We had leftover beef and vegetable soup last night. I'm thawing a ribeye for tonight.

Carole, its even been cold here over in NW Wisconsin. Been just puttering around the house we're renting here for the last week. Last Friday had to bring my cousin a prescription she needed from town out to her as she was too sick to come into town to get it, so hubby and i got it for her and brought it to her. My aunt in thnking us for doing it made dinner and let me raid her garden for fresh produce. Probably will have more coming this week so it will be run to storage to get my canning stuff so i can do that when I raid her garden again! The last time I got three and a half sandwich bags full of crushed tomatoes.
Made chili last night so tonight, i am going to cook up a little pasta and throw it all together and maybe pan cook some garlic bread to go with it.

DH grilled the ribeye and mixed up a sour cream and horseradish sauce while I fried breaded eggplant slices. A wonderful dinner. Leftover ribeye and eggplant. I plan to make a casserole/hot dish with the eggplant.
Brrrr… It's cold this morning. I'm looking forward to return of 70's next week.

We had so much fog yesterday, the temps never got over 55 as our high. Happy Dance! It was so beautiful to see the fog bank and the wafts of fog through the pines…a great ride into Sequim yesterday. Sticker shock on prices.

I love reading about the cool weather… starting to call down here to the 70s . Looking forward to sweater weather. The new Semester started so have been trying once again to cook in advance over the weekend to last for 4 days into the week. Have 11 weeks left of the CSA. Made beets and sautéed collard greens with garlic and ginger flavored with soy sauce, one of my favorites. And sautéed celery, yellow peppers, zucchini, onions, garlic and vegan sausage to go with it. Quite tasty! Found a new food blogger for salads and they had a sourdough starter recipe ! I want to try my hand at bread making this winter. . I know many of you make your own bread, I look forward to learning.

Wally, I like fog but would rather not drive in it. Prices are way up for everything.
Rhonda, It’s great that you have another 11 weeks of the CSA. I hope your new semester is off to a good start.
It rained last night and while it is not exactly cool it was nice to walk when the temperature was 70. On Friday they finally replaced the float arm in the propane tank so the gauge will work. The workers had to empty the tank and burn the vapor off first so there was quite a spectacular flare to watch. The good news is that the 25 year old buried tank looks almost new.
Dinner tonight was creamy lemon basil chicken, sautéed asparagus and mashed potatoes.

DH made a HUGE pot of corn chowder yesterday, using one package of frozen fresh corn. He had to dig out the stock pot which is seldom used here in MN. This batch of chowder was better than his first attempt. I took some over to Mary and we have ample leftovers.
Warmer weather is returning today so we can enjoy being outside for the next ten days. We like cool, but not "stay inside with the heat pump running" cool.

Made beef stew in the crockpot today, with a side of biscuits. DH had two full helpings and commented on how it tasted as good as it had been smelling all day which made me smile.
Accompanied by a nice red Australian wine.

We had our own meatloaf Monday with meatloaf out of the freezer and Bob's mashed potatoes. I tried the version with sour cream and chives and didn't like it as well as the original. I made brown gravy with a packet of McCormick's gravy mix.

Reader, The wonderful aroma is an incentive to prepare meals that cook for a while. I also love the smell from baking but I would be tempted to eat more than I should.
Carole, I’ll bet the mashed potatoes would taste better if you added your own sour cream and chives to the regular ones.
Wally, Hope you get fishing. That is more important than what you have for dinner.

We spent hours at the dermatologist's office yesterday. My appointment with the NP didn't take long. She froze some small growths on my face. DH's session was much longer and more complicated. The skin graft on his ear was successful. I won't go into details but he had pain last night and didn't sleep well.
Yay on fishing. Give us a report.
I made an oven dish for dinner with leftover fried eggplant, a homemade tomato sauce, whole milk mozzarella and parmesan cheese. The oven was the outdoor gas grill. We both enjoyed the dish a lot. Side was a chopped salad.

Carole - glad the skin graft for DH was successful. I had 14 or 15 places frozen last week and the scabs are just now starting to peel off.
A neighbor brought me some hot, homemade chicken soup this afternoon. Creamy & no noodles, but it was packed with carrots, broccoli, onions, barley, and chicken. Perfect timing since I'd missed lunch.
So my leftover meatloaf & boiled new potatoes will have to wait until tomorrow.

Carole, I'm sorry your DH's ear is painful but glad that he doesn't look like Vincent van Gogh. You inspired me to buy some eggplant.
Minus, That chicken soup sounds chock full of delicious ingredients. Having dinner set for tomorrow is a bonus.
This afternoon I saw a cardiologist working his very first day. He was nice and knew his cardiology but was clueless about Medicare part D. In spite of my explanation he ordered meds from a specialty pharmacy not in my plan. I’ll have to call tomorrow and get a nurse to sort it out.
Dinner tonight was cube steak and parsnips in onion gravy with mashed potatoes.

Carole, hope your DH's pain can be resolved…any updates on his jaw/neurologist?

Maggie, good luck getting the meds sorted. I swear no one listens…Patients spend so much time explaining and then doctors wonder why patients are not compliant. RANT.
No fish. Beautiful out there, which is a balm for the soul. I threw two boneless skinless chicken thighs in the crockpot with some salsa. Sweet potato and garden green beans for sides.

Carole - I either missed it or I've I forgotten - why didyour DH need a skin graft? I had a spot frozen on my ear that continues to get red and irritated because that's the side I sleep on. My derm suggested I get a pillow with an ear hole, which I did. I hate it. I'm picky about pillows anyway and this one isn't cutting it. I wish him luck.
Tonight was another sort of blue plate special - Salisbury steak with onion gravy, tiny salted potatoes and fresh green beans.

Nance, dh had a procedure for skin cancer on his ear that left his ear needing a skin graft. He just said the pain wasn't as bad last night. Wally, the jaw pain hasn't been bad lately. It's weird the way the pain comes and goes.
Dinner last night was a shared pork steak cooked with barbecue sauce, fresh yellow beans with new potatoes and fresh sliced beets with vinegar. Everything was good but the beans were delicious.

Carole, how do you use the vinegar on your beets? It sounds very interesting. I eat beets but I don't love them. Maybe this would help.

Dinner tonight is 5 cheese tortellini with Rao’s marinara topped with Parmesan and a side salad. Plenty of leftovers for tomorrow.

Wally, I also eat beets but don’t love them like DH. My favorite way of using them is in an easy salad made from chopped peeled cooked beets, a diced peeled cored sweet apple, chopped celery and mayonnaise.

I've made fresh beets and think the time it takes to cook (considering I'm not in love with them) is just as easy from a can. Apples are a no-go for OAS. Mayo is an interesting thought. DH loves anything with mayo, LOL.

I buy canned Shoestring Beets. They are fantastic in a green salad.

I only like fresh beets especially golden. My favorite way to fix them is roasted in a foil packet with herbs and olive oil.
Tonight was at our lake's clubhouse restaurant. The special was French onion soup accompanied by a mini ham slider with aioli. They were both excellent.

For me, fresh beets have much more flavor than canned. I boil the fresh beets until a knife goes through fairly easily. Let them cool, peel, slice and sprinkle with vinegar. I used a white wine vinegar on the current batch. The golden beets are a little sweeter.
Last night's dinner was unusual, fun and delicious. Eight of us gathered on Mary's deck for fry bread tacos. I supplied ground beef, sour cream, and Newman's salsa, dh's preferred salsa that we always have on hand. Hugh brought guacamole dip. Mary provided shredded lettuce, chopped tomatoes from her garden and the fry bread. She likes her fry bread with butter and brown sugar. The butter and brown sugar were there for others to make a dessert taco, if they wished.
I love fry bread tacos. The bread is crunchy and the taco ingredients go so well together. We agreed that last night's meal should be added to our list of summer communal meals.

Carole, your meal sounds sort of like Arayes (they use pita bread). YUM!
My fritatta turned into more of a crustless quiche and I think DH preferred it (fluffier eggs). Leftovers tonight.

We love fry bread tacos (we know them as Navajo tacos). I haven't made them in a long time but I need to. A while ago I discovered a "cheaty" method is to use Rhodes frozen roll dough. They're not quite the same but easy to do although they're not difficult to make from scratch We first ate them at a snack bar at Bandolier National Monument many years ago.
I had an early lab appointment this morning so we went out to breakfast after. No lunch today ! Since more food is far from my mind dinner is a complete unknown.

The only shoestring beets I've ever found is the Kroger brand. -0- added sugars & 6 g total sugars. But yes, there's 250 mg sodium. Still, that's less than most Campbell's soups. I generally drain & rinse before I use. Researching on line shows that probably available at Ralphs (not in Houston)
I ended up 'trapped' on an hour long phone call so have not prepared dinner. Looks like left over fried rice. I did flash 1 minute boil some Campari tomatoes to remove the skins. And prep 3 hard boiled eggs. I try to do those things on the day the trash is picked up so I don't have to store residual waste in the freezer. It's way to hot in Houston to toss in the garbage until the day of pick up.

Fried bread tacos are also new to me. They sound delicious.
Yesterday my PCP’s nurse called in a panic about an EMG nerve test a hand surgeon at the big NH hospital had ordered but will not follow up on (hand surgery won’t help) and has transferred to my PCP. All of a sudden a six week wait to evaluate my case turned into a neurologist appointment on Monday. I’m not complaining but it makes you wonder.
Dinner tonight was chicken in a sauce with spinach, mushrooms and sun dried tomatoes.
