Will do a Christmas dinner reprise (turkey, etc.) either tomorrow or Saturday, using two 3 lb. Turkey roasts.

    Received an air fryer for Christmas but haven't had time to figure out recipes!

    I too have leftover pork. What's up first? Warmed with fresh mashed potatoes? Stir fry? Pork fried rice? Pork sandwiches.

    I'm playing Chickenfoot tomorrow with a group of 5 neighbors. We played regularly a couple times a month while I was in treatment. Unfortunately the lady who was the "glue" died two years ago. Now we only get together once or twice a year.

    Everyone brings food. I'm making a salmon spread, deviled eggs and my lime salad with avocado & cashew nuts. I know one lady is making her Mexican Black Eyed Peas that are beyond delicious. I'll report tomorrow on all the other goodies.

    Was going to take advantage of the 64-degree temp yesterday and grill steak and the lobster tails that were on special at Whole Foods--but Bob got home really late and ate dinner at the hospital. So I defrosted a Pacific salmon filet and pan-seared it, along with some sauteed snap peas with sesame, garlic & ginger.

    Tonight Bob swears he's coming home for dinner at 9, so I'm sous-viding the lobster tails (with butter & tarragon) and steak--will finish the steak on the grill to get sear marks, with chimichurri sauce on the side, and broil the tops of the lobster tails (doing both at 130F in the sous vide). Also grilling asparagus, which I will marinate in EVOO & balsamic.

    Sadly, my sous vide unit died this week. Happily, I got several gift cards for Christmas that will allow me to replace it.

    Tonight was beef stroganoff made with the remains of the rib roast. It was most excellent.

    After running today, I had a quick lunch "snack" of rice and beans with some soy sauce on it.

    I have a 24 ounce (about 700ml) insulated water bottle and even though I've had to fill it 11 times in the past 8 hours, I'm still thirsty.

    I think the only thing worse than "full salt" soy sauce, is anchovies on a pizza.


    It only made it to 50F degrees today and it was raining most of the day, so 64F would have been nice.

    Beav, that butternut squash ginger soup would have been perfect for a day like today. And, the air fryer, when you get around to it, is really nice. MIL bought us one last year and, at first, it was just french fries, but we've branched out and use it for nearly all of our vegetables. The toasted taste is, I think, much nicer than steamed.

    Carole, I use Google for a lot of recipes, but I still prefer the physical cookbooks. Like you, I read through a cookbook from cover to cover. Some things I do "as specified" and some things I use as an idea and "make the recipe my own". I'm not sure if it's because it takes so long to get the computer going so I can search for recipes, or if it's "the stuff in the cookbook is more permanent than the stuff on the internet"

    Minus..a stir fry with pork on a bed of rice?????

    I've used a sous vide "machine", but I had to borrow it...one of these days I'll probably get one, but, so far, the desire and opportunity haven't occurred simultaneously.

    I used to have an air-fryer, but it took up too much counter space and I rarely used it. Then I got a Breville Smart Oven that has an airfry function--and gives me better results than the standalone air-fryer did. (I still miss my DeLonghi Roto-Fryer, but it was messy to drain the spent oil and all that hot oil did make me nervous).

    I did the steak at 130F for an hour, then raised the temp to 134 and did the lobster tails for the second hour. I removed the steak with 5 min. left to go and seared it on the grill. Came out a luscious medium-rare--and the two of us couldn't even finish it! (Of course, I also air-fried the remaining latkes--I took a carb-blocker). I forgot to drain and dry the lobster tails after rinsing off the marinade, so they gave off a lot of moisture and diluted the butter in the bag. Still & all, they did come out perfect. (Happy & Heidi begged incessantly all through dinner, but all they got were the plates to lick). Also sauteed some creminis & shiitakes in butter, steak juice and Marsala. Blanched the asparagus, tossed them in oil & balsamic, and grilled them till just tender-crisp. No dessert--we were stuffed. Just a breve-almondmilk decaf cappuccino and a square of Swiss dark chocolate Bob bought me for Christmas.

    I had planned to make a Hangtown Fry (still homesick for Seattle after 41 years) for breakfast tomorrow, but Bob has to leave for work too early (and prefers not to eat before that 20-mile highway commute lest he get stuck in traffic). He's staying over in Oak Lawn tomorrow night because he has to be in to read echoes & EKGs at 0-dark-30 Sunday morning. But I think that sealed container of WA oysters will keep for at least another week, so I'll make myself eggs shakshuka instead. This morning I made eggs Benedict, using coppa ham rather than Canadian bacon (I'd been using prosciutto ever since I saw Anne Burrell do so on Food Network), Christian Potier hollandaise, and Mikey's Grain-Free English Muffins (1 gm. net for both halves), which don't taste like muffins but rather like cornbread, which is fine by me. (I miss making cornbread...and popovers...and brownies...and pecan pies...and frying Cantonese shrimp chips. But I don't miss size 20W jeans...I'm almost ready to squeeze into size 10s).

    Sandy, I so envy (and admire) you for being almost ready to squeeze into size 10. It remains to be seen if I can re-discover that kind of commitment. Yesterday I did some internet research on a diabetic diet and found that it's pretty much the WW eating plan and South Beach. My bp has been higher lately and I've become more aware of fluctuations in my blood sugar level. Weight loss is definitely a good idea for me for improving health. And fitting into my clothes.

    I have been avoiding white flour and white rice for years. I had been avoiding white potatoes until the last year or two and eating sweet potatoes instead, but only occasionally. Gradually the white potatoes came back into the kitchen. They're so versatile and taste good however prepared.

    Last night's dinner was warmed up eggplant casserole and a cabbage skillet dish that was delicious. It was one of those impromptu dishes that was a huge success. I used 8 oz of ground pork and 8 oz of ground veal from the freezer. Sauteed them and drained excess grease generated by the pork. Seasoning was the usual, s & p, onion and garlic powder and pepper flakes. Added the half quart of stewed tomatoes (Uncle Dale's) from the refrigerator. Added a small cabbage sliced up, not too small a slice. Simmered covered. I loved it and there are leftovers. The cabbage has an almost-sweet flavor. We finished up leftover Jiffy cornbread with the meal. DH is happy with Jiffy and keeps a supply in the pantry. I have a small round pan perfect for one batter.

    A friend described a cabbage dish she makes that is similar but hers included addition of cooked rice.

    I need to come up with an idea for the fresh zucchini in the refrigerator. Zucchini is a challenge.

    Stroganoff made with leftover rib roast. That sounds like impromptu wonderful!

    Eric, I'm not a soy sauce fan but I keep the regular and the reduced salt on hand. Last night I organized Documents on my computer and created a Recipes folder that includes a couple of your recipes, including jasmine rice and chicken dish. It also includes a few of Susan's recipes. I hope she's doing well. I wonder if she has more grandchildren now. Does anyone know?

    I normally use Kikkoman Reduced Sodium soy sauce, but I keep San-J Tamari on hand for gluten-free friends. When I started on this diet, on the advice of the weight clinic NP I bought a bottle of "coconut aminos," which has a tad more flavor (almost a little sweetness).

    Tonight was leftover ribeye, mushrooms, asparagus & broccoli with leftover hollandaise sauce.

    Bought some new bras today--I'm down into a 34 or 36 band...from 40 this time last year. (TMI, I know, Eric).

    Today was an all day 'nibble' day on leftovers. Deviled eggs. Pork sandwich on sourdough bread. Royal Riviera Pear from Harry & David. Salmon/cream cheese spread on artisan crackers. Dot's pretzels (slipped those in even tho they aren't in danger of going bad). Lime jello salad w/avocado, celery & cashew nuts. Oh - and Victoria Toffee from Sees. It is only sold in December so I should be saving it, but I get weak when I see this candy.

    Tomorrow I will have to decide whether to freeze the Mexican Black Eyed Peas or pig out. Pears & eggs will have to be eaten, so.... I'll definitely have to freeze the remaining pork loin. The rest of the this sourdough loaf will have to go in the fridge to be used for French Toast if I'm ever hungry again.

    Just had a lovely glass of eggnog with Gentleman Jack for my bedtime snack.

    What a "nibble feast" you had, Minus!

    Dinner last night was leftover cabbage skillet dish and a side of fried rice made with cooked brown rice and diced carrot, celery and green onion. I asked dh if he would like me to make cornbread and he said no. I noticed that he ate half a sandwich for lunch yesterday.

    I haven't found my Herb Ox Low Sodium Chicken broth granules, which has become a staple, in Winn Dixie or Walmart, so I ordered it from Amazon. A 50 packet box was only $10. I also ordered a box of the beef granules, which I don't use as much.

    I am thinking of cooking a hearty navy bean soup today. I bought Camellia dry navy beans yesterday.

    Hello all! Christmas dinner was the usual ham and all 4 kids and family made it. Fun time. My DD2 came back with her kids on the 26th and stayed over for 2 days. She works 2 blocks from our house and we baby sit anyway, but her husband went bow hunting as they only got 1 deer so far , so she decided instead of trying to pack the kid for 2 days just to sleep here. Worked well, we enjoyed it, but both my DH and I slept in till 10 am today. LOL. Not unusual for me, but way out of his zone! LOL.

    We went to eat chinese for Thursday, but Friday night it was bean soup made from the ham bone and Thanksgiving turkey stock. Along with a potato and bacon casserole. It was very good, but I didnt even bother with greens. I would have liked a salad, but would have needed to go food shopping and with 2 kids, not happening! LOL. I did teach my excercise class and take the 5 year old swimming, hope that helped a bit. LOL

    I got a Ninja Foodie pressure cooker/airfryer for Christmas. Anyone have a great recipe?

    Yesterday I made some very spicy vegetable broth (4 Serrano peppers in 2 gallons of liquid) and today I canned (jared?) it....

    I did twenty five 12 ounce jars and the last dozen are cooling down.

    Last night I made scampi (prawns were on sale at WF) over sauteed Shishito peppers & sliced fennel. Tonight was a Caprese made with a Cherokee Purple heirloom tomato (store-bought, alas--my last two homegrowns are still tiny & green); then Buffalo wings with celery.

    Froze the last of the pork. Ate the last of the deviled eggs accompanied by salmon spread and artisan crackers.

    Probably a bad decision, but I'm going to the grocery store tomorrow. I spent the evening going through recipes that I'd clipped this year so now I need carrots for "Sticky Roasted Carrots with Citrus and Tahini", swiss chard for "Skillet Greens w/Runny Eggs, Peas & Pancetta" (but will probably cook vegetarian w/o the meat) and tortillas for "Shrimp Quesdillas".

    I need a pat on the back for not planning any cakes...sigh.

    Last night was small, trimmed pork steaks, more like pork chops. Cooked in the oven, a bit overcooked. One side was lettuce salad. Another side was spaghetti squash, probably my 2nd attempt at cooking this squash. After some google research, I cooked the two halves in the oven for only 30 minutes. I mixed the strands with an olive oil sauce I concocted with toasted pine nuts, garlic, lemon zest, lemon juice and grated asiago. The squash was perhaps a bit too crunchy but I found it quite edible. DH was not impressed. He didn't like the texture or the taste. So I guess I will eat the leftovers.

    We have no special plans for new year's eve. I looked at some rib roasts in supermarkets but didn't buy one. We may just have good leftovers. I do have rotisserie chicken that would work well for chicken enchiladas. Plus ribeye and filets in the freezer.

    Sam's Club had Rao's marina yesterday in twin packs for $9.45. I bought six jars so have quite a supply on hand.

    It's a lovely day here today. Sunny and cold this morning but will warm up. No need for a coat. DH went to play golf. I will soon head to the gym.

    I've turned down two invites to stay home & read. Maybe a bowl of popcorn? I'll likely be asleep before midnight but will certainly be wakened by all the fireworks & gunshots.

    Ventured out to the grocery store today - what a zoo! And not one black eyed pea to be found. Fortunately, I have a half bag of dried that will be enough to make hoppin' John for tomorrow for the two of us. Today I'm pickling some pork to use in some mixed greens tomorrow too. Main will be either fried chicken or ham. Depends on what tonight turns out to be, which at the moment is a complete unknown.

    Happy New Year to all my kitchen table friends! Have been a bit AWOL lately but have been reading. Hope everyone is well, we had a quiet holiday, it was relaxed. This was our brunch on Christmas. Sticky buns, fruit with vanilla yogurt dip, and bellinis. Yay!

    Wren, congrats on 60 year anniversary!

    I, too, ventured out today to both Costco and the grocery store. Two zoos!! As a result of the trip dinner will be rotisserie chicken (Costco, how can that price be resisted?), rice blend with quinoa (Costco), green veggie and tossed salad, maybe rolls. Had to stop at the grocery for coffee and milk for in the morning. DS1 and family are leaving tomorrow to go skiing, back on Sunday, so we'll have a shot at having a quieter house for a few days. They will be moving soon to where their daughter will be going to school. Exact plans are uncertain because the tenants in the apartment they are scheduled to use have been dragging their feet about vacating the premises! The premises are owned by DS 2and his wife and they are looking forward to having those folks move out and family move in.

    Happy new year everyone! It was an early splurge at Ruth's Chris for a filet with bernaise sauce, creamed spinach, pecan sweet potatos and (big splurge) a flute of vieux cliquot! Hubby is a bit under the weather so we're back home on the couch and I think me and the kitties will be ringing it in if we make it to then!🎉

    The dogs are, again, defending the home against the evil forces of noisy fireworks. So far, they appear to be succeeding as the noise hasn't physically shown up inside the house. :-)

    This is really horrible but, a can of Libby Chicken Vienna Sausages. I love those things but I limit myself to a can or two on New Years Eve. I typically have some Martinelli's Sparkling Apple Cider and Townhouse crackers as well but I didn't have time to get them and it's just as well as I can't be trusted with an entire box of Townhouse crackers.

    I also had broccoli.
