Out for dinner at the Belhurst Castle clam corn chowder in a bread bowl and shared a muffalata panini sooo good. Ate outside by a firepit on a cool night overlooking the lake. Super night.
last night a filet, cajun rice and sautee zuccini, yellow squash, onion and cherry tomatos (all from my garden)

Dinner last night was pulled pork loin from the crockpot. Cooked in a mango/ginger viniagrette - bottled - sorry Susan. Put in lots of browned onions and garlic. Reduced cooking liquid for sauce and put on hamburger buns. Made remainder of slaw with red onion, grapes and blueberries. It was yummy. Pork will become stir fry sort of with lots of vegies and rice later today.

Susan, thanks for the link to that recipe. Hubby and I try to avoid pork anymore, as we don't feel very good after eating it, but I'm going to try that combo of spices and cook a tri-tip or maybe a bunch of chicken breasts - nah, probably the tri-tip.

garden, I think you could put that mixture on almost anything and it would be delicious. Agree on commercial pork... it can be unpalatable, but this pasture-raised Berkshire pork we just bought is like the pork-of-old. *susan*

We used to raise our own pigs, but now live in the city. Somehow, I doubt our neighbors would appreciate it
We should probably check out some pasture raised pork. We drive down to California to buy our beef from an organic place - we should check, he'll probably have some pork as well. I'd want to try just a small amount to see if there's a difference in how we feel. 0 -
Thank you, Chabba and Special K, for providing the name of the potato crepe, Lefse. I think I will buy some when we go to Fargo/Moorehead tomorrow to meet up with some SD friends for lunch and a visit.
Last night's shrimp and pasta main dish was delicious. I sauted the shrimp in butter and olive oil very briefly and added two large cloves of garlic, chopped, for about 30 seconds before I turned off the burner. I cooked the Dreamfield linguini for 6 min. then added snow peas for about a min. Before draining the pasta and peas, I reserved a cup of pasta water, following Lidia's practice. The pasta and peas joined the shrimp and garlic in the skillet over a low heat. I added some pasta water and a handful of freshly grated parm-reg. Also a little more EVOO. A creamy sauce developed. We sprinkled a little extra cheese on our serving. Yum, yum!
Our salad was peeled and sliced cucumber and sliced yellow heirloom tomato with a sprinkling of very good balsamic vinegar. Vidalia onion on dh's salad.
Tonight's dinner will be fajitas made with some grass-fed beef I bought at the farmer's mkt several weeks ago. A small ribeye steak, about 8 oz. This will be my first time to try the grass-fed beef. I'm expecting it to be tough; that's why I'm cutting it into strips for the fajitas. I have colored peppers and will slice up an onion, too, and saute the veggies in a skillet with the beef.
I was amused this morning when we saw on a map on the Weather Channel that the temp. in LA would be lower today than the temp. in MN. Our lovely cool weather has gone away and we're having a heat wave during our last week in Park Rapids.
So happy to hear that Michelle was feeling good enough to go out to dinner. Thinking of Debbie, Deb, and Susan as they cope with their losses.

Carole, normally the grass-fed beef we get is tougher than that found in grocery stores, though the last batch we bought we actually did fry the ribeye steak, and it was relatively tender (certainly not prime quality tender, but a long ways from shoe leather tough
. The taste, though is so much better (to me). I was raised on grass-fed beef and moose meat, though, so the stronger meat flavor is "normal" to my taste buds.0 -

Lacey- The pics you posted on Facebook of your dinner out were super cool. It looked like a great night and I agree- the weather that night was perfect!
I have been so busy! This weekend was our towns Old Home Day where they have a parade and activities at the field for the kids and lots of fair food, petting zoo, pony rides etc. My brother lives about a 10 minute walk from all of it so we parked at his house and went back and forth all day. They have fire works at night so we actually brought the camper to his house as he was having people over and cooking lots of food etc. We walked down to the fireworks and laid in the field, walked back and out the boys to bed and then enjoyed the fire. It was a nice night but we stayed up way too late!
Sunday was our neighbors sons birthday party and we were there from 12- almost 7! Long day but the boys (and us) had a blast and just chatted the afternoon away and leftovers from the party for dinner.
Today is our last day as just me and the boys. School will be starting and we will have a new routine. DS1 has school m-f 8-2!!!! So I am going to have to get up early to pack his lunch etc. My days of laying in bed watching cartoons is over! We went to the park for the morning and have been getting laundry etc done this afternoon.
Tonights dinner is chili chicken with avocado, cucumber salsa, some rice and some zucchini. My dad dropped off a bunch of eggplant today so I think that will be for tomorrow!!!

I haven't been cooking much since my TE replacement, because the freaking drains are putting out way too much. It's going to be two weeks out on Wed, and it still over 80 a day from one. The other one is less tHan 10, so he'll pull that tomorrow, but not thebone that puts out 80. Yuck. And if course, the longer in, the more worry about infection. Third times the charm, third times the charm, third times the charm! So I made tuna casserole yesterday, today is leftovers. TE better be ok, if I am reduced to eating tuna casserole..... LOL

Just saw a brief post on Facebook by Michelle and her DH, who indicated that it is still difficult for her to type.....but she did! From another post, it looks like the family wedding is coming up...so hoping they have a beautiful time there.
Skipped dinner last night....had lunch with my social worker friends. The hostess, who doesn't cook much, ordered a ton of Italian food from a local restaurant, so it counted as dinner for me. I brought some fresh corn and bean salsa and chips. She had a large fruit tray, then a spinach salad, tasted ravioli, eggplant parm and chicken parm. Chocolate gelato for dessert.
When I returned home, I was exhausted (maybe cumulative lousy sleep nights, maybe related to realizing it was my cancerversary, maybe processing that I am finally no longer going to be working with those colleagues...who knows). Anyway, while reading mail I fell asleep......for over two hours. Forced myself to get off the couch, happy to see DH took care of his own dinner, and watched Breaking Bad with him since He had to miss it Sun nite.
Amazingly, I was still able to sleep last night.
Fond memories of making tuna casserole, ladies. I used to love and devour that frequently in the seventies. Haven't seen or made it for decades!

Tuna casserole was the very first meal I cooked all by myself.
No noodles, it had biscuits on top. Now, I can't eat noodles or biscuits, but the idea of tuna casserole still sounds good. 0 -

Dinner tonight is roasted eggplant with Michelle's sauce. Tomorrow is DS1 first day of kindergarten!!! I think we are both a bit nervous.

Helped my brother and his friend make 15 pounds of boudin sausage for a Cajun festival they're going to this weekend. I tasted it both steamed and fried in a patty. Not a real fan of it. However, it was a great lesson in sausage making. He used his kitchen aid mixer with the grinder/sausage stuffing attachments. While visiting him, I bought a used kitchenaid mixer for $80. Think I'll look on ebay for used grinder/ sausage attachments and try my hand at homemade italian sausage. I have very fond memories of my Nana making Italian sausage. No Kitchenaid for her. We turned the crank on the meat grinder and she stuffed it into the casing by hand, using a funnel. Best sausage ever.

Laurie. When driving the bus on the first day of school....in the morning the kindergartners would be as worried as the parents and there would be such a huge sense of relief in the afternoon when everyone realized they would get back together.
On the 2nd day there was a bit less worry and by the third day they (kids too) were "old hands" at it. And, I could sense the feeling of accomplishment by the kids.0 -
I wish I could duplicate the taste of Stouffers tuna noodle casserole. I could live on it. I do like chicken tetrazzini too. Oh waiting for cool weather cooking.
The leftover pork stir fry turned out excellent. Had a subtle ginger flavor from the pork sauce. Cut up celery, red onion, yellow onion, carrots, orange bell pepper, sugar snap peas whole with a little low sodium soy sauce and a Lundberg brown rice. Enough for leftovers tonight but should have made more rice.
Laurie - your DS will have a blast at kindy. You are such a good mom and I know have spent oodles of time with him. Give him a hug for me.

Glad to hear about Michelle, and I am sure she is just as busy as ever...sounds like there is still tons going on in her life as always.
I love tuna noodle casserole and so does my DH We usually only have it in the winter though.
Laurie Although you will miss dear son #1 You are going to love the time with DS#2. My daughter had such a "strong" personality, demanding a lot of my time..I loved being home alone with just my son for a few hours each day.
Bought some local corn on the cob, maybe do a grilled snadwich with it for dinner.

Tuna Noodle Casserole? To me, tuna noodles casserole tastes like my mother abandoning her family's culinary edge. All through my childhood, she would create these wonderful meals using that week's NYTimes Craig Claiborne recipe. Sunday nights were a nod to our New England heritage with homemade baked beans with hot dogs. And then, when I was about 8, she became politically active [civil rights and all that.] She ran for councils. We volunteered for candidates. I wore sandwich boards and worked at bake sales. Slowly, but surely, our culinary world shrank until we too were eating casseroles made from magazine articles. Blech!
No more cherries jubilee. No more ratatouille. No more crafted salads. [We boycotted lettuce from CA for years to support the farm workers.] So very sad. I may still be damaged from this turn of fate.
Tonight we went out to a fancy, new spot here in Union Square. Not a great value, but the food was delicious.

I don't believe I had a casserole in my entire childhood and certainly not tuna (although we did have fried canned salmon). Fish and chicken were always fried, except chicken would occasionally be barbecued. I rarely had salad and if I did, it was a wedge of iceberg with a slice of tomato. My father was a meat and potatoes guy and that's the kind of cook my mom was. Lunches were almost always cold cuts and although I ate peanut butter in others' homes, we never had it in our house. My paternal grandparents, where I spent a good portion of my childhood, were southern and that's the kind of food we had. My grandfather had a huge garden and lots of that ended up canned (and/or cooked to death.) We had ice cream, often home cranked, every night when I was there. I didn't learn to cook until I was in my late 20's. I love tuna but the only tuna casserole I like is made by weight watchers.

OK Susan, you must share the spot in Union Sq. And how nice to learn the origins of your culinary interest and expertise! Tho sad for you that your mom needed to "pare down" in the kitchen while she tended to the needs of the larger world.

Hauntie, what a lovely memory of the intergenerational family sausage making!
Laurie, you and DS1 will do great! He has opportunities to be away from you, so that will not be new. He is a curious guy so he will be attracted to a stimulating classroom. You both know that your love for each other is strong....and that you will be there for each other at the end of each day's session. I am confident that all will go well. Congratulations on this developmental milestone!
An exciting big step for each kindergarten family!
I had the privilege to be the soc wkr/ counselor for the town's early childhood center for many years, and got to see that once even the most worried PARENT left (really important to leave and not linger....and tell him where you will next see each other so he can carry a visual)after drop off, every student engaged with their class and teacher and left any family drama at the door. Kids are so resilient! Enjoy the pride, my dear! And go out for coffee or to the playground with some other mothers with the younger sibs.
Eric, our whole family will always remember my boys' elementary school bus driver, "Bill". He was a dear, and started the boys' days off well for so many years. I can just picture you doing the same......Oh, what the start of the school year stirs up.....
"For darn sures" of grilled chicken tonight, with the addition of a huge salad and some locally made lamejun (sp?) which we enjoyed.
If I ever get on my computer, I will post the photos from last Sat's dinner, and my "still life" of ingredients that go into my smoothies. Sadly, the poor computer is jammed with ignored emails which I have to delete so it can function.
