Lacey, that dish sounds delish! Debbie I haven't tried kale chips.   It's something to try.

Tonight was mini chicken pot pies and applesauce.

SpecialK - what did we do b4 google? Well, I did call the reference librarian a few times I will admit. Maybe you shoulda been a writer for Jeopardy?

I found two frozen hamburgers and we have 2 leftover buns. Perfect unless they are beyond usable. Then I don't know what. Trying to finish a Bible study I attend on Tuesdays that I just cannot get into so not much cooking.

a herd of beer - is that like a congress of eagles??

luvmygoats - DH thinks that because I have such a fund of trivial knowledge I should be a Jeopardy contestant! I'm too afraid the subjects would end up being things I know nothing about - I'm a chicken!

Yesterday I had a typo on another thread about the Reproduction forum. Instead of the reconstruction forum..... LOL oops.

Had leftovers today. Guess I'll have to cook tomorrow! LOL.

Specialk I don't care much about entertainment.  I'd probably get movie trivia.

LMG, if I hadn't felt guilty enough to eat the leftovers that's what I would gave msde. I had 1 hamburger in the freezer and a roll left from the ham I bought last week. LOL

Nance did you make the chicken pot pies.

Carole congrats on your weight loss! You keep going in the right direction!

Debbie don't the kale chips get real fragile after baking? I'd think you'd have nothing but green dust. But everybody makes them. Much live to all.

Monica, I did make them. They were actually like hand pies with a chicken and veggie filling.

Oh yum. Hand pies sound wonderful. My DH loves pot pies. He lived on those during college. But I'm real sure they didn't taste as good as yours! LOL

oooooh! Good news X 2. Well ok may not THAT good but unexpected refunds! One from my Sony e reader. A settlement check for that lawsuit about price fixing by the sellers of ebooks. I thought it would be like 10 cents. Pleasantly surprised it's over 50$. LOL. Guess that shows how many books I buy. Then the assistance device and clothing store must have gotten a bigger insurance payment than we thought because I got a refund from them. So it's not much but it again was unexpected! Just had to share the everyday kind of happy ! LOL.  Maybe I'll go out for dinner! LOL

Blessings to all...you and your families are all in my prayers as you face life's difficult challenges.

Today is my oldest son's birthday and he turns 21. His requested menu is baby green salad with peppered ahi tuna to start, Churrasco (skirt) Steak with chimmichurri sauce (made with fresh parsley, garlic, onion, salt, pepper in olive oil).  Sides are Repollo (shredded cabbage and carrots with vinegar dressing)  and Steamed asparagus  and bread drizzled with olive oil and garlic toasted in oven. Dessert is an Ice cream cake.  We are eating late since my daughter has dance practice til 830.

Son # 2 turns 13 on the 3rd.  So far requesting lobster tails grilled (spinach, parsley, butter sauce) and Enchilado de Camarones (shrimps in a tomato based sauce) served over rice. Dessert is a chocolate chip cookie cake.

Lots of chicken for the rest of the month....

    Take care,

    Vivian

moon - I got that e-book class action settlement thing too!  Of course, just got my homeowner's insurance bill - much higher than last year.  Talked to the company and they recommend a wind mitigation inspection to see if our roof qualifies and, if so, a large discount.  Worth the $99 inspection fee - it would be a $1000 reduction.  The downside to living in a place with hurricanes, crappy drivers, and no state income tax - huge insurance fees for home and car, and very high property taxes!

Vivian, your celebratory meals sound fabulous. I'd be happy to come to your house for my birthday ;-)

Monica, that is a happy day! I only got $6 and change in the settlement :-(

Dinner was good, everyone ate a lot and I just finished the last dish that I am going to do for the night, the rest tomorrow. Need to stay up a bit am too full.

Special K,  my insurance went up close to 2000.00...... last year it did the same and I made changes to policy with deductible and benefits to lower it and I got it to a little over 200. from original amount. Now they did the same and I have no room to wiggle. I either deposit into escrow the amount over or the mtg  goes up.

AuntieN, you are more than welcome to come to dinner .

Moon, Congrats on the luck.....Do you play/have lotto in WI. ? If not send me some numbers I'll play for you, tomorrow is Powerball and Lotto here in FL.

Moon - I only got back five dollars & change.

Special - RIGHT ON.  We also have no income tax and VERY HIGH property & vehicle taxes.  And hurricanes.  I understand all houses on the water now have to have separate property insurance AND flood insurance AND wind insurance.  Sure glad I'm inland a ways. State insurance board - at least it Texas - is worthless as far as I can tell.

Popcorn for dinner last night.  I thought of Bedo.  Tonight was Lobster Bisque from Costco.  Sure not from the East Coast, but not too bad.

Wow, naiviv...birthdays in your house are true culinary celebrations. I may head down there in June! ;)

Sorry to learn of the additional amounts to some of your house ins policies. I don't suppose that with our crazy weather patterns the ins companies will be reducing fees any time soon!  :(

Nance, Well everyone I TOLD you I buy a LOT of books! LOL

Viv that sounds so good. Your kids have great taste! Yes we have the lotto here too. I just don't usually play. But maybe tomorrow! LOL

Minus, Costco has a lot of good soups. I've NEVER Seen Lobster Bisque Around HERE though.. LOL

Special, don't get many hurricanes here in the midwest.... LOL but we do get tornadoes. And wind shear. As a matter of fact we had one years ago that ripped our siding off one side of our house. Took our neighbors roof off. And downed so many trees they offered mulch free for 4 years.... LOL

Tonite for supper I made  boneless ribs from Sendiks and put them in the cast iron pan. Threw leftover kidney beans in leftover rice with spices. And there was supper.

    Much love to all.

The unfortunate thing about living in FL is that half the risk for damage to homes is in this state. It is not a question of if, it's a question of when. The state legislators have kept somewhat of a lid on rates but there is a state sponsored insurance company that is funded with surcharges on both homeowners and auto policies. So I am not only paying for my stuff I'm paying for everyone else too. It is ridiculous.

Count me in on high house insurance.  Our home isn't in a flood area but we pay almost $2000 for full insurance on a home that's in the modest range.  Just down the street is a subdivision with homes that sold in the 1 million category.  Goodness knows what their insurance costs.  Our main danger from hurricanes is trees toppling.

And we DO have state income tax.  I haven't done that return yet but the payment will be painful.  I guess I shouldn't complain because we are living off retirement funds that were paid into the accts tax free.

Today should be day 3 and final day of painting the living room!  No, it isn't a huge room but I've tackled it in stages.  The room will definitely be cleaner after I'm finished since I'm vacuuming underneath furniture that hasn't been moved since it was set in place.  I'm not one of those housecleaners who moves the couch to vacuum underneath it!  Now I'll have the job of rehanging the pictures after painting in the holes.

Last night's dinner was quick and easy and tasted good.  Seared catfish fillets, microwaved Green Giant broccoli with cheese sauce and a yummy green salad with blue cheese and avocado.

Vivian, your sons have excellent tastes!  And you sound like a great cook.

    Carole,

Thank you, my real love is making desserts. But I have to stay away. They are my weakness. My food repetoire is limited to a few things I do well. I need to be more adventurous and am getting lots of ideas from this forum. My 2 sons, since they were babies would eat anything ( all veggies, salads, meats, spices) and have both grown up with very adventurous palates. They are always trying new things (in restaurants or asking to go to different "ethnic" restaurants) . My daughter on the other hand could live off of chicken nuggets or  shrimp and macaroni and cheese or mash potatoes and she would love dessert ( especially chocolate) after all meals and  as snacks.

Insurance rant... flood insurance is also separate and mandatory for me. I live no where near any probability/possibility of flooding.

    Take care all,

    Vivian

Yesterday I made some butter, a batch of artisan bread dough, which will become bread for sandwiches, and dry brined a turkey breast.  Dinner was a simple affair, ham slices in a homemade bbq sauce, steamed snap peas and roasted sweet potatoes with butter and parmesan. The turkey breast will be tonight's dinner among with some roasted fennel, red onion and asparagus. The leftover turkey will be used for sandwiches. We eat a lot of sandwiches lol!

It's actually raining, a rarity recently. Makes me want to curl up with my kindle and a cup of coffee, but instead, it's off to the gym! Maybe later ;-)

carole - I don't live in a flood zone either, and not on the water - but my homeowners is more than double yours, and my house is not even worth what we paid for it!  I would be willing to pay state income taxes because I feel that the property tax rate here is an unfair burden on homeowners, and here it is disproportionate - I don't live in a fancy house but the first year (when our house was at its max value) we paid $10K in prop taxes.  We pay less now because the value of the house has fallen, but it is still high.  Thank goodness we get a credit for it on federal taxes.  Our local sales tax is also 7%.

Nance, you made butter!  I'm impressed.  How does one make butter?

I finished painting the living room today!  Yay!  I'm really pooped.  Didn't even get around to taking something out of the freezer until this afternoon.  Reached for a ribeye and have it thawing.  DH will cook it outside on the grill.  I'll cook some sweet potato oven fries and make a salad.  The fries are out of the freezer, too.  This week has helped me to understand why working women don't have time to spend a lot of time on cooking meals!

    Yay Carole, that's an accomplishment!

The butter is quite easy actually, here's the recipe:

It's too expensive to make all the time but it's really wonderful for a special occasion. It's really delicious.

    Naiviv,

Your sons have good taste in food or you are a very good cook!

I have no health insurance now, my "housesitter" did not think that it was important to send the 3 COBRA notices marked in red "Important information about continuing your coverage" So I kept sending the same amount, as I did not know about the $20 increase and it was cancelled.

I am back in New England and missing Ketchikan already.

    Carol, way to go!

Nance, I will have to start making bread.

Do you know a recipe that is easy without a lot of kneading? Or a lot of flour all over the place?

My cat is good at kneading, but I would have to put the dough on my stomach. And I don't want his kitty litter paws in the dough

    Picky Picky Picky  tomorrow I

have a telephone interview for a position here 3-5 days a week that ends in Nov. I can't bring myself to work fulltime or take a job with no end date." I don't want to work I just want to bang on the drum all day!" I really want to take the summer off and work in our organic community garden. We have100 farmers and every Thursday we give some of the abundance to people and organizations who would like them. Even so, by July, our neighbors should lock their car doors at night or they will find  unwanted "presents" of zuccini

Nance, I just read through that delightful sounding bread recipe! Gotta make it....:) Love how the baker has so many varieties offered, too.

Tonight I found some Trader's mushroom ravioli in the fridge, and cooked them up with some sautéed spinach and portabello mushrooms that were next to the ravs. Garden salad, too.

Tomorrow we are having dinner at one of our favorite restaurants, La Morra. They have a yearly, "Big Night" culiary event during which they show the movie of the same name, and serve the menu from the film. It is a wonderful night with the most delicious authentic Italian food. I may well havementioned it here  before. Can't wait for the timpano course! This year the small restaurant has changed the venue to a larger space since it is such a popular event....and we are contributing to the crowd by introducing three other couples to it. I look forward to reporting on it!

Bedo, hope you can get the ins. worked out. That stinks!

Bedo I'm sorry about the insurance. If you put your bread in a zip lock bag and put it on your tummy, I bet the cat would knead it. LOL

Nance the last time I made butter it was with my girl scouts about 25 years ago . LOL

Lacy that sounds like a wonderful night.

And for all you Florida and complaining about the insurance I'll remind you the next time it's 10 degrees here.... like this werkend"! It's supposed to get cold again. They are predicting snow again. That'll up set the daffodil that bravely sent up a shoot by the YMCA yesterday....LOL.  tonite was just chicken. I made 2 cause I bought 2. So i have leftovers. LOL.

I'll have to try that bread out as well.  Baking bread is one of my favorite things.  This one would make good use of my Dutch oven.

I haven't posted much lately....haven't cooked much either...and I haven't had much to post about.  My commute is now about 1 hour 45 minutes to get home.  Since I leave work at 5 pm, it's almost 7 pm when I get home and that's too late to do much cooking.  So what I try to do is cook a lot on the weekends so there is a lot of leftovers.  I didn't get a chance to do that this weekend because of helping the neighbors deal with the aftermath of the house fire.

Sharon has been getting more sore; her left shoulder and back and Alieve and/or Anvil doesn't help. I can see her wince when moves.  I'll be there with her at the oncologist appointment next Wednesday and hoping that the soreness can be fixed.  There's also a bit of scanxiety on my part.  Husbands can get that too.

Oh, the lamb potato pie....  A couple of finely chopped onions sauteed until soft and then I added a  small handfull of pine nuts and cooked a couple more minutes.  I then added a pound of ground lamb, and stirred in a couple of teaspoons of cinnamon and allspice and cooked for another couple of minutes.

I had already made mashed potatoes using a lot of butter and a little bit of milk to make them slightly thinner than normal mashed potatoes and seasoned them with a tiny bit of powdered clove...not even a full pinch...a little goes a LONG way.  I added some pepper just for good measure.

So, I used a casserole dish...put a layer of mashed potatoes in the bottom of the dish, added the lamb mixture filling and then covered the filling with more mashed potatoes...and then baked uncovered at 350F degrees until I decided it looked done enough (the top was starting to brown).  This was about 45 minutes.

I have no idea if it tasted right.  I had a different lamb recipe from a book that I was going to use and I was telling someone at work about it when another coworker (from the middle east) told me this recipe...which I cooked from memory.  He was going on his memory of how his wife cooks it, so it may be quite a bit different from the original. :-)  Still, we thought it was pretty good.

For whatever reason, I like the "oral history" recipes more than the cookbook ones.  The ones from old hand written notes are also a lot of fun.  I guess it's the idea that when it's a printed in a book recipe, there is less temptation to experiment.
