ooh @maggie15 fig sauce? Sounds wonderful. Can you share a recipe or brand if it was store bought. Sounds lovely.
Snowy morning today and very cold. Ordering in Chinese for the family dinner with my stepson, visiting from CA and my son and is wife coming down from Rockland county.

Dinner last night was chili that dh put together after buying ingredients at the supermarket while he was out. It tasted really good with a dollop of sour cream and a sprinkle of Mexican blend cheese.
I'll have to bring my assortment of succulents inside tonight because the forecast calls for freezing temperatures down in the 20's. We'll run a trickle of water in the kitchen sink. The succulents might be ok outside but I don't want to take the risk.

We had chili last night too - a last minute decision that pleased DH. There's enough left to provide lunch for two.
Today is dedicated to wrapping since I haven't wrapped one single present. It's a chore I dislike anyway and my arthritic hands don't make it any more fun. (Bah humbug). But it will be good to have it done and one more thing checked off the Christmas to do list.
I think tonight will be a skillet dish with cabbage, potatoes and kielbasa.

Nance, I thought about you today as dh and I watched Cook's Country on tv and a featured dish was Hoppin' John as made in the Low Country of South Carolina with a local variety of peas brought from Africa.

Happy winter solstice! The days start getting longer tomorrow.
Fig Sauce (savory)
1Tbs butter, 2Tbs diced shallots, 2 ripe figs any type peeled and mashed with a fork, 2Tbs balsamic vinegar, 2Tbs liquid (chicken/veggie stock or white wine), 3 tsp lemon juice.
- Melt butter in skillet. Cook shallots 2 min.
- Stir in figs, vinegar, stock, lemon juice and simmer 3 min.
- Pour sauce over cooked fish or chicken.
- I add 3 tsp fresh thyme if using for chicken.
Fig Sauce (sweet) - Super easy and good in oatmeal, yogurt, on cornbread or vanilla ice cream.
Stonewall Kitchen's Vidalia Onion Fig sauce is a good storebought option. My local grocery store is headquartered in Maine so they carry it. It's also sold mailorder.
Flurries turned into 3 inches of snow so I got my exercise today shovelling rather than walking. We'll be almost at 0* tonight. I had to use the water trickle trick when I lived down south; they claimed it didn’t get that cold but every once in a while it did. Now our pipes are insulated by the basement.
Nance, My parents never wrapped presents, just put tags on them. They weren't under the tree until Christmas morning. My sister had an after school job as a gift wrapper in a department store. She still sends beautifully wrapped packages with gorgeous bows which I hate to ruin. The See's candy wins out, however.

Thanks for the fig sauce recipe, Maggie. We awoke this morning to white frost on the lawn. It's sunny and has warmed up to 37 degrees. I can turn off the trickle of water.
We had the chili again last night with the addition of a couple of Sam's Club hot dogs minus buns. The hot dogs are very large so I ate a half with my chili. In addition to sour cream, I had avocado as a condiment.
I hope Wally and her dh are doing ok, too. And everyone else who normally joins our kitchen conversation.

Most every winter night, the temperatures here are in the "low teens" Fahrenheit. The only snow so far was back in early November, so the ground is bare and dry.
Last night we ate the simple meal of tilapia and mixed vegetables.
We used to wrap our presents, but now…no…. We do put up a Christmas tree and decorate it, as well as put up Christmas lights on the house. I'm not sure who sees the lights, but we do it anyway. :-)
I think we will only have three trips, instead of four, to Phoenix in two weeks. DD needed to be back in Phoenix around 10:30-11:00am on Saturday so she could have lunch with some friends from college. We were able to get her a flight from Show Low to Phoenix that arrives there at 10:15am. I think she will enjoy the flight. She has a window (and isle) seat, the plane flies low enough to get great views of the terrain and we all can sleep in an extra couple of hours.

I've been forgetting to post here…too much crap.
I'll spare you a lot of it. Idiot neighbors..AGAIN/still. Went to Sequim the other day for odds/ends. Fred Hutch went well. There are 2 clinical trials but onco said don't think about this till PSA is rising to 10. He may need new scans again for any treatment. The pluvicto can turn adeno-cancers to endoneocrine, which are extremely aggressive but they don't spit out PSA or have PSMA-markers….so we are in a holding pattern and can revisit stuff next year.
SUPER windy here. Wet and windy. Sequim hit 60 when we were there 😪. And Maggie, ugh…the thought of longer days starting…🤮.
Let's see, after the Saag Paneer, we had frozen pizza, then I tried my hand at Yakisoba. Easy and delish. Yesterday, we had leftovers from our Sequim lunch (Mexican) and tonight will be a broccoli fritatta.

Still in the deep freeze (below 0) with enough snow to look like it's the holiday season. The ski slopes are open only during sunlight hours. They are losing the 4:00 to 11:00 pm skiers but their food/drink business in the evening will surely increase.

Wally, Sorry about your neighbors but glad your DH is holding steady. I like Yakisoba but thought it would be difficult to get the noodles right. Any tips?

Last night was oven barbecued shoulder pork chops and butternut squash. The squash was especially good. The chops were cooked too long. They were lean for shoulder chops. Fatty meat is more forgiving.
Tonight will be leftovers buffet.
I'll thaw the pork roast to stuff and cook for Christmas. I just learned that my nephew Jacob looks forward to it at Christmas. I'm also making my sister's favorite dish, creamed spinach baked dish and Mrs. Inez's yeast rolls, the latter a favorite of sister's dh and DIL. DH is making one batch of his oatmeal chocolate chip cookies.
Wally, wouldn't it be great for your devil neighbors to move? Your meals are varied and interesting, as usual.

Wally…good to hear on the Fred Hutch consult. I am completely understanding about some neighbors. In college, my neighbors were great…but that hasn't happened again until we moved here where the nearest neighbor is about 1/2 mile distant.
Today we are shopping for the last little bit of stuff we need for Christmas and "the day after" dinners.
I'm thinking a whole chicken a butternut squash stuffed with wild rice (and lots of other stuff) and the jasmine rice-chicken dish. Probably mashed potatoes, gravy, glazed carrots and some sourdough dinner rolls.
MIL says she would get too tired to come to dinner here, but we will go visit her.
So it will just be DD, Sharon and I. I need to reduce the meal size—no more "feed the 2nd Marine Division and still have leftovers" sized meals.:-)

Carole, I appreciate the accolades on my meals. I'm just lazy by nature and try to use up stuff, if I can.
Maggie, I get the prepackaged yakisoba noodles (vac sealed in the refrigerated section of the grocery). I was shocked one of our local grocers had it. I may stock up when we go back to Seattle in January and pass the Asian Market. It is as easy as pouring hot water over them or adding a bit of water in the pan, cover and steam till they separate. I suspect any noodle would work, just cook first with a little bit of baking soda to give it that "springy" quality.
Leftover fritatta tonight. xmas-eve will be a ham-steak with cauliflower in cheese sauce and either beans or a sweet potato—DH's choice. Hope we have leftovers for xmas day…or as the trend is this year..christmukah.

Spent the day prepping for tomorrow's annual dinner. Tomorrow the kids will come to spend the night. Dinner will be filet of beef bourguignon with roasted potatoes and green beans as sides. Dessert will be white cake with raspberry and dark chocolate sauces. This meal will be around noon. Dinner then will be assorted finger foods primarily provided by DDIL, although I have made Swedish meatballs and little smokies in bbq sauce as my contribution. Besides eating, the day will be spent watching Christmas movies and just chilling. Wish we had some little kids.
I'm blessed with good neighbors thankfully but we've had our share of bad ones too. Wishing you relief from yours Wally.Carole - I already have the black eyed peas for hoppin John lol.

Nance, That holiday meal sounds delicious as does a dinner made up of appetizers. Since it’s way too cold to eat outside DH and I will have a turkey dinner by ourselves. I should move to the southern hemisphere, lol.

Wally - I buy the Yakisoba noodles from Costco that have some vegetables included in each individual package.
I've been so busy thinking about meals that I'll make when my son is here in January that I never considered what I will make for Christmas Day. Hmmm. Tomorrow I will make pan steamed asparagus with garlic. Probably accompanied with tomatoes & cottage cheese. I took some Italian meatballs - half beef & half pork - out of the freezer for Christmas day. But whether I will serve with a marinara sauce or with a beef gravy sauce is to be determined.

Everyone’s meals sound so yummy ! This morning made the black bean vegie chili, with whole wheat biscuits . We’ll have that with a side salad tonight. And my favorite, A pumpkin bread pudding (vegan) and vanilla bean whip cream. (Made with tofu) . Tomorrow going to my sisters house, for finger foods and salads. A quiet holiday. Dinner tonight was Butterball soup, which I make every Christmas. It will likely be lunch and dinner for several days since I love it so much.

I shovelled snow, the price of a white Christmas, and baked orange cranberry bread.
Dinner tonight was homemade pizza with sausage, black olives, mushrooms and green peppers.

Christmas Eve's meal was 1/2 a baked potato with LOTS of butter. And two chewy pecan pralines. I prepped the asparagus so tomorrow I'll be steaming that with garlic and serving with pork & beef meatballs - probably in a beef broth or burgundy type sauce over Bob Evans mashed potatoes. Then I plan to make some potato salad with petite red potatoes for the rest of the week.
I good friend brought me some homemade Sand Tarts. Yum

We are visiting family in New England so no cooking for me just helping as I can and kp. My SIL is making a crown rib for Christmas. I'm not great cooking meats except in the crockpot (!) So DH is pretty excited.
I'm looking forward to circulation returning to my hands and feet once we get home -- expected to be in the 70s. It's been about 15 degrees here!
