Yesterday was porkchops with rhubarb/ raspberry balsamic reduction. And two potato hash. My DH loved it., he cleaned IL, so that was nice. He was home with me last week for my surgery , so felt I had to cook at least once for him.... LOL

Thanks ! Summer is a busy time. Working takes up lots of hours again... but that's a good thing. Nice to be moving on and getting back to some kind of normal after 2012.

We're not doing this intentionally but except for the butter DH and I have almost turned vegan. We're simply trying to eat the bounty of our garden. Tonight is sliced tomatoes and cukes, boiled beets, spuds, carrots and green beans. I just LOVE the garden.

Boiled fresh beets are so good! I should go to the community garden now. There are some I've been eyeing. I'm trying to hold off until they get bigger but it's hard. They are one vegetable that I like plain when they're fresh. I have so much I should be doing.
Deb, why oh why did you mention Candy Crush Saga???? I have to stop! I'm serious.
For dinner I'm not sure, I have the ingredients for Laurie's orzo salad again but am too lazy to boil the orzo. How lazy is that? Also too lazy to cut up the cantaloup that I know will go bad. I think tomato sandwiches with mayo and pepper over the sink. I wish I had wonderbread instead of wheat, but they will still be good. And then maybe put some salted peanuts in a coke. It's from when I lived in Atlanta

I'm sorry. I will do better in the fall. I'm better at fall food. Food is so expensive in the Arctic that I'm stocking up on split peas, beans, rice etc to bring with me to be the basis for soups and stews
*Susan* can you tell me the amounts of the ingredients that went into the sauce of your layered vegetable terrine? That sounds like something good.

Yup, gotta say that I am addicted to Candy Crush, after I check my emails, I go on FB.
I stopped at a farm stand on my way home from work and picked up 2 ears of native corn on the cob and two huge tomatoes, had the corn for supper and a little potato salad. I'm full.

Tonight was "empty the fridge" pasta - I cooked sound ground sirloin with onion and a leftover half of a red pepper. Had some cooked penne, added some thawed cooked sausage, half a small container of greek yogurtthat was leftover, half a block of random cream cheese, half a jar of marinara, half a box of chopped tomatoes, and the sirloin mixture. Mixed all together and put it in a cassarole dish, baked for 30 minutes. Also had a salad of greens, sliced apple, pecans, goat cheese and scallion with balsamic vinaigrette - it was all pretty yummy. Bonus - have enough for DH and DD to take in their lunchbags tomorrow - yay for me!

Another day of cooking tomatoes for me. They are everywhere in my kitchen.
I have an abundance of Thai basil in my herb garden so tonights dinner will be a Thai chicken dish, featuring the basil. It also uses bell peppers, which are overflowing the kitchen as well.

Will make salad with chickpeas, tuna from whole foods, tomatoes, cucumbers and red onion.

bedo, that sounds delicious. I love adding chickpeas to salads. I'm hoping hubby can build me a new pantry, as I'm definitely of the "out of sight, out of mind" persuasion anymore. I keep forgetting what I have in my cupboards, as most of the food stuff is in the lower cabinets, and I'm just not much up to getting on my knees to look anymore!!! (But I'm certain I've got chickpeas in there somewhere - I think.... )

Garden , my house has a kitchen closet that we outfitted cheaply with pull out metal baskets we picked up at bed bath and beyond. It took him just one afternoon to put in four baskets. Now the upper shelves have tupperware containers that stack nicely for boxed goods, the drawers hold all my canned goods and I have a basket for, veggies, protien, ie, beans, tuna, etc. And I put soup cans here too. One for fruits and one with baking supplies. I can reach everything, nothing gets lost in the back. My baskets are a bit smaller than my shelves. So things like oils and. Extra ketchup bottles, vinegar go along the wall next to the baskets, but I can see them all the way to the back because only one row fits. It was a pain to set up, but it really didn't cost much. Because we used the readymade baskets rather than the more expensive custom route. the only thing you have to be careful of is that the baskets can pull out without hitting the door frame. That's another reason my baskets don't fit the shelves completely.

I like the basket idea. I think I'll mention it to him - but not just now, as currently he's up to his eyeballs in tiling stuff - all he needs to hear is that I want something - anything - other than what he's currently in the midst of. He'd probably end up a widower...

Just lost another post, so I'm "pist" and out of time as I need to get ready to take DH out for his birthday dinner at one of our favorite restaurants.....and it is restaurant week, so the price is almost right! He is a cheap birthday date as his BD always coincides with our area's restaurant week.

I am writing from Vicodinville. My back has been hurting for a week and 1/2 and at this point my left foot is numb on and off and it hurts to walk and can't bend over. Finally gave up on the Advil and ice and went to doc. Going for an MRI tomorrow rule out fracture and stuff.

I took the boys to the mall today- oy! But they got new shoes and some new clothes and were very happy. Tonight DS2 had soccer at 6:30. Again- not good. SO I fed the boys dinner before hand, mac n cheese. I have open faced tuna melts on english muffins in the oven now for DH and I. Fresh tomato from the garden

Starting to run out of ideas to use up all that squash and zucchini from your garden? Try this - Pesto Ribbon Vegetables
Ingredients
- 2 medium zucchini
- 2 medium yellow squash
- 4 large carrots
- 2 tablespoons olive oil
- 2 tablespoons water
- 1/4 cup Stonewall Kitchen Basil Pesto
- 1/2 teaspoon fresh lemon zest
- Salt and pepper to taste
Directions:
1. With a vegetable peeler run the blade down the side of the zucchini, yellow squash and carrots the full length of the vegetable to form “ribbons”. Once you get to the seed or core of the vegetable turn and continue on the other side.
2. Place vegetable ribbons in a sauté pan with the oil and water. Cook over medium high heat until the vegetables are tender/crisp.
3. Drain and place vegetables in a serving bowl. Toss with the pesto, lemon zest and salt and pepper. Serve immediately.0 -

For fun, we should post pantry pictures. My problem with those pictures is that the kids have PROCESSED FOOD IN MY HOUSE, and you would see them. I love chickpeas. I love them ground up. I love them mashed. I love them whole. I love them roasted. Lately, I have been buying them dried from the Indian market and cooking them. So good, but in a pinch, Goya canned will work just fine!

Susan, I saw the posting and went over and read about Pat "Frap". I know it's late. I'm sorry. As I've said before, I consider true friends to be family by choice...sort of like a spouse or fiancee....so when a friend dies, it leaves a huge hole...

Garden - I made your slaw last night. It was excellent. I had some tonight with blueberries on the side also excellent. I don't think DH even noticed the jicama in it.
I did make it shopping yesterday but alas it was not the exciting trip I had planned.
I've been on the schedule for a bone scan r/t my continued pain/swelling that onco says is sternoclavicular costochondritis. After I called 2 weeks ago and said 6 weeks of Celebrex did nothing he sugg. bone scan. I was going next Friday and called yest. to find they had a cancellation today. So I went to the big city. I had those 3 hours to waste in between so spent some time at Starbucks and then went to Mexican Market. We are well stocked with Sofrito again and something called I think Mojo Grillo - an orange marinade. They also had great produce with good prices. On the way home I stopped at Trader Joes and spent $8 - a record low for me. They have pretty nice looking figs for 3.99/lb where Central Mkt. is 5.99/lb. I need to eat them up but even soft they are good.

Luv, I'm sorry to hear that you are dealing with that bone condition. Is there any suggestion of it being related to taking the Femara? At least you got the scan early and had the secondary gain of such neat food shopping stops. I must check out the figs at Traders...tho mine obviously travel so much farther than yours so will be super soft.

For Mr. Lacey's BD dinner, we ate at LaMorra (Brookline Village). We selected from the fixed price four course restaurant week menu which was delightful with lots of choices. My food allergies were the only limiting factor, e.g. I resorted to an arugula salad with zucchini and parm because I was nervous about trying the purslane that was accompanying their beet and cherry pepper salad. DH loved it. I then had eggplant risotto ( good but not quite up to par with the risotto they make for their "Big Nite" event). DH and DS2 had sweet corn ravioli....WOW was that tasty with braised oyster mushrooms. My entree was superb....wood grilled flat iron steak served over a crostini with smoked jalapeno pesto, grilled romaine lettuce, and smoked tomatoes. It was perfectly grilled, smokey and very spicy, pretty daring I thought for a steak dish. I loved it!! My dessert of fresh peach sorbet with local berries was delightful. I want to make it in my Vitamix!
It was a tasty evening and Mr. Lacey was a happy birthday boy.
Our next culinary adventure is Saturday at Volante Farm's "Dinner in the Fields". Gee.....all this to make up for not having a garden this year?!
. I do think I'll make a stop at our Farmers' Market Sunday to buy some fresh produce and do a bit of my own creating.

This isn't my pantry but it's a shot of SOME of the past couple of day's harvest.

My refrigerator is overflowing with sweet corn, squash and cucumbers. More of everything will be ready later in the week. Maybe I should open my own produce stand . . .
