    Caerus -- That sounds like a fascinating book; I've only read reviews but think I'll order it.  My diet is not perfect by any means, but one of the very few things I purchase at the grocery store which are processed is a certain vegetable cocktail.  It's got too much salt in it, but since I limit myself to 5 oz a day with lunch, I figure I can withstand the added NaCl!  Everything else is homemade here so I know exactly what I'm consuming.  Not that I think it will prevent cancer from returning, but maybe it will help prevent other diseases from arising.

    apple, have you tried the low sodium V 8? Thats what I use because of water retention. I agree I love the stuff.

    Re: zucchini: You can also slice & soak them in vinegar and a bit on agave in the frig and make them into pickles, I like to add black pepper just before I eat them.

    You can make zucchini lasagna and use the zucchini instead of the noodles. Also saute zucchini with onions, Italian seasonings and a tomato or spagetti sauce. Melt some mozerella cheese over the top and it is a good main or side dish.

    That sounds excellent, Ruth!  Do you cut the zucchini the long way, like lasagne noodles?  And do you precook it at all before you assemble it?    Deanna

    Ruth Zucchini Lasagna sounds great.  I make spaghetti squash instead of pasta. Add broccoli, mushrooms and tomato sauce. One of my favorites. DH will eat it once in a while so I tend to make it for myself when he's not home.

    No, you don't need to precook them. Here is my recipe. It has hamburger, but I think you could skip, or cut down on the meat if you wanted to, also you could use your own homemade spaghetti sauce (if you are a better person than me Wink)

    Zucchini Hot Dish

    1 lb hamburger

    1 (15 1/2 oz) spaghetti sause with mushrooms

    3 or 4 smaller size zucchini

    garlic salt, pepper, oregano

    1 to 2 cups mozzarella cheese

    Parmesan cheese

    Brown hamburger and drain. Stir in jar of spaghetti sauce. In 3 qt. casserole begin a layer of slices 1/4" thick zucchini. Sprinkle spices over zucchini, add 1/2 hamburger mixture next. Sprinkle on cheeses with amount you desire. Repeat the layers. Baked covered 1 hour at 350. Tastes like lasagna!

    Edited to add that I just chop the zucchini up the normal way, not lenghwise or anything.

    Ruth, I don't like zucchini usually, but that recipe is happening in my house this weekend! thanks for it.

    My DH loves zucchini on the grill - drizzle with olive oil, fresh pepper, sea salt - close in foil and let it steam away. Someone mentioned concerns about grilling in foil and I'm wondering 1) background of this and 2) alternatives? I guess one could grill right on the grate?

    just ordered my copy of "raw Energy" from Amazon..it looks amazing. will let folks know!

    THANK YOU!!  I've been looking for a way to use the zucchini I grow every summer.  I probably won't use beef, maybe turkey or chicken, or buffalo....but YUM!!  And I can freeze a couple dishes of it too!

    OK, you asked for it!

    Zucchini Chocolate Cake 

    • 1/2 cup butter or margarine, softened
    • 1 1/2 cups sugar
    • 3 eggs
    • 1/4 cup vegetable oil
    • 3 teaspoons vanilla extract
    • 1 3/4 cups all-purpose flour
    • 1/4 cup baking cocoa
    • 2 teaspoons baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon ground cinnamon
    • 2 cups shredded zucchini
    • 1 cup chopped walnuts
    • 1/2 cup semisweet chocolate chips
    1. In a mixing bowl, cream butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in oil and vanilla. Combine the flour, cocoa, baking soda, baking powder and cinnamon; gradually add to the creamed mixture. Fold in zucchini and walnuts if desired.
    2. Spread into a greased 13-in. x 9-in. x 2-in. baking pan. Sprinkle with chocolate chips. Bake at 350 degrees F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

    also:

    Zucchini Pie

    * 5 zucchinis sliced like apples for apple pie

    * 3 Tbsp lemon juice

    * 3/4/ c. sugar

    * 4 Tbsp flour

    *1 tsp cinnamon

    *1/4 tsp nutmeg

    *pinch of salt

    Slice zucchini and add lemon juice. Set aside. Mix dry ingredients and stir two mixtures together. Put in 9" double pie crust. Dot with butter before putting on top crust. Bake 1 hour at 350. Serves 6 to 8. Tastes like apple pie.

    Susan,

    Does it have "real" cake consistency?  I make brownies with unsweetened apple sauce instead of oil, but I hate the spongy-like quality....heh.  It's always a dead give-away.

    Ton Lee, I'm with you on spongey cake, drives me nuts.  I love dense moist cake only (like brownies, lol).  Susan, will have to try your raw cake, I'm intrigued! :)

    Right now, I have my chicken a-cooking.  And lots of veggies to go with.  The rest of the strawberries for dessert.  Believe it or not....PLAIN.

    Ruth I normally hate Zucchini but you make it sound delicious!

    hmm, ruth's zucchini hamburger bake is similar to a shepard's pie i tweaked this winter:

    take 1lb. turkey meat, brown with onions (olive oil), drain. Layer in a pie plate. saute peas in a bit of olive oil, also carrots (i use the baby ones and cut them up); layer these over. then: instead of the usual bisquick/pie crust top, i used mashed cauliflower! steam cauliflower, add touch butter and mash or blender it. spread on top, sprinkle fresh pepper and sea salt - 350degrees x30 minutes. awesome - and my kids, who love spuds, happily ate it.

    Ruth.....will hold up my end of things.  Lots of stuff when I cycle to Portland.  Then the fun of evening out the calorie deficit.  Mmmmmm......

    Have fun.  Eat some blue crabs for me.  BTW - the only way to eat soft shell is flour, egg, bread crumbs and fried until golden in butter.  Then a beurre blanc over.  And some fab white wine.

    If I had the choice between that and amazing sex, I would need to stop and think......

    Will do my share of celebrating on Bastille Day too.  Real Can Can dancers, baguettes, and of course wine.

    Why is it that no one gives you a check box for "Revelry" when they give you the Quality of Life questionnaires?????

    I wax on.  Think it must be the chicken in sherry wine with tarragon and shallots I made for dinner.  Not exactly perfect, but a revelation nonetheless.  (Still have the berries to eat, and the most perfect early evening here.) - Claire
