I like a crustless quiche. A good reminder, Wally. Spinach is always an ingredient, and cheese, of course.
I went to Costco yesterday and ended up spending almost $300. Without cruising at least half of the gigantic store. It is very nice. There were food sampling stations everywhere. One impulse buy was Raos eggplant casserole. The price was $17 for two trays. Reasonable enough to try it. Figuring in the price of eggplants and Rao's, it's probably less expensive than homemade. I also bought a rotisserie chicken and will use some of it for chicken enchiladas tonight. I have ripe avocados in the refrigerator for guacamole.
A woman at one of the food sampling stations spotted the Raos eggplant box and volunteered that she had bought it for herself and her daughter and they both loved it. She first tasted it when it was featured as a sampling item.
Dinner last night was a small pork shoulder chop for each of us. Side was green pea salad. Instead of cubed cheddar, I used cubed gouda from Costco.
My house freezer is now stocked with meat.
One negative about Costco. You can't check out with an app.

Minus, I haven’t had it forever but I really like Tuaca (as well as vermouth and Italian wine.)

Dinner was good. I made 16 corn tortillas and used 8 of them in the chicken enchilada dish. DH made guacamole.
Tonight we'll have one of the trays of Rao's eggplant casserole.
My laptop says it's 49 degrees outside and Sunny. I can see the Sunny. Once we have some rain, desperately needed by the shrubbery, I can start opening up to outside air. Until then, I want to keep the dust and pollen out. When I go outside to do yard work, I immediately start sneezing. The golden rod is thriving in our neighborhood.

Carole, I hope you enjoy the Rao’s eggplant casserole. The nearest Costco is almost two hours away so I’d have to make an eggplant casserole using Rao’s sauce from scratch. That is doable, however.
The ragweed here has gone. It’s not been a year for spectacular foliage like it was two years ago, probably because of the lack of rain. I’m happy with the sunny weather with temperatures in the 50’s and 60’s.
Dinner tonight was Tuscan garlic shrimp on rice.

I'm thawing tuna steaks for tomorrow. No idea what the sides will be. DH wants rice pudding, so a side may be rice. My DH does not miss ragweed (awful allergies for him). Since we lost our last cat, my allergies this spring were non existent. We'll see what next year brings. Maybe it is my MGUS and worse immune system…who knows. I didn't miss having the nasty ick.

The Raos eggplant parmesan was ok. The eggplant texture was different. Dh's comment was that it would work for a night when I didn't feel like cooking. I cooked it in the oven at 375 degrees for 1 hour. For the sake of contrast, I will cook the other tray in the microwave. Not sure if I will buy it again. The sauce was definitely Raos, a plus.
We're going to the home of friends tonight for shrimp meals from Pontchartrain Poboys. We'll be picking up the food on the way and sharing the cost. Instead of a shrimp poboy, dh and I will have the shrimp platter and skip the bread.
The weatherman promises rain this weekend.

Carole - I'm not a fan of the Raos eggplant either. I thought the eggplant was limp and tasteless.

Lost power for 2 hours this morning. More winds expected. Ugh….I love Fall and Winter, but not the winds.
I bought some of the frozen Roa's but haven't had it yet.

Dh will have leftover tuna steak and I'll make a sashimi "bowl" with a tuna steak and some scallops for tomorrow. I made enough rice to make rice pudding; dh's favorite.
A really nice guy came out to look at our dishwasher/floor situation and will text us with suggestions and help. This will be the most expensive dishwasher we ever had. Sigh.

Wally, I don't think I've ever known of a problem similar to yours with the floor and the dishwasher. Meanwhile, I assume you're washing dishes in the sink. I'm still luxuriating in having a dishwasher. A main benefit is having a place to stow soiled dishes out of sight until the dishwasher is full. During the summer I seem to be constantly washing dishes from the recent meal because there's no extra countertop room. DH does share the task.
I made a loaf of whole grain bread with Einkorn flour this morning. The dough didn't seem to rise as much as I expected but the loaf turned out fairly normal size. Now I can start enjoying a slice for my breakfast toast with peanut butter and a choice of banana, honey, or jam topping.
Dinner tonight will be the Costco spinach and cheese ravioli in alfredo sauce and a salad. I bought a sack of avocados at Costco and they're all ready to eat.
I watched cooking shows on PBS today and wouldn't think of going to all the trouble of making moon pies and ice cream cake. Both looked delicious but what a lot of labor was involved. Multiple steps and multiple ingredients.

I meant to make a comment about the Costco eggplant parmesan. If you didn't make that dish from scratch yourself on occasion, you might not be as critical as Nance and I are. We know how good the dish can be with fresh eggplant.

I made rice pudding (heavy cream vs milk) for dessert with our leftovers. I ate more than I should have. DH needs to gain weight. I hope I'm not going to follow him.
Carole, we googled our problem and it is waaay more common than one would imagine. I'm dismayed, but not much to do about it.

Wally, Sorry that installing your dishwasher is going to involve a minor renovation. I'm glad you found someone to help, however.
DH loves rice pudding. Once I dropped the dish and two farm cats ate the whole thing which made cleanup easy. I'd be sure to drop it now so it will have to wait. Bread pudding is less likely to spill so I could make that but I'd have to make custard as well, not my favorite thing to do.
Carole, I enjoy watching TV chefs making complicated dishes and desserts but what I cook has to have relatively quick and easy prep. Some of the delicious looking meals inspire me to make something similar but easier.

I was raised in Northern California. My Mother had two dishes that were often waiting for us when we walked home from school in the rainy winters (in our yellow rain slickers & rain boots). No one drove their kids to school in those days. And there was certainly not a bus for a destination under a couple of miles. One of the treats was rice pudding (with raisins of course) (and of course heavy cream). She made it in a double boiler and I'm guessing it simmered on the stove most of the afternoon. The other was ham-hock & beans - which I know she cooked over low heat for many hours. The third treat was popcorn in front of a roaring fireplace accompanied by quarter slices of cold apples.
As an aside - my Dad didn't care for either rice pudding or ham-hock & beans. Since he traveled frequently for work for several days to a week at a time, we were able to enjoy these things frequently.
When Dad was home - it was meat & potatoes - I expect like most men of his generation who could afford meat. Both of my parents were born before WWI.

I 'm not sure I have ever eaten rice pudding despite all the rice that was cooked in my mother's kitchen. It must not have been a favorite with my parents. Bread pudding was very common. The New Orleans version has whiskey sauce.
I used a Rouse's supermarket store brand alfredo sauce last night with the Costco ravioli. The sauce costs about half the price of Raos and it is quite good, more lemony. The jar is smaller, which is good, since I use only enough to sauce the ravioli.
Tonight will be chicken and sausage gumbo.
We got a real downpour early this morning along with lightning and thunder.

I never had rice pudding till I met DH. Even then, it took me years to try it. I use a Bain-Marie method in the oven. Frankly, they can have the rice, I love the custard. Reminds me of Creme Brulee without the brulee, LOL.
I'm making nachos tonight and will include some ground beef this time. I'm thawing lamb chops for tomorrow.
It has been raining here for several days. The winds have finally quieted, for now.

I remember eating rice pudding while on a Colorado River raft trip in the Grand Canyon. We had been married four years before we got around to our "honeymoon". :-)
Tonight's dinner will likely be the chicken-Jasmine rice dish (leftovers). It actually tastes better as leftovers than when first made.

I'm glad we installed a new dishwasher before we moved in here. At least we know what's under it.
I love rice pudding. I never make it. I don't know why except that Dh doesn't share my love of rice. When I was a child my great grandmother would make me rice porridge for breakfast. It was sweet and comforting and I loved it. I haven't had that since.
Tonight is a roasted Cornish hen with boxed stuffing and sautéed spinach.

Our new dishwasher will be delivered on Friday. I have no idea what they will find although it looks like the flooring goes back at least a bit. Rice pudding is not a regular on our menu but you all have intrigued me to cook it. It will have to be a day I have energy. We're going out tonight to celebrate my DDs new job (ER Nurse) and her new certificate. Don't know where yet…

Tonight was chicken fried steak and mashed potatoes with cream gravy and squash, it was really good. Tomorrow will be soft tacos, unless chemo taste buds say otherwise.

Intolight, I had heard of dishwasher replacement problems so we made sure the floor went down before the dishwasher was installed. Congrats to your DD on her new certification and job. I hope you enjoy your meal out.
Carole, I use an Aldi brand jarred Alfredo sauce which is good and much cheaper than Rao's. The difference in the tomato sauce makes the price of Rao's worth it. Their pizza sauce is about the same price as the store brand but much better. The Irish put whiskey in the bread pudding itself and serve it with custard. My hands are not up to the amount of stirring that requires.
Wally, I cook rice pudding like you do. I'm glad you don't have to worry about the power going out.
Nance, I still like cream of rice cereal for breakfast even though my family thinks it is strange.

Chicken fried steak, the ultimate comfort food.
The chicken and sausage gumbo turned out really, really good. DH and I each ate two bowls for dinner. As always, served with rice.

Carole, The catfish down south are much bigger and meatier than those up north which are hardly worth eating.
My sister who lives in San Francisco is in Boston visiting friends. I have scans tomorrow so I met her for a takeout dinner from the Parish Cafe. The restaurant has gourmet sandwiches created by 16 different local chefs on their menu. I had the Zuni, smoked turkey on a toasted tortilla with bacon, scallions, dill havarti cheese, cranberry chipotle sauce and sour cream. DS had the eggplant Milanesa. Both were excellent. It’s an interesting concept for a restaurant.

Maggie, the catfish is farm raised, not wild. We each enjoyed a fillet last night, pan seared/blackened. I oil the fish and heat the dry pan. Side was sauteed zucchini and yellow squash mixture sprinkled with romano cheese.
Tonight will be salmon.
Today will be sunny and warm, up to 80 degrees. Tonight colder and windy weather arrives.

Gave my "go to" celebration restaurant a 2nd chance today. Last week the "wedge" salad was dressed with vinegar & oil & some kind of red sauce. Well - wedge pretty much means blue cheese dresssing…. It was inedible. The steak was only the size of a silver dollar. They brought & charged for a "call" drink when I ordered bar gin. The one cup of coffee was $5.50 - and was cold. Lunch was $75.00. Ummmm - nope.
Today I ordered lobster bisque. It was cold and there was less than 1 tsp of lobster. The restaurant ran out of bread by noon. Then my selection of mushroom caps with crab stuffing tasted like "stove top stuffing". No crab taste and covered with an obnoxious red sauce.
Too bad really since this has been a "go to" for special occasions since the 1980s. I will write the owner since I've had a long time relationship with the family. But I will also plan on a different venue for holiday dinner this year with my ex & his wife and my nephew's family.

Minus, I wonder what happened to cause this change from excellent to dreadful. Expensive dreadful. I'm a big fan of wedge salad and the dressing is definitely blue cheese.
As planned, dinner last night was baked salmon with a topping of yogurt, mustard and dill. Side was creamed spinach, a favorite of mine. Salmon was perfectly cooked.
Tonight will be the second round of chicken/sausage gumbo. The weather has turned cool and is gumbo weather.
