    My poor baby is so unhappy:(  I am hand feeding her because she cant figure out how to eat or drink from her bowls.

    Tazzy, could you share how you make your fish tacos?  I love fish tacos but have only eaten them in a restaurant.  I bought some corn tortillas recently but the pack is still unopened. 

    Last night's dinner was earlier than usual because dh had a woodworker's guild meeting.  We had pork piccata made with pork loin medallions and a green beans dish I really like.  I steam the green beens in chicken broth, pour off or cook off the broth, add a little EVOO and saute, then sprinkle on grated parm. 

    Wed. golf was rained out so I may be forced to do something productive!  Two obvious choices are housecleaning and taxes.  Leaning toward downloading Turbo Tax and getting started on tax return.  Hoping for a refund with all the dental expenses in 2012.

    Michelle- Yay for your trip!  You have so earned it and all that vitamin D will be good for you!

    Carrie- Your poor puppy :(  She does look so sad.  What a good mom hand feeding her.

    School was cancelled for DS this morning because o road conditions.  We have had a very lazy morning and to be honest I am bored out of my mind.  Meeting a friend for lunch that we had planned over a month ago.

    I need ideas for dinner....chicken ideas...

    Oh, so sad, Carrie. Poor pooch! Our last schnauzer (Lacey!) spent a lot of time wearing an ecollar since she had skin allergies, which cropped up every summer. She amazingly adapted to the darn thing, but since she was small, so was the collar. Your poor pooch has a lot less space to navigate through doorways. That Dr. Foster's collar looks more gentle, doesn't it?



    Michelle, have a great Hawaiian trip....and let's plan Big Nite at La Morra next year!

    Carberry~(just catching up here) how long are the shirts from AE? My DH is 6' 5", and 290 lbs. Very long torso. I did find him jeans IN THE store 1 time that actually fit him!!! Gee it's so hard to shop for him. Sorry about your dog..aw! poor girl!! We have a silky terr., and to see my DH driving down the road with him on his lap...is too much! lol

    Laurie~Sorry no chicken ideas, but I did come across a smothered pork chop recipe last night.....oh my was it good!!

    I have a weight watchers fish taco recipe that I'll dig out. It's really good, but for a quick one, Costco sells a frozen chili lime tortilla crusted tilapia that is perfect.

    This isn't the ww recipe, but it's similar:



    Tortilla crusted chili lime tilapia fish tacos



    Preheat oven to 375ºF.



    1 whole Jalapeno, Seeded And Deveined

    ¾ cups Cilantro

    ½ teaspoons Chili Powder

    ¼ teaspoons Cumin

    1 teaspoon Seasoning Salt

    18 whole Tortilla Chips

    1 whole Large Egg, Beaten

    2 whole Tilapia Fillets, cut into strips





    In a food processor mix the jalapeno, cilantro, chili powder, cumin and salt. Add the tortilla chips and mix until it comes out to be small chunks. Remove the mixture and place on a plate.



    Add the egg and lime juice to a small dish and dredge each tilapia strip into the egg wash and coat each side. Place the tilapia in the chip mixture and pat the crumbs to the mixture to adhere to each side.



    Spray a foil lined baking sheet with non stick spray. Place tilapia strips onto baking sheet and cook 10-12 minutes or until fish is flaky turning over after 5 minutes.



    This can be fairly spicy so adjust the jalapeno to your taste.



    Serve with tortillas, extra lime and spicy slaw.

    Annemarie They are long enough that they cover his butt when wearing his jeans low like the kids do these days.  I got the slim fit (more tailored) because he does not tuck them in.  With him it is his arms, they are like monkey arms LOL and the shirt cuffs go to his wrist.  My husband is also very tall and i like the shirts from Eddie Bauer for him....come in talls also.

    Laurie  How about chicken quesadaillas? There is also a chicken, broccoli, rice casserole with mushroom soup that is pretty basic, quick and easy.

    60 degrees her today, so got out and hit the outlet mall.  Really scoured the sale racks and got some good deals. Oh boredom can be costly.

    Lacey  yes that other collar does look much more gentle.  the vet assured me that she would get used to it and not know its there.  hmmmm not so sure...after a full day of not drinking, I had to put some cheese cubes in the bottom of her water dish to get her to drink, ha ha she finished the whole bowl to get to that cheese.

    my DH would love it if I made fish tacos- but I think he would be the only one who would eat them.  I've never had them?

    Thanks for the chicken suggestions.  I have no black beans for the salsa chicken.  I think I am going to make some form of chicken Madeira.  I don't have everything to make it my traditional way that I do but I think I can whip something up that is simple.  I wish I had sved the recipe I did last time...dumb.

    Laurie, thank you for posting Michelle's sauce recipe.  I will print it out and Auntie's fish tacos recipe, too.

    We're having leftovers tonight.  One serving of chicken marsala and one serving of pork piccata.  We'll have to decide who gets what!  I'll make some mashed potatoes and a salad. 

    Yay!  I had the crowns set on my two implants today, so I now have teeth on the upper right.

    I'm wondering if he is a party animal and ended up with the lampshade on his neck??

    All of your recipes sound so good.  I just got back from California and have been craving fruit and seafood.

    Dinner last night was shrimp (a lot) with cocktail sauce and avocados, same for tonight, and lunch was sushi and will be for tomorrow too. 

    I will try to come up with some better recipes.

    Yippee Carol!! Those implants are a long process.  Congratulations :)

    We are getting 60 mile an hour winds tonight throughout the night into the morning.  They are capable of downing trees and causing power to be down.  I hope that everyone in the area of the storm is safe.

    For the Slaw



    3 cups very thinly sliced green cabbage



    1/4 cup coarsely chopped fresh cilantro

    1/4 c mayo

    2 tablespoons fresh lime juice

    1 teaspoon sugar (optional)

    1 teaspoon canned chipotle chile in adobo, minced (I keep a can of this in the freezer)

    1/2 teaspoon kosher salt



    If I'm in a hurry, sometimes I just use a bit of chipotle dressing in bagged cole slaw mix along with a little mayo. Serve on top of the fish tacos.

    Just wanted to let you all know because you are like family to me. My beautiful sister Cindy passed away last night. We think she had a severe asthma attack but had a tumor on her pitutary glad and other issues she was an angel. She was my best friend in the whole world and not sure I will be able to go on with out her. Chuck had to call in a sedative for me so guess thats why im able to post now. But probably be a long while before im back. Hope you all stay safe and Michelle enjoy your trip im glad you get to go back there and enjoy it.

    carole:  heres my taco recipe.   Mind you the Costco one that auntie mentioned sounds really good too.

    • White fish.. I generally use tilapia
    • Imitation crab meat
    • 1 tsp olive oil
    • 1 small onion, chopped
    • 4 garlic cloves, finely minced
    • 2 jalapeño peppers, chopped (seeds removed for less heat - I keep mine in)
    • 1 cup diced tomatoes
    • 1 cup corn (fresh or tinned)     
    • 1/4 cup fresh cilantro,      chopped
    • 3 tbsp lime juice
    • salt and pepper to taste
    • 1 medium avocado, sliced
    • lime wedges and cilantro for      garnish

    Heat olive oil in skillet.  Saute onion until translucent then add garlic and mix well.  Place tilapia and crab meat in skillet and cook until the fish flesh starts to flake.  Add jalapeno’s, tomatoes, corn, cilantro and lime juice.  Saute over a medium high heat for about 5 mins.  Break up the fish and mix up well.  Season with salt and pepper. 

    For the tortillas – to get crunchy shells I bunch up some aluminium foil a bit bigger than my fist.  Lay the tortillas over the top and spray with Pam – then put in the oven at 375 for about 10 minutes… or until they are browning slightly on the edges.  Remove from oven, turn over and voila!

    Spoon fish taco mix into the tortillas and garnish with sliced avocado and cilantro and lime wedges.

    Tonight is bbq chicken, DH wants fries with his... so do I actually - cant remember the last time I had fries.
