Lacey - It was necessary. I had so much food squirreled away in there. Bags and bags of vegies, why I don't know because DH could care less about vegies. I need to reorganize again already. I have one of my tote bags almost empty but I know there is more chicken buried in there. This is supposed to be a meat one since I chose black/white for that - reminds me of cows. I think is has a very old turkey carcass - not the recent one since I did it fairly quickly. I know there are some leeks too - they must be on the very bottom.
I have a quandary about freezers. I know if the elec. goes off they keep better if full. But then if it is off long time full is very bad for the pocketbook. This is a small chest freezer. Still has some stuff that just needs to go.
Carole - congrats on DH's medical progress.
And I agree with Lacey that Special your insurance needs some choice words.
Susan - you would think they could clean a cucumber effectively. I know you've prob. heard that one of the worst foods for food poisoning is melons and I can certainly see why esp. cantaloupes with that bumpy rind. A cuke is easy compared to them.
Dinner tonight is meatloaf. DH will home very late so I'll cook at least that early. Have 2 potatoes maybe see what I can make with those. Bought more salad we don't ever finish so will try some of that too. I bought another meatloaf seasoning at Cent. Mkt when I went there b4 Thanksgiving. I think only needs breadcrumbs, egg and bit of milk. I may throw in some more seasonings if it isn't green enough to suit me - some parsley. Might also dice up some celery.
Minus - you should be all done by now. Get whoever is driving you to stop for something good. Only good news here.

lacey - you are funny about the insurance - I really can't complain - they have paid for 13 surgeries, 6 rounds of chemo, 3 PET scans, a MRI, a year of Herceptin, and a partridge in a pear tree! You sound busy with projects - I do the same thing - always bite off more than I can chew, but somehow it all gets done. Sometimes requires some late nights, but if I get stuff done too early I am always left with that feeling that I am forgetting something. I just had this conversation with my husband the other day - I am better under pressure - I always got the best grades in college on the papers I wrote the night before they were due. The one time I wrote a paper early I did not do that well! Weird, right?
susan - food poisoning after a night out - not fair! Hope you are feeling up to par now.
I just got home from having my car serviced and walked into the master bathroom, with the dog following me. I petted him on the face and then looked at my hand which was all bloody! I was not sure who was bleeding - me or the dog as there was no obvious place the blood was coming from on either of us. I had to corral the dog in the bathroom and when I checked him I discovered that a small cyst (he gets them periodically - they are always benign) on his front paw that was to be removed after the holidays had opened up. By this time there was blood all over him, me, the bathroom floor, the rug, and a towel! I got him bandaged up with the stick to itself type tape that I used for splinting my trigger thumb - yay! Waiting to determine if I am taking him to the vet, but called DD as he is really her dog. He has a wellness plan that covers routine visits, but not emergencies, so trying not to incur a big bill to treat this. Right now I am monitoring to see if it is continuing to bleed while keeping in mind that the doctor leaves at a certain time and I don't want to get there too late - eeesh!
Today is our 31st wedding anniversary! So hard to believe! Now that there is a dog situation I am not sure if we are going out to dinner as planned.

Luv - yup I'm through. My friend didn't have time to stop for lunch so I came home & made a fried egg sandwich on Pumpernickel bread and had a slice of pina colada cocoanut cake for dessert. For the first time - no polyps. I guess I have to say 'thank you' chemo. Nothing else good about chemo but if it zapped the lurkers, I'm grateful for that.
I have the same problem w/my freezer. It's a small upright in the garage, and packed with who knows what in the back of the shelves. I know I pay extra in electric bills having it in a garage in our Texas heat, but that's the only option. I really don't want it in my bedroom. Also it desperately needs to be defrosted so I'm trying to use up the stock.
Special - happy anniversary. Sorry about the dog situation. Hope it's easy to resolve - other than cleaning up all that blood.

minus - thanks! Clean up is already done - threw everything in the wash and cleaned the floor. Vet visit and dinner still up in the air. I too have a spare fridge/freezer in the garage - in Florida - but I solved the "what is in the freezer question" by keeping one of those magnetic list things on the front and writing down what I put in there, then crossing it off when I use it.

Special - I used to do that before cancer. After the recurrence - I became much less obsessive/compulsive about things like that. And certainly less worried about dusting or vacuuming the house. Just about BC. But I should get back to my lists.

susan - I thought about you when I said we were going out! I had that happen after my 50th birthday - very expensive meal that made DH, DD and me very sick the next day - the unfortunate thing is that I was already on an airplane when it all went wrong. Bad, very bad. Are you feeling good now? You are too busy to be down for long!

Today was/is a beautiful day. I played golf and was briefly bundled up but soon began to shed outer layers.
This morning I took two pork chops out of the freezer. Won't free up a lot of space! We'll have breaded and pan-fried pork chops and oven sweet potato fries for dinner. That's dh's preference for pork chops, which he finds dry. Hmmm. Maybe I'll try brining them.

carole - yes, I quickly trapped the dog on the bamboo and tile flooring once I figured out which one of us was bleeding! I sometimes cook pork chops by searing them for a couple of minutes in a hot pan, then remove them and sauté some sliced apples and onions, then add the chops back in and braise them for a bit in apple cider or chicken stock. They seem to stay more moist that way - I have also cooked them in the cider in a glass pan in the oven and added the sauteed apples and onions over the top once the chops are done. Also, have recently had spicy remoulade sauce with sweet potato fries - yummy! I know you know all about remoulade since you live in LA!

Special, have a great anniversary dinner. Congrats! And I hope all resolves with the doggie cyst. I think I have truly become comfortable with being dogless. I realized that when DS2 noted for us last week that when Chicago girl moves in, we will have chances to have a doggie fix when they travel. He thought we'd be so excited....we both tried not to look too ambivalent.

You and I sound like we have similar styles, Special. I really benefit from deadlines, and did similar things in college as you describe. Not sure what I would have gotten for an early paper since I never even tried that route. I think if I had, I would have needed to go back for redos frequently until I handed it in. So, maybe a blend of ADD and OCD that drives my approach to tasks! It works, but definitely at an expense!
On the way back from the gym this afternoon, I stopped at Volantes to get some greens and "Jen's baguette" which we love. Well, I also happened to see a package of Greek marinated lamb tips, so got that for tonight (since DH has no problem grilling in the light rain), and am making a big Greek salad, some leftover wild rice, (for DH) and some sauteed greens (kale, chard) with onion and mushrooms. Trying to get back on the good whole food wagon, after some party food misdeeds!
Minus, good for you to get that over with, and with happy results!
Better get back to dinner making and to the felt board tasks.......I decided to buy some cute gingerboy iced cookies for the grands, and have a loaf of pumpkin bread that I'll bring so I can erase "make pizzelles" from my crazy "To Do" list. Will make them after we return since they are a popular dessert at a party we attend on the 20th.

Pizelles are a lovely "lacey" almost pancake or waffle like cookie. Tedious to make and easy to eat. They are Italian in origin and need a special press. Well worth eating if someone else will make them for you!

Well here you all are! Where ya been?
Lacey, all I can say is WHEW! You are busy! Wonderful card and what a cutiepie! Me, I avoid commitment these days. Since I retired, it gets harder and harder for me. I can't take the stress. About the most I can commit to are hair appointments and doctor visits. The rest, not so much. I am so missing my dogs, but there's that commitment thing again. I would like to rent-a-dog.
Susan - yuck on the food borne illness. DH picked up a campylobacter bug a couple of years ago and it lasted a lot more than 36 hours -- more like four days. Had to report it to the health dept. and everything. Took two rounds of antibiotics to finally clear it up. Made me completely paranoid about food safety and eating fresh greens out. (The culprit was thought to be leafy greens.)
Carole, the best pizelles come from somebody's Italian grandmother. It's good to find someone and befriend him or her. When I was growing up, all of my parents friends were either Greek or Italian. Boy did I love the holidays with them!

Tonight is a Cornish hen that I'm roasting with a cranberry glaze. Not sure about the sides. Perhaps some broccoli rice.

auntie - my in-laws do the "rent a dog" with their neighbors. The dog comes over to their house daily for a visit and a treat and then goes back home - the cat also. When I first met them they lived in NC on a golf course. Every afternoon they walked the golf course when my FIL got home from work. At the end of their row of houses lived a black lab - every day it waited for them, went on the walk with them, then they dropped him off on their way home. They also befriended a couple of dogs that belonged to the builders of their house in SC - they rented a house down the street while theirs was being built- and would bring food scraps as treats for those dogs now and then. They seem to be dog fans despite never having actually owned one! Funny - every one of their children has had dogs and cats - and their youngest became a veterinarian!

Tonight we enjoyed the Pho. This was a family dinner.... gosh, I should have taken a picture. I had a large platter with the raw rib eye slices, sprouts, limes, Thai chills, Thai basil, and onion. I made [am I nuts?] some Vietnamese Spring rolls with pork, mushrooms, cabbage, carrots, with a dipping sauce. I also made a Vietnamese carrot-daikon pickle. We slurped loudly. I am hoping that this nutritious soup will get my kid through her finals period. Her cold just keeps getting worse and worse.
I bought some flank steak, but the Pho recipe actually said NOT flank steak.[whoops!] So tomorrow, I will make a lemongrass marinaded flank steak stir fry served over rice. Or maybe since we never eat beef two days in a row, I will make the marinade and vacuum pack it up with the marinade to freeze.
This is the problem with getting creative at the market... you have to eat what you have bought! And the things that inspire me all take real preparation time.
Can't wait for these three huge projects to find their equilibrium. I often murmur "I am peddling as fast as I can." And I hear there is a gift-giving holiday coming up and some one is serving three meals to family!

Yes, pizzelles are a thin Italian waffle cookie, often anise in flavor. I make that flavor and lemon, and almond....sometimes orange. I have no interest in the plain vanilla ones, which many people make. I also do not sprinkle confectioners sugar on mine, which some folks do. Always used my grandmother's hand iron over the stove making them one at a time, for many years, until my back complained and my hand arthritis kicked up. So I gave in and bought an electric iron....makes two at a time and I can do it while seated. Nothing like the thinner oval ones the hand iron makes, tho. We grew up using that iron making pizzelles with my mother at Christmas time. If I make no other cookies for the holidays, I make those!

Lacey, those cookies do sound like a lot of work to produce. DH always makes dozens of oatmeal chocolate chip cookies, filling the house with that delicious aroma. Our gift to the neighbors and temptation I can't resist.
Pho is very popular here in the New Orleans area thanks to the Vietnamese population. I was told by a Vietnamese person in a nail salon that this soup is a breakfast food for Vietnamese. I've only eaten it home-made by a cousin and it was tasty. Making the beef broth is a lengthy process.
Off to the gym this morning. No clue about dinner.

moon - yay!!! So excited for you! Does your daughter live close to you? I just got some things for a baby gift - our niece and her husband just had their first, and my DH and I were discussing how dangerous of a baby clothes shopper I will be when we have grandchildren, lol!
