So...whats for dinner?

$#&$(#( I had quite a post going and then I accidentally closed the browser and lost it.
We'll miss you Bedo, but I understand. I have to work hard sometimes to not get stuck in a dark place. This thread is BCO's "no cancer" (as much as possible) place, which is why I pretty much limit myself to posting here.
6 in one bed. Sharon and I have 2 dogs and 1 cat and that was crowded enough that we bought a huge dog bed for the three animals and enforced a "no dogs or cats up here" policy.
Sharon is trying to get some work done and just asked for some water.....she says she feels as bad as during the AC chemo..... I hate it when either her or DD feel bad......and there isn't much I can do to help.....

Bedo, I hear you, but I'm sorry to see you go. I love your posts and wish I could meet each and every one of you. But, follow your dream, girl. (((Bedo)))

Bedo, you have to do what's best for Bedo. We'll miss you but it makes me happy to think of you out there enjoying your journey.
Lacey, what an enormous amount of work and preparation for the church reception! I know it must have been appreciated. So much easier to go to Costco and fill up a cart. But maybe that was what that couple was capable of doing.
I'll miss my WW meeting this morning. My mother has an apptment at the pain clinic. I'll go by the WW meeting place and pick up the weekly publication.
Lacey, the Nutribullet isn't in the same category as your Vitamix. But I don't use a blender enough to pay $500 for a super one. I use the stick blender for soups. I have two food processors, a large and a small. And a stand mixer. If the Nutribullet works well, I'll take it along on the summer rv trip. If it doesn't work well, I'll pack it up and return it. I don't make a smoothie everyday. Some mornings I want toast and almond butter for breakfast or an egg and a couple of strips of center cut bacon. Or wheat pancakes.
SpecialK, thanks for introducing me to almond milk. I really like it and it's lower in ww pts. than dairy lowfat milk. I find that odd because almonds are pretty high in pts as are walnuts.
Not sure what's for dinner tonight. But I bought a big package of asparagus at Sam's yesterday!
Happy Monday!

Carole, you reminded me, I must find some more asparagus! Oh, and I wasn't criticizing the couple going to Costco at all. Was, in fact relieved knowing they would be helping greatly with the volume needed....and we did well! They are also really very knowledgeable in the church kitchen, so it was great sharing the duties with them.
. Bedo, good luck with your next pursuits! You know you'll always have a place here to share a fun, interesting or concerning story, if that fits into your evolving plan.
I appreciate you posting pain, Eric! And will sign off now before I do the same thing! Hope Sharon gets better soon....

Bedo - If in your wanderings you ever get to Texas please PM me. I envy your freedom. Please if not a regular check in occasionally. Love you witty posts and
sincerely think you (as are most of the general members of BCO) are
someone I would love to get to know more. You've tossed out a bunch of choices since coming back from AK. Maybe take a job, save like a pack rat, buy the RV and travel the US. Own a truck? There are many days after I swallow that little pill that I just don't think about BC. Attribute many aches/pains to getting older and the osteopenia I had anyway (which I found out via message from PCP is still only osteopenia funny the things we are grateful for). I never was into exercise even knowing what it could/would do for me. I count cleaning a flower bed, bending/putting away clothes, just anything to get me up.
Was surfing on another page and saw a post by Seaside. We miss you and Chabba and Naiviv and Joyce and Momine and many others I know I'm forgetting.
Laurie I hope your Monday morning routines click in. That you, DH and kids came back healthy. Pray that family came together in their grief and squabbles were minimal.
Hope nobody gets what they had in OK/KA/MO/AR yesterday. Praying for those communities. We need rain desperately esp. west out towards Abilene/Wichita Falls just not the tornadoes. Hail is hail here, we expect it and as long as you're not caught outside in it. Eventually it gets everyone's roof. We've lost 3 to hail but not recently. Prob. due. Big push in DFW for tornado safe rooms. If I built a house I for sure would do it. There is a rebate prog. but the waiting list is long. Guess that means you build it and wait for your money back. It is a pain in the you-know-what to get in our in-ground one. I don't think they were even making the safe rooms when we bought it not too long after we moved here. Of the 8 houses on the cul-de-sac we have the only one.
Eric - hope all the puny ones are on the road to recovery.
Carole - interested in your Nutribullet review esp. how easy to clean. I have an ancient avocado green Oster blender, a small stick blender and a food processor I've used maybe 2x. DH would use the Nutribullet for milkshakes.

I have been avoiding grocery shopping - tomorrow for sure. Had to make white bread for DH. Used one of those Fleischmann's no knead mixes. DH requires a loaf which came out short squatty. Spread wider than higher. Tastes OK - prob a little sweeter than store bought. He will have to have pimiento cheese or peanut butter/jelly. Too narrow to put deli meat on it. Look kinda like biscotti. It was hard to get a "loaf" without touching the top which instruc. said not to - no doubt why it spread rather than rose.
Nancy I went back and found your no knead bread recipe. Do you make loaves or casserole shaped? I was so shocked at how quickly the yeast foamed. I don't think I've ever made bread with quick rise yeast b4.
No clue what dinner will be. Might be chicken breasts again but gosh meatloaf sounds wonderful. It will prob. be the chicken because it's on top and the remains can go out in trash tomorrow.
0 -
Luv, I make casserole shaped loaves usually. Sometimes, baguettes.Tonight is taco salad.
0 -
Turned out boneless breasts were buried in freezer. Easier than the reg. ones. Ask DH what he wants for dinner and the answer is usually something that doesn't make a mess. HaHa funny. So my go to is chicken on the stovetop. I found some frozen biscuits so that and froz. vegies and I'm done. Not so much of an inventive cook these days. I did find some Annie's noodles so I might make chicken/dumplings on Wed.; also small bit of turkey stock. I have a ladies day out lunch tomorrow where I went last month. Will have doggie bag for sure so will need to find DH something else at store or maybe get him something small to take home with my doggie bag and share.
0 -
Nancy - I neglected to thank you for your reply. What are your favorite bread add-ins?
0 -
Luv, rosemary and garlic most often, but also roasted tomatoes and/or olives. Parm is also good.
0 -
Glad to be reminded of that easy breadmaking option.....rosemary and garlic would be superb as a start!
Tonight I got home to make dinner from stretching class after a stop at Trader's. Lordy do they have a lot of dairy and or soy in their products! At this rate I am seriously going to be competing with our woodchuck (should name the monster!) for greens in the yard pretty soon....certainly for the kale if I ever get it planted. Very cold here today! But I feel so fortunate that we do not get tornadoes at this time of year very much. Thoughts with those poor families in Arkansas and Oklahoma. Such devastation and familial loss.

Anyway, back to dinner.....we finished up the ratatoille along with a salad of arugula with grilled chicken flavored with lemon and mint (leftovers from the memorial celebration event at a friend's house yesterday).... And I dressed up the arugula salad with shaved carrots, red peppers, really sweet smallish tomatoes, and kalamata olives. Loved it....mainly because of the chicken flavor in the salad. Would have been perfect topped with some feta.
. Is this like drug withdrawal??Carole, the Vitamix I got at B B and Beyond with my coupon was a mere 300!
I totally "get" anyone not wanting to spend so much on a blender, but I got so obsessive about my smoothies that it felt worth it. And I use it for soups....it even makes them hot when blended for a while! By the way, I have been adding xherry juice and tart cherries (canned, unsweetened) to my smoothies...so delicious and good for you!I think that the nutri bullet will be a better fit for your RV, and should fit the bill nicely for DH's milkshakes.
Luv, good luck with the storms. Hail can really be so damaging! We get it in NH and it is more destructive than one would think.
A friend just texted to ask me if I would be interested in taking over for a fellow colleague while she takes maternity leave. It would be from late May thru November. Yikes! I would be nuts, but it is tempting now that I have some energy and miss working. No! It is a crazy idea!!!

Bedo - hugs for your journeys. We'll miss you. And I'm with Luv - if you get anywhere close to Texas, I'd love to come an meet you.
0 -
bedo - do your thing - we will be here. You are such a character, and have a refreshing free spirit and sense of humor and adventure, I love to hear from you - anytime, and anywhere you are. Do what is best for you, and take care!

Bedo- We will miss you and the laughter and adventure you bring to this thread but understand. Know we are always here for you.
Last night dinner was steak along with rice and the first corn on the cob of the season which was actually pretty good! Boys were thrilled at having corn again. Tonight is shake and bake pork chops with egg noodles and green beans. I am trying to get back in the groove of being home. Went grocery shopping yesterday and finally unpacked the suitcases today, did some laundry and vacuumed and dusted. It is starting to look normal around here again.
We have about 100 projects we want to tackle around the house. I wish I was better at painting! I can't cut to save my life but may try tomorrow. I assume Dh can fix what I screw up.
I have had a head ache all day. No idea why. I never get them and am a big baby when I do. Although I did push through.
Also to make everyone laugh a bit. DS1 told everyone at school today it is against the law to have McDonalds 2 times in one day. They all believed him and were in awe at his knowledge. The teacher came out laughing to tell me. DH told him that when we were travelling!

Laurie, what a cute story! Sorry about your headache but glad to hear that your life is getting back to normal.
We have a tornado watch until 9 pm but have avoided the bad weather so far. I actually got in round one of a 2-day golf tournament today, playing part of the time in a rain jacket. Tomorrow is supposed to be better weather.
When I looked into the chest freezer this morning, I spotted a package of spaghetti sauce and took it out. We'll have wheat linguini with red sauce and grated romano cheese and a salad with romaine, yellow cherry tomatoes, cucumber, avocado and blue cheese.
The Nutribullet works well. The addition of cherries to your smoothies sounds good, Lacey. I'm going to try adding some kale to mine when I get a chance to buy some organic kale.
0 -
I hope you are out of the "weather woods", Carole, with no untoward events. So scary! As you probably have heard, if you add kale to your smoothies with your already tasty ingredients, it will do absolutely nothing to the taste, and everything for your nutrition. I still put beets in mine however, since I prefer to drink a reddish smoothie over a green one. I also add frozen cranberries for health and color, as well as blueberries, a banana, walnuts, chia, orange, etc. etc. Remember I get four or five glasses out of mine. Can't wait to hear what you try.
Just had some kale soup with chicken and bits of ham in it....a perfect warming meal (along with tuscan wheat bread and kalamata hummus for some bulk) for our very cold damp feeling evening. DH and I were starving after just returning from a social action committee meeting at church with the ministerial candidate (what a wild meeting schedule she has for the week....and on top of that the adult son of a long time member died in a sudden and lonely way and he asked for her to do a funeral for him this Saturday, so she had to rearrange all that day's meetings and develop a funeral service for a person she has never met and the family she has just met). A baptism by fire, I'd say....if we did baptism! Anyway, this minister gal's parents did an unbelievable job to raise such a mature person with wonderful relational and leadership skills, who clearly will do just fine as a new minister at age 29. Hope the vote goes well!
At the meeting there was pizza, fruit, and cookies. The pizza looked so good, but I turned my mind off to it. In solidarity, DH chose not to have any either, (very sweet and amazing of him) so that's one reason we were so hungry upon return home. I topped off dinner with a wicked dessert....chocolate covered cookies with marshmallow and gram cookie....used to be called mallowbars (I think) in the sixties....anyone recall them? My father used to love them. Now I see why!
Had further allergy testing today and first self injection....weird, but I hope it ends up working. I was up itching thru last night.
Also learned a new allergy fact. There are "cross reacting foods" that need to be eliminated from one's diet during blooming season of grasses, weeds, or trees that one is allergic to. Another reason I am reactive to celery....it's related to mugwort....my highest reactive weed (my arm is still blown up from today's test!). For anyone interested, I'm sure this info can be found on the internet under "food-inhalant cross-reactivity". End of lesson....;)
Laurie, glad you are getting settled back in. Ahhhh, spring projects! Funny tale to teacher! I always remember some teachers telling parents on open house night, "I promise to believe only half of what your kids come and tell me about home, and hope you will do the same about things they say happened in school."

laurie - hilarious on the fast food "law" - actually, it is a great idea! Glad you are home and getting back into the routine.
carole - thanks for the nutribullet report - I might have to get one.
lacey - I just looked up the food inhalant cross reactivity thing - it does go along with the diet I am on - the idea is that the seven things you give up are the foods people are most likely to be sensitive to, if not allergic to, and a number of them are on the cross-reactivity list. I am allergic to every pollen out there - years ago my allergist's resident looked at my test results and exclaimed, wow! If it is a plant I am allergic to it. I later developed allergies to adhesive, the surfactant (lathering agents) in shampoo, bar soap, and laundry soap, epoxy resin, sawdust, some plastics, anti-bacterial topicals, many antibiotics, some essential oils, the list goes on. I need to live in a bubble. Maybe with you!
0 -
Oh, Special, I really feel for you. Please don't be offended that I am trying very hard to avoid inhabiting that bubble....and I hope you can escape it!
I can see why you are willing to stick so closely to your diet, separate from the good weight results. The rainbarrel theory would suggest that you are doing a good job of keeping your body in better balance....so no barrel overflow (major symptoms).Hope everyone is weather safe tonight!

Bedo I'll miss you. Go enjoy life! And if you ever come to Wisconsin let me know..
Lacey I don't know how you managed the church reception. Those are hard to do. I know I could no longer provide half the treats! I am impressed. And I hope the allergies get better.
Laurie I am glad you're home settling back in. I love the food law.
Erik hope everyone is feeling better. It's bad to have it go through everybody at home.
Carole glad the nutritive works. Nice to heat.
Luv and Minus hope the storms missed you. We've had a lot of rain here but no really bad storms.
AuntNance, you really do a lot of baking. Do you always make more than one loaf and freeze them?
Specialk, are you still in the phase where you haven't added anything back in? When do you get to try them and more importantly are you noticing any difference.
If I missed anyone I am sorry. Much love to all.

lacey - never offended - I would like to stay out of the bubble, but it is proving challenging!
moon - the only thing I have added back in is eggs but I eat them sparingly, mostly because they are a naturally hormonal product since they are an ovum, which makes me a little nervous. I tried to add dairy back in right after the surgery in March because I was on an antibiotic and didn't want the GI distress, so I ate Greek yogurt - my skin broke out like I was a teenager. So, apparently dairy is sensitive for me. I will not be adding soy, gluten, and sugar back in, and I love almond butter so I see no need to add peanuts back in. I have only eaten organic sprouted corn tortillas and they were just ok, but not really any other corn or corn product other than a bit of organic corn starch. Don't really miss it, but I might when all the nice fresh corn is in the grocery store! One thing I can say is that even on Femara I do not have the joint pain that I had previously, but it took at least three months for it to dissipate.
0 -
specialk I am glad you are seeing results! At least getting results help you continue. I would have a hard time with dairy as I love cheese of any kind. It's also one of the few things I could eat during chemo when my taste buds went south. And the sharpest irish cheddar was my favorite! Just a couple of shards with the bit of crystallization was so good. Of course that meant the expensive stuff! LOL
Supper last night was a root beer pork chop I bought from my favorites store . Sendicks. Kinda like a TJ but local. I also bought a chicken kabob for tonight. When I'm home alone it makes sense to get one if those already made up and they cook up fast. Then I either put a small potato in the cast iron pan to cook with it or put it in the Foreman and cook some rice. Snap peas go with it popped in the microwave. Dinner in 10 minutes.

Moon, sounds like you've mastered the solo dinner routine. Tonight's selection sounds great! You are correct in thinking that the cheese elimination is the hardest thing, and maybe for me, the greek yogurt deletion.I used to love that (peppered with chia and walnuts) as my go to breakfast when I ran out of smoothies and was in a rush in the AM.
Sendicks sounds like a good shopping option for you.....so many stores, so little time........;)

Moon, sounds like you eat well without putting a lot of time and effort into preparation. Very smart! I, too, love cheese but don't eat as much as I would like. But I always have chunks of good grating cheese and blue cheese on hand. Right now I have some good cheddar and gruyere as well.
My partner and I won the member-member women's tournament! My prize was a $50 gift certificate to Fresh Market. I went straight there and spent $20 of the total. I bought a couple of bunches of organic kale and some organic beets. Plus some other items. Lacey, see how influential you are! I like cooked beets but will try adding raw beet to my smoothie. Here's my question. Do you peel the beet or blend up the peeling, too? I bought the red beets but may try the yellow ones next.
Another question: do you ever freeze your kale? The author of the Aztec Diet freezes his and adds handfuls to his smoothies.
Lunch today included delicious crunchy fried chicken. No dinner for me tonight. DH will have leftover pasta and a salad.
0 -
Congrats, Carole!
Interesting idea to freeze the kale that will be used in smoothies, (never tried that and have no idea about the Aztec diet...will google it) especially when you get a large bunch that will take a while to use up. I'm laughing to myself, tho, at how DH will respond to have more things stuffed in our freezer when we are supposed to be clearing it out!
. I do peel the beets....and have to say that people make a much bigger deal about stained hands than is necessary. Mine get the red stain off immediately upon washing.
I also just use red beets in my smoothies since the yellow and striped ones do not generate an appealing enough color for the final product. But if you are not concerned about that, try some variety.Tonight I made a pretty quick and really yummy dinner. I had picked up a fig balsamic glaze (as well as a raspberry balsamic, and chili pepper balsamic glaze) at my favorite junk store that sells a lot of speciality food products (lord knows where they get them, but they are cool!). So, I used the glaze with a tenderloin of turkey breast I picked up at TJs.
First dredged the two pieces of tenderloin lightly in flour, garlic powder and pepper, browned them in a caste iron skillet with some olive oil, shallots, and button mushrooms, added the glaze and made sure all was covered, then put the whole thing in the oven at 375 degrees for about twenty minutes to finish cooking. Meanwhile, made asparagus, and also a baby spinach salad with pear, mushrooms, red onion and a dijon vinaigrette. It was a great little fast meal! Rice pilaf would also go well with this.

Tonight is organic chicken sausage (fully cooked) sautéed with onion, then I poured tomatoes and green chilies in, and some leftover kidney beans, served over brown rice. Also romaine salad with honey mustard dressing.
carole - congrats and yay for your prize! I would be so excited!

We're all done with "the issues" from whatever was making the rounds. Several folks at work got it about the same time as I did...so it was not food poisoning as they did not eat where I did.
Dinner was a quick "heat some frozen turkey and 'nuke' some potatoes" so I could get out and work some more on DD's car before it got dark. The seat belt would not latch into the buckle. It's fixed now.
Laurie, I like that law....works for me... :-)
Lacey, my mom would make chicken with a very similar recipe and would serve the chicken on a bed of rice. Great minds think alike! :-) You will soon prefer doing your own shots. The now retired allergist I had would mix up the allergy stuff up for each patient and have the patient do their own shots. He and his wife (a NP) felt it led to better outcomes as the folks tended to stick (bad pun, sorry) with the program through to the end instead of quitting part way through because of the annoyance of coming to the office each week.
Special, I think you and Sharon sound about the same for pollen allergies. Sharon did allergy shots for 5 or so years and then ended up with nose surgery and it has helped a huge amount. Still, when things are really bad, like right now, she still feels "not so great"....like now. It makes it hard for her to sleep, so after a few days, she's REALLY tired.
Congrats Carole. That's a good way to spend the gift certificate....although I probably wouldn't buy kale. I'd probably buy stuff to bake something decadent!!!!!
Moon, hats off to your cooking for one. When it's just me, it's not "cooking and eating", rather it's heating stuff so it's safe to stick in my mouth so I can stop the rumbling stomach. To me, cooking something nice is more for the social interactions.
I'm sure I've missed a few things. My apologies. I do read things on my phone during breaks or when I'm waiting on a computer to finish something for me. And hopefully I don't lose the post (again). Windows 8 is still annoying me...but I guess it's getting somewhat less annoying that before
Eric

Just lost my long post! Grrrr!
Will check in later.

eric - I too did the allergy shots, starting in high school and continuing for about ten years. I married my military husband when I was 27 and started moving a lot and the problem with allergy shots is that they are location specific. So, I would build immunity to something and then move and that tree/weed/grass would not be at the new location, but a bunch of new things that I was not desensitized to were! I never stayed anywhere long enough to get in enough shots to build immunity, so I gave up and treated symptoms. As I have aged (ugh - hate that word!) I am less sensitive to pollen, so my allergy symptoms are easier to medicate, but I have developed new things that I am allergic too - mostly drugs, cosmetics and topical and oral antibiotics. The one thing I struggle with is allergic rhinitis related asthma. It has been bad for several months, can't seem to get it under control, so it may be time to be more aggressive with it. I am also allergic to mold, so living in FL is a challenge!

Eye of round roast in the oven, being cooked by Laurie's technique. Called dh about 5 pm and said I was running late. He looked up the recipe on the internet and took it from there. I was thinking we might eat out!
Side will be microwaved broccoli with cheese sauce and a salad.
Took my mother to the supermarket following her 1:30 hair apptment. She uses a powercart provided by the store. It takes forever because she doesn't get out a lot and gazes at all the products. When it came to checkout time, the bill was almost $150. She had to borrow a dollar from me! Most of the time, she gives me a list but I think it is good for her to get out into the world.

Those power carts are a blessing. No way I could go for groceries alone without them. DH brings stuff in and puts it away. His health is such he couldn't do the whole job himself so we divide the job, each according to our ability.
