    Yet more snow this morning!!!  Roads are slippery roller coasters this morning with people wiping out all over the place.  Made it to work safely, but it's like a ghost town here - everyone's stuck in traffic.  I'm so tired of this!!!!  It's Groundhog Day, over and over and over!  Devil

    30 minute treadmill run yesterday, 30 minutes yoga this morning.  I've been concentrating on running and neglecting flexibility a bit lately, so I'm going to try to increase yoga and other flexibility exercises for the next few weeks in the hopes of loosening things up.

    hbcheryl - dance on!  At my cousin's wedding there was a 90 year old man - he danced and danced and danced.

    I think dancing must be the healthiest form of exercise as you do it with music and a companion too.

    Its a real pity I have two left feet and no muscles (yet).

    That said I did walk to work today - 35 minutes - I took a slightly different route to avoid the road works.

    Also did 15 minutes - 5kms - on the bike in the afternoon - but it seemed to be possessed by an evil spirit or have a mind of its own as some of the display was flashing and changing and it felt a lot more difficult than usual!

    And then I did 5 minutes of arm exercises.

    Now I am off to prepare supper.

    Anyone know a good recipe for chicken fillets or chicken breasts?

    Ruth - Working in the counseling field, I had a client who once told me his secret to life success:  Act normal and no one will ever know!

    TC # 3 down and I am planning my big chemo part for my last TC in 3 weeks. 

    White blood cells are good thanks to Neulasta.  Red blood cells are dropping.  This explains why at the gym I've needed to reduce the resistance of the equipment.  I used to go full force on the cardio but is has measurably declined.  My MO said that the fact I can still do an hour a day of any exercise speaks to my overall level of fitness.  That's good to hear.

    Bounce - this recipe for Tarragon Chicken with Asparagus was in last week's Food section.  I bought all the ingredients over the weekend and plan to try it sometime this week.  It has a nice low calorie count, too. 

    Tarragon Chicken with Asparagus

    Here's proof that a one-pan dish can be elegant. Tarragon is the key flavor, but if you’re not a fan of that herb, thyme leaves can be substituted. Because there are so few ingredients, proficient seasoning is key.
    Servings:  Tested size: 4 servings

    Ingredients:
    Kosher salt
    1 pound asparagus spears (tough ends trimmed off), preferably of uniform thickness
    1 pound thin-sliced chicken cutlets, preferably 4 large ones
    Freshly ground black pepper
    1 tablespoon olive oil
    1 tablespoon unsalted butter
    1 small onion, halved and thinly sliced (about 1 cup)
    1 cup homemade or no-salt-added chicken broth
    1 tablespoon Dijon-style mustard
    1/4 teaspoon sugar, or more as needed
    1/4 cup dry white wine
    2 teaspoons cornstarch
    1 tablespoon chopped fresh tarragon leaves

    Directions:
    Prepare a large bowl of water and ice.

    Bring a medium saute pan or skillet of lightly salted water to a boil over high heat. Add the asparagus; cook until the asparagus is just tender yet still bright green, 3 to 4 minutes for thin spears, up to 8 minutes for thicker spears. Immediately transfer to the ice-water bath. After 5 minutes, drain the spears and cut each on the diagonal into 1 1/2-inch pieces.

    Season the chicken cutlets lightly with salt and pepper.

    Heat the oil and butter in a large, nonstick saute pan over medium-high heat. Once the pan is hot, add the cutlets; you might have to do this in batches. Cook for about 3 minutes, until nicely browned, then turn the cutlets over and cook until browned on the second side and just cooked through. Transfer to a plate.

    Reduce the heat to medium; add the sliced onion and stir to coat. Cook for about 4 minutes, until slightly softened. Add the broth, mustard and sugar; whisk everything together and bring to a boil, increasing the heat as needed. Taste, and season lightly with salt and pepper.

    Transfer the chicken cutlets and asparagus pieces to the pan. Cook for 2 to 3 minutes, until warmed through.

    Whisk together the wine and cornstarch in a liquid measuring cup, then add to the pan, stirring to form a slightly thickened sauce. Remove the pan from the heat; stir in the tarragon.

    Taste, and adjust the seasoning as needed. Serve hot.

    It sounds good.  I must admit I've never had tarragon.  I will have to get some and experiment with it.

    I usually take the chicken fillets, rinse them, dip them in oil!!!!!!! Yes.   Then dip them in wholewheat breadcrumbs flavored with paprika and salt.

    Bake for 45 minutes and its a homemade version of KFC.

    Today I tried a mixture of honey and mustard and a few in ketchup and soy sauce.

    Hopefully some of it will be edible.Loopy

    I am sure this is not one single bit healthy, but it is DELICIOUS!!!!!!!!

    Chicken Supreme

    6 boneless chicken breasts

    6 slices Swiss cheese

    1 can cream of chicken soup 1 box chicken-flavored Stove Top dressing mix

    1 stick of margarine, melted

    Place chicken in 9X12" baking dish. Layer a cheese slice on top of each chicken breast. Mix soup with 1/2 can water & pour over chicken and cheese. Mix stuffing with margarine and sprinkle on top. Bake, covered at 325 for 1 hour; uncover and bake for an additional half hour.

    Bounce - confession - I cut and pasted the recipe - no chance of typos then.  It looks good and looks simple to me - I'm in no way shape or form a cook, so I love the easy recipes!    I'm also not an experienced tarragon user, so I figured I'd taste a bit first, and if I didn't like it, I'd do the thyme substitution they mention. I liked the wine part of the recipe, too - what's that old saying, "I love to cook with wine. Sometimes I even add it to the food."  Happy

    Your recipe sounds yummy and easy too.  And Ruth - yum on yours!!!

    Warrior: My red blood count continued to drop after my chemo was done. I had to have Aranesp injections - they made a big difference.

    Nats: Your recipe sounds delicious!

    Ruth: I meant to tell you that I have made your recipe several times. You posted it on another thread last year. The Swiss cheese is a hit. Love your pictures!

    Cooler today and a bit breezy. Made my power walk/run a bit brisk.

    No exercise for me today, so I'll call it a rest day, but it was actually a hectic long work day and a bad weather day to boot. I'm off tomorrow, so no excuses then.

    Ruth, Oreo is very handsome. Did Sh'bam class this morning and a sweat pouring Body Combat class tonight. Also went to physical therapy and he only worked on my back for 20 minutes, the rest of the time I was given instructions on how to sit in neutral spine, blah blah blah (she says as she's sitting in her chair sideways with her feet slouched over the side - oops)

    Hi Everyone!  Wow, I've not been on here and have not done any exercise for 72 hours before today, which you all know is so unlike me!  So Sunday night we went to Olive Garden for soup and salad.  I got severe food poisoning.  It was the worst food poisoning I have ever been through.  I know it was food poisoning because Monday AM, I was sick solid all day - about 8 hours.  Monday night, I started sipping a mixture of half Gatorade G2 Half Water (to cut the sweetness) and that's all I had for 2 days. Then graduated to apple sauce.  I felt fine on Tuesday wasn't sick, but extremely sore ribs from the experience.  I'm calling the health department tomorrow and reporting it.  I really had wondered if I was going to be one of those people who don't recover from something like that. 

    However, in true form, I managed to clean the whole house Tuesday, even though I had to go about it slowly.  And then today, back to my normal self, but easing into things, so still very light on food.  I did the 4 mile mountain hike today, which is easier than my 90 minutes at the gym, but was still a 70 minute challenging hike.  My husband could barely keep up with me.  We joked about that.  LOL  (I had to stop to let him catch up to me).  he he  He's a great sport and gives me all the glory when rightfully earned.  He said when I'm at the gym I leave people behind in my cheetah dust and when I'm on the mountain, I leave people behind in my mountain lion dust.  :o)

    I'll be reporting in with tomorrow's update.  I am starting back slowly, so might only do the mountain again tomorrow, but it was beautiful today and I felt a little vitamin D would also go a long way towards helping me rebuild and recover.

    I know you all have been productive.

    Yesterday I met with a trainer at the new gym - I really liked him, so I signed up for weekly training sessions.  I am mega sore today in the arms and shoulders, think we may have overdid it there, plus a little swollen on the surgery side, I do have mild lymphedema in trunk and arm, so need to be more cautious about that.  I will mention that to him at my next training session.  It is pricey, but I figure that if I pay someone I will be more accountable, and I am worth it!  Got up late so no classical stretch for me, and it is so cold out today, but will try to get at least a short walk in at lunch.  Forgot my fitbit, so it will be a stepless day :(

    Inspired, yikes, food poisoning is no joke! DH ended up in the ER in January with a nasty case.

    Pat, be careful with the arm.....slow, slow, slow with light weights and not too many reps.

    I went back to Core class with the new teacher. Someone must have talked to her, because today the class was very good. Hooray!! I

    It was 17 below this morning, but no wind, so aren't we lucky? Shocked

    A lot of BC survivors today at the gym.  Funny how I can now spot our soul sisters.  An hour on the cardio machines at low resistance.  Geez, my heart rate is up so much higher than it ever was before.  Love the photos that get posted on here.  The scene is beautiful, Claire.  A great place to walk!

    Inspired - yikes is right.  Hope you're on the mend.  Love your DH's images of cheetah dust and mountain lion dust.  Claire - beautiful picture!  WW - I noticed that even my resting heart rate was higher after chemo than it had been before.  It took a long time, but over the last few years it has finally decreased back to where it was. 

    Just back from squeezing a quick 2 mile run before sunset -  a balmy (compared to some of you) 30 degrees, but with a 16 degree windchill - no wonder it was a bit, shall we say, invigorating!  Happy

    Today walked the dog 3 mi between CA rain storms--rain in CA??????!  Been doing 4mi/day. Start radiation tx on Monday--they told me it will be "a piece of cake!" Hope so...

    ksb: good luck with radiation! I enjoyed talking with the other ladies in the waiting room (it was for ladies only). YEA for the rain!!!

    Nats: I also just got in from my power walk/jog. It was 50 degrees not 30 like you had and certainly not 16 degrees with the windchill!

    Inspired, glad you're on the mend. That sounds like a very scary case of food poisoning.

    I ran a mile and walked the dogs a mile with DH today.

    Hope you are feeling better Inspired. Food poisoning is miserable. 

    Completed 20 minutes on the Elliptical yesterday but did not manage to get any exercise today due to crazy busy schedule and not really feeling up to it. . Back on track tomorrow...

    hi all, happy almost-Friday!  Went to a new Italian restaurant for date night this week.  Enjoyed a good house red, nice bowl of minestrone, and tiramisu for dessert.  No food poisioning TG.  Sorry Dolce for your awful experience, glad you're OK!  Hit the track last night after work and should go again tonight but maybe PM yoga DVD is a better choice.  The polar vortex is back and it's so cold, I just don't want to leave my cozy home tonight.

    Ruth, LOL that your (very nice looking) cat is named after a cookie.

    Bounce, this is an easy, tasty, healthy recipe from Ellie Krieger

    Chicken Cacciatore

    Total Time: 40 min (Prep: 5 min / Cook: 35 min)

    Yield: 4 servings / Level: Easy

    Ingredients

    ·  4 skinless chicken breast halves on the bone, about 2 pounds

    ·  Salt and freshly ground black pepper

    ·  2 teaspoons olive oil

    ·  1 medium onion, thinly sliced

    ·  1 red bell pepper, thinly sliced

    ·  1/2 pound white mushrooms, thinly sliced

    ·  2 garlic cloves, minced

    ·  1/2 cup dry white wine

    ·  1 (14 1/2-ounce) can whole tomatoes in juice, chopped and juice reserved

    ·  1/2 teaspoon dried oregano

    ·  1/8 teaspoon red pepper flakes or more to taste

    Directions

    Rinse the chicken and pat dry with paper towels. Season the chicken with salt and pepper.

    Heat the oil in a sauté pan over moderately-high heat. Brown the chicken on both sides, about 8 minutes. Remove the chicken.

    Reduce the heat to moderate. Add the onion and pepper, cover and cook, stirring occasionally, until the vegetables begin to soften, about 5 minutes. Add the mushrooms and cook, uncovered and stirring occasionally, until the mushrooms begin to brown. Add the garlic and cook, stirring, for 30 seconds. Add the wine and cook until reduced by half. Add the tomatoes and juice, oregano, red pepper flakes and 1/4 teaspoon of salt and simmer the mixture covered for 10 minutes.

    Return the chicken breasts to the pan and simmer, covered, until the chicken is just done, about 20 minutes longer.

    IBD food poisoning is the worst glad you're on the mend. Day off for me today but all this talk of food .... Tonight the middle school near me had a book fair and the food trucks came,  the slider truck, the grilled cheese truck, the waffle truck, the Asian fusion truck, the ice cream truck, the hot dog truck.. I had sliders and Thai chicken curry, I definitely need to get on the exercise wagon tomorrowSick
