    I buy Light sour cream and would use it.  The recipe sounds delicious.  I might add sautéed colored peppers for additional bulk.  And black beans!  And lean pork loin cut into strips instead of chicken.  Ok.  Different recipe.  LOL.  I learned the hard way not to prepare enchiladas in advance for baking later.  The corn tortillas began to disintegrate as they soaked in the enchilada sauce.

    Tonight will be home-made pizza.  The pizza dough recipe is Mary Ann Esposito's whole wheat pizza crust which calls for a combination of whole wheat flour and white whole wheat flour.  A package of pizza crust yeast.  The toppings will be crumbled Italian sausage, tomato sauce, kalamata olives, grated cheese, red pepper flakes on my half.  Maybe sautéed diced yellow bell pepper.  Maybe sautéed onions on dh's half.

    Eye of round roast tonight with horseradish sauce, garlic roasted  potatoes and a wedge salad with homemade ranch dressing.

    I ran instead of eating tonight.  

    The weather forecasters are expecting severe thundertorms when my flight leaves tomorrow and the airline is already saying my flight will arrive late into Albuquerque.....about 10 minutes *after* the connecting flight leaves for Phoenix...

    sigh....

    Nancy, the pizza was delicious.  I devoured my half.  DH ate 2/3 of his half but he had ice cream a little later topped with walnuts and chocolate sauce.  He might have been "saving" himself for dessert.  I like my home-made pizza better than the bought pizza. 

    The pizza crust recipe makes enough for two pizzas so I have the other half in the freezer.

    Tonight's dinner is undecided.  Maybe a red meat night with grilled steak.  Actually that sounds good!  I have the rest of the 2 lb. pkg of asparagus and makings of tossed salad.

    eric - I hate it when that happens.  I am a non-stop girl for that very reason.  When that is not possible, I always sweat the connection.

    Tonight will be a light meal, as tomorrow is surgery.  I don't like to eat much and then have anesthetic - seems to work out better for me.

    Carole, your pizza sounds delish!! I'm trying to figure out if any pizza w/o cheese is going to taste like pizza.  I just received a link from a friend to a NYT article re: pizza making.....from a Brooklyn chef...and that is a pizza mecca!

    Yesterday, after the gym, DH and I decided to go out for lunch (he had a meeting at night, so for me it could  count as my dinner meal). It was a gorgeous day here (finally!) so I started my annual summer quest for my favorite BLT. Only an okay specimen this was, (we're still in the cardboard tomato season here) so the search will go on! In previous years, the best BLT was enjoyed, ironically, at a lobster roll stand in NH. Must check that out again this summer! Laurie, it was at Tamarack....you probably have gone there...for lobster or seafood like most everyone. :)

    Heading out to buy some summer clothes today....

    lacey - thanks!  Good luck on the BLT hunt - they are one of my faves!  I also love a good BLAT - bacon, lettuce, avocado, tomato!

    minus - A few hours -  I am just having my left implant removed - totally outpatient.  I should be able to touch base quickly!  I might even make dinner tomorrow night and let you all know!

    Hi Everyone, just pooping in to say hi and see how everybody is doing!

    SK- Hope everything goes as planned tomorrow for you.

    Eric- Ditto on what everyone says about you being a peach! Your an amazing Husband. Have a safe flight!

    Everyones dishes sounds yummy. Pizza sounds good to me right now. The last 3 nights I have had only a smoothie for dinner and small bites of stuff through out the day. Trying to lose some of the weight I have gained since starting on my steroids. 

    Lacey- Your dinner sounded good to me because basically thats what my smoothie had in it. I put almond milk, dates, walnuts and rolled oats in a blender. It is really yummy! First time I added a banana but decided didn't need the extra calories and didn't miss it.

    Loved the dog stories, so cute! There is a video on my fb that just cracks me up every time I watch it, it says what does the five fingers say to the face, laying down minding his own bussiness is a cute little dog and a very mischievous cat, The cat puts his paw on the dog and then slaps him in the face really hard,then the cat turns and runs away! don't know why but it just makes me laugh out loud!!

    Going to dinner with a friend tonight so it will be my cheat night of the week. 

     A lot of people seem to be MIA thinking of all of you!  Hugs to all of you!

    Debbie, good to hear from you!  Hope you can lose some of those extra lbs. 

    Steak and baked potato and salad tonight.  DH will be cooking the steak on the grill.  The potatoes are in the toaster oven. 

    Nancy, I "found" a couple of frozen chicken enchiladas in the freezer today when I was searching for something else!  I thawed them out and nuked them for lunch.  The tortillas were kind of gummy but I still enjoyed the filling.  Chicken, black beans, and corn.  I really like enchiladas.

    Wish all our MIAs would come back!  Still I appreciate those who check in regularly.

    F is also the first letter for flight.   I can't get out of here until after the last flight out of Albuuerque.  So I'm on the standby list for some other stuff that might work out...or I'll stay here....  dinner tonight is airport food.

    eric - yay!

    carole - I miss enchiladas - they lose something in translation when you can't put cheese in, and on, them!  I did make some beef ones with sprouted organic corn tortillas, pinto beans, and tomatillo salsa.  They were ok, but not cheesy, so I was a little sad.

    SpecialK, have you tried eating a little cheese to see how it affects you?  I don't snack on cheese or use it in meals often but I would hate to give it up altogether.  I embrace the concept of moderation. 

    We have a lot of leftover steak because of my miscalculation.  I thought the ribeye wasn't large enough for two.  So I also took out a pkg of 2 filets.  Since I couldn't separate them, they both thawed.  It turned out the ribeye was enough so we have two cooked filets left over.  And a whole baked potato.  We split one.  The meal was SO good.  Steak and baked potato is one of my "most favorite" meals! 

    It's supposed to rain off and on all day.  We really need rain.  I'm hoping it will not only soak my flower beds and lawn and water the trees but also clear pollen from the air.  I've been working outside for hours at a time and suffering from the pollen.  Despite taking allegra daily.

    I got home around 12:30 am.  It was better than trying to stay dry under the wing of the aircraft because it's too hot to sit inside the plane. :-)

    Southwest Airlines did a pretty good job dealing with everything and more importantly, I didn't notice any passengers get all snarky with the airline folks.

    Debbie- I've seen that video. It's cute. There's another one with a cat getting a treat out of a jar and really working hard to get it out. Finally he gets it out and guess who snaps it up? LOL

    Went to the grocery store again to pick up some bread and they had a chicken kabab. Had that fir supper today. It really tasted great! Brown rice with it. Yum.

    Tonight we are having dinner in Providence. DH just reviewed the restaurant's menu. Great sounding food, but I will easily be able to avoid over choice...there are about three entrees that don't contain dairy. I'm with you Carole....moderation is the key. I hope my functional med clinician likes that mantra when I let her know in a few weeks that I do not intend to keep to this no dairy business. It would feel very differently if I were a person who experienced digestive issues from dairy. 

    Had a great shopping trip yesterday...got a number of spring/summer tops, capris, shorts, etc....Now I really do need to do a closet clean out! Hahaha....house clean out is more like it! I should invite some out of towners to be houseguests....that always prompts some clean out motivation!

    Not sure if I mentioned that we have a new Wegman's store nearby. Have yet to check it out. I hear that some of their organic produce is more reasonable than WF's.

    carole - I ate Greek yogurt daily for four days after the 3/7 surgery, my face broke out like a teenager.  I can't do dairy.  This diet does not subscribe to moderation - if you are sensitive you will be inflammatory.  I have been too successful both with weight loss and lack of joint pain from my AI to go back now.  I think moderation is great for those who don't have the sensitivity issue, it is a smart way to eat and enjoy food without going overboard.

    Lacey- Thanks for the smoothie recipe, I like the site too. Also forgot to mention in my last post that I was sorry to hear about your friend, I hope she will bounce back from this and that rehab will help her. Sounds like you have had a lot going on too!

    Carole- Cheese is probably the one thing I would have trouble not eating. I admire your will power on not snacking. today I ate all day long and I was doing so well on my diet lol! So guess I will have to have two cheat days this week.  Unless of course DH takes me out for mothers day brunch on Sunday then I will have to wait until Monday to start again!

    Eric- Glad you got home safe!

    Moon- Did the dog get the snack? lol!

    SK- Didn't read your other thread but glad your home and doing ok.

    What's everyone doing for mothers day? Me, not sure.

    Debbie, I have those days, too, when my hand seems to move to my mouth compulsively!  It's not my favorite kind of eating but it just happens.

    I made an early Walmart trip this morning and bought a bag of their fresh green beans, all snapped and washed, to cook for tomorrow's Mother's Day dinner at my mother's house.  I'm also cooking a smoked picnic ham since ham is a meat that everyone eats, including the picky children.  My younger sister is bringing her delicious mashed potatoes made with cream cheese and also baked beans made with trusty old canned Bush beans, doctored up with bacon or sausage.  One brother is bringing tossed salad and a SIL is bringing banana pudding made with sugar-free pudding and some kind of bread, probably those tasteless warm-up rolls.  No gourmands in my family! 

    An alternate dessert choice will be a box yellow cake that I baked this morning, iced with the pre-made milk chocolate icing.  I slaved over that cake!  It won't be too much of a temptation for me because I prefer dark chocolate.  But my mother likes the milk chocolate.

    I also baked some carrot cake cookies from scratch, following a Cooking Light recipe. I sampled one, to the tune of 4 pts!  It tasted really good but the texture is odd.  Rubbery.  The cookies are supposed to be made into sandwich cookies like whoopee pies with a cream cheese icing.  I skipped the icing.  I think I'll write a letter to Cooking Light about the texture.  DH really likes carrot cake.  That's why I made the cookies.

    Dinner tonight will be the pork piccata recipe I've cooked a number of times, made with medallions of pork tenderloin.  Not dh's favorite but I like it.  He favors pork chops over the lean pork.  I'll also steam some yellow squash.

    Hey all - doing well.  Hate the drain, but I think that is a universal feeling, right?  It should come out on Tuesday, as I am already at 30 in a 24 hour period.  I have not taken any pain meds, and slept decently last night.  As usual, y'all are making me hungry!!

    I put a whole chicken into the Dutch oven, added lots of beans and buried it all in BBQ sauce.  Corn, a fruit salad and sourdough rolls should round it out.

    I have tried 3 times to post from my phone and each time I get to a certain number of words and I can't type another word. This only happens on bco.  I've tried different keyboards and it happens with all of then. Weird!

    Eric, hope the rolaids work! ;) Whenever I ended up having to attend a sports game thru dinner, I opted for a soft pretzel (if available..maybe an east coast thing) which is easy on the esophagus and stomach! 

    Special, you are a dream patient! Continue with a seamless recovery. Apologies for my about to be posted info which includes lots of tasty things....maybe read later! :)

    Last evening we headed to Providence for dinner, and instead of going to the Italian section of town, we went to a farm to table style restaurant which was delightful. I had a salad of pea greens (never had them before, and may never again given their short season) with pancetta bacon pieces, pine nuts and a citrus dressing, that was delicious. Entree was rack of lamb with a puree of something I forget, and a coriander sauce. It was supposed to be a different sauce that I am allergic to, so they changed it up.:)

    We had a parsnip cake for dessert. I might have been wary of that except that last winter I went on a parsnip cake baking kick so I knew it would be good. And theirs was much better than mine! 

    So tonight I was inspired to cook a decent dinner....having had dates and nuts for a couple of nights! Local market was having a sale on beef filets, so I stopped on the way home from Joann Fabrics (needed to buy some Bruins fabric to make a taggie for DS2's friend who is a new father and a crazed Bruins fan) and bought two filets. 

    DH grilled them perfectly with his special remote timer (lord knows when he acquired this, but it does a great job!) and I made my favorite spinach salad with mushrooms, red onion, walnuts and cranberries, sautéed some chard with garlic, onions,  mushrooms and crushed red pepper, and the real specialty was some forbidden rice (an aromatic black short grain rice)my sister hunted out in VT and sent to me after enjoying it in a restaurant near her. We had some kalamata olive artisan bread, too. While I have rice or pasta rarely, I would recommend seeking out this forbidden rice. So delicious! Makes a meal special!

    Tomorrow we are meeting our DS2 in the Seaport area for an early dinner at Gather restaurant. Their menu looks interesting. Today I received a lovely gift from DS1 and DDIL....however, since I neglected to mention to them that I was off dairy for the past month, they sent a lovely selection of cheeses. ;/ DH will have a ball eating them, and I will have to decide if I disclose my dietary reality or not. It was a lovely gift. :) Such an annoying mother who can't really have flowers or cheeses...maybe skittles or diamonds? Winking

    Very excited that today a single hummingbird showed up at our hummer feeder. We put it out earlier in the week and saw nothing. Usually never see them here at home. We figured the little guys were well on their way to NH to their summer homes, where we feed them daily. Well, when I saw the little ruby throated male, I was ridiculously excited....ran outside to alert DH...who ran inside to see him. We clearly need some excitement in our lives....but nature is so cool! :)

    Lacey- I love reading about food even if I'm not eating it! Dinner sounds delish! Sorry about the cheese - disappointing not to be able to partake and enjoy!
