    Okay, here is one of my favorite quickie meals.  I am trying to eat less cheese, but a girl has to have her dairy every once in a while.

    TOMATOE, BRIE, SPINACH, PASTA

    Put some WW pasta or high protein Barilla pasta on to cook-  I like Rotini or Penne

    chop about 6 cloves of garlic and lightly saute in olive oil, careful not too brown or it's bitter

    rough cut about 4 vine tomatoes 

    wash a bunch of fresh basil and tear the leaves off stems

    remove the rind from a wedge of Brie cheese and cut or tear in chunks

    take a container of pre washed baby spinach and place in your collander

    Pour your boiling pasta water and pasta into collander over the spinach to cook it

    Put everything in a big bowl and toss with the hot pasta.

    Finish with extra olive oil, salt and pepper.

      It is both fresh and rich and EASY. This is my favorite uncooked summer pasta, especially when fresh tomatoes and basil are abundant.

    DesignerMom That sounds good except I'm that one weirdo that doesn't like brie. I think I'll try that with goat cheese (or baby mozzarella) instead.

    So I'm starting to think this is the best thread. Who the hell wants to talk about breast cancer anyway Wink

    Hear, hear, lago!  My three favorite threads aren't about BC at all! :)

    I skipped takeout and saved a few $$ and had granola and fruit tonight.  I wasn't terribly hungry so it was just right.

    Still light out at 6:30 PM -- days are decidely longer!

    NatureGrrl, across the border it's only 5:30 and seems a bit too dark still for 5:30. 18 days till daylight savings time ends!!!

    Brilliant idea on cooking the spinach by putting it in the colander before you drain the pasta!!  That whole recipe sounds like it will be perfect for those late summer days when all thos tomatoes are ready at the same time!!

    I didn't think I liked Brie either but, have found it really was the rind part that, while edible, just didn't taste good to me.  Have you tried it without the rind?  And I must agree... it is so nice to connect with people and talk about anything other than cancer sometimes!

    DesignerMom -Oh pasta dish sound's Divine!!! I would have to try it with feta or mozzarella since I am not a fan of brie either. 

    I made two batches of Salsa Chicken, one with a Green Verde Salsa and one with a Peach Mango salsa... 8 more minutes, my family is STARVING!!!  I really am hoping for left overs...

    lago-  I think goatcheese would probably be great instead of Brie.  I totally agree that I am sick and tired of having every waking minute be about BC.  It's time to start getting back to living.  One of the great joys of living is sharing great food with loved ones.  It's nice to share it virtually with all of you too!

    I made the salsa chicken tonight it was soooooooo good, i made it earlier and hubby called from work and said we are going to portland to see the portland trailblazers/lakers game so put it in the fridge, we sat in the suites would of thought they would of had good food in the suites wasnt in the mood for hamburgers and hotdogs. had to drive 2 hours back in the snow and all i could think of was that chcken LOL we didnt get back till 1am but we both gobbled it up was so worth the wait!!!  this  thread makes me so hungry, im sitting here while dh is sleeping reading all the post with my popcorn sprinked with chocolate chips i have to quit reading this so late at night lo!

    Beef stew with beef shank,onions,garlic,(brown with flour) then add redwine and beef stock(30 min later add sweet potatoe reg, potatoe, brusselsprouts,carrots,Rosemary sandp simmer for another 40min or until beef is tender. Yum can be served over rice or dumplings or even on its own with a bnice slice of fresh rye bread.

    I just put a roast in the oven for tonight.  I cook it the way my grandmother did, heat the oven to 500 cook for 5 minutes per pound and then turn it off and don't open the door for two hours.  Easy and yummy!

    Sherrill I bought my sun dried tomatoes today so I can try your recipe this week!

    Laurie,

    Never heard of that method before!  What kind of roast are you cooking?  If it's beef what degree of doneness does it come out? 

    The Mexican place we went to last night was really good even though they had a problem with their liquor license which dashed my hope of having a margarita Frown.  

    Tonight is a leftover night.  My husband and son will be at a hockey game.  My daughter is with a friend so it's just me for a bit!

    Chicken chili in crock pot. Easy and delicious. Two or three thawed chicken breasts, a couple of cans black beans, a can of tomatoes (diced or whole is fine), a can of tomato sauce, a bunch of spices ( chili powder, cumin, dried minced onion, garlic powder, Mexican Seasoning- Schilling makes a good one). Throw in everything and cook about 6 hours on low. Yummy!! Of course you can always use fresh onion and garlic and add any other spices too. Sometimes I have to add in a bit of water to thin it out a little. The chicken cooks all day and just ends up in shreds and is very tender.

    Laurie, my mom made prime rib in the same way (athough I'd have to look up the timing, I think it was longer for a larger piece of meat) and it was heaven.  Came out well done on the ends (for mom) and rare in the center (for dad and I).  Buttery tender!

    I have company this weekend (but no big cooking going on) so I'm cleaning a bit tonight and will probably do something super-simple for dinner -- like Cheerios :)

    Beef stew sounds really yummy too!  I have a package of stew meat frozen that I think I may try that with.

    Do you leave the breasts whole or chop them up?  I just dug out my crockpot last week after really not using it much lately.  Cooked my first whole chicken in it this week and it turned out good so am looking at other recipes to make in it.  I like that I can get everything ready early in the day when I still have some energy and then in the evening all we have to do is eat!

    We are having Hormone-free, grass-raised delmonico steaks with baked sweet potatoes and sauteed organic spinach with EVOO, garlic and a bit of grated onion.

    I am all over the beef stew (thanks Mum) and yum, chicken chili!!

    Seaside it's an eye of the round roast and Naturgrrl described it perfectly.  It comes out medium in the middle, well done on the ends. So the kids get the well done, hubby eats the middle and I am somewhere in between.  My Memere made it for Sunday night dinners all the time.  She wasn't a fancy cook but I always loved this dinner.  I topped it with a bunch of garlic and salt and pepper.  I should have saved this for tomorrow night since we are getting a snow storm tomorrow but, ohwell.  I buy a large roast and we'll eat the left overs as pepper steak sandwiches this weekend.  We so look forward to that part too!

    I'de love to find a great beef stew recipe.  Thats one that I cheat and buy the seasoning packet for, I hate that I do that!

    We've had a couple days of snow and cold weather here in the Seattle area. I decided that today I would make soup in my crockpot. I'm making a chicken/corn chowder. I have not made this recipe before, but it sure smells good!

    Usually, when I have stew meat, I make this: 

    County Clare's Guinness Beef Barley Soup

    "The soup itself is one served at County Clare, an authentic Irish pub in a bed and breakfast on Milwaukee's east side at 1234 N. Astor St. And it's one of any number of pub favorites that can carry you to County Mayo, Galway Bay or the Cliffs of Moher."

    1-1/2 pounds diced beef stew meat, cut ¼-inch size (I use chuck as it's more tender than round)

    4 tablespoons vegetable oil (divided)

    6 cups beef stock  (I use 2 boxes of stock so about 8 cups)

    ½ cup barley or  pinch more

    3 carrots, ½-inch cubes, sometimes more

    3 ribs celery, cut into ½-inch cubes, sometimes more 

    3 onions, cut into ½--inch cubes (1 large vidalia or spanish onion)

    2 strips bacon, chopped

    1- 8 oz pkg sliced, fresh mushrooms

    8 ounces (or more to taste Guinness stout) - I used the whole 12 oz bottle

    1 generous Tbsp of Beef Base ( I use Better Than Bouillon brand), optional, but does up the beef flavor

    ½ teaspoon dried thyme leaves

    3 bay leaves

    1 clove garlic. minced or ½ teaspoon garlic powder

    2 teaspoons brown sugar

    1/2 teaspoon salt or to taste

    1/4 teaspoon freshly ground black pepper or to taste 1 to 2 tablespoons cornstarch

    1. In large, heavy pot, on medium high heat, brown beef cubes in 2 tablespoons of oil. Add beef stock and bring to a slow boil.

    2. Add barley and simmer, uncover, about 1 hour or until soft. (If using instant barley, 15 minutes will be adequate cooking time.

    3. In large skillet, add remaining 2 tablespoons oil. Add carrots, celery, onions and bacon. Cook slowly over medium heat until vegetables are crisp tender and onions translucent. Add to stock.

    4. Add Guiness, mushrooms, thyme, bay leaves, garlic and brown sugar. Simmer until vegetables and beef become tender, about 45 minutes. Add salt and pepper to taste.

     5. To thicken, if desired, mix cornstarch with a little cool broth then whisk into soup. Bring to a simmer. (I have never had to do this step as it has always been thick enough for me)

     Remove bay leaves and serve in bowls. Makes 6-8 servings

    Mumsyan,

    For my chicken chili you do not have to do anything with the chicken breasts first, but I always use thawed ones and cut off the extra fat around the edges. I just put the chicken in bottom of crock pot, add in the canned beans (drained) and the canned tomatoes and tomato sauce, then throw the spices On top (I use a LOT of chili powder, prob a couple tablespoons). Then give it a stir and turn it on low. If I'm home I stir it now and then. When you stir it at the end the chicken will just flake apart. It is a very easy recipe and I'm with you, I love coming in the door to a finished meal. Just add a salad and I'm good to go!

    This is what im having tomorrow night for dinner i have guest coming.

    Pork tenderloin rubbed with garlic powder, salt and pepper, then rub dijon mustard all over roast, brown in a med high heat pan with some evoo till browned on all sides- put in a 400 degree oven for 30 minutes or longer if using a regular pork roast- when done remove from roasting pan and let sit- put the juices from pan on burner add another tsp of dijon mustad, some brandy, or any liquor or wine of your choice some cream bring to boil then lower heat till its slighty thick- after cutting tenderloins in medallions pour cream sauce over.

    Green bean bundles-

    3-cans of whole green beans drained and rinsed- 10 slices of bacon (halved) 1 cup of brown sugar 1 cup of melted butter-1/2 tsp of garlic salt- 1/2 tbl of soy sauce

    make marinade set aside- wrap 6 ot 8 green beans with half slice of bacon secure with tooth picks after finishing all green bean bundles put in baking dish cover with marinade- cover and refridgerate (over night) for best flavor- cook at 350 for 30 minutes or longer till bacon is done- You can cut this recipe in half or 1/4 but this is great for a large party

    also making a asperagus and onion tart- sauted apples- twice baked potatoes- chocolate pudding served in martini glasses- and for us ladies we are drinking chocolate martinis yummm!!!

    OK, Ladies in the NE... Was I the ONLY one who didn't hear that we were going to get a lot of snow??!  lol!!

    Last I knew yesterday, we were only getting a couple of inches!  Well, today, we have roughly 8 inches, schools were closed and it looks like I should have gone to the grocery store yesterday (along with the usual 5,000 people who can't last a day without milk or bread)!

    My son and I shoveled heavy, wet snow all afternoon!  Dinner tonight is going to be whatever anyone can scrounge from the fridge.  Leftovers, eggs, sandwich, cereal, ice cream, cookies?? At this point I'm already so sore I just don't care...lol! 

    A friend of mine from college (I went back a few years ago after being layed off) called it a "Jump-up Night".  I asked her what on earth that was thinking maybe it was something like sloppy joes.  To which she replied, "It's when I tell my family jump up and get your own darn dinner".  I think that's "What's for Dinner" here Wink

    Seaside- Last night they were saying we would get about 3 inches and we got around 8 as well.  So it was another day cooped up in the house.  I was planning on making chicken Parmesan, but I'm not in the mood to cook.  Looking forward to a quiet evening once the boys are asleep!  So they boys are going to have the left over chicken and salsa with rice and hubby and I are either going to have the pepper steaks form the left over roast, or I might bake the chicken breasts and have that on rolls with lettuce and tomato.  Something easy that can then be eaten on the couch while my husband and I find a movie to watch.

    We are lucky though, my husband just got home and said that all the houses he passed on his way home had no power he was worried we wouldn't either.  So fingers crossed that we keep power!  It's a heavy snow which we haven't seen much of this year.

    That is a very interesting question!  I know everyone will have their own answer and the array of answers will be as diverse as we all are! 

    For ME, since having cancer, I do try to eat a bit healthier than I would have probably done before.  I also try to exercise more and have quit smoking.  I have learned to not sweat the small stuff (and quite frankly most of the crap I used to worry about falls into this category)  and I also try to appreciate each day for the gift it truly is!

    As for the rest of it... I don't worry too much about it.  I am a big believer in "all things in moderation".  In my opinion... My life's journey has 'included' having cancer but I don't want it to be 'defined' by having cancer.

    That's just me... I'm sure others will weigh in with how they feel!
