    Doing good minus, because of the open vocal cord I can’t drink enough in the time needed to get drunk but I did have a nice buzz. What messed me up was staying up late. Oh well, it was fun.

    Ah ha Mae. Does anyone else remember - the worst part of drinking & staying up late was all the cigarettes smoked. I quit smoking in 2007, although I still miss it occasionally.

    Off to make Broccoli/Cheddar muffins. I know - it's 7pm, but I joined a virtual Bach Society concert at the Museum of Fine Arts. Then I had to listen a second time to the the Bach & Telemann strings & harpsichord concertos. Delicious!!!

    I stopped Wednesday at Chicken Salad Chick and bought broccoli salad & "classic" chicken salad to go. Ate the broccoli salad last night so I'll munch on the chicken salad while the muffins cook. This is only the 3rd time I have picked up food to go since March. Not going out but not ordering out or picking up food either. It's been a good time to reacquaint myself with exciting & challenging meals - and of course left overs.

    Minus, maybe that was it. DH found an old 1/2 pack, I smoked 4. I may have had a few in 2018 but not in a very long time.

    Tonight was balsamic pork medallions with sautéed mixed cabbage/onions and spinach.

    Illimae, looks delicious as usual. Just bought pork tenderloins and was planning on using raspberry chipotle sauce but may change that and use the balsamic reduction sauce I have in the pantry. Thanks for the idea for tomorrow!

    The broccoli/cheddar muffins were just OK. Really quite blah even though I used sharp cheddar. They might have been better if I'd added chopped Hatch Green chilies, but at this point it's not worth making them again or passing along the recipe.

    Sorry about the muffins Minus. I hate wasting time and ingredients for a meh result.

    Tonight is super bowl food without the superbowl -- an annual tradition here lol. Neither of us are football fans but we like the food. So it's wings, celery sticks with blue cheese dressing, l'il smokies, pizza and a small cheese board. I also have an artichoke for myself. DH generally won't touch "a" fruits or vegetables, although he has come around about asparagus. He'll eat apples if baked in a pie or applesauce. Anyway, Don't know what we'll be watching, but it won't be football in spite of the Chiefs being the hometown team.

    Scheduled the backsplash tilers but unfortunately it's another 6-7 weeks before they can do it. This is getting tiresome. After that, it's on to living room flooring.

    Its a whopping 8 degrees here today. At least we only got a dusting of snow. I know some of you are in the deep freeze too. Not looking forward to the next week. The frigid weather has brought the bluebirds en masse to the window feeder, all puffed up like little blue balloons. Not a great picture because the back of the feeder is dirty. This was taken a couple of days ago when they were normal size lol.

    We made it all the way up to 5F today (it was -7 overnight). Snowed yesterday. Will snow tomorrow, again on Wed. into Thurs. and Sat. into Sun. It's 1F now (at one point before I cranked the thermostat up to 80, it was 63 in my "leaky-air" front room (basically, a converted porch--in order to caulk everything sufficiently I would have to box up all my books, pens & inks and have someone move the heavy bookcases (not to mention my A/V system). Were it not for the pandemic I could hire some strong people, but I feel really nervous about having even emergency repairmen in the house. We fired our exterminator because they were losing personnel due to COVID and their replacements weren't following protocols--we refused to let them in the door. So I'm wearing layers--shelf-bra cami, PJs, old velour track suit (knew there was a reason I wasn't getting rid of all my XLs & 1Xs) and another hoodie. I look forward to the letrozole hot flashes--having one right now, which is wonderful! Going back down to -1, before we rise to double digits along with the snow. At least we won't see zero again till Valentine's night--too cold for tented dining, Bob says indoor dining won't be safe for me for at least another week, maybe even till a week after my second shot (which would take us into March). And it'll be too snowy to drive anyway. Not many upscale restaurants will deliver up here on the far North Side.

    We did order brunch today from a new place up in Rogers Park, one neighborhood north of us. I had a havarti/spinach/tomato omelette, with more tomato slices, so big that I had to cut in half and eat it for both brunch & dinner. I gave Bob my toast (he had a Cajun biscuits & gravy dish). And because it was Super Bowl Sunday (and maybe because it was our first time ordering from them), they threw in five macarons & two chocolate chip cookies. I got weak and had one macaron, savoring every bite. We also nuked some wings during the game (Bob had all but two). The game was anticlimactic, and The Weeknd's halftime show was as "meh" as it gets. He's no Prince or even Bruno Mars, and certainly not anywhere near as talented or entertaining as Beyoncé or Lady Gaga. (I miss actual bands, but I guess the spectacle stakes have been raised and it isn't about the music any more--not to mention the pandemic limiting the lineup to just one act). That restaurant's menu, being brunch & lunch, is pretty carb-heavy and they don't do dinner.

    DH cooked tonight, ribs, cornbread with beans and fried corn. The cornbread and beans were extra special good and I am stuffed.

    Mae - looks delicious. Since my Broccoli/Cheddar muffins were duds, I'm waiting for my friend to send her recipe for broccoli cornbread. She says it's wonderful. And easy since you start with a box of Jiffy cornbread.

    Dinner was a pizza on a large piece of rectangular Naan - 1/2 tonight & 1/2 for another day. I used some left over meat sauce that I'd defrosted earlier & added some Raos - black olives, onions, mushrooms, broccoli, some shredded Mexican Four cheese mix and some mozzarella. Yum.

    Prepped for tomorrow while the pizza was cooking because the mushrooms were getting close to the end of their life. Sauteed mushrooms, onions & water chestnuts. Tomorrow I'll add this mix to "certified organic" brown & red rice with chia & kale, along with some peas, some Lite Soy and a scrambled egg. May or may not add a salad, but I do have 1/2 a bag of Dole Sunflower Crunch in the fridge.

    Eric - found a 1963 book for $1.00 at the used bookstore about restaurants in San Francisco. Since I didn't leave there for good until 1966, I had been to many of their recommendations. This is such fun. It includes history of dining in SF from 1776, stories about places old & new, then specific places AND recipes. One recipe I will try soon is Chinese BBQ pork. More details later.

    Eric: Edited to say - this book if so much fun that I should leave instructions for my son to mail to you upon my demise.

    Hope everyone in snow country is OK and has not lost power.

    Today my "thin slice of joy" was a bowl of fresh raspberries in heavy cream. It's fortunate that the stores here often have raspberries on sale 2 for $5.00 , or even $1.99. It's fortunate that I can afford them. But since 1/2 a container was my entire breakfast and lunch combined, it's probably not overly indulgent.

    Back at the beginning of January, I said I'd get the recipe for the Lasagna Soup that I mentioned.

    Cook lasagna noodles that have been broken into "suitable sizes". The amount of noodles is dependent on "how much you want", so there isn't much measurement here. We use about 1/2 a box of the noodles.

    Heat 2 tbsp of olive oil in a large pot. When hot, add 1/2 of an onion that has been diced, 3 minced cloves of garlic, 2 tbsp of tomato paste, 2 tsp of dried oregano, an entire large (28oz weight) can of crushed tomatoes, 6 cups of vegetable broth and 1/3 cup of lentels.

    Simmer for about 10 minutes. About 8 or 9 minutes into this time, Sharon added 3 cups of fresh spinach.

    Add the cooked lasagna noodles and continue to simmer for another 10 minutes.



    It makes a very thick soup. We freeze the leftovers.

    Dinner tonight was spaghetti with meat sauce and a little green salad with avocado, goat cheese, hazelnuts, and red wine vinaigrette.

    Here is a photo DD took of the Super Bowl snacks! Very exciting gamefor us here in Tampa - we yelled at the TV a lot and scared the dog several times, lol!

    Minus I love raspberries and may try your decadent method as a treat for a special occasion.

    Special, drooling for all of that party food but especially deviled eggs. My DH hates eggs any way except for breakfast. So I make myself deviled and pickled eggs and beets once in a while (not together!)

    Tonight was slow cooker three cheese lasagna. Used fresh noodles from a local Italian grocery which made it really good. It came out just as good as oven-made but gave me afternoon time to work on some things. Had a big vegetable loaded green salad with it. I took leftover veggies for dipping from our superbowl fun and just dumped it all over the lettuce.

    reader - the deviled eggs are loaded - the filling is mashed yolk, a bit of mustard, mayo and sour cream, finely chopped pepper bacon, and scallion. They are yummy!

    You and eric have dueling lasagna posts! Both sound delish - I’m a lasagna lover, from a crockpot, or in soup - I’m a fan

    We had a lovely evening BBQ'ing a steak for steak salad. Weather was about 59 degrees with no wind. It is warm for the season & hopefully we'll get rain for the weekend. For now, we enjoy the moment.

    Eric, thanks for the recipe. Our forecast is for a very cold (ok, that's relative to our usual temperatures) weekend and the soup sounds likes great idea!

    Special, yum, yum. And the table looks as good as the snacks probably tasted! I'm with Illimae, some of each, please!

    Dinner tonight was second serving of a vegetable and chicken stir fry with orange ginger sauce. If I get to the store, tomorrow night will be chicken fajitas. Forgot to get sour cream last week!

    My arm muscles hadn’t returned to normal yet, so I was not into cooking for us on Sunday, so heated up some frozen apps from Trader’s.

    Last night I tried a new recipe for chicken piccata, using an almond flour and parm dredge. It was a tasty change. Sides were my typical salad and some “little ear” pasta to which I added sun dried tomatoes, artichoke hearts, evoo, parm, parsley and garlic. Plenty of leftovers....yay

    Oh my - Eric and Beaver - 'relative cold'. It's the wide sweeps that get me. 70's most of this week and possible 23 this weekend in my NW suburbs. TWENTY THREE!!!

    As always, we all want to be invited to Special's house. I'll wait for the gracious summer 'spreads' by the pool!!! Well, post Covid of course.

    Lacey - sorry to hear your arm is still bothering you. How's the back? Are you still doing regular PT?

    Last night was cannelloni with raos and a Parmesan white sauce, garlic bread and a small boring salad. Tonight will be chicken sausages with cabbage and potatoes and a side of peas. Dessert will be paczki - blueberry for dh, Bavarian filled for me. I nearly forgot it was time for them. Probably would have been better if I had lol.

    auntie - did you make a standard bechamel and then add parm? I sometimes like that rather than red sauce for some things. I realized the other day that I have not made a dish I used to make often with leftover ham - crepes filled with ricotta, ham & peas, and I usually top with marinara and shredded mozzarella before baking in individual gratin dishes - 2-3 crepes in each kind of like enchiladas. Parmesan bechamel would be good on that!

    Oh boy - both of your recipes sound delicious. I usually choose "other than red" if it works with the recipe.

    My dinner was going to be: a) leftover pizza on naan; or b) leftover brown rice stir fried w/veggies. Then I remembered I had half a bag of Dole Sunflower Crunch salad that HAD to be used or tossed. I added a whole avocado, thawed a bag of cocktail shrimp and dressed with Ranch instead of the enclosed package. Not bad.

    Chicken fajitas tonight with planned overs. DH and I have appointments for tomorrow afternoon for Moderna #1 so I'm stocking up on easy meals, just in case. Took the antihistamine out of my pillcase for tomorrow and low dose aspirin out of DH's; thanks for the heads up, Sandy.

    beaver - here is an FYI - my son, the 32 YO paramedic, had the Moderna vaccine as a first responder. First injection, no problem, Second one knocked him flat for 24 hours. DH just had Pfizer #2 last Friday, only a sore arm. Could also be that son has a robust immune system that mounted a strong defense, and DH not so much... thought I should let you know so you can plan accordingly.
